A cultivar (Malus domestica cv. Fuji) of apple was selected to make apple peel (AP) powder by three different powdering methods. Frozen AP was thawed and subsequently was dried or ground without drying. After AP was dried by hot-air drying at 60°C or freeze-drying, the dried AP was ground using a conventional blender. Separately, the thawed AP was powered by using a cryogenic micro grinding technology (CMGT). The ground AP and three types of AP powder were extracted using deionized water, 20, 40, 60, 80, or 100% methanol, followed by vacuum evaporation. The total phenolics contents (TPC), total flavonoids contents (TFC), DPPH, and ABTS radical scavenging capacities of each extract were compared to determine an efficient powdering method. Lyophilized AP powder extract using 60% methanol showed the highest TPC and DPPH radical scavenging capacity. In contrast, 60% methanol extract of the powder by CMGT, resulting in the smallest particle, exhibited the highest TFC and ABTS radical scavenging capacity. This study suggests that the extraction yield of bioactive compounds from AP may be varied according to different powdering methods and that a new powdering process such as CMGT may be applicable to develop functional foods efficiently.
This study was conducted to compare the antioxidant activities of fermented soy products such as chungkukjang, meju and doenjang with soybeans. Total phenolic, flavonoids contents and antioxidative activities of the methanol extract of soy and fermented products were compared with specific reference to alpha-diphenyl-2-picryl-hydrozyl (DPPH) radicals scavenging effects, ferric /reducing power (FRAP), inhibition of conjugated diene formation and tyrosinase activities. Total phenolic and flavonoids contents increased in soybeans after fermentation. Fermented soy products also displayed enhanced antioxidative activities in comparison with the non-fermented soybeans. There were linear relationships between total phenolic and flavonoids contents and ferric reducing/antioxidant power of the samples. Overall, the fermented soy products showed a better antioxidant activity than soybeans. Among the 3 kinds of fermented soy products, chungkukjang, meju and deonjang, doenjang exhibited the highest levels of DPPH-free radicals scavenging activity, ferric /reducing power, inhibition of conjugated diene formation and tyrosinase activities. The fermented soy products with longer fermentation time demonstrated the higher antioxidant activities as well as higher total phenols and flavonoids in the order of doenjang > meju > chunghlkjang> soybeans.
The aim of this study was to analyze antioxidant activity, total phenolics, and vitamin C content in unripe and ripe jujube cultivar and to investigate correlation between antioxidant and chemical constituents including total phenolics and vitamin C. The antioxidant activity was measured by the DPPH radical scavenging activity, ABTS radical scavenging activity, and reducing power. Although, the weight, diameter and soluble solids of Zyziphus jujuba fruit were increased with the progress of ripening, antioxidant activity and total phenolics were decrease during ripening. The highest free-radical scavenging activity (at 2.5 ㎎/㎖) and reducing power (at 1 ㎎/㎖) in fruit were 81.75% (Bokjo, unripe) and 0.80 (Mudeung, unripe), respectively. The highest total phenolic content in unripe fruit of Mudeung was 62.50 ㎍/g. A linear correlation (r=0.911) was shown between DPPH radical scavenging activity and total phenolic content.
The antioxidant activities and total phenolics of four Rosaceae species Pourthiaea villosa (Thunb.) Decne, Sorbus commixta Hedlund, Sorbaria sorbifolia var. stellipila Maxim and Pyrus pyrifolia (Burm.f.) Nakai were determined. Phenolic content (polyphenol and flavonoid), radical scavenging activities [2,2-Diphenyl-1-picrylhydrazyl (DPPH) and 2,2-azino-bis (3-ethylnezthiazoline-6-sulfoic acid) (ABTS)] and ferrous ion chelating effect were evaluated. Total polyphenol and flavonoid contents were highest in Pourthiaea villosa (Thunb.) Decne and lowest in Pyrus pyrifolia (Burm.f.) Nakai. Phenolic contents of Pourthiaea villosa (Thunb.) Decne was 331.45±7.78 and 90.4±3.5 mg·g-1. DPPH and ABTS radical scavenging activities were found to be lowest in Sorbus commixta Hedlund whereas Sorbaria sorbifolia var. stellipila Maxim and Pourthiaea villosa (Thunb.) Decne showed relatively good DPPH and ABTS radical scavenging activities. Ferrous ion chelating effect was highest in Pyrus pyrifolia (Burm.f.) Nakai (1.05±0.04 mg·ml-1) and lowest in Sorbus commixta Hundlund (4.22±0.71 mg·ml-1).
Anthocyanins are very important constituent of human diet. In recent years, they have gained much attention due to their antioxidative properties. As the radish (Raphanus sativus L) has rich content of anthocyanins, the study is aimed to develop increased functional radish from selected radish varieties. ‘Bordeux’ is a hybrid variety of breeding between one accession derived from ‘Oharu’ as a maternal variety and ‘Chungpihongsim’ as a paternal variety. In this study, we investigated the new varieties of radish commonly consumed in Republic of Korea for their total phenolic content (TPC) and antioxidant activities using three (DDPH, FRAP and CUPRAC) different assays. The selected radish varieties like ‘Bordeux’, ‘Chungbok’, ‘3209’, ‘Chungwoon’, ‘Oharu’, and ‘Chungpihongsim’ were procured from the company Syngenta Korea. Among the selected radish varieties, ‘Bordeux’ (289 μg/g FW) and ‘Chungpihongsim’ (276 μg/g FW) revealed maximum amount of phenolics; whereas ‘3209’ (103 μg/g FW) and ‘Chungwoon’ (166 μg/g FW) showed the lower amount of phenolics content, respectively. Extracts from these studied radishes showed good to moderate antioxidant activities. The varieties ‘Chungpihongsim’ and ‘Bordeux’ revealed maximum antioxidant activity for all assays as demonstrated. However, some varieties like ‘3209’ and ‘Oharu’ exhibited the lowest antioxidant activity in all the tested assays, viz; DPH, FRAP and CUPRAC in μg TE/g FW, respectively. The antioxidant activities may be attributed to the higher phenolic acid contents as a linear relation was observed between the two components and the antioxidant parameters.
The aim of this study was to determine total phenolics (TP) content, total flavonoids (TF) level, and antioxidant activity of methanol extracts from leaf parts of 15 Vietnamese wild plants. TP content showed the highest amount in methanol extracts from Altenanthera sessilis (409.7±1.4 ppm), and followed by Eclipta prostrata (183.6±3.8 ppm) and Cassia tora (159.3±5.7 ppm). The highest TF level also was found in A. sessilis (156.3±1.7 ppm), followed by E. prostrata, and C. tora, showing similar tendency to TP. Methanol extracts of A. sessilis, E. prostrate and C. tora at 1000 ppm exhibited the highest DPPH radical scavenging activity by 94.5, 92.6 and 92.7%, respectively. The methanol extracts from A. sessilis showed the highest ABTS and nitrite scavenging activities by 97% and 92%, respectively. The highest correlation coefficient (r2) was 0.9522 between TP and TF, and followed by 0.8919 between DPPH and ABTS activities. However, polyphenols and antioxidant activities showed low correlation coefficients, ranging from r2=0.4114 to 0.4826. It was concluded that Vietnamese wild plants contain polyphenol compounds with antioxidant activities depending on plant species.
Total phenolic content and the antioxidative activity (DPPH radical-scavenging capacity) of 29 fruits and vegetables were determined. The total phenolic contents of plum (1.06 mg GAE/g fresh weight) and cherry (0.95 mg GAE/g fresh weight) were high, whereas those of banana, carrot, and cucumber (each at 0.07 mg GAE/g fresh weight) were low. In the DPPH radical-scavenging assay, apple mango extract showed the highest value(92.8%) among the 29 ethanol extracts tested, followed by paprika (75.4%), beet (75.3%), and cherry (75.1%). In the inhibition assay, cherry (34.95% inhibition) and grape (31.03%) showed the highest activities among the 29 fruits and vegetables examined.
This study was carried out in order to determine the biological activities such as antioxidant activities in nine cultivars of Momordica charantia L. (Korea, China, Japan and Philippine native cultivars). Their antioxidant activities were measured using DPPH free radical scavenging, ABTS cation radical scavenging, and Nitrite scavenging ability. The highest total polyphenol content (16.82 μg/ml) measured in the native Korea cultivar, and this value was 4.0 μg/ml higher than that of the 'Verde Beuhas' cultivar (12.82 μg/ml). The 'Peacock' cultivar had the highest total flavonoid amount which was 4.38 μg/ml. The free radical scavenging activity using DPPH method was the highest in the native China cultivar (RC50 = 102.6 μg/ml). ABTS cation radical scavenging activity according to cultivars was significantly higher in 'Peacock'. Nitrite scavenging ability showed the most remarkable effect at the pH 1.2, exhibited to 81.5~86.9% by addition of ethanol extract 1μg/ml from Momordica charantia L. These results suggest that Momordica charantia L. had the potent biological activities, and that their activities exhibited differently depending on cultivars.
블랙 라스베리 과실의 성숙정도에 따른 항산화 활성과 이와 관련된 인자인 총페놀성 함량 및 비타민 C 함량의 변화를 측정하였다. 이러한 결과들로부터 과실의 성숙 단계에 따른 활성 및 성분변화 그리고 이들 간의 상관관계를 구명하였다. 블랙 라스베리 과실의 항산화활성측정 결과, 자유 라디칼 소거능 및 환원력 모두 과실이 성숙함에 따라 감소하였다. 또한 항산화 활성과 밀접한 관계가 있는 총페놀 함량 및 비타민 함량 역시 과실이 성숙함에 따라 감소하였다. 자유 라디칼 소거능은 과실 결실 5일 후에서 125ppm 농도에서 61.67%로 최대치를 나타내었으며 환원력은 과실 결실 10일 후가 0.71로 최대였다. 총페놀 함량과 비타민 C함량의 최대치는 각각 220.73ug/g과 540.45ug/g였다. 여러 인자들에 의한 상관관계 분석 결과 자유 라디칼 소거 활성과 환원력 그리고 환원력과 총페놀 함량과의 상관관계는 각각 r=0.9861와 r=0.9889로 고도의 상관관계를 나타내었다. 이상의 결과를 종합하여 보면, 블랙 라스베리를 수확함에 있어 완숙과보다는 미숙과가 약리적인 측면에서는 유용한 성숙단계라 할 수 있지만 크기나 무게 그리고 맛이나 과색에서는 완숙단계가 식용으로는 적합하고 항산화 활성 등에서는 낮으나 이용 가능한 약리 효과를 가지고 있다고 할 수 있다.
창포의 뿌리를 주근(main root)과 측근(lateral root)으로 분리하여 3 열풍건조분말의 주된 포화지방산으로는 caprylic acid, pentadecanoic acid, stearic acid 및 heneicosanoic acid 등 10종이 확인되었고, 이들은 각각 주근과 측근의 경우 caprylic acid가 28.35%, 31.44%이었고, 불포화지방산으로는 linoleic acid, palmitoleic acid 및 lin
