        This study evaluated the consumers’ demands and points of improvement for restaurant meal replacement through importance–performance analysis by the restaurant meal replacement segment market using food involvement. The results were as follows. First, after segmenting the restaurant meal replacement market using food involvement, it was classified into three markets (multiple involvements, exploration-oriented, and product quality-oriented). Second, an analysis of the importance of restaurant meal replacement selection attributes revealed taste, sanitation, quality, freshness, price, saving time, texture, ingredients, preparation process, and quantity to be highly important. An analysis of the differences according to the market type revealed the multiple involvement type to be more important than other groups, considering the restaurant meal replacement selection attribute element. Third, an analysis of the importance-performance analysis of restaurant meal replacement selection attributes revealed that quantity and price as the selection attributes that needed to be improved first in all three markets. In addition, in the multiple involvement type, food additives appeared as a selection attribute requiring priority improvement, revealing the characteristics of a market that cares about diet and health.

        The senior dog population (ages 7+) is increasing worldwide because of a larger interest in the health of companion dogs. In this study, we aimed to develop dog foods via fermentation to address the nutritional needs of senior dogs. The dog food ingredients were fermented with candidates of starter culture and then the fermentation efficiency was compared using pH and ammonia nitrogen for selection of optimum strains. The fermentation was carried out with a moisture content of 60% and starter culture of 1.0×107 cfu/g at 3 7℃ for 24 h. And there were manufactured pre- and post-senior dog foods (treatments) including fermented rice, fermented pinto bean, and fermented soybean meal and it compared with non-fermented dog foods (controls) on fermentation characteristics, in vitro dry matter and crude protein digestibility, and palatability. As results of this study, fermentation efficiency was higher when rice or wheat was inoculated with Lactobacillus brevis (ΔpH; -2.74 ~ -2.94) and meat and bone meal with Lactobacillus reuteri (ΔNH3-N conc.; 4.29 g/L). The ammonia nitrogen level, total volatile fatty acid content, in vitro dry matter and crude protein digestibility of L. brevis-fermented dog food were significantly greater than those of non-fermented dog food (p<0.05). Further, in case of palatability tests, fermented foods tended to have higher palatability compared to non-fermented foods, and no negative effect was observed in fermented foods. These results suggest that fermented food is suitable for senior dogs and could help to maintain adult dog health.

        Stable Isotope Analysis (SIA) of carbon and nitrogen is useful tool for the understanding functional roles of target organisms in biological interactions in the food web. Recently, mixing model based on SIA is frequently used to determine which of the potential food sources predominantly assimilated by consumers, however, application of model is often limited and difficult for non-expert users of software. In the present study, we suggest easy manual of R software and package SIAR with example data regarding selective feeding of crustaceans dominated freshwater zooplankton community. We collected SIA data from the experimental mesocosms set up at the littoral area of eutrophic Chodae Reservoir, and analyzed the dominant crustacean species main food sources among small sized particulate organic matters (POM, <50 μm), large sized POM (>50 μm), and attached POM using mixing model. From the results obtained by SIAR model, Daphnia galeata and Ostracoda mainly consumed small sized POM while Simocephalus vetulus consumed both small and large sized POM simultaneously. Copepods collected from the reservoir showed no preferences on various food items, but in the mesocosm tanks, main food sources for the copepods was attached POM rather than planktonic preys including rotifers. The results have suggested that their roles as grazers in food web of eutrophicated reservoirs are different, and S. vetulus is more efficient grazer on wide range of food items such as large colony of phytoplankton and cyanobacteria during water bloom period.

        Temperature and nutrition are the two most important environmental factors influencing growth and survival in immature insects. There is ample evidence of interactions between these two factors but still little is known how changes in thermal environment affect feeding and nutrient utilization insect ectotherms. The aim of this study is to investigate the potential effects of ambient temperature on food selection and post-ingestive nutritional physiology in a generalist-feeding caterpillar of Spodorptera litura. Two separate experiments were performed. The first was a food choice experiment in which caterpillars were maintained through their final larval stadium under one of three constant temperatures(20,25,30°) and given a choice between two nutritionally unbalanced diets that differed in protein(p) and carbohydrate(c) content (p42:c0 vs p7:c35 and p35:c7 vs p7:c35). In the second experiment, caterpillars were kept at the same thermal conditions as the first experiment but received a single diet from three no-choice feeding treatments(p35:c7,p21:c21and p7:c35). When raised at the highest temperature (30C), caterpillars from the choice experiment selected significantly more carbohydrate than those on lower temperatures whereas protein intake did not differ significantly between caterpillars across three test temperatures. Results from the no-choice experiment showed that lipid storage efficiency was reduced when caterpillars were maintained at the highest temperature(30C). In both experiments, growth rate increased progressively with rising temperature. However, there was a significant temperature-by-diet interaction, with growth rates increasing more rapidly on p21:c21 diet than on the other diets(p35:c7 and p7:c35). Our results demonstrate that caterpillars adjust their nutrient preference to meet the increased energetic demand at high ambient temperature.

        The purpose of this study was to elicit types of food-related lifestyle of undergraduates and to examine the relationship between each ape of food-related lifestyle and an attribute of selecting a restaurant. Self-administrated questionnaires were completed by 368 students and data were analysed by frequency, factor, reliability and canonical correlation. Five factors were obtained from factor analysis of food-related lifestyle ; Factor1 'health seeking type', Factor2 'taste seeking type', Factor3 'Popularity seeking type', Factor4 'safety seeking type', Factor5 'mood seeking type'. Restaurant selection attribute were extracted into six factors, Factor1 'taste and service', Factor2 'interior‘, Factor3 'convenient for approach', Factor4 'marketing strategy', Factor5 'food quality', Factor6 ’menu and price‘ Canonical correlation analysis showed two significant functions. Canonical function1 showed that food-related lifestyles of taste seeking type and safety seeking type were indicated to have significant positive relationships with the food qualify, taste and service in the restaurant selection attributes. Canonical function2 also showed that a significant positive relationships between health seeking type and accessibility, and a significant negative relationships between health seeking type and taste & service and between health seeking type and menu & price. Finally the result of the study provide some insight into the types of marketing stratagem that can be effectively used by operator who manage restaurant.

        This study was conducted to identify the factors that correlated with food consumption frequency and perceptions of attributes for food selection. The purpose of this study was to improve menu's quality which is related to the food consumption frequency. Taste health and cost perceptions were chosen as the main factors of foods selection from the former related researches. There were differences in foods perception and consumption patterns according to gender. For both of female and male consumers, taste perceptions were highly correlated with consumption of most of foods. Finally, some recommendations which should be considered to correct or improve the quality of menu.

        This study was undertaken to assess eating out behavior and factors in food choices of 369 college students in Kwangju. 47.1% of subjects ate out at least once a day and lunch was the most frequent meal for eating out. Eating out expenditure was significantly associated with student's allowances. Significant differences were observed in frequency, expenditure of eating out and related factors in food preference between male and female students. Taste was the most considered factor but nutrition was the least considered in food selection of respondents. Among male respondents, the most important nutritive factor was protein followed by calorie and vitamin. However, female counterpart regarded calorie as the most important nutritive factor affecting food selection. Tendency of increased vegetable and fruit consumption was noted in subjects over past a few years. It might be suggested that effective nutrition education for college students be implemented to improve and develop eating out behavior related to nutrition in food selection.

        The objective of this study was to investigate important factors affecting food choice, specific dietary changes over past few years and to find out consumer opinions concerning the use of yogurt and oligosaccharides. Results of this study showed that three most important factors in food selection were taste (52.5%), nutrition (23.4%) and safety (15.8%). Three most important nutritive factors were protein (26.3%), calorie (19.2%) and vitamin (13.8%). Specific dietary changes of the respondent over past few years didn't affect meat intake, but increased vegetable and fruit intakes. Majority of the respondent (52.3%) ate yogurt more than 3 times per week and 35.6% of them ate 3~4 times per month. Reasons for intake of oligosaccharides were as follows; low calorie (40.8%), sweetener (28.3%)and bifidogenic factor (25.0%). The respondent regarded that yogurt had more preventive effect of disease than that of oligosaccharide.

        As Korean food service franchise companies sought to advance into around 2,000 new foreign markets, the importance of global management was emphasized. They intensively expanded into Chinese and American markets in 2015 and these two markets account for approximately 40% of total food service franchise companies in foreign countries. Although Japan has huge franchise market, Korean food service franchise companies in Japan only account for 5% of total franchise companies in Asian countries. The purpose of this study is to analyze the relationship between food service franchise selection factors, brand loyalty, and revisit intention of Japanese consumers using Korean food service franchise companies in Japanese food service market, and based on the analysis results, draw the implications for the expansion of Korean food service franchise companies into the Japanese market. Food service franchise selection factors is defined as service and cleanliness, taste, safety and reliability, cost and convenience, and professionalism. The study results can be summarized as follows. First, analysis was performed to identify the effects of food service franchise selection factors on the brand loyalty, it showed that five food service franchise selection factors including professionalism, service and cleanliness, cost and convenience had positive (+) effects on the brand loyalty. One of the most important factors influencing the brand loyalty is professionalism. In order to raise food service franchise’s professionalism, it is necessary for the food service franchise companies to establish stronger strategies containing professional operation systems and services compared to general restaurants. Second, analysis was performed to identify the effects of food service franchise selection factors on revisit intention, five food service franchise selection factors, service and cleanliness, safety and reliability, and cost and convenience had positive (+) effects on revisit intention. One of the most important factors influencing revisit intention is safety and reliability. Thus, in order to raise safety and reliability it is important to form trust with consumers by properly utilizing systems of food hygiene and food safety accreditation.

        Background : Currently, obesity and adult diseases as a result of sugar intake have been a consistent problem in Korea. Natural sweeteners as sugar substitutes have many advantages over sugar as a small quantity. Therefore, this study was conducted to investigate possibility of industrialization as food additives by using the nature sweetness components of stevia (Stevia rebaudiana Bertoni). Method and Results : Stevia was cultivated in a plastic house. The leaves and stems were harvested at October. They were ground into fine powder using a mill, and were extracted by high temperature and pression extraction method. The extracts were evaporated under vacuum and lyophilized. Three strawberry cultivars of ‘Seolhyang’, ‘Maehyang’, and ‘F22-196’ were cultivated in a plastic house and were harvested from March to May. The fruits harvested were stored at 50℃ until processing. In order to test the processing suitability of stevia extract, the characteristics of the three strawberry varieties (line) were investigated. As a result, the ‘F22-196’ line, which was bred as a processing strawberry, generally contained more antioxidant materials and activity than those of ‘Maehyang’ and ‘Seolhyang’ varieties. Comparing the sugar contents which affects the quality of strawberry jam, the average sugar contents of ‘F22-196’ line was higher than 'Maehyang' and 'Seolhyang' varieties. In the preparation of strawberry jam using ‘F22-196’, strawberry jam was prepared by adding only sugar or stevia extract powder, which was 1/100 of the amount of the sugar in only sugar strawberry jam, to the sensory test. As a result, we identified that sugar jam and stevia jam added stevia extract showed 50 : 50 at the sensory test and stevia jam does not make a difference to the marketing jam at the point of view of general consumers. Conclusion : ‘F22-196’ line represented the best quality for strawberry jam in test caltivars. Stevia powder is judged to be used as a sweetener of sugar substitutes in the production of strawberry jam and processing food.
