Based on the previous studies, this paper intends to comb and sort out the related literature, dialect, foreign languages, images and object data to pushed the research of steamed bread,which is the common cooked wheaten food, into a deeper stage. First of all, this article tries to draw the outline of the evolution of appellation from ancient to present. differentiate and analyze the concept and objective being of other names of steamed bread. What’s more, it explore the named motivation and distinguish different opinions about etymology. In addicion, the Word-formation of steamed bread were analyzed. The study figures out that fillings are wrapped, head shape, smooth without wrinkles are not only the central feature of steamed bread but also as the main bases of its naming motivation. Originally steamed bread was Modifier-head Disyllabic Compounds, and afterwards it became Affixed Double-syllable Words.
The purpose of this study was to investigate the quality characteristics of steamed bread using mixed flour containing bamboo leaf and lotus leaf powders. Properties of the steamed breads were tested by colorimeter, water activity, rheometer, SEM, and sensory tests. The L values and a values were higher in steamed bread with bamboo leaf powder. On the other hand, the b values of streamed bread with bamboo leaf powder were lower than lotus leaf powder. During storage, the hardness of steamed bread with bamboo leaf and lotus leaf powders increased control. Furthermore, steamed bread with lotus leaf powder showed hardness than bamboo leaf powder. The springiness of all steamed breads decreased with storage , and steamed breads with bamboo leaf powder showed lower values than lotus leaf powder. The cohesiveness of the control was the highest, and all samples showed significant differences each other. The gumminess of the control was higher than steamed bread with bamboo leaf and lotus leaf powders. Moreover, longer storage time yielded higher gumminess. control relatively smoother surface than that of 1% bamboo leaf powder. The steamed bread with lotus leaf powder had a rougher surface than bamboo leaf powder. sensory characteristics of steamed bread, green color of the samples with bamboo leaf powder was darker than lotus leaf powder. Leaf odor was similar throughout. Freshness of steamed bread containing 1% bamboo leaf powder the highest. The overall acceptability of consumer acceptance was the control, followed by steamed bread containing 1% lotus leaf powder.
본 연구에 의하면 보리와 모싯잎을 첨가하여 찐빵을 제조하여 관능검사와 기계적 측정을 확인하여 기능성 식품개발과 보리 이용의 효율성 증대를 모색하였다. 기능성 식품인 찰보리와 모싯잎 가루의 항산화성을 알아보기 위하여 모싯잎 가루를 첨가한 보리찐빵의 DPPH 라디컬 소거능, 총 폴리페놀 함량을 측정하여 항산화 활성을 알아보았다. 찐빵의 총 폴리페놀 함량의 결과는 모시 찰보리 찐빵은 찰보리 찐빵보다 높은 수치를 나타내었다. 이는 보리와 찰보리의 시너지 효과로 보인다. 색도 측정을 한 결과, L값은 밀찐빵이 가장 높았고, 찰보리 찐빵이 가장 낮았다. a값은 모시 찰보리 찐빵이 유의적으로 그룹간에서 가장 낮았고(p<0.05), 찰보리 찐빵이 가장 높았다. b값은 모시 찰보리 찐빵이 16.18로 가장 높았고, 찰보리 찐빵이 가장 낮았다. 물리적 특성을 측정한 결과, 밀찐빵에 비해 찰보리 찐빵과 모시 찰보리 찐빵 간에는 경도가 높고, 찰보리 찐빵과 모시 찰보리 찐빵 간에는 경도 차이는 유의적으로 나타나지 않았으며, 탄성력이 모시 찰보리 진빵이 높았고, 부착성이 월등이 낮음을 관찰할 수 있었다. 모싯잎을 첨가한 찰보리 찐빵의 관능검사 결과, 색, 향미, 맛, 촉촉함, 씹힘성, 전반적인 기호도를 알아보았다. 전반적인 기호도는 모시 찰보리 찐빵이 유의적으로 가장 높았으며, 찰보리 찐빵과 대조군(밀찐빵) 간에는 유의성이 없었다. 이상의 관능검사 결과를 보면 모싯잎을 첨가한 밀가루와 보리가루의 비율이 7:3인 찰보리 찐빵이 가장 높은 관능평가를 받은 것으로 나타났다. 결과적으로 모싯잎을 첨가한 찰보리 찐빵은 높은 항산화 활성뿐만 아니라, 품질 특성을 향상시켰고, 기호도를 증가시켰다. 본 연구는 이러한 기초자료를 바탕으로 찰보리와 모싯잎을 함께 첨가하여 사용하는 것이 식품의 품질 특성 및 기능성을 높이는데 공헌을 할 것으로 생각된다.
This study was conducted to investigate the effects of different active gluten and rice Nuruk(Asp. oryzae, Asp. kawachii rice Nuruk) levels on the quality properties of steamed rice breads. Enzyme(amylase and acidic protease) activity of Asp. oryzae rice Nuruk is higher than Asp. kawachii rice Nuruk. Among the loaf volume of active gluten that were tested (10, 13, 15 and 17%) an active gluten loaf volume of 15% produced the best steamed rice bread. As a result of the loaf volume test steamed rice bread with rice Nuruk was decreased than steamed wheat bread. Regarding color, all treatments produced significant differences. The L value was decreased in steamed rice bread more than in steamed wheat bread, and a and b values were increased, respectively. Hardness, gumminess and chewiness of SRB-2, 3, 4 were lower than SWB-1 but springiness were higher. According to the sensory evaluation of steamed rice bread, color, flavor, and uniformity of pores were the highest in the steamed wheat bread, and the chewiness and texture were good in the steamed rice bread containing added active gluten and rice Nuruk. In this study, addition of rice Nuruk in steamed rice bread did not increase loaf volume, but had an advantage for overall desirability.
As an attempt to develop a value-added food product, purple sweet potato powder was added in a model system of steamed bread as a healthy food ingredient and physicochemical properties such as moisture content, specific volume, spread ratio, color, texture as well as consumer preferences on the attributes such as uniformity, color, flavor, elasticity, chewiness, taste, and overall preference were evaluated. Moisture content ranged from 44.16 to 44.55% (wet basis) and appeared independent on the level of purple sweet potato (PSP) powder incorporation. As a result of the addition of PSP powder, the specific volume of steamed bread decreased from 3.22 to 2.55 mL/g, and value of 4.5% sample was significantly lower than other samples (p<0.05). On the other hand, spread ratio ranged from 2.01 to 2.53, and appeared to decrease as the PSP powder concentration increased (p<0.05), indicating a significant improvement. Lightness (L*) decreased significantly as the PSP powder content increased (p<0.05) for both dough and skin of the steamed bread. In addition, an increasing trend in redness (a*-value) and a decreasing trend in yellowness (b*-value) were noticed. Firmness increased significantly with the addition of PSP powder regardless of concentration (p <0.05); however, firmness was not significantly different among samples containing 1.5-4.5% PSP powder (p>0.05). Consumer acceptance test indicated that incorporation of 3% PSP powder in the formulation of steamed breads would be recommended.
