        팽이버섯의 자실체 특성이 재배사 환경인자중 온도변화에 따라 어떤 변화를 보이는지를 버섯과에 보존된 8개 균주에 대해 형태적 특징, 경도, 색깔을 조사하였다. 버섯생육온도에 따른 형태적 특성에서 대길이는 온도가 낮아짐에 따라 짧아지며, 갓직경은 작아지는 경향, 대 굵기는 일정한 경향이 없으며, 갓두께는 온도가 낮아지면서 굵어지는 경향을 보이고 있으나 품종에 따라 약간 의 차이가 있었다. 품종별 특성에서는 대길이가 가장 긴 품종은 ASI4065, 4151이고, 짧은 품종은 ASI4103호 이 었으며, 갓직경은 ASI4103호 가장 크고, 갓두께는 ASI 4153이 두꺼우며, ASI 4021가 가장 얇고, 대굵기에서는 ASI 4166가 가장 굵으며, ASI 4065호가 가장 가늘었다. 버섯의 생육온도별 자실체의 부위별 경도는 전반적으로 백색계통에서는 온도가 하강힘에 따라 증가하는 경향 이나 갈색계통에서는 버섯생육온도에 따른 상관관계를 확인할 수 없었다. 일반적으로는 갓보다 대가 경도가 높았고, 전반적으로 갈색보다는 백색계통이 단단한 것으로 나타났다. 품종에 있어서는 대경도에서 가장 높은 것은 ASI 4021, 갓경도는 ASI 4021와 ASI 4166균주가 높았다. 버섯의 생육온도 처리에 따른 자실체의 색은 대 보다 갓이 밝은 색을 띠며, 백색계열 품종은 명도(L) 값이 높고, 갈색계통은 명도(L) 값이 낮으며, 백색계열의 명도값은 70-90 사이었으며, 갈색은 30-70사이였다. 채도(a, b) 값은 갈색 계열이 약간 높은 경향을 보이고 있 다. 총괄적으로 보면 팽이버섯은 환경적 요인 보다 유전적 요인에 의해 결정되는 경향이 뚜렷하였다.

        This study was carried out to investigate amino acid contents of golden mushroom and pink mushroom. The amino acid analysis was followed by AccQ-Tag method and HPLC on gradient conditions. Seventeen amino acids were analyzed and sixteen amino acids were found in golden mushroom ; fifteen amino acids in pink mushroom respectively. Among total amino acid in golden mushroom, cystein content was the highest and glycine, glutamic acid, proline were followed. Among total amino acid in pink mushroom, cystein was the highest and glycine, lysine, methionine were followed. As shown in Fig.1, 2, concerning amino acids, cystein was dominant. and alanine was detected in golden mushroom and Pleurotus ostreatus sold in market but pink mushroom. Phenylalanine was detected in Pleurotus ostreatus sold in market but that was not detected in golden mushroom and pink mushroom.

        We attempted to isolate the bacterial strains from the fruiting bodies of Agaricus brazilensis and determined their effects on browning and distortions of mushrooms. No bacterial strains were isolated when the middle of browning regions of A. brazilensis were used. Total 125 bacterial strains were obtained from the surface of browning regions and classified into 17 different genera and 29 species by using MIDI methods. Most common genus were Pseudomonas (26), Yersinia (29), and Cedecea (29).High lytic activity were detected when Pseudomonas strains were tested, while relatively low lytic activity were observed with both Yersinia and Cedecea strains.Therefore, we believed the distortion of mushroom could be the result of bacterial infections. Also, the development of brownish color was detected in large number of A. brazilensis strains only by incubation at 4C, suggesting no specific correlation between bacterial strains and brownish color development. Also, it is considered that the development of brownish color can be the normal changes of A. brazilensis.

        Mushroom is cultivated in many areas of the Korea as one of the major economical crops. The production areas have steadily increased approximately 3,674 ha in 2002 to 4,118 ha in 2005. Several bacteria have been known as the causal agents of certain diseases of cultivated button mushroom, Agaricus bisporus, and oyster mushroom, Pleurotus ostreatus. It is well known as bacterial diseases of the cultivated mushroom such asbrown blotch, mummy disease, bacterial pit, bacterial rot and weeping disease, ginger blotch, and drippy gill. Unknown soft rot bacterium was isolated from sunken browning symptom of cultivated oyster mushrooms grown in Korea. The symptoms are appear as a sunken browning lesions on the caps of affected mushrooms. The bacterium causes a rapid soft rot of cultivated mushrooms in comparison with brown blotch bacteria at temperatures above 25℃. From these lesions we isolated one bacterial strain (designated OM1). Inoculation of bacterial isolates into mushroom caps yielded characteristic sunken brown, watersoaked and severe soft rot symptoms, but which were indistinguishable in early stage from those of the bacterial brown blotch well known to mushroom growers. Results of Gram stain and biochemical tests identified this isolate as Burkholderia gladioli pv. agaricicola. This was confirmed by pathogenicity, physiological and biochemical characteristics, and results of an analysis of the 16S rRNA gene sequences and the fatty acids profile. This is the first report of the isolation of B. gladioli pv. agaricicola from cultivated oyster mushroom in Korea.

        This study examined the effects of adding Pleurotus ostreatus, Agaricus bisporus and Flammulina velutipes on the quality characteristics of cookies and multiple purposes ofwheat powders. The water content, crude protein content, mineral content, color value and sensory evaluation of mushroom cookies and multiple purposes ofwheat powders were measured. In the case of cookies, the water content was 1.10-1.24% and crude protein content was 8.20-9.80%. General preferences, such as appearance, color, taste and texture, increased when mushroom was added to the cookies, especially flavor, which showed a much higher preference. In the studies where mushroom was added to wheat powders, the water content was 0.57-0.92% and crude protein content was 11.90-12.80%. The addition of mushroom to both of the cookies and multiple purposes of wheat powders resulted in a remarkable increase in the mineral content, especially Fe, K. In addition, an increase in the amount of added mushrooms resulted in an increase in the hunter L and a values; however, this also resulted in a decrease in the b value.

        느타리버섯 병재배에서 온도처리에 따른 품종간의 차이와 생리적 특성을 확인하기위하여 온도에 따른 시험을 수행한 결과 느타리버섯의 품종에 따라 온도처리별 발이 및 수량성에서 각기 다른 반응을 보였다. 특히 원형3호는 16.5℃이상에서는 발이하지 않았으나 13℃에서 발이 후 모든 온도처리에서 생장하였다. 고온성인 삼복느타리버섯은 10℃에서는 발이 후 생장을 못하고 고사하였으며, 13℃에서 발이시킨 후 10, 25℃의 온도로 변온처리에서는 정상적으로 생장하지 못하였고, 수량도 얻지 못하였다. 자실체 색깔은 고온에서는 백색에 가깝게 변하며, 저온의 경우 회색계열의 품종은 흑색에 가까운 색으로 갈색계열의 버섯은 진한 갈색으로 변하였다. 발이 특성은 저온에서는 균일하고 양호하였으나 온도가 높아지면서 불균일하고 배지표면에서 부분적 발이현상으로 인하여 수량성과 품질이 낮았다. 13℃에서 생장한 흑색의 버섯을 23℃로 이동하여 갓 색이 백색인 버섯을 다시 10℃ 변온처리를 하면 흑회색으로 변화하였다. 이런 온도에 따른 자실체의 색의 변화에 의해 느타리버섯의 갓 색은 온도에 의해 결정되는 것으로 확인되었다.

        느타리버섯재배에서 심각한 피해를 주고 있는 푸른곰팡이병을 억제하고 버섯균사의 생장을 촉진하여 버섯의 안정생산을 도모하기 위한 탄산칼슘의 처리효과를 실내 및 실외시험을 실시한 결과. PDA배지에서의 CaCO3의 처리는 버섯균의 균사생장을 촉진하고, 병원균은 억제되었으며, 볏짚배지상의 CaCO3의 처리에서는 버섯균은 무처리에 비하여 균사생장이 증가되었으며, 병원균 대체적으로 0.6%의 처리까지는 증가되나 0.8%처리부터는 감소되는 경향을 나타냈다. 컬럼 내의 볏짚배지에서의 Trichoderma longibrachiatum의 접종구에서는 CaCO3의 처리효과가 있었으나 T. virens의 접종구에서는 CaCO3의 효과가 없었다. CaCO3의 처리에 따른 느타리버섯 품종간의 균사생장의 차이는 없었다. CaCO3는 처리에 따라 느타리버섯의 균사생장은 촉진하고 푸른곰팡이병원균과 붉은빵곰팡이균에 대해 약간의 억제 능력은 인정되었다. 포장시험 결과 수량성은 무처리구에 비하여 높으며, 발병율은 낮은 경향이나 절대적인 방제효과는 없었다.

        NaCl처리에 따른 느타리버섯균 및 푸른곰팡이균의 균사생장과 간척답 볏짚을 이용하여 느타리버섯의 재배 가능성 여부를 검토한 결과, salt 농도별 PDA배지에서의 버섯균의 균사생장은 대체적으로 0.2% 까지는 증가되며, 그 이상에서는 감소되는 경향이었다. 푸른곰팡이균은 0.5~1.0% 까지 거의 큰 차이가 없이 생장하였으며, 1.0~3.0%부터는 생장이 감소되기 시작하였고, 5.0% 에서는 현저히 감소되었다. 볏짚배지에 salt 농도별로 침수하여 버섯균의 균사생장은 한천배지와 같은 경향을 보였고, 병원균은 0.3%까지는 포자형성이 무처리구와 비슷하며, 0.5%에서는 포자형성이 감소되기 시작하여 5.0% 이상에서는 포자형성이 되지 않았다. salt 농도별로 처리된 볏짚배지에서는 처리농도가 증가함에 따라 NaO 함량은 높아졌으며, 살균전, 후 K2O는 감소되는 경향이었고, 수분함량은 NaCl 3.0% 까지는 비슷하였고 5.0%부터는 감소되었으며, pH는 뚜렷한 변화가 없었다. 볏짚배지 NaCl 농도별 처리에 따라 초발이소요일수는 차이가 없었으며, 버섯 수량은 무처리구와 비교하여 0.3% 처리구는 2,700g으로 수량이 비슷하였고 0.5% 이상에서는 수량이 감소된다. NaCl처리에 따른 침수용액 중의 EC는 볏짚 침수전보다 침수후에 높았으며, NaO 함량은 침수전, 후 모두 별다른 차이가 없었다. 볏짚종류에 따른 느타리버섯의 수량을 조사한 결과 간척답 볏짚이 일반답보다 약간 수량이 많았다.

        Mushrooms have a shorter shelf-life than most vegetables because of their very high respiration rates, sensitivity to enzymatic browning and susceptibility to microbial spoilage. This study was conducted to investigate effects of various packaging materials and precooling on the quality of mushrooms (Agaricus bisporus). Mushrooms were precooled at 4℃ for three hours and packaged using the following packaging materials; 1) polyethylene (PE) film bags of 0.03 mm thickness, 2) polypropylene (PP) film bags of 0.03 mm thickness, and 3) polystyrene (PS) tray+polyvinyl chloride (PVC) wrapper. The physiological changes (weight loss, gas composition, color, firmness, and sensory evaluation) associated with postharvest deterioration were monitored for 17 days at 10℃. The results showed that the PP film bag maintained quality of mushrooms most effectively, especially PP film bags inhibited decreasing firmness. The samples also exhibited smaller decreases in weight loss rate (0.57%) and Hunter L value (84.44) than PS tray+PVC wrapper (7.73%, 82.19) and PE film bags (0.89%, 82.96). Sensory evaluation level in all samples remained relatively constant during the first 5 days of storage. However, PE film bags and PS tray+PVC wrapper showed lower score of flavor, texture and color than PP film bags after 8 days of storage. This study suggested that PP film bag packaging effectively extends shelf-life of mushrooms during storage.

        This study was carried out to investigate the packaging status of the Agaricus bisporus mushrooms and the benefits of storing them after precooling to improve their distribution system using small packages. The packaging status of the Agaricus bisporus mushrooms was surveyed at a farm, a department store, a wholesale market, and a supermarket from May to September 2011. The packaging materials that were used were PS, carton, PP, LDPE, PLA, and PVC. The harvested Agaricus bisporus mushrooms were precooled at 4℃ for three hours and were then stored at 20℃ for three days. The weight loss rate of the precooled sample was slightly lower than that of the unprecooled sample; conversely, the L value of the precooled sample was higher than that of the unprecooled sample. The △E value was lowest in the precooled sample after packaging. The precooling process effectively prolonged the shelf life and enhanced the quality of the Agaricus bisporus mushrooms.
