        The quality and the nutritional ingredients and the functional activation of Nypa fruticans flower stalk was evaluated in this research. It consisted of 7.5% of water, 13.56% of crude protein, 0.84% of crude fat, 9.25% of crude ash, and 68.85% of carbohydrate. 12 kinds of minerals were identified, where the top 3 of them being K, Cl, and Na in order. There were a total of 15 types of amino acid analyzed, with the main amino acids of arginine 30.25%, aspartic acid 26.90%, and glutamic acid 17.12%. Total polyphenol content was 20,190.73 mg/100 g, and the total flavonoid content was 71.73 mg/100 g. The IC50 for DPPH radical scavenging ability was 0.017±0.00 mg/mL for Nypa fruticans Wurmb flower stalk, 0.672±0.01 mg/mL for blueberry, and 1.282±0.03 mg/mL for ginseng. The IC50 for ABTS radical scavenging ability was 0.070±0.00 mg/mL for Nypa fruticans Wurmb flower stalk, 2.918±0.13 mg/mL for blueberry, and 4.131±0.24 mg/mL for ginseng. For this reason, it is considered that containing plenty of polyphenol and antioxidant, Nypa fruticans Wurmb is related to antiinflammation. This research will contribute to production of functional foods and high value materials using Nypa fruticans Wurmb.

        In order to verify the quality characteristics of soybean milk added chickpeas, the following characteristics were investigated: pH, solid contents, color, DPPH radical scavenging, as well as electric nose and sensory evaluation. Physicochemical and the sensory characteristics were analyzed based on the experimental data. The pH value was different in the control and the treatments (p<0.005). As the quantity of chickpea content increased, the solid content was augmented (p<0.0001). The L value was 56.86 in the control, and with the amount of chickpea addition increasing, the L value increased to 57.43 in 100% chickpea soybean milk (p<0.0001). The a value and b value also increased significantly (p<0.0001). However, the DPPH radical scavenging in the control was the lowest but the antioxidant activity of 100% chickpea milk was more than 2.5 higher than that of the control (p<0.0001). In the electric nose experiment, the flavor component of 20%, 30% and 100% chickpea treatment showed a significant difference compared to the control in the flavor components. In the sensory evaluation, for the score of flavor (p<0.001) and taste (p<0.0001), the score was higher in the treatments where 20% and 30% of chickpeas were added. In the sensory test of texture, there was no significant difference in the different experimental conditions except for the 100% chickpea addition treatment. In the overall acceptability test, the scores of 20% and 30% chickpea treatment were the highest results, compared to other treatments (p<0.0001). According to the correlation analysis, both antioxidant activity (0.797) and solid content (0.834) had shown high correlation to pH among the physiochemical characteristics (p<0.01). In the sensory evaluation, color, flavor, taste, texture and overall acceptability had shown a positive correlation to the amount of the soy bean milk added chickpea (p<0.01). In particular, the overall acceptability had shown the highest correlation to the taste (0.803), and it was the texture which resulted in the next highest correlation for overall acceptability (0.666).

        This study was performed to determine the effects of different processing methods (AD: drying at 50°C for 15 h; ADR: roasting after drying; SAD: drying after steaming; SADR: roasting after steaming and drying) on the quality characteristics, total phenolic content, anthocyanin content, DPPH radical scavenging activity, and reducing powder of red radish (Bordeaux and watermelon radish) tea. The pH of red radish tea was the highest with SAD. In terms of the total sugar content, Bordeaux radish tea showed the highest level with AD, ADR, and SAD, and watermelon radish tea showed the highest level with SADR. The a value of Bordeaux radish tea was higher with AD and ADR. The b value of Bordeaux radish tea was increased with steaming and roasting treatment. In terms of measuring the colors of watermelon radish tea, the L value was decreased while the b value was increased with roasting treatment. The total phenolic content, DPPH radical scavenging activity, and reducing powder with ADR and SADR were higher than those in samples prepared by different processing methods. AD and SAD resulted in higher anthocyanin contents than ADR and SADR. In terms of sensory evaluation, the appearance and color were rated higher with AD and SAD, whereas the flavor and taste were ranked higher with ADR and SADR than in the other samples. The results suggest that red radish (Bordeaux and watermelon radish) tea prepared by ADR and SADR processing methods can be utilized as health functional tea material with antioxidant activity.

        The insects have been investigated as novel sources for foods and biomaterials in several recent studies. However,its effects on hair growth have not been sufficiently researched. To develop novel and natural materials for preventingalopecia and promoting hair growth, we investigated the antioxidant activity and hair growth promoting effect of Tenebriomolitor larvae extract (TME). As a result, DPPH radical scavenging activity was 81.17%, and nitrite scavenging activitywas 43.69%, which were similar to blueberry extract. And TME promoted the proliferation of human DPCs and NIH3T3cells, concentration dependently. In addition, the TME prevented not only DHT-induced DPCs cytotoxicity but also actionof TBM as a potassium channel blocker in NIH3T3 cells. These results suggest that TME can be used as a functionalmaterial for alopecia therapeutic reagent by preventing hair loss and promoting hair growth.

        Ganoderma lucidum has been reported to have various biological activities including antioxidant activity. The objective of this study was to compare the antioxidant effects between Ganoderma lucidum (GL) and antler-shaped fruiting body of Ganoderma lucidum (AGL). In vitro antioxidant activities were examined by 2,2-diphenyl-picrylhydrazyl hydrate (DPPH) and 1,2,2-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities of GL and AGL ethanol extracts. In the DPPH and ABTS radical scavenging activities of GL and AGL ethanol extracts, antioxidant activities of AGL extracts (IC50, 66.94 μg/ml and 131.23 μg/ml) was showed higher than GL extracts (IC50, 83.93 μg/ml and 164.54 μg/ml). Total polyphenol content and total flavonoid content (38.00 g GAE/kg extract and 11.58 g NE/kg extract) of AGL were found higher as compared to GL (34.23 g GAE/kg extract and 3.46 g NE/kg extract). In summary, the results of this study demonstrate that AGL extracts had higher antioxidant activities to GL.

        This study is carried out to compare ingredients and antioxidant activity of Bokryeong, Poria cocos wolf, cultivated in the landfill and facility. Comparisons of the composition of the landfill and facility Bokryeong were conducted in the first and second year. As a result, there was no statistically significant difference in all four components (oxygen, carbon, hydrogen, nitrogen). In the second year, GC-MS analysis was carried out using the extracts containing ginseng epidermis, using the samples taken from the Gangwon-do area in the first year and the second year. As a result, 1,3-Dihydroxyacetone dimer, 2-Furancarboxaldehyde, and Acetaldehyde were detected in the landfill Bokryeong. 2-Furancarboxaldehyde and Acetaldehyde contents were higher in facility Bokryeng. In biological activity assay, The anti-inflammatory of the landfill Bokryeng and facility Bokryeng were compared by using Raw 267.4 cell lines. As a result, it was confirmed that both of them had anti-inflammatory, but no difference was found.

        Honey production from approximately 1.7 million colonies owned by around 21 thousand beekeepers was almost 36 thousand M/T in Korea. Pollen has used as a food and medicine from before the Joseon Dynasty period in Korea. Pollen grains such as acorn (Quercus acutissima), actinidia (Actinidia arguta) and green tea (Camellia sinensis) are popular in the markets in Korea. But stiff pollen wall hindered dissolution of polysaccharides and lowered extraction efficiency. In the present study, we measured the antioxidant activity and the total polyphenol content from the pulverized and lyophilized green tea pollen grains inoculated with 6 kinds of fungi to confirm the husk removal effect. The total polyphenol content of green tea pollens was highest in lyophilized pollen medium inoculated with Armillaria mellea, and was lowest in pollen inoculated with Lentinula edodes. Total polyphenol content of the lyophilized pollen was higher than that of the refined pollen and the pulverized pollen in green tea pollen germinated with A. mellea. The total polyphenol content of the lyophilized green tea pollens germinated with A. mellea was 1.4-fold higher than that extracted with water. Measurement of antioxidant activity using the DPPH free radical scavenging method showed that the lyophilized green tea pollen grains germinated with A. mellea had the highest and that germinated with L. edodes was lowest in antioxidant activities. The lyophilized green tea pollen grains germinated with A. mellea was 2 to 4 times higher than that extracted with water in the antioxidant activity of DPPH free radical scavenging. Many germinated cells were formed around pore of green tea pollen inoculated with L. edodes, while those were formed at the end of hyphae derived from green tea pollen grains inoculated with A. mellea.

        Naringenin and its glycoside naringin (naringenin-7-O-glycoside) belong to this series of flavonoids and were well-known strong antioxidant activity. This study was conducted to flavonoid constituents and antioxidant activity of Pleurotus ostreatus and Pleurotus cornucopiae. In order to determine active ingredient contents of Pleurotus ostreatus and Pleurotus cornucopiae, we were carried out total polyphenolic content (TPC) and flavonoid content (TFC) analyses. As a result, TPC (31.05 ± 0.03 g GAE/kg extract) and TFC (13.25 ± 1.24 g NE/kg extract) of Pleurotus cornucopiae were found significantly higher as compared to Pleurotus ostreatus. The IC50 values based on the DPPH (56.50 ± 0.73 μg/ml) and ABTS (86.53 ± 3.86 μg/ml) for Pleurotus cornucopiae were generally stronger showing potential antioxidant properties compared to Pleurotus ostreatus. In addition, naringin and naringenin content were analyzed by high-performance liquid chromatography analysis. A great amount of naringin and naringenin was found in Pleurotus cornucopiae. These results indicate that the Pleurotus cornucopiae can be used as an antioxidant therapeutic agent.

        식물 및 동물성 단백질 유래 펩타이드 형태의 단백질 가수 분해물들은 항산화, 고혈압 완화, 면역조절, 진통완화 및 항균작용 등 생리활성이 있는 것으로 알려져 왔다. 본 연구는 연산오계란 단백질 가수 분해물을 Ultrafiltration를 이용하여 HDS(분획되지 않은 가수 분해물), 1 kDa, 5 kDa, 10 kDa, 50 kDa로 분획된 기능성 펩타이드의 DPPH radical scavenging activity, superoxide anion radical scavenging activity, hydroxyl radical scavenging activity 및 Fe2+ chelation ability을 평가하였다. 그 결 과 DPPH radical scavenging activity 최대값은 1 kDa(70.83 %), hydroxyl radical scavenging activity 최대값은 5 kDa (47.01 %), superoxide anion radical scavenging activity 최대값은 5 kDa(40.57 %), Fe2+ chelation ability 최대값은 5 kDa(29.87 %)로 나타났다. Ultrafiltration를 이용하여 fractionation된 단백질 가수 분해물의 항산화 저해 능력 IC50 평가하였다. 그 결과 HDS의 최대값은 superoxide anion radical scavenging activity(IC50, 5.42 mg/ml)이고, 1 kDa의 최대값은 Fe2+ chelation ability(IC50, 1.67 mg/ml)이고, 5 kDa의 최대값은 Fe2+ chelation ability(IC50, 2.09 mg/ml)이고, 10 kDa의 최대값은 Fe2+ chelation ability(IC50, 2.61 mg/ml)이고, 50 kDa의 최대값은 Fe2+ chelation ability(IC50, 4.53 mg/ml)이 다. 그러므로 본 연구 결과를 바탕으로 5 kDa를 이용하여 오계란 단백질에서 분획한 펩타이드는 항산 화 기능성 식품소재로서 활용할 가치가 높을 것으로 기대한다.

        식물 및 동물성 단백질 유래 펩타이드 형태의 단백질 가수 분해물들은 항산화, 고혈압 완화, 면역조절, 진통완화 및 항균작용 등 생리활성이 있는 것으로 알려져 왔다. 본 연구는 6가지 프로티아제 를 이용하여 오계란 단백질 가수분해물을 생산하고, 생산된 펩타이드의 항산화 능력을 평가하였다. 그 결과 가수분해도의 최대값은 protamex(46.3%)이고, DPPH 라디칼 소거능 최대값은 bromelain(57.23%), 하이드록시 라디칼 소거능 최대값은 alcalase(30.21%), 슈퍼옥사이드 라디칼 소거능 최대값은 alcalase(58.07%), Fe2+ 킬레이션 능력 최대값은 alcalase(72.06%)로 나타났다. 더 나아가 효소별 항산화 저해 능력 IC50 평가하였다. 그 결과 alcalase에 의한 최대값은 금속 킬레이션 눙력(IC50, 1.24 mg/mL) 이고, bromelain에 의한 최대값은 DPPH 소거능(IC50, 2.46 mg/mL)이고, flavourzyme에 의한 최대값은 금속 킬레이션 능력(IC50, 1.25 mg/mL)이고, neutrase에 의한 최대값은 DPPH 소거능(IC50, 3.64 mg/mL)이고, papain에 의한 최대값은 DPPH 소거능(IC50, 3.82 mg/mL)이고, protamex에 의한 최대값 은 DPPH 소거능(IC50, 1.93 mg/mL)이었다. 따라서 protease를 이용하여 오계란 단백질에서 추출한 펩 타이드는 항산화 기능성 식품소재로서 활용할 가치가 높을 것으로 기대한다.

        붉나무의 유용성에 대한 기초자료를 마련하고자 붉나무 수피를 에탄올로 추출하여 추출물의 몇 가지 이화학적 특성과 항산화 활성을 측정하였다. 추출물의 가용성 고형분의 함량은 73.5 mg/100g, 당도 는 17.8 °Brix로 측정되었으며, 총방향족 화합물, 총플라보노이드 함량 및 총페놀성 화합물의 함량은 각각 흡광도 0.508, 49.88 mg/100g 및 296.6 mg/100g으로 측정되었다. 추출물의 환원력은 대조구로서 추출물 의 가용성 고형분과 동량의 ascorbic acid의 27.5 %로 측정되었으나, 철환원력은 ascorbic acid 와 유사하 게 측정되었다. 추출물의 DPPH라디칼 소거능은 95.16 %로서 ascorbic acid와 거의 유사하였고, 금속이온 봉쇄능은 ascorbic acid의 74.73 %보다 높은 81.58 %로 측정되었다. 그리고 pH 2에서 추출물의 아질산염 소거능은 51.76 %로 측정되었으며, Rancimat test에 의한 대두유 산화 억제효과가 있음을 확인하였다.

        생태계 교란 식물로 알려진 가시박 추출물을 활용하여 생리 활성 효과를 알아보고, 기능성 화장품 소재로써의 활용 가능성을 확인하고자 하였다. 본 실험 방법으로는, 총 폴리페놀 함량, 총 플라 보노이드 함량을 측정하고, DPPH radical 소거능, 세포 내 ROS 생성 억제, NO 및 COX-2 발현 억제 효과를 평가하고자 하였다. 본 실험 결과, 가시박 추출물의 21 mg/g, 0.72 mg/g의 총 폴리페놀과 총 플라보노이드 함량을 확인하였으며, 높은 라디칼 소거 활성을 통한 항산화 활성을 확인 하였다. RAW 264.7세포와 HDF세포에서 100 μg/mL 농도까지 유의한 세포 독성은 확인되지 않았으며, HDF세포에 서의 농도 의존적인 ROS 생성 억제와 RAW 264.7 세포에서의 높은 NO 생성 억제와 COX-2 단백질 발현 억제 효과를 확인 하였다. 이와 같은 결과를 통하여 항산화 효과가 우수하고, 세포 내 ROS 생성 억제와 NO 생성 억제, COX-2 단백질 발현 억제 활성을 통하여 항산화 및 항염증의 효과를 가진 기 능성 화장품 소재로써의 활용 가능성을 확인 하였다.

        Proximate analysis and antioxidant activity of cultivated wild Panax ginseng (CWPG) were investigated to provide fundamental information of CWPG with different ages and to increase its industrial application. Proximate analyses of CWPG with different ages were performed. Extraction of CWPG with different ages was carried out using heatreflux extraction, and their extraction yield, crude saponin content, ginsenoside content, and antioxidant activity were analyzed. Moisture content decreased, but crude fat and crude protein were increased with aging. Extraction yield and crude saponin contents did not show a specific pattern while 5-year-old CWPG revealed the highest extraction yield and crude saponin content. All CWPGs showed typical ginsenoside profiles containing C-K and Rh2 ginsenosides, which are not found in ginseng. The 3-year-old CWPG showed the highest antioxidant activity including total phenolic content, total flavonoid content, and DPPH and ABTS radical scavenging activities. Moreover, 3-year-old CWPG also revealed the highest acidic polysaccharide content. Therefore, these results suggested that 3-year-old CWPG, which is the cheapest, can be used in industrial application due to its high antioxidant activity and acidic polysaccharide content with similar ginsenoside profile compared to 5- and 7-year-old CWPGs.

        To increase the shelf-life of strawberry, samples were treated with two gel packs containing slow-released chlorine dioxide (ClO2) gas at 3~5 ppm for 6 days at room temperature and the changes in the major chemical components (ascorbic acid, polyphenols, flavonoids and anthocyanin) contents and antioxidative activities (DPPH, ABTS radical scavenging and metal chelating activity) were investigated. The content of ascorbic acid of control was 40.38 mg% and contained 35.67~44.75 mg% during 6 days. There was no tendency to increase or decrease during storage period. The contents of ascorbic acid of control and 3~5 ppm ClO2 gas treated samples were not significantly different during storage period. The content of polyphenol compounds of initial stage was 111.23 mg% and contained 117.78~132.40 mg% during 6 days. The contents of polyphenol compounds of 3~5 ppm ClO2 gas treated samples were 103.51~130.25 mg%. There were no significant different between them during storage. The flavonoids and anthocyanin contents were not different from the control during storage period regardless of 3~5 ppm ClO2 gas treatment. Furthermore, antioxidative activities were not different among the control and ClO2 gas treatments during storage.
