        To investigate of the content of fatty acids and cholesterol level in Raja Skates, the skate was purchesed from Yangdong Fisheries market in Kwangju, Korea. The experimental skate contained moisture 77.1%, crude protein 20.5%, crude lipid 0.68% and ash 1.72% as the general components. The fatty acids composition of skate are 28 kinds, such as 10 kinds of saturated fatty acid and 18 kinds of unsaturated fatty acid. There are 5 kinds of odd numbered fatty acid, such as C15:0, C17:0, C19:0, C25:0. Lignoceric acid shows 11% content. As an unsaturated fatty acid, getoleic acid, C22:1: selecholeic acid, C24:1:9, 12-hexadecadienic acid, C16:2: trans-linolelaidic acid, C18:2:13, 16-docosadienoic acid, C22:2: are analyzed as the particular one. The p/s ratio of skates is 1.02 and n-3/n-6 ratio of Skates is 0.82, respectively. The content of cholesterol level of Skates muscle is less than 20mg%, and liver contains 300-500 mg% and Nechang-tang contains 100mg% each.

        The Synthesis of azobenzene containing long chain fatty acid and poly vinyl alcohol by esterification reaction(Cn-Azo-PVA) was optimized, starting from P-(P'-hydroxy phenyl azo)-benzoic acid and the product of reaction containing azobenzene chromophores was investigated by ultraviolet spectrophotometery in toluene solvent at room temperature. In addition, UV absorption spectra of Langmmuir Blodggett (LB) film deposited on quartz plate have been measured and the structure of these compounds were ascertained by means of Ultraviolet and FT-IR. Recrystallization of reaction product in the solvent results the experimental yield obtained about 22.27% P-(P'-octadecyloxy phenyl azo)-benzoic acid-poly vinyl alcohol. Long chain azobenzene derivative-poly vinyl alcohols are induced phtoisomerization by u, v, and visible light irradiation. The LB film of azobenzene containing long chain fatty acids(C18-Azo-PVA) are possible of being applied to functional molecular devices such as photomemory and light switching.

        This study was aimed to observe dose-response effects of squid liver oil enriched in n3 polyunsaturated fatty acids(n-3 PUFA) on the metabolism of streptozotocint(STZ)-induced diabetic rats. In this experiment, 24 STZ-induced diabetic male rats of Sprague Dawley strain were divided into 4 groups and fed for 4 weeks with basal diet(0%). 33%,67% and 100% squid liver oil(SLO) of total fat content, and 6 normal rats were fed with 0% SLO diet at the same time. The results obtained were as follows: 1. Rat group fed with 33% SLO diet showed the least body weight loss and changes in blood glucose, while ones of 100% SLO diet showed the highest level. 2. Serum total protein and ratio of albumin to globulin of all the groups were below the standard level, but did not show significantly different among diet groups. 3. Serum creatinine concentration of all the groups were stayed whthin normal range, but BUN were 3 to 4 times higher than normal rats. BUN concentration of rats fed with 0% and 33% SLO diet was significantly lower than those of others. 4. Total-cholesterol level of serum increased in all the groups except 33% SLO diet, but since HDL-chol, levels and TG concentration went up with an incerase of SLO in the diets, the ratio of HDL-chol. to total-chol, of rats fed with 67% and 100% SLO diet showed higher than those with 0%, and 33% SLO, and TG concentration of rats fed with 67% and 100% SLO diet decreased significantly.

        We have studies fatty acid composition of water extracts of parts of omija (Schizandra chinensis Baillon) and antioxidant activities of fractionated omija parts (fruits, endocarps, seeds) were determined by DPPH methods and by in vitro hepatic microsomal lipid peroxidation system. Fatty acid composition was not different by parts of omija and major fatty acids are linoleic, oleic, and palimitic acids, among fatty acids is water extracts of parts of omija, linoleic acid was highest in content. Methanol and buthanol fractions of seeds and ethyl acetate fraction of endocarps showed stronger antioxidant activities by DPPH methods. Methanol and buthanol fractions of seeds also showed on inhibitory effect on in vitro liver microsomal lipid peroxidation.

        Interaction of dietary Magnesium, Calcium and Polyunsaturated fatty acid(vegetable oils)on 3-Hydroxy-3-Methylglutaryl Co-A reductase activity was studied for a period of 30 days using isocalories and isonitrogenous as a basal diet . The subject rabbits were divided into 18 feeding groups. The results are summarized as follows: 1. The ratio of α1-lipoprotein par lipalbumin is 0.34 for control group, 0.38 the highest group fed 0.1 Mg(II) 10ml plus perilla oil and basal diet, the lowest 0.25 group fed 0.1M Mg(II) 5ml plus sesame oil and basal diet. 2. The ratio ratio of α2-lipoprotein per lipalbumin is 0.64 for control group. 0.95 as the highest for the group fed 0.1M Ca(II) 15ml plus sesame oil and basal diet, 0.1M Ca(II) 5ml plus perilla oil and basal diet. 3. The ratio of β-lipoprotein per lipalbumin is 0.71 for control group, the highest 0.81 for the groups fed 0.1M Mg(II) 10ml plus sesame oil and basal diet, the lowest 0.37 for the group fed 0.1M Mg(II) 15ml plus soybean oil and basal diet. 4. In serum triglyceride, control group was 129.5mg%, the highest 155.4mg% for the group fed 0.1M Ca(II) 5ml plus sesame oil and basal diet, the lowest 85.7mg% for the group fed 0.1M Mg(II) 10ml plus soybean oil and basal diet. 5. In serum cholesterol, control group was 96.7mg%, the highest 152.5mg% for the group fed 0.1M Ca(II) 10ml plus sesame oil and basal diet, the lowest 80.5mg% for the group fed 0.1M Mg(II) 15ml plus soybean oil and basal diet. 6. In case of HMG-CoA reductase activity, control group was 0.95, the highest 0.98 for the group fed 0.1M Ca(II) plus soybean oil and basal diet. 7. Interaction between metal(II) ions and polyunsaturated fatty acid(vegetable oil) are soybean oil〉sesame oil〉perilla oil, for Mg(II). soybean oil〉perilla oil〉sesame oil, for Ca(II). Therefore, it is invetigated that the interaction between metal ion and polyunsaturated fatty acid is the higher, the cholesterol level is the lower, and HMG-CoA reductase activity is increased.

        This study aimed to investigate the effect of amino acid additives to weaned piglet diets on the pH and volatile fatty acids of pig slurries. A total of 135 weaned 22 -day-old piglets (Yorkshire x Landrace x Duroc) were used in this 56-d study. The three dietary treatments were as follows: (1) Control as a basal diet, (2) 1% amino acid additive and (3) 2% amino acid additive. Both pH and acetic acid values at 71 and 78 days were significantly different in all treatment groups (p<0.05). In addition, significant differences in propionic acid values were observed among treatment groups at 64 and 78 days (p<0.05). However, pH, acetic acid, and propionic acid values did not differ between 1% and 2% amino acid treatment groups. In conclusion, adding 1% and 2% amino acid to weaned piglet diets reduced the pH, acetic acid and propionic acid contents of pig slurries by acting as a probiotic. This may help formulate increase management strategies for improving the pig housing environment.

        Paddy rice is typically stored during postharvest until rice grain is processed into brown rice and milled rice by hulling and milling procedure, respectively. Recently, instead of storing paddy rice, storage of brown rice has been in the spotlight because it is more convenient and economically feasible. Different brown rice cultivars with varying amylose contents including waxy rice, medium-waxy rice, and non-glutinous rice were stored in room temperature storage for four months, and the changes in grain qualities of brown rice were evaluated. Amylose content significantly affected pasting properties in which rice cultivar with higher amylose content showed longer pasting time and higher peak viscosity. Storage also affected pasting viscosities, showing an increase in peak viscosity, but a decrease in breakdown viscosity. The changes in pasting viscosity during storage could be an important starch property for aged brown rice utilization. Waxy brown rice showed the weakest aging property in terms of free fatty acids (FFA) accumulation, whereas non-glutinous rice was more substantial grain quality against aging. The FFA values of two months storage were not significantly different from the initial FFA contents, suggesting that brown rice stored in room temperature for two months could be feasible for direct consumption of brown rice.

        지구 온난화와 같은 환경 문제가 대두되고 화석 연료에 대한 의존도가 높아짐에 따라 탄소 중립 개념에 대한 관심이 높아졌다. 특히, 전세계적으로 폐기물의 에너지화에 대한 연구가 활발히 진행되고 있다. 혐기성 소화는 유기성 폐기물로부터 바이오가스를 생성하는 에너지 회수의 한 방법으로써 전 세계적으로 많이 사용되는 기술이며 혐기성 소화의 효율 증대와 관련된 연구 또한 지속되고 있다. 혐기성 소화의 효율 극대화와 안정적인 운영을 위해서는 운영 조건을 최적화하고 최적화된 운영 조건을 모니터링 및 관리하는 것이 매우 중요하다. 혐기성 소화 운영에 있어 메탄가스량, 온도 등과 같은 여러 인자들 중, 휘발성 유기산의 농도 변화를 모니터링하는 것은 단시간에 급작스러운 반응조 내 변화를 확인하는 데에 매우 효과적인 인자 중 하나라는 것이 많은 연구를 통해 밝혀졌다. 기존 휘발성 유기산 농도 측정법에는 적정법, GC분석법 등이 있으며, 이들 측정법들은 분석 시간이 오래걸리고 측정 결과가 분석 조건에 민감하기 때문에 새로운 측정법의 개발이 요구되는 실정이다. 본 연구에서는 이러한 단점을 보완하며 신뢰성이 확보된 결과를 측정할 수 있는 다공성 물질 이용 촉매모사반응을 적용하였다. 본 연구에서 다룬 휘발성 유기산 측정 방법은 다공성 물질을 이용하여 열적 처리를 통한 휘발성 유기산의 에스터화반응을 이용한 방법으로서, 별도의 용매 추출 없이 바로 물 속의 휘발성 유기산의 농도를 측정할 수 있으며 높은 정확성과 재현성을 가진다. 본 연구에서는 휘발성 유기산 농도 측정을 위해 촉매모사반응의 메탄올과 샘플의 비율, 샘플 농도, 반응 온도 등 주요 인자들의 최적화를 진행하였다. 또한, 기존의 휘발성 유기산 농도 측정법 중 하나인 분광광도법과 측정 결과를 비교하였다.

        Background : The study about ginseng cultured roots have been reported mainly ginsenosides in saponins family. Other phytochemical such as non-saponins of fatty acid has been revealed its bioactive activity including anti-oxidation, whitening, anti-cancer. Supercritical extraction (SE) process mainly refer to the extraction with CO2, is usually from a solid matrix, is a sample preparation step for analytical purposes. SE produce no residual solvent and possess high stability of the extract component, which is advantageous for fatty acid analysis. Methods and Results : Fermented ginseng cultured roots used in the experiment were used for fermentation using Pediococcus pentosaceus. SE performed at different temperature, pressure and extraction time using non-fermented and fermented ginseng roots. Further we fractionated from fermented ginseng using Methanol, Hexane, Ethanol, Ethyl acetate and Butanol. We compared fatty acids contents ginseng extractions by GC analysis. Methyl linoleate contents was 44% of fatty acids supercritical extraction contained. The contents of Methyl linoleate was the most dominant component among 37 types of fatty acids by SE and other extractions solvent. Total fatty acids contents obtained by SE process from fermented ginseng (1325.61ppm) was twice than from non-fermented ginseng (618.47ppm). Conclusion : Fatty acids contents by SE was increased at high pressure. The best condition for fatty acids contents extraction was 60℃, 350bar and 3h.

        Background : Despite the presence of various bioactive compounds in ginseng, there is lack of study on the variations of bioactive compounds in ginseng according to the cultivation of soil and the applied fertilizer types (or amount). Therefore, this study aims to examine the variations of 37 fatty acids (FA) and 8 vitamin E (Vit-E) vitamers in 6-year-old ginseng root cultivated in different soil types with different fertilizers regimes. Methods and Results : The profiling of 37 FAs and 8 Vit-E vitamers in 6-year-old ginseng roots was measured by gas chromatography coupled with a flame ionization detector, and then these results were statistically analyzed with chemometrics. The FA and Vit-E content in ginseng roots varied significantly with respect to soil cultivation conditions due to organic fertilizer types and amounts used. Unsaturated FA in ginseng is approximately 2.7 fold higher than the saturated FA. Linoleic, palmitic, and oleic acids were the most abundant FAs found in the ginseng roots. Also, the major Vit-E vitamer found in ginseng root is α -tocopherol. In particular, the application of rice straw compost or food waste fertilizer was increased to create nutritionally-desirable FAs and bioactive Vit-E in ginseng root. In addition, phytonutrient profiling coupled with chemometrics can be used to discriminate the cultivation conditions of ginseng. Conclusion : This preliminary study extends our understanding about the variations of FA and Vit-E in ginseng root depending on cultivation conditions. Hence, these results can be useful as basic information for reliable ginseng production containing high amounts of phytonutrients in a paddy-converted field.

        Background : This text was conducted to compare the difference of fatty acid by part and ha bitat of Glehnia littoralis in Korea Midwest. Methods and Results : In Glehnia littoralis, Saturated fatty acid consisted of palmitic acid, ste aric acid, and unsaturated fatty acid was oleic acid, linoleic acid, linolenic acid. Content of w hole fatty acid was the most as 42.8% linoleic acid, and stearic acid was less best as 2.9%. Other fatty acid were oleic acid 27.1%, palmitic acid 15.3%, linolenic acid 11.9%. Fatty acid by plant part it was the most in leaf that linoleic acid (31.4%), and it was the most in root t hat linoleic acid (68.3%), and it was the most in breed that oleic acid (65.5%). Fatty acid by natural habitat contained in Incheon area located in high latitude more than Taean area. Conclusions : In Glehnia littoralis of Korea Midwest, The collection and cultivation of medici nal scope was broader, because difference of fatty acid content by natural habitat was light.

        Background : The major compounds of Angelica species are decursin, decursinol angelate, nodakenin, umbelliferone and β-sitosterol, which act anti-inflammatories, reduce pains, protect the liver and enhance the immune system. This study investigated the chemical compositions, minerals, metals, sugars and overall amino acid composition in Angelica gigas Nakai. Methods and Results : Powder of Angelica roots smaller than 30 mesh were used. Physico chemical analysis revealed the presence of carbohydrates (62.0%), crude proteins (13.9%), moisture (11.4%), crude fats (7.3%) and ash (5.4%). Results showed that potassium was present in the highest amount (1,859 ppm), followed by magnesium (214.5 ppm), calcium (147.3 ppm) and sodium (6.0 ppm). Free sugar profiles showed the presence of sucrose (29.3 g/100 g). The total amino acids concentrations was 9,752 ㎎/ 100 g, the most common and dominant amino acids were arginine (2,181 ㎎/100 g), glutamic acid (1,212 ㎎/100 g) and aspartic acid (834 ㎎/100 g). The total free amino acids contents was 1,476 ㎎/100 g, in which the most common amino acid were arginine (932 ㎎/100 g), glutamic acid (127 ㎎/100 g), and γ-aminobutyric acid (80.4 ㎎/100 g). The fatty acid composition of A. gigas showed a higher concentration of unsaturated fatty acids such as linoleic acid (443.9 ㎎/100 g) and palmitic acid (181.3 ㎎/100 g) according to gas chromatography. Conclusions : These results showed that Angelica roots can be used in various fields of foods and medicines, and in the preparation of cosmetics.

        Background : This study was carried out to investigate the changes to fatty acid, mineral, and ginsenosides contents in ginseng seed when they were stratified for different length of time and to determine whether variety had any effects on the changes. The aim was to improve the ginseng seed stratification process. Methods and Results : The ginseng varieties used were Geumpoong, Chunpoong, Yunpoong, and K-1. Stratifying periods treated on ginseng seed were 0, 20, 40, 60, 80, and 100 days. The main fatty acids of ginseng seed were oleic acid (C18 : 1, n9c) with a content of 78.40 - 79.20% followed by linoleic acid (C18 : 2, n6c). The main mineral in the seeds was potassium (K), at 1208.2 - 1337.6 ㎎/100 g. The main ginsenosides in ginseng seed were ginsenoside Re and Rb1. Increasing the length of the stratification periods led to increases in oleic acid content (60 - 80 days), however after this the content declined. In contrast, linoleic acid content fell as the stratification period increased. K, P, Mg, Ca and Na content rose as the stratification period increased. The ginsenoside Re content of Chunpoong and K-1 cultivar seeds also rose as the stratification period increased which meant that total ginsenoside content increased. However, ginsenoside Re content rose in Geumpoong and Yunpoong seeds, but total ginsenoside content decreased as the stratification period increased. Conclusions : Some beneficial compound in ginseng seed rose as the stratification period increased. Therefore, ginseng seed stratification could improve the food value of ginseng.

        The effect of the metal oxide catalyst in the dimerization of waste vegetable oil was investigated. The high efficiency and recyclability has allowed different metal oxides to be used as catalysts in numerous synthetic reactions. Herein, clay, aluminum, titanium, calcium, magnesium and silicon oxide micro/nanoparticles are used in a Diels-Alder reaction to catalyze the production of the dimer acids. The metal oxides assist the electron transfers during cyclization to produce the desired product. Liquid chromatography mass spectroscopy (LC-MS) and gel permeation chromatography (GPC) were used to verify the production of dimer acids. For the confirmation of cyclization, compounds were analyzed using the nuclear magnetic resonance (NMR) spectroscopy. From the analysis, silylated or pristine clay showed its effectiveness as a catalyst in dimerization. Furthermore, alumina and alumina/silica composite showed successful performance in the reaction to yield cyclic dimer acids. These result suggested that metal oxides and montmorillonite might be used in synthesis of dimer acids for the recycle of waste vegetable oils.

        A rapid and simple method for the quantitative determination of volatile fatty acids (VFAs; propionic acid, n-butyric acid, i-valeric acid and n-valeric acid) and indoles (phenol, p-cresol, 4-ethyl phenol, indole and skatole) in pig slurry and dog excrement using solid-phase micro-extraction (SPME) coupled to gas chromatography was evaluated. 50/30 ㎛ DVB/CAR/PDMS (Divinylbenzene/Carboxen/Polydimethylsiloxane) fiber was used to extract the target compounds in aqueous media. Sample amount and adsorption time was standardized for the routine analysis. Detection limits were from 0.11 to 0.15 ㎍/L for VFAs and from 0.12 to 0.28 ㎍/L for indoles and the correlations observed (R2) were 0.975~1.000. This method was applied to the pig slurry, fertilizer, compost and dog excrement. In nearly all cases, the indoles were detected in concentrations of higher than their limits of detection (DOLs). But the VFAs in swine manure were below their DOLs.

        Rapeseed (Brassica napus L.) oil with high oleic acid content is of great interest for both food and non-food uses. The ‘Tamla’ variety, characterized by oleic acid content of approximately 69%, was treated with 1% ethyl methane sulfonate (EMS) to induce mutations in the fatty acid biosynthesis pathway. M1 plants were selfed and subsequent generations (M2, M3, and M4 mutants) were analyzed to identify mutants having increased levels of oleic acid. M2 mutants showed oleic acid content ranging from 13.5% to 76.9% with some mutants (TR-458 and TR-544) having up to 74.7% and 76.9% oleic acid, which was an increase of nearly 5% and 7%, respectively, compared to untreated cv ‘Tamla’. We selected two M3 mutants with >75% oleic acid content. One mutant (TR-458-2) had increased oleic acid (75.9%) and decreased linoleic acid (12.5%) and linolenic acid (4.4%) contents. The other (TR-544-1) showed increased oleic acid content (75.7%) and decreased linoleic acid (13.5%) and linolenic acid (3.3%) contents. The accumulation or reduction of oleic acid content in the selected M4 mutants was also accompanied by a simultaneous decrease or increase in linoleic and linolenic acid contents. The high-oleic lines could be utilized further in breeding programs for improvement of rapeseed oil quality.

        We investigated the effects of sea urchin shell powder on 2 volatile fatty acids, acetic and butyric acid, in poultry litter. A total of 60 1-d-old male broiler chicks (Arbor Acres) were allocated to 2 treatments (basal diet and 1% sea urchin shell powder) with 3 replicates of 10 birds each. During the 4-week experimental period, significant differences in acetic acid and butyric acid concentrations were observed between treatments (P < 0.05), except for acetic acid at 1 week. Additions of 1% sea urchin shell powder resulted in lower acetic and butyric acid concentrations compared to the litter of control birds. We conclude that the sea urchin shell powder used in this study might prove beneficial in reducing environmental pollution caused by poultry litter.
