We developed a new oyster mushroom cultivar named 'Dawon-tari', which has a longer stipe and higher yield than those of ‘sootari’.‘Dawon-tari’ was crossed by mating monokaryons isolated from ‘Sootari’ and ‘Daejang2ho’. The optimal temperature for mycelial growth was determined to be 20~25°C on potato dextrose agar medium, while the optimal temperatures for primordia formation and fruiting body growth were 15~17°C on a sawdust substrate. During bottle cultivation, the mycelial growth phase required approximately 26 days. Additionally, primordia formation required 5 days, and fruiting body growth took 4 days. The fruiting bodies exhibited a shallow funnel shape; were grayishbrown; and the stipes were characterized by a long, thin structure. The yield of fruiting bodies was 185 g per 1,100 mL bottle, which was 5% higher than that of ‘Sootari’.
The objective of this study was to investigate the quality characteristics of Campbell Early grape-added traditional Korean wines (yakju) prepared with different yeasts and pretreatments. The first pretreatment (A) was prepared by crushing the grapes, the second method (B) was prepared by heating the grapes at 60~70℃ for 30 minutes, and the third method (C) was prepared by freeze-concentrating grape juice. The pH of the fermented wines ranged from 3.77 to 4.10, and the total acidity of the samples ranged from 0.32 to 0.62%. The a value (redness) ranged from –0.40 to 17.89, which was higher in Campbell Early-added samples than in the controls (grapes not added). Total polyphenol content was the highest in samples prepared by crushing or heating Campbell Early grapes with ES22, and the total flavonoid contents were the highest in samples prepared by crushing Campbell Early grapes with ES22. The anthocyanin contents were also the highest in the samples fermented by heating Campbell Early grapes. ABTS and DPPH radical scavenging activities were also the highest (84.08 and 77.56%, respectively) in samples fermented by heating Campbell Early grapes.
A new brown variety of Flammulina velutipes, referred to as ‘Asakgold,’ was bred by crossing two monokaryons isolated from the “Geumhyang2ho” and “Garlmoe” varieties. The pileus color of the new variety is light brown and its shape is hemispherical. During bottle cultivation, the period necessary for mycelial growth was 40 days, 9 days for primordia formation and 15 days for fruiting body growth. The total cultivation period was 64 days, which was similar to that of the control variety “Yeoreumhyang1ho.” The pileus of the new variety was similar and the stipe was thinner and longer than that of the control. The number of valid stipes per bottle was 495, which was 37 % higher than that of the control (362), and the yield was 214 g, 16 % higher than that of the control (185 g). The -glucan content was 28.69 %, which was observed to be 1.6 times more than that of the control.
A new dark brown variety of Flammulina velutipes, referred to as ‘Asakchoco’, was bred by crossing two monokaryons isolated from the ‘Yeoreumhyang2ho’ and ‘Guemhyang2ho’ varieties. The pileus color of the new variety is dark brown and the stipe color is ivory, with uniformity from the upper section to the base. In addition, the primordia formation is uniform compared to that of the control, and the advantage of this is that the pileus does not become deformed after the primordia formation. During bottle cultivation, the period necessary for mycelial growth was 40 d, for primordia formation was 8 d, and for fruiting body growth was 16 d. The total cultivation period was 64 d, which was 2 d shorter than that of the control. The pileus was smaller and thicker and the stipe diameter was the same, but the stipe length was longer than that of the control. The number of valid stipes per bottle was 441, 24% higher than that of the control (357), and the yield was 197 g, 19% higher than that of the control (166 g).
This study investigated the quality characteristics of beyolmijang prepared with corn (steamed and roasted corn) with different pretreatments and simultaneously added starter (Bacillus velezensis JH1). pH decreased, whereas total acidity showed a tendency to increase. The moisture content decreased slightly according to the fermentation period. In color, the L and b values decreased in all samples, whereas the a value showed a tendency to increase significantly. In microorganisms, sample D had more lactic acid bacteria, whereas the mold content was lower. The total polyphenol content was highest at six weeks in sample E, and other samples showed a tendency to decrease over eight weeks. Antioxidant activity increased significantly. In particular, the content in sample E was significantly higher. Reducing sugar showed a tendency to increase as the fermentation period increased. The highest content was found in sample C containing roasted corn at six weeks of fermentation. Amino nitrogen and ammonia nitrogen content increased in all samples. As a result of electronic tongue, sample E prepared with steamed corn, roasted corn, and lactic acid bacteria showed a low salty taste, sour taste, and high umami taste and was considered a good material for the development of byeolmijang.
This study aimed to replace the imported Chinese complete medium for Lentinula edodes with a newly-developed complete medium that is suitable for export as well. Three media compositions that supported fast mycelium growth and higher density, compared to that in the control, were chosen. Culture in the T13 medium reduced the incubation period for ‘Nongjingo’ by 12 days and for ‘Cham-aram’ by 10 days, compared to that required for the control; in addition, the number of days required for browning was greatly reduced for both varieties. The quantity of each mixed medium was increased according to the composition from the 1st to the 5th cycle by 5.9% for ‘Nongjingo’ and 12.6% for ‘Cham-aram’ in T13, compared to that in the control. A mixed medium comprising oak sawdust + Douglas fir sawdust + corn flour (40:40:20, v/v) was selected as the most suitable complete medium.
A total of 51 vegetables and fruits, commonly consumed agriculture products in Korea, were analyzed for their α-carotene, β- carotene, and β-cryptoxanthin contents as provitamin A. The beta-carotene content (μg/100 g) was high in a few green leaf vegetables such as coriander (5,924.07), gegeol radish leaf (5.855.72), and curried mallow (5,138.01), while α-carotene and β-cryptoxanthin contents were not detected. The β-carotene in 8 kinds of 20 general vegetables was detected in the range of 214.06~1,437.67 μg/100 g, while α-carotene was detected at 460.17 μg/100 g in only old pumpkin. The β-cryptoxanthin was detected in the range of 106.55~315.49 μg/100 g in Japanese elm, watermelon, white cucumber, and lettuce. However, carotenoids were not detected in 10 kinds of agricultural products including oriental melon, potato, etc. In fruits, the beta-carotene contents ranged from 165.72~3,997.39 μg/100 g, showing maximum value in apple mango and minimum value in persimmon. The β-cryptoxanthin was detected at 232.22 μg/100 g in only passion fruit, while the α-carotene was detected at 77.25 μg/100 g in only darae. Thus, based on the analyzed results of carotenoids of agriculture products consumed or cultivated in Korea, and it was found that green leaf vegetables comprise high beta-carotene overall.
In this study, we attempted to compare the quality characteristics of korean traditional wines with different amounts of corn and sorghum. These samples were analyzed for pH, total acidity, ethanol contents, total polyphenol, total flavonoid and tannin contents, ABTS and DPPH radical scavenging activities. The pH of fermented wines ranged from 3.83 to 4.64 and the total acidity of samples ranged from 0.30~0.63% on the 12th day of fermentation period. After 12 days of fermentation, the alcohol content of sorghum and corn fermented wines ranged between 11.6~15.5%. The a value(Redness) of fermented wines was the highest at 8.13 in B treatment and the a value decreased as the rate of corn addition increased. Total polyphenol and flavonoid contents had the highest values(162.64 and 18.44 mg/100 mL, respectively) in the E treatment which is the fermented wines of 25% Sorghum and 75% Corn. The ABTS and DPPH radical scavenging activity of the samples were 71.06~74.57% and 15.46~36.20% respectively. Antioxidant activity was higher in fermented wines with sorghum and corn than in control. As a result, this study provides useful scientific information that quality characteristics of fermented wines containing sorghum and corn and forms a basis in the food and wine industry.
The purpose of this study was to examine the quality characteristics of cookies made with Angelica gigas Nakai fermented by Lactobacillus paracasei. As the content of Angelica gigas Nakai fermented by L. paracasei (AFL) powder increased, the pH of the cookies decreased from 6.3 to 5.2. There was no significant difference in the moisture content depending on AFL powder content. The content of reducing sugar also increased with increasing AFL powder content. Regarding the surface color of the cookies, the L- and b-values decreased with increasing AFL powder content, whereas the a-value increased. As the AFL powder content increased, the total polyphenol content and ABTS and DPPH radical scavenging activities significantly increased. Cookies with 8% AFL powder (AC8) had the highest levels of 107.16 mg%, 38.69%, and 65.56%, respectively. The texture, adhesiveness, and cohesiveness of the cookies with various AFL powder levels were not significantly different, and hardness, springiness, gumminess, and chewiness showed no tendencies toward changes. Taken together, these results showed that when AFL powder was added to cookies, bioactivities such as antioxidant activity increased, making AFL powder a good material with high potential for use in commercially baked products.
The purpose of this study was to examine the quality characteristics of byeolmijang prepared several roasted whole grain powders (oat, brown rice, black soybean, corn) for eight weeks. As the fermentation progressed, the pH decreased from 6.10~6.12 to 4.48~4.92 and the total acidity increased dramatically from 0.41~0.48% to 1.67~2.24%. There were no differences in the moisture content. The content of reducing sugar decreased, in particular, brown rice sample(C) decreased significantly than the other samples during fermentation. In color, L and b-value decreased all samples, whereas a-value showed a tendency to slightly increase. The total cell counts and lactic acid bacteria revealed an increasing tendency during fermentation. In case of the amino-type nitrogen contents, it increased significantly during the fermentation period, especially control sample (A) showed the highest content significantly. The total polyphenol of all samples increased in the fermentation period. ABTS and DPPH radical scavenging activities also increased, especially corn sample (E) had the highest levels. In by electronic tongue analysis, corn sample (E) revealed higher umami and sourness than the control. So, by adding roasted corn powder, it can enhance function and taste of byeolmijang.
