        This study addresses the development of a soy hamburger patty containing enzyme-treated textured soy protein (TSP) as a meat analogue. In order to reduce the beany flavor and enhance the texture, TSP was treated with 0.3% Flavourzyme for 5, 10, 20, or 30 min. The degree of hydrolysis and the water holding capacity of the TSP increased with increasing hydrolysis time. The oil binding capacity of the TSP also increased with increasing hydrolysis time, approaching the maximal value, 175.82%, at 30 min, whereas that of pork scored with the lowest value of 128.67%. The volume of pork was reduced to 81.5% as the result of heat treatment, whereas that of the TSP increased to 140.57%. The values of 'L', 'b', and 'δE' differed significantly (p〈0.001) with heat treatment, but the 'a' values did not differ significantly. With regard to texture, the hardness values were highest in the pork hamburger patty (PHP), and were lowest in the soy hamburger patty (SHP) containing untreated TSP. The hardness of the SHP containing TSP treated for 20 min did not differ significantly from that of the PHP. The cohesiveness and gumminess of the SHP treated for 20 min were highest, whereas those treated for 10 min were the lowest. The gumminess of the SHP treated for 20 min did not differ significantly from that of pork. The chewiness of the PHP was the highest, whereas that of the SHP treated for 5 min was the lowest. In our sensory evaluation, PHP evidenced the highest scores, followed by the SHP treated for 30 min, as color, texture, beany flavor, and overall quality all improved as the consequence of increasing enzyme treatment duration. In conclusion, it is believed that SHP has great potential as a substitute for meat, in that the flavor, texture, and beany flavor of SHP did not differ significantly from those of PHP.

        A total of 240 weaned pigs (Landrace ×Yorkshire × Duroc, 22±3 d of age, 5.16±0.90 kg initial body weight) were used to study the effect of feeding level of microbial fermented soya protein on their blood hematology, enzymes and immune cell populations. The microbial (Aspergillus oryzae + Bacillus subtilis) fermented soya protein (FSP) was used. Pigs were allotted to four dietary treatments, each comprising of 4 pens with 15 pigs. Basal diets consisted of 15% soya bean meal (Control diet); while for treatment diets SBM was replaced with 3, 6 and 9% FSP. The experimental diets were fed from 0 to 14 day after weaning and then a common commercial diet was fed from 15 to 35 day. Blood was collected on 14 and 35 day of experiment and analyzed for hematology, plasma aspartate transaminase (AST), plasma alanine transaminase (ALT) and immune cell populations. Increasing the level of FSP in the diet of pigs linearly decreased distribution of red blood cells (P<0.01), MPV (P<0.05), MO (P<0.05), EO (P<0.05) and BA (P<0.05) on d 14. Linear and quadratic decrease in the RBC (P<0.05), Hb (P<0.05), HCT (P<0.01), PLT (P<0.001) and EO (P<0.05) and linear increase in the MCHC (P<0.001), MPV (P<0.05), WBC (P<0.05) and NE (P<0.05) on d 35 was noted. Pigs fed with 6% FSP had lower (P<0.05) levels of AST and ALT on d 14, while the levels of ALT and AST on d 35 did not differ among the dietary treatments. Thus the results suggest that microbial fermented soya protein affected the hematological indices, immune cell populations and plasma enzymes in weaned pigs.

        본 연구에서는 붕어를 이용하여 탁도 변화에 따른 여러 조직의 항산화효소 활성을 조사하였다. 탁도 50, 100, 150 NTU에서 사육기간에 따른 붕어 조직의 항산화효소 활성의 변화는 50과 100 NTU에서는 대조구에 비해 큰 변화가 없었으며, 고탁도인 150 NTU에서 비교적 두드러진 차이를 나타냈다. 붕어 조직의 항산화능을 DPPH 소거 활성도에서 보면 아가미, 간 조직에서 높은 활성을 보여 고탁도의 사육 조건에서 장기간 사육될 때 비효소적 항산화

        Tarakjuk with different amylose content was made up using roasted rice flours that consisted of the highest enzyme-resistant starch (RS), while differential scanning calorimetry (DSC) was also utilized to measure the gelatinization temperature of these roasted rice flours in order to establish cooking temperature of tarakjuk. The following qualities of tarakjuk with different amylose content were studied: color, viscosity, spreadability, starch fractions involving total starch (TS), rapidly digestible starch (RDS), slowly digestible starch (SDS) and RS, in vitro starch digestibility (IVSD) and sensory properties. During experimentation, it was found that as the amylose content of the rice flour decreased, the L value of tarakjuk decreased, whereas a value increased significantly (p〈0.05). Also, while viscosity showed to increase significantly (p〈0.05), on the opposite end, the property of spreadability decreased. TS ranged from 15.95~17.31%, RDS 9.36~10.16%, SDS 5.46~6.91% and RS 0.33~1.07%, on a dry basis. Although the amylose content of rice flours decreased, IVSD increased, however showing no significant difference. When testing the sensory properties of tarakjuk, color and viscosity increased, whereas clumpiness decreased. Ilpum tarakjuk showed the highest score for nutty taste and overall acceptance levels. In fact a high correlation was shown between nutty taste and overall acceptance level (p〈0.01), which leads one to believe that nutty taste is a prime factor that greatly influences overall acceptance. Furthermore, viscosity was positively correlated with both a and b values, however negatively correlated with L value (p〈0.05). Moreover, roasted nutty taste and overall acceptance were positively correlated with a value (p〈0.05), respectively. In conclusion, the above results suggest that tarakjuk could be made by choosing the appropriate rice flour based on the nutritional or sensory purpose.

        Recently,mushrooms have received attention because they are material of nutritious food health-stimulating properties and medicinal effects. For the purpose of application the antihypertensive Pholiota adiposa and S. cerevisiae into development of new functional traditional rice wine, optimal fermentation condition and sensory evaluation of functional traditional rice wines were investigated and further its angiotensin-I converting enzyme(ACE) inhibitory activities were determined. Addition of antihypertensive Pholiota adiposa ASI 24012 into the mash was unaffected to ethanol production. The best acceptability showed in the PS-1 traditional rice wines which was brewed byaddition of 0.1% Pholiota adiposa ASI 24012 fruiting body into mash containing antihypertensive S. cerevisiae and cooked and also showed high ACE inhibitory activity of 78.3%.

        전처리 조건을 달리하여 얻은 추출물의 일반성분을 측정한 결과, 수분은 비열처리-효소 추출구보다 열처리-효소 추출구가 다소 높았으며, 조회분과 조펙틴은 유의적인 차이가 없었다. 상등액 추출율은 celluclast와 pectinex의 효소처리 했을때 무열처리-효소 추출구보다 열처리-효소 추출구가 다소 높게 나타났다. 젤리의 adhesiveness 값은 열처리-효소 추출구 일수록 그리고 Celluclast 효소만 처리했을 때 높게 나타났다. Celluclast 효소를 첨가하여 제조한 젤리에서만 값들이 증가하는 경향을 나타냈고 나머지 Pectinex 효소나 혼합효소를 첨가하여 제조한 젤리에서는 값들이 모두 감소하는 결과를 나타냈다. 비열처리-효소 추출구에서는 Celluclast효소와 Pectinex효소를 첨가하여 제조한 젤리는 커다란 차이를 보이지 않았지만 혼합효소를 첨가하여 제조한 젤리에서는 L값이 높은 증가율을 나타냈고 a값은 녹색도를 나타내는 (-)값이 더 증가하였다. 열처리-효소 추출구 젤리가 비열처리-효소 추출구 젤리보다 맛과 조직감 면에서는 약간 우수하였으나 다른 항목들에서는 보편적으로 비열처리-효소 추출구 젤리가 더 나은 결과를 나타냈다.

        By measuring changes in blood lactate and plasma enzyme (CPK, GOT, GPT) with electrical stimulation applied at two duty cycles, this study is intended to look into which type of duty cycle may have more effects on blood lactate and plasma enzyme constituents through animal experiment so as to determine any duty cycle appropriate for electrical treatment. In this study, electrical stimulation was applied to total 20 Korean house rabbits (weight: 3~3.5 kg) by means of an electrical therapeutic apparatus called TS6000 (made in Netherlands) at duty cycle of 50% and 20% respectively for 30 minutes. Here, 5 cc of blood was collected from their carotid artery before stimulation and in 30 minutes after stimulation respectively to carry out biochemical experiment and analysis. As determined through the above experiment, blood lactate rate was increased to 333.07% at 50% duty cycle after experiment and 185.71% at 20% duty cycle after experiment respectively. In both cases, blood lactate rate was significantly increased to higher level after electrical stimulation than before. Moreover, the rate of change in the average of blood lactate rate at both duty cycles also showed significant differences. CPK rate was boosted to 301.82% at 50% duty cycle after experiment and 321.35% at 20% duty cycle after experiment respectively. In both cases, CPK rate was remarkably boosted to higher level after stimulation than before (p<.05). However, there was not any significant difference in the rate of change in average CPK at both duty cycles (p<.05). GOT rate was significantly boosted up to 38.97% at 50% duty cycle after experiment (p<.05), while it was slightly increased to 1.68% at 20% duty cycle after experiment without any significant difference. Rather, GPT rate dropped slightly at both duty cycles after experiment, but there was not any significant difference. Although blood lactate and GOT were relatively less generated at 20% duty cycle after electrical stimulation than at 50% duty cycle, the change of duty cycle didn't have any significant influence on CPK rate. In this regard, this study failed to come any consistent conclusion about the association between change of duty cycle and muscle fatigue. Therefore, it is advisable that follow-up studies seek various ways to a little more effectively apply electrical stimulation to laboratory animals by avoiding their muscle fatigue. GOT rate was significantly boosted up to 38.97% at 50% duty cycle after experiment (p<.05), while it was slightly increased to 1.68% at 20% duty cycle after experiment without any significant difference. Rather, GPT rate dropped slightly at both duty cycles after experiment, but there was not any significant difference.         겨울철 저온에 의한 식물의 반응 및 생리적 상태를 확인하기 위해 문주란(Crinum asiaticum var. japonicum)을 대상으로 엽록소형광과 항산화효소 찬성의 변화를 조사하였다. O-J-I-P곡선을 분석한 결과 겨울철에 J, I, P-단계에서의 형광세기가 현저하게 간소하였다. 문주란 잎의 광계II의 광화학적 효율, 즉 Fv/Fm은 겨울철의 온도변화 추이와 유사하게 낮은 값을 나타내어 겨울철 저온이 스트레스 요인으로. 작용하는 것으로 보인다.
