        Hesperetin은 Hesperidin에서 유도되는 강한 항산화 기능의 플라보노이드 비당체이다. 본 연구 에서는 Hesperetin과 이의 Cyclodextrin 포접 복합체에 대하여 항산화, 항염증 및 항균 활성을 비교하였다. Hesperetin은 Hesperidin에 효소처리하여 제조되었으며, Hesperetin/Cyclodextrin 포접체는 용매 증류법에 의해 β-Cyclodextrin 및 Hydroxypropyl-β-Cyclodextrin을 사용하여 제조되었다. Hesperetin에 비해 Hesperetin/Hydroxypropyl-β-Cyclodextrin 포접체의 용해도는 93.5배 증가하였고, Hesperetin/β -Cyclodextrin 포접체의 용해도는 22.5배 증가하였다. 항산화 분석에서 Hydroxypropyl-β-Cyclodextrin 포접체는 Hesperetin과 유사한 라디칼 소거 활성능을 보인 반면, β-Cyclodextrin 포접체는 Hesperetin 보 다 약간 낮은 활성을 나타내었다. RAW 264.7 세포에 대한 세포독성은 Hydroxypropyl-β-Cyclodextrin 포접체, β-Cyclodextrin 포접체, Hesperetin의 순으로 세포독성이 낮았다. Hesperetin과 Cyclodextrin 포 접체는 모두 세포내 산화질소(NO), 종양괴사인자-α(TNF-α) 및 인터루킨-6(IL-6)과 같은 염증 매개체 를 감소시켰다. Hesperetin 및 Hydroxypropyl-β-Cyclodextrin 포접체는 상대적으로 β-Cyclodextrin 포접체 보다 더 효과적이었다. 피부 유해성 세균인 황색 포도상구균과 녹농균에 대해 억제 효과를 시험한 결과, 황색 포도상구균에 대해서는 Hesperetin = Hydroxypropyl-β-Cyclodextrin 포접체 > β -Cyclodextrin 포접체의 순서로 항균 효과를 나타내었으나, 녹농균에 대해서는 뚜렷한 억제효과를 나타내 지 않았다. 결론적으로, Hesperidin의 비당체 형태인 Hesperetin과 이의 Cyclodextrin 포접체는 다양한 생 물학적 활성을 보여주었으며, 용해도가 높은 Hydroxypropyl-β-Cyclodextrin 포접체가 β-Cyclodextrin 포접체에 비해 상대적으로 더 높은 활성을 나타내었다.

        Poly(vinylidene fluoride) (PVDF) 막은 내구성 및 열적⋅화학적 안정성 등의 물성은 우수하나 소수성이 커서 수투과도가 낮고 단백질 및 유기물에 의한 막오염이 쉽게 발생한다. 본 연구에서는 PVDF 막의 내오염성을 개선시키고자 바이오 기능성 물질인 β-cyclodextrin (β-CD)을 PVDF 막 구조 내에 분산 함침시킨 PVDF/β-CD 혼합기질 비대칭막을 상변환 법을 통해 제조하고, β-CD 함침량에 따른 순수 투과 유속(PWF) 측정과 BSA 용액을 대상으로 한 막여과 실험을 수행하여 내오염성 특성을 평가하였다. 이 결과 PVDF 고분자 매질 내에 β-CD를 함침시키면 막의 친수성을 증가시켜 접촉각을 감소시키고 이로 인해 내오염성을 향상시킬 수 있었다. β-CD 함침량이 2 wt%인 도프용액을 사용하여 제조된 PVDF/β-CD 혼합 기질 비대칭막의 PWF는 64 L/m2⋅h, BSA 배제도는 95%를 나타내었으며, β-CD를 첨가하지 않고 제조된 pristine PVDF 막에 비해 투과 유속 향상성이 최대 80%에 달해 β-CD를 첨가시킴으로서 PVDF 막의 내오염성을 증가시킬 수 있었다.

        Astaxanthin(Ast) is considered a powerful antioxidant. However, the efficacy of Ast is limited due to its poor water solubility and stability. To enhance the properties of Ast, 2-hydroxypropyl-γ-cyclodextrin(HPγ-CyD) can be used through complexation. In this study, we investigated the wound healing ability of Ast/HP-γCyD(Ast/HP-γ-CyD) complex in sacran-based hydrogel. HP-γ-CyD played an important role to increase the elastic modulus of the sacran-based hydrogel with high swelling ability. Unusually, the Ast/HP-γ-CyD complex in sacran-based hydrogel provided the highest wound healing ability in mice. These results suggest that the Ast/HP-γ-CyD complex in sacran-based hydrogel has the potential for use as a new transdermal therapeutic system to promote the wound-healing process

        Resveratrol was incorporated into various combinations of single- and double-layer nanoemulsions, prepared by selfassembly emulsification and complex coacervation with chitosan, alginate, and β-cyclodextrin, respectively. Resveratrol nanoemulsions were composed of medium-chain trigacylglycerols (MCTs), Tween ® 80, water, chitosan, alginate, and β-cyclodextrin. The corresponding mixtures were formulated for the purpose of being used as a nutraceutical delivery system. Resveratrol nanoemulsions were obtained with particle sizes of 10-800 nm, with the size variation dependent on the emulsification parameters including the ratio of aqueous phase and surfactant ratio. Resveratrol nanoemulsions were characterized by evaluating particle size, zeta-potential value, stability, and release rate. There were no significant changes in particle size and zeta-potential value of resveratrol nanoemulsions during storage for 28 days at 25°C. The stability of resveratrol in the double-layer nanoemulsions complexed with chitosan or β-cyclodextrin was higher, compared with the single-layer nanoemulsions.

        The aim of this study was to evaluate the effects of microencapsulation on the water absorption, DPPH radical scavenging activity (DRSA), hydroxyl radical scavenging activity (HRSA) and tyrosinase inhibition activity (TIA) in corn silk extracts. The lowest value (0.20) of water absorption index (WAI) and the highest value (95.23%) of water solubility index (WSI) were maltodextrin+cyclodextrin microencapulated corn silk extracts (MD+CD) and cyclodextrin encapulated corn silk extracts (CD), respectively. The 18.60% for DRSA value of control was increased to 89.25% for that of CD. The 16.89% for HRSA value of control was increased to 47.46%, and 7.16% for TIA value of control was increased to 39.35% for that of MD+CD, respectively. The MD+CD would be used for functional food and cosmetics materials as antioxidant and skin whitening agents. All investigated responses between control and treatment were statistically significant (p<0.05).

        홍삼추출물(RGE)의 쓴맛을 개선하기 위해서 증숙시 초산 처리 후 α-, β-, γ-CD을 이용 해서 RGE의 포접화합물을 제조하여, 전자혀 분석을 통해서 RGE-γ-CD에 의한 쓴맛 개선효과가 가장 큰 것으로 확인하였다. 인삼의 열처리 공정에 있어 초산 처리는 Rg3 및 비극성 진세노사이드 성분 함량 을 증가시킴을 알 수 있었다. 전자혀를 이용하여 α, β, γ- CD 첨가량에 따른 쓴맛, 신맛, 짠맛, 우아 미맛 및 단맛을 분석하였다. 그 결과 RGE 대비 10%의 γ-CD를 첨가하여 포접한 REG가 다른 처리구 에 비해 쓴맛이 월등히 낮은 감응도를 나타내었다.

        To increase the stability of anthocyanin from black rice, β-cyclodextrin (β-CD) formed a complex with anthocyanin, and thermal and UVB stability of the complex was investigated at various pH levels. The formation of β-CD complex with anthocyanin was confirmed by the decreased UV-Vis spectrophotometer absorbance (at 511nm) with increasing the concentration of β-CD at pH 2, 2.5, 3, 4, and 5. ABTS (2, 2’-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid)assay was conducted to measure radical scavenging capacity (RSC) of the complex at pH 2, 4, 6, and 8, after which the RSCs were recorded over the 24 h heating(95°C) and 24 h UVB irradiating periods. The RSC values of the complexes increased as the β-CD concentration increased (0.1-2%) at pH 6 and 8. Upon thermal treatment, the RSC readings of the complexes tended to decrease to a lesser extent compared to the anthocyanin control (without β-CD) at pH 2. This result suggests that the thermal stability of anthocyanin was more retained in the presence of β-CD at low pH (pH 2). However, in the case of UVB irradiation, the effect of β-CD complex on the anthocyanin RSC was not significant, though the RSC values for both the anthocyanin control and complexes trended downward as the UVB irradiation time increased at all pH ranges except for pH 8 (no downward trend). In short, this study suggests that the effect of β-CD complex on the stability of anthocyanin antioxidant capacity depends on pH and the susceptibility to the degradation process.

        A variety of rice cultivars have been developed and their usages are being expanded to develop value added products in relation to their physicochemical properties. Cyclodextrin (CD), commonly produced from potato starch, is widely used in food and pharmaceutical industries. So far, few studies have been reported on the CD production from rice starches. In this study, the physicochemical properties of various rice starches were investigated and their substrate performance were evaluated for the CD production using cyclodextrin-glucanotransferase (CGTase). Starches of 5 Korean rice cultivars, Dodamssal (DD), Ilpummi (IP), Saegoami (SG), Sintoheukmi (SH), and Geonganghongmi (GH) were isolated by alkaline extraction method. The amylose content of DD and SG was ~66% and ~30%, respectively, while the others ranged from ~18% to ~23%. A similar amylopectin branch chain length distribution was observed in SH, GH, and IP, showing higher content of middle chains B1. SG showed higher content of the short chains A and lower content of the long chains B3+ than SH, GH, and IP, whereas DD showed opposite trends. RVA pasting properties showed the lowest values of peak viscosity, breakdown, and final viscosity in DD. The X-ray diffraction pattern of DD was the typical B-type pattern, whereas the others showed A-type patterns. Most starches had typical polygonal granular shapes, whereas DD showed round shape as revealed by SEM. In order to produce CD, starches were treated with isoamylase, CGTase and glucoamylase in a sequential order. DD showed the highest CD yield of 83% and GH showed the lowest CD yield of 70%. Based on this study, it can be concluded that the starches with high amylose contents tend to show low peak viscosity, high pasting temperature, and high CD production yield.

        An enantioselective recognition of D- and L-tryptophan (Trp)-b-cyclodextrin (CD) inclusion complex was performed using electrochemical and FT-Raman spectroscopic analysis. From the electrochemical analysis, the selectivity coefficient (KDL) of b-CD inclusion complexes was found higher than that of the D- and L-Trp in phosphate buffered saline (PBS, pH=7.0) solution. The percentage of enantioselectivity (I%ee) for peak current of D-Trp-b-CD inclusion complexes was observed higher than that of L-Trp-b-CD inclusion complexes in PBS solution. From Raman spectroscopy, chemical shift difference (D, cm-1) for the C=C stretch, ring vibration, and ring breathing of D-Try-b-CD inclusion complex were observed higher than that of L-Trp-b-CD inclusion complex. The electrochemical and Raman spectroscopic analyses were found very useful for chiral detection of racemic amino acid in the presence of b-CD.

        β-cyclodextrin has an ability to protect compounds from oxidative reaction by collecting them within its ring-like structure. So, In harsh condition (40oC), marker compound, quercetin, was dramatically reduced in Hovenia dulcis fruit extract containing dextrin at 4 and 8 week compared to 0 week, but not that containing β-cyclodextrin. To evaluate the effects of dextrin and β-cyclodextrin on protective effect of H.dulcis fruit extract against alcohol- induced liver damage, The mice were orally injected alcohol, H. dulcis fruit extract/dextrin (HD) and H. dulcis fruit extract/β-cyclodextrin (HCD), respectively, for 7 days. The mice orally administrated with alcohol significantly enhanced the serum concentration of alanine aminotransferase (ALT) and aspartate aminotransferase (AST) and the activity of lactate dehydrogenase (LDH) in serum compared to the control group. HD and HCD significantly decreased the levels of serum ALT and AST and serum LDH activities compared to alcohol group. And also alcohol group significantly increased the level of total cholesterol compared to the control group, but HD and HCD significantly reduced it compared to the alcohol group. However, the levels of TG in blood were not significantly changed in all groups. The activities of alcohol dehydrogenase (ADH) were significantly increased in HD and HCD group although those of aldehyde dehydrogenase showed an increasing tendency. This data suggested that HD and HCD were able to induce alcohol degradation in the liver tissues. All together, the results showed that HCD demonstrated their ability to protect liver from alcohol-induced damage on equal terms with HD.

        Cyclodextrin-graphene oxide film on the carbon nanotubes matrix is synthesized by a simple chemical method, and physical, chemical, and electrochemical properties of the composites are investigated. Capacitance is improved markedly up to 84 F/g with chemically reduced graphene oxide at the current density of 0.7 A/ g compared with 2.6 F/g of the previous composites having no graphene oxide. The new composites electrodes show more redox processes, originated from the graphene oxide, in the cycle voltammetry compared to the previous composites which had no graphene oxide, indicating enhancement of capacitances. Following improved energy density of the new composite makes it possible to be an electrode of the hybrid capacitors.

        The objective of this study was to evaluate efficiency of methyl-beta-cyclodextrin (MBCD) in the sperm preservation of bull. For this study, the freezing of diluted semen were added with Triladyl containing 20% egg-yolk and/or 0, 1, 5, 10 and 20 mM MBCD before freezing process. Analysis of viability in frozen-thawed sperm was estimated by SYBR14/PI double stain, hypoosmotic swelling test(HOST) and acrosome damage with FITC-PNA, and mitochondria activation with Rhodamin123 by flow-cytometry. The sperm viability was significantly higher in 0 mM and 5 mM concentrations of MBCD than other groups (p<0.05). However, the HOST was significantly lower at 20 mM concentration of MBCD than other concentrations (p<0.05). In addition, acrosome damage and mitochondria activation rates were significantly lower at 20 mM concentration of MBCD than other groups (p<0.05). In conclusion, the viability of sperm was not significantly different among concentrations of MBCD 0, 5 and 10 mM, but MBCD 20 mM was significantly lower than other groups. In addition, as concentrations of MBCD was high, HOST, acrosome damage and mitochondria activation rates had a negative effect in bull sperm.

        This study was undertaken to find out the effect of methyl-beta-cyclodextrin (MBCD) on cold shock and membrane cholesterol quantity of sperm during the freezing process in miniature pigs. For this study, semen ejaculated from PWG M-type miniature pig was diluted that freezing solution (with egg yolk group) and m-Modena B (without egg yolk group) treated with 0, 1, 5, 10 and 20 mM MBCD before freezing process. The diluted semen was monitored sperm ability at room temperature, after cooled until 5℃ and after forzen-thawed for cold shock test of spermatozoa. Also, membrane cholesterol of sperm was extracted by folch solution at the same time. sperm ability was assessed for viability and acrosomal status. The membrane cholesterol quantity was measured by thin-layer chromatography (TLC) method. The result, viability and acrosome integrity in semen diluted without egg yolk groups were decreased at all temperature range by increasing of MBCD concentration. In particular, sperm of egg yolk group was showed that significantly higher viability and lower acrosome damage when treated with 5 mM MBCD (p<0.05). The results of TLC experiment, cholesterol amounts were increased with MBCD cocentration in egg yolk, and decreased with MBCD concentration in m-Modena B. In cryopreservation efficiency, there was no significant difference at viability, and acrosomal state of sperm in 5 mM MBCD concentration was significantly lower in acrosome damage than other groups (p<0.05). Therefore, the addition MBCD in egg yolk was protected spermatozoa from cold shock injury. This protective effect of MBCD may be due to addition of sperm membrane cholesterol.

        본 연구는 김치건조분말을 제조하는 과정에서 김치의 발효과정과 건조 전후에서 나타나는 향기성분의 변화를 조사하고, β-cyclodextrin의 첨가로 인한 향기성분 포집효과를 검증하고자 GC-MS를 이용하여 분석실험을 실시하였다. 김치를 제조하여 20oC에서 발효시켰을 때, 초기 2일째는 dimethyl sulfide와 carbon disulfide가 생성되었고, 7일이 경과하였을 때, dimethyl disulfide, methyl 2-propenyl disulfide, allyl methyl sulfide, and di-2-propenyl disulfide의 황화합물이 주된 향기성분으로 검출되었다. 본 김치시료를 감압건조 하였을 때, 11개 화합물이 검출되지 않았고 dimethyl sulfide, acetaldehyde and methanethiol를 주로 포함하는 13개 화합물이 잔류하였다. 건조공정 중에서 김치 향기성분의 손실을 최소화하고자 0.25-1.0% 농도의 β-cyclodextrin을 건조보조제로 첨가하였을 때, 향기성분의 포집효과에 의해 건조 김치분말에 잔류하는 향기성분의 함량이 평균 3% 증가하였다. 본 연구결과로 볼 때 cyclodextrin은 건조 김치분말 제조공정뿐만 아니라 건조식품제조에서 건조보조제로 효과적으로 사용할 수 있을 것으로 보인다.

        This study demonstrates that pork cholesterol levels are reduced in finishing swine fed β-cyclodextrin (βCD). The study subjects were 120 swine fed their respective chow diets containing 0, 5, 7, or 10% βCD for 35 consecutive days. Plasma total lipids, triglyceride and total cholesterol of the βCD- treated group were significantly lower than those of the control group (p<0.05). The levels of plasma lipid were significantly decreased by 63.22 mg, 73.98 mg, and 82.12 mg in the finishing swine group fed βCD at 5%, 7%, and 10% , respectively, compared to those in the control group (p<0.05). When 5, 7, and 10% βCD was administered to finishing swine, the triacylglyceride levels were decreased by 56.24 mg, 55.48 mg, and 60.02 mg, and total cholesterol concentration was reduced by 25.05 mg, 27.17 mg, and 30.19 mg, respectively, compared to those in the control group (p<0.05). Excretion of total steroid significantly (p<0.05) increased with increase of βCD supplementation. The cholesterol levels of swine back fat, belly, loin, and ham were significantly decreased with increase of βCD supplementation (p<0.05). The pork cholesterol was significantly (p<0.05) reduced by 15.31% in the βCD-treated group, compared to that of the control group. These results suggest that feeding βCD to finishing swine may produce novel functional pork with low cholesterol levels.
