        Hydrolyzed proteins have an advantage over intact proteins in terms of their rate of digestion and absorption. The high-pressure enzymatic extraction (HPE) method has been shown to improve the quality characteristics of hydrolysates from Protaetia brevitarsis seulensis (Kolbe) larvae (PBSL). This study investigated the effects of the HPE treatment period, a key candidate factor, on the quality characteristics of PBSL HPE hydrolysates. The hydrolysates were prepared by HPE for 0, 12, 18, 24, 30, and 36 h under optimized conditions—solid:solvent ratio (1:14 [w/v]), using complex proteases (Alcalase:Flavorzyme:Bromelain = 1:1:1, 4%), treatment temperature (50oC), and pressure level (100 MPa). All quality characteristics tended to be superior with longer HPE treatment periods, most of which had the highest values at 30 h, with no significant difference or a slight decrease after that. The quality characteristics of the PBSL HPE hydrolysates were improved by 1.3-1.7 times under conditions of optimal HPE treatment period.

        This study examined the combined effects of high hydrostatic pressure (HHP) and micro-perforated (MP) film packaging on the microbiological and physicochemical qualities of kimchi sauce stored under fluctuating temperature conditions. Before storage, treatment with 600 MPa HHP reduced the total lactic acid bacteria in the sauce samples to below the detection limit (1 log CFU/g). After 68-day storage, ten microbial strains isolated from the non-treated controls were identified as Pediococcus pentosaceus, whereas eight microbial strains isolated from the HHP-treated samples were identified as Bacillus spp., regardless of the packaging type. Additionally, the samples treated with HHP and packaged in a multilayer film bag (ML-HPP), as well as those in the MP-HHP group, exhibited higher pH values and reduced sugar content than the ML-control or MP-control after 68-day storage. No significant differences were observed between the control and treatment groups regarding their electrical conductivity, salinity, and CIE a* values at the end of storage. However, there was no O2 reduction or CO2 accumulation in the MP-HHP group after 68-day storage. These results indicate that the combination of HHP treatment and MP-film packaging can extend the kimchi sauce's shelf life without packaging expansion during long-term storage.

        본 연구에서는 발아와 고압처리에 따른 검정콩 조사포닌 추출물의 in-vitro 항암 활성을 확인하기 위하여 검정콩을 발아시킨 후 고압처리하고, 조사포닌 추출물을 제조한 후 인체 유래 유방암(MCF-7), 대장암(HCT-116), 전립선암(PC-3) 및 위암(AGS) 세포주에 대한 증식억제효과를 검토하였다. 대조구의 조사포닌 추출물은 400 μg/mL 농도에서 4종의 암세포주에 대하여 67.02~91.70% 범위의 생존율을 보여 항암 효과가 낮았지만, 발아 4일차 콩을 150 MPa의 압력에서 고압처리한 검정콩의 조사포닌 추출물은 23.94~57.37% 범위의 생존율을 보여 발아와 고압처리에 의해 암세포 성정억제효과가 증가하였다. 특히, 위암세포(AGS)의 경우 다른 세포주에 비해 저농도에서도 세포증식효과를 보여 가장 높은 암세포 증식억제 효과를 나타내었다. 이상의 결과로부터 항암 활성을 나타내는 Soyasaponin, B group의 soyasaponin 및 soyasapogenol의 함량은 발아와 고압처리에 의해 증가하였고, 고압처리 발아콩으로부터 항암 활성을 나타내는 사포닌 추출물의 개발이 가능할 것으로 생각된다. 또한, 추후 항암 활성 물질의 분리동정과 메커니즘 규명에 대한 연구가 수행되어야 할 것으로 판단된다.

        The objectives of this study were to characterize the physicochemical properties of ginger (Zingiber officinale Rosc.) and the optimum extract processing condition to increase the solubilization efficiency of 6-gingerol and polysaccharides disintegration. The physicochemical properties were investigated under high-pressure enzyme (HP) and enzyme (WB) treatment conditions such as reaction time (1, 2, 3 h), pressure (50, 70, 100 MPa) and sample types, and cell wall degradation enzyme (hemicellulase, cellulase, pectinase, glucosidase, etc.) The effect of high-pressure enzyme treatment depending on sample types was significantly highest in the freeze-dried ginger powder. The optimum condition for high-pressure enzyme treatment was with Pectinex Ultra SP-L (Pec) enzymes for 2 h at 50oC and 100 MPa. Water soluble indexes increased 4.6 and 3.8 times more compared to CON (15.35%) while total polyphenol contents increased by 1.8 and 1.7 times compared to CON (1.43%). The total contents of indicator components such as 6, 8, 10-gingerol and shogaol was 1.53%, increasing 2.7 times more compared to CON (0.57%) with a significant difference (p<0.001). The high-pressure and enzymatic approach described in this study would be beneficial to food industries for developing ginger functional product and materials.

        We investigated the influence of germination and high hydrostatic pressure (HHP) treatment conditions on the conversion of functional compounds and antioxidant activity in adzuki bean. The adzuki bean germinated at 25°C for three- or six-days, and was later subjected to HHP at 0.1, 50, 100, or 150 MPa for 24 h. The highest polyphenol content (5.36 mg gallic acid equivalents (GAE)/g) and flavonoid content (0.91 mg catechin equivalents (CE)/g) were observed after germination for six days and HHP treatment at 100 MPa for 24 h, respectively. The total phenolic acid contents increased with increasing applied pressure from 88.86 to 208.26 μg/g (100MPa, 24h). Phenolic acids are divided into two categories; those that exhibit increased content upon HHP treatment, and those that exhibit decreased content. The increasing phenolic acids were gallic acid, chlorogenic acid, (+)-catechin, ρ-coumaric acid, ferulic acid, heperidin, salicylic acid, protocatechuic acid, cinnamic acid, naringenin. The total anthocyanin content decreased with increasing applied pressure from 22.42 mg/100 g to 6.28 mg/100 g (150 MPa, 24 h). The highest ABTS radical scavenging activity (8.02 mg eq AA/g) and DPPH radical scavenging activity (1.22 eq Trolox/g) were observed after germination for six days and HHP treatment at 100MPa for 24h, respectively. These results suggested that the combination of HHP and germination can lead to improved functionality in adzuki bean.

        This study was aimed to examine the potential of pre- and post-harvest treatment of chitosan and high pCO2 on the shelf-life of oriental melon fruit. Post-harvest dipping treatment of chitosan and high pCO2 did not bring any significant effect on the freshness of fruit in general, even at 1% of chitosan. Unlike post-harvest treatment, pre-harvest spray of chitosan significantly increased fruit firmness and firmness increase was higher in double sprays than single one. The internal quality such as soluble solid content and acidity was not altered by chitosan spray. No additional effect of high pCO2 with pre-harvest treatment of chitosan was found. Double sprays of chitosan showed significant effect on keeping visual appearance through delaying the incidence of skin browning. There was a potential of pre-harvest chitosan treatment on the shelf-life increase of oriental melon fruit and double sprays were better than single spray. However, high pCO2 seemed not to be effective on the storability of oriental melon fruit.

        주스의 품질악화를 초래하는 효소를 불활성화시키기 위해서 감귤 주스와 사과 주스 추출물에 초고압 처리와 열처리를 하여 각 시료의 PPO와 POD의 불활성화 정도를 확인하고 동역학 모델에 적용하여 이들의 불활성화 특성을 연구하였다. 감귤 주스와 사과 주스에서 모두 PPO가 POD보다 열과 압력에 대해서 상대적으로 내성을 갖는 것을 알 수 있었으며, 초고압 처리 과정을 거쳤을 때 보다는 열처리 과정을 거쳤을 때 PPO와 POD가 효과적으로 불활성화되는 것을 확인할 수 있었다. 초고압 기술은 처리 후에도 제품의 영양분과 색의 변화에 영향을 미치지 않기에, 최상의 상태와 품질로 제품을 제공 할 수 있는 장점을 가지고 있지만, 효소를 불활성시키기에는 부족하다는 단점을 가지고 있다. 이를 보완하여 산업적으로 이용되어지기 위해서는 영양분이 파괴되지 않는 열 처리 조건을 잡고, 효소를 효과적으로 불활성시킬 수 있는 초고압 처리 조건과 결합하여 최상의 결과를 얻을 수 있는 조건을 찾는 연구가 필요하다고 판단된다.

        We investigated the quality characteristics and resulting sensory evaluation of semi-dried silver pomfret treated with high hydrostatic pressure (HHP) processing and brining for 14 days at 4 and 10˚C to evaluate the effects of treatment with HHP processing. HHP treatment and brining could cause compaction of fibers and the space between muscle. The G' values of all samples were higher than the G" values and the tan Δ values of the tissue ranged from 0.222 to 0.251 with no further changes observed during storage. HHP treatment and brining significantly increased the total color difference, and the HHP and brine-treated group scored significantly higher than the others in terms of sensory evaluation. HHP treatment combined with brining could have a significant effect on the quality characteristics of the semi-dried products and their storage stability, and it is suggested from the results that they may have the potential to satisfy the requirements to produce commercially marketable food grade products.

        High Pressure High Temperature (HPHT) treatment can significantly change the color of diamonds. We studied the variation of the optical properties according to the nitrogen arrangement in natural brown diamonds of various types (type IaAB, type IaB, type IaA > B, type IaA< B, IaA = B) after HPHT treatment. The diamonds with different arrangements of nitrogen were annealed at temperatures in the range 1700-1800˚C under a stabilizing pressure of 5 GPa. HPHT treated samples were analyzed using UV-Vis-NIR, FT-IR, and PL spectroscopy. The absorption and luminescence spectra were measured to compare the variations of nitrogen arrangement in the natural brown diamonds before and after HPHT treatment. After HPHT treatment, the brown coloration in all types of diamonds was reduced and a decrease in the peaks related to the A-aggregate of nitrogen was more predominant than the B-aggregate. Furthermore, the peaks related to N3 (415.4 nm), H4 (496.4 nm), and platelet decreased and the peaks related to H3 (503.2 nm) and G-band increased after HPHT treatment. In conclusion, spectroscopic analysis of natural brown diamonds after HPHT treatment showed that a yellow color was produced by absorption in the H3 centers and a green color was generated by interaction between absorptions of the H3 and H2 centers.

        천연조미소재 개발을 위하여 고압/효소분해 시스템에서 멸치 단백질의 분해 품질특성을 탐색한 결과, 최적 조건은 효소농도 0.6%, 온도 50oC, 처리시간 24시간 및 압력 50 MPa로 확인되었다. 멸치 단백질의 처리방법에 따른 품질특성을 비교한 결과, 최적조건하에서 고압/효소 처리한 멸치 가수분해물의 품질특성이 가열추출물인 대조구에 비하여 2.8배, 2배, 1.4배 증가하여 고압/효소 처리에 의한 단백질 가수분해물 생산은 가열추출법이나 고압반응에 비하여 효율적인 방법으로 나타났다. 효소종류에 따른 분해력은 복합효소로 가수분해한 경우 상업효소에 비하여 큰 증가율을 나타내어 복합효소의 분해력이 상업효소에 비하여 우수하였다. 고압/효소 처리 후의 멸치 가수분해물은 정미성 아미노산으로 알려져 있는 glutamic acid, glycine, arginine 및 alanine 등의 함량이 대조구나 압력 처리구의 유리아미노산 함량에 비하여 증가하였다. 결론적으로 고압/효소분해 처리공정은 멸치 단백질의 효과적 분해와 정미성 아미노산 생산에 효율적인 기술임을 확인하였다.
