        This study was performed to investigate the toxic effect of pyrrolizidine alkaloids from Symphytum officinale in rat. For this experiment, 120 male and female rats of Sprague-Dawley strain were used. The experimental groups were divided into five: Group CM and CF served as normal control with its gender. Group EMl and EF1 were fed a 1% Symphytum officinal extract diet for 8 weeks. Group EM2 and EF2 fed a diet containing 2% extract diet. 4% extract diet into group EM3 and EF3 and 8% extract diet into group EM4 and EF4 were given. The results were as follows: 1. The major alkaloids of Symphytum officinale extract were symphytine, echimidine, and lasiocarpine. The amounts of total alkaloid were 168 ug PAs/ ml extract. And contents of PAs in leaves were 0.05% wt.. 2. Total serum bilirubin concentrations increased significantly in group EM2, EM3, and EM4. Group EFl, EF2, EF3,and EF 4 showed statistical significance for the group CF (p$lt;0.05). 3. Aspartate transaminase activities were increased significantly in group EM3 and EM4 (p$lt;0.05). Aspartate transaminase activities of EF1, EF2, EF3, and EF4 showed statistical significance for the group CF (p$lt;0.05). 4. Alanine transaminase activities increased significantly in group EM3, EM4 (p$lt;0.05). Alanine transaminase activities of EFl, EF2, EF3, and EF4 showed statistical significance for the group CF (p$lt;0.05). 5. Alkaline phosphatase activities increased significantly in group EM2, EM3, and EM4 (p$lt;0.05). Alkaline phosphatase activities of EF1, EF2, EF3, and EF4 showed statistical significance for the group CF (p$lt;0.05). 6. Histopathological analysis of liver specimens from group EM3 and EM4 showed focal necrosis, periportal necrosis and apoptosis. Hepatocytes obtained from group EM2 showed fatty change and hydropic degeneration in group EM3 and EM4. Chromatolysis and chromatin margination was shown in group EF2 and EF3. With the above results, it was demonstrated that the Symphytum officinale extract could induce functional change of liver, and histopathological change of liver in rats fed a diet containing extract. In conclusion, because of the risk of intoxication or adverse effect, the composition, dosage and mode of administration of herbal products should be monitored strictly. And this study serves as a reminder that herbal as well as orthodox medications may have serious side effects.

        This study showed the effect of fermented milk on the cholesterol level of Korean. 130 persona among the teachers of elementary, middle and high schools, professors and graduate school students were divided into two groups according to their cholesterol level and provided with fermented milk 300 ml dairly from Sep.25 to No. V3. They were given blood test at 20 days and 40 days after drinking fermented milk, and surveyed about their ordinary life style and the change of fecal condition. Cholesterol, LDL and the ratio of LDL and HDL in blood were significantly decreased in both high cholesterol group and normal group while HDL cholesterol was notably increased. TG showed slightly tendency of decrease in normal group while no changed in high group. There is no significant change in cholesterol level after drinking fermented milk among groups which are divided by factors of dringking, smoking, caffeine, B.M.I. and family history. The research also showed that drinking fermented milk improved the fecal frequency and fecal condition.

        The quality changes of hams and sausages in refrigerated storage were investigated. Seven types of hams and six types of sausages produced in Korea were collected from markets and stored at 10℃ according to the Food Code of Korea, and then chemical, microbiological, textural and sensory characteristics were evaluated at 30, 40 and 50 days. The proximal analysis showed considerable variation in fat with less variation in moisture and protein. The pH values of hams and sausages slightly changed with no consistent difference. Water activity values of all samples except one type of sausage were consistent over time in refrigerated storage. No purge losses of hams were observed except two types of samples in the intial stage. Several types of sausages showed purge losses with no consistency and one type of sausage showed consistent purge losses (0.44-11.29%) during the storage. The volatile basic nitrogen (VBN) content of hams and sausages was still within 20 mg% (Standard and Specification of Korea) on the 50th day, although the VBN of all samples significantly increased over time (p$lt;0.05). The thiobarbituric acid (TBA) values of hams and sausages were well below 1.0 during the storage, although the TBA values of all samples significantly increased (p$lt;0.05). However it was noticed that one type of ham and two types of sausages showed TBA values of 0.945, 0.928 and 0.978, respectively. All the standard plate counts (SPCs) of hams during the storage period showed a level below 30 CFU/g except one type of sample with 10³ CFU/g at 50 days. All the SPCs of sausages showed a level below 50 CFU/g except one type of sample with 10² CFU/g and two types of samples with 10⁴ CFU/g on the 50th day. Coliform groups were not counted in all samples during the storage. Instrumental texture analysis showed that springiness, cohesiveness, chewiness, gumminess and adhesiveness slightly changed with no consistent difference. The hardness of the hams showed a decreasing tendency, and the hardness of the sausages an increasing tendency with no significant difference. Sensory evaluation for color, flavor, taste, texture and overall acceptability showed decreasing tendencies over time (p$lt;0.05). The scores of the five sensory characteristics maintained the medium level of quality at the termination of the experiment. Although the results indicated that the ham and sausage samples were acceptable after the 50 days' storage at 10℃, the shelf-life of the samples should be determined considering the rapid growth of bacteria and the high TBA values at 50 days.

        In order to investigate bacterial sanitary condition of fish and shellfish, we examined the normal flora in the 25 species of commercial fish and shellfish, and also proportional change of normal flora by storage period and temperature. Isolated 334 were isolated in the normal fish and shellfish and predominant genera were Pseudomonas (25.2%), Staphylococcus (10%), Acinetobacter (7.2%), Vibrio (6.9%), Micrococcus (5.4%), Aeromonas (5.2%), and Enterobacter (5.2%). In accordance with storage period and temperature, Pseudomonas grew on high ratio at 10℃ steadily, but Proteus had increased proportionally at 20℃ and 30℃. Additionally, Citrobacter, Moganella, and Pasteuralla had increasd, while Achromobacter, Acinetobacter, Yeast, and Micrococcus had decreased by period.

        This study was performed to investigate the induction of experimental atherosclerosis in rats and inhibitory effects of aloe vera on progression of atherosclerosis in rats. A dose range finding study of cholesterol and vitamin D₂ for the induction of atherosclerosis and studies on the subchronic effect of aloe vera and on the chronic effect of aloe vera were carried out. A total of 3-week old 125 male rats of Sprague-Dawley were divided into 25 groups and fed with the diet containing cholesterol (0.1, 0.2, 0.3, 0.5, 1.0 and 2.0%) and vitamin D₂ (500, 5000, 50000 and 500,000 IU/100 g) for 4 weeks. 35 male rats were divided into 7 groups and fed with the diet containing aloe vera with 1.0% of cholesterol and 50,000 IU/100 g of vitamin D₂ for 4 weeks. 200 male rata were divided into 5 groups and fed with cholesterol and vitamin D₂ for 6 and 12 months. Growth, clinical and pathological changes of rats in the three experiments were observed. The results were as follows: 1. In the dose-range finding study, feed intake, feed efficiency ratio and weight gain were significantly decreased and relative liver, heart, kidney and stomach weight to body weight were increased in all of the feed groups containing 500,000 IU/100 g of vitamin D₂. Serum biochemical values of total cholesterol, high-density lipiprotein cholesterol (HDL-cholesterol), triglyceride, calcium, inorganic phosphorous and chloride of male rats in treated groups. The aorta and coronary artery of rats in all of the diet group containing 500,000 IU/100 g of vitamin D₂ showed typical atheroaclerotic lesions. 2. Male rats fed with the diet containing aloe vera with 1.0% cholesterol and 50,000 IU/100 g of vitamin D₂ for 6 and 12 months did not show significant difference of diet intake and weight gain, and relative organ weight. The level of serum HDL-cholesterol and triglyceride recovered to the normal range by the aloe vera ingestation. 3. The aorta showed irregular appearence in the tunics intima with swelling, necrosis and calcification. The aorta of rat fed aloe vera diet showed no pathological lesions such as atherosclerosis of aorta. Aloe vera could have a helpful effect of vitamin D₂ and cholesterol induced atherosclerosis in rats. Long-term supplementation of aloe vera may slow down the process of experimental atherosclerosis in rats have effects on the development of atherosclerosis.

        In order to grasp status of trace metals contained and corelation analysis between cereal and soils, the samples which have been collected from four myeons in Ulju-ku Ulsan-city were 48 for cereal and 48 for soils. The average Hg containing level' of samples is 0.006 ppm for cereal and 0.062 ppm for soil, Pb is 0.302 ppm for cereal and 1.137 ppm for soil, Cd is 0.012 ppm for cereal and 0.027 ppm for soil, Cu is 2.01 ppm for cereal and 0.885 ppm for soil, and Zn is 7.853 ppm for cereal and 2.366 ppm for soil. Corelation analysis between cereal and soils showed statistical significance for Hg, Pb and Cu, but it didn't show any significance for Cd and Zn.

        This paper intends to investigate commercial fish and shellfish 25 species (fish 8 species, shellfish 7 species, crustacean 3 species, molusc 4 species and echinodermata) for the distribution of sanitary indicator organisms (total viable counts, coliforms, staphylococci, vibrios, and enterococci) and diatributional change of indicator organisms according to storage temperature and period. The logarithmic mean of total viable counts for total commercial fish and shellfish 25 species was 5.41±0.26 CFU/g, and in accordance with fish and shellfishes, crustacean 6.76±0.67 CFU/g, shellfish 5.67±0.56 CFU/g, echinodermata 5.47±0.50 CFU/g, fish 5.021±0.38 CFU/g, and mollusc 5.03±0.65 CFU/g. The logarithmic mean of enterococci was 2.36±0.37 CFU/g, and in accordance with fish and shellfish, crustacean 3.44±0.12 CFU/g, shellfish 3.87±0.45 CFU/g, echinodermata 3.38±0.0 CFU/g, fish 2.16±0.41 CFU/g and mollusc 0.01±0.0 CFUIg. The logarithmic mean of vibrios was 1.60±0.59 CFUIg, and in accordance with fish and shellfish, crustacean 4.23±0.11 CFU/g, shellfish 3.58±0.90 CFUIg, echinodermata 1.64±0.34 CFU/g, fish 1.79±0.67 CFU/g and mollusc 1.07±0.61 CFU/g. The logarithmic mean of staphylococci was 1.60±0.59 CFU/g, and in accordance with fish and shellfish, shellfish 0.01±0.00 CFU/g, echinodermata 3.51±0.60 CFU/g, fish 1.68±0.64 CFU/g, crustacean 0.34±0.33 and mollusc 2.90±0.11 CFU/g. The logarithmic mean of coliforma was 2.2±0.32 CFU/g, and in accordance with fish and shellfish, echinodermata 3.58±0.89 CFU/g was highest, shellfish 3.25±0.30 CFU/g, crustacean 3.23±0.49 CFU/g, fish 2.18±0.63 CFU/g, peeled shellfish 1.80±0.51 CFU/ g and mollusc 1.55±0.95 CFU/g. As the results of research of the change of the contaminated indicator microflora in working with storage period at 10℃, 20℃ and 30℃, total viable counts was increased without storage temperature and enterococci were decreased slowly at 10℃, but increased at 20 and 30℃ Vibrios were decreased slowly at 10℃, decreased at 20℃ and 30℃ in 2 days after increased rapidly. Staphylococci were increased promptly without storage temperature in 2 days, then the total viable counts were maintained. Coliforms were increased at 10℃ by 7 days, then decreased or maintained after 14 days, changed at 20℃ in accordance with fish species in 2 days, then returned to the initial total viable count, and decreased rapidly at 30℃ on 2 days. By the way, there were no difference among the species.

        본 연구에서는 복합막의 합성을 위한 기초연구로 상용막에 대한 전기화학적 물성과 레독스-흐름전지의 충방전실험을 통해 셀저항과 막저항을 특정하였다. 셀저항율과 막저항율은 충전할 때보다 방전할 때가 더 높았으며 동일한 막에서는 충전심도가 커질수록 저항율이 커짐을 알 수 있었다. hydrocarbon type인 Selemion CMV막이 perfluoro type인 nafion 117, 551막보다 저항율이 작음을 알 수 있었으며 2N 염산수용액에서 충전심도가 0%일 때 셀 저항율과 막저항율이 각각 12.864Ωcm2 , 8.751Ωcm2 였다.

        Quality changes of sausages in refrigerated storage for 60 days were investigated. Nine types of sausages produced in Korea were stored at 4℃(3-5℃), and then chemical, microbiological, and sensory characteristics were evaluated on every 10 days. The proximate analysis showed considerable variation in fat (23.97%, 17.10-30.20%) with less variation in moisture (51.96%, 48.10-66.30%) and protein (12.96%, 11.40-13.95%). pH value decreased over time averaging from 6.31 to 6.22 with no significant difference. Water activity was consistent over refrigerated storage averaging 0.95. Volatile basic nitrogen (VBN) values were still within 20 mg% though VBN for all types significantly increased over time (p$lt;0.05). Thiobarbituric acid (TBA) values were well below 1.0 though TBA showed significant differences among storage periods (p$lt;0.05). Standard plate counts (SPCs) significantly increased during storage (p$lt;0.05) while coliform group was not counted in all cases. SPCs reached 10^5 CFU/g in two types after 50 days' storage and were below 10^6 CFU/g in all types after 60 days' storage. Instrumental texture analysis showed that springiness, adheaiveneas, and hardness significantly decreased over the 60-day storage period (p$lt;0.05) while cohesiveness, chewiness and gumminesa did not change. Lightness, redness and yellowness of the internal Hunter color significantly decreased over time (p$lt;0.05) while no change was observed in external color. Sensory profile showed that flavor, taste, texture and overall acceptability significantly decreased over time (p$lt;0.05). The scores of the four sensory properties declined to the medium level of quality after 60 days' storage. The results suggested that the sausage samples were acceptable after 60 days' storage at 4℃. However, the shelf-life of the samples should be decided in the consideration of the growth rate of other spoilage flora coupled with the bacterial growth after 50 days' storage.

        목장에서 가축음용수 빛 세척수로 사용하는 목장용수에 대한 위생화학척 상태률 계절척으로 조사하기 위하여 강훤도 및 충청도에 소재한 유우목장 58 곳에서 채취한 목장용수에 대하여 pH, 총경도, 과망간산칼륨소비량, 질산성 질소, 암모니아성 질소, 염소이온, 황산이온, 불소, 철, 납, 카드융, 아연, 망간, 동 및 크롬올 봄과 여름 2 회 조사하였다. 충남지역과 강원지역 목장용수의 pH 는각각 6.49:t 0.09, 6.70 :t 0.06 이었으며, 총경도 9O.2l:t 7.07, 64.53:t 6.38 mg/l, KMn04 소비량 4.13:t 0.62, 4.34 :t 0.26 mg/l , 질산성질소 6.51:t 0.55, 3.6l:t 0.58 mg/l , 염소이온 20.51 :t 1.99, 5.41 :t 1.36 mg/l 그리고 황산이온 6.61 :t 1.02, 7.28:t 1.30 m g/l이었으며, 암모니아성 질소는 거의 검출되지 않았다. 검사한 중금속 불소, 철, 납, 카드륨, 아연, 망간, 동 및 크롬은 검출되지 않았거나 극미량만 검출되었다. 검사항목간의 관계를 비교하면 총갱도, 철산성질소, 염소이용 및 황산이 옹은 검사항목간 상관관계를 나타내었다. 검사항목 중 충남과 강훤 목장용수간 지역켜 차이률 나타낸 항목은 총갱도, 질산성질소 및 염소이온이였으며, 봄과 여름에 차이를 나타낸 항목은 질산성질소 뿐이었다.
