        This study was carried out to investigate the effect of muscle part and aging period on free amino acids and aroma compounds of Hanwoo (Korean cattle) cow beef. The M. longissimus (ML) and M. semitendinosus (MS) from 101 mon-old-cows were aged at 2℃ for 14 d. The free amino acids concentration increased in both ML and MS on 14 d of aging. In ML, asparagine, glutamine, histidine, glycine, threonine, arginine, tyrosine, phenylalanine, isoleucine, leucine and lysine were significantly (p<0.05) higher than those in MS. Varieties of aldehydes, ketones, alcohols, hydrocarbons, nitrogen and sulfur compounds were detected in both ML and MS and majority of these compounds showed increasing trend on aging. The ML had higher 14 aldehydes (acetaldehyde, 2-methylpropanal, 3-methylbutanal, 2- methylbutanal, pentanal, hexanal, heptanal, E-2-heptanal, octanal, 2-octenal, 2-nonenal, E-2-decenal, E,E-2,4-decadienal and 2-undecenal), 5 ketones (2-propanone, 2,3-butanedione, 2-butanone, 2-heptanone and 2,3-octanedione), 4 alcohols (ethanol, 1-pentanol, 1-hexanol and 1-octanol), 3 hydrocarbons (3-ethyl-2-methyl-1,3-hexadiene, 3- methyldecane and 2,2-dimethyloctane) significantly (p<0.05) compared with MS. However, the MS had higher 5 nitrogen and sulfur compounds (methanethiol, dimethyldisulfide, fufural, 2,5-dimethylpyrazine and 2-octylfuran) significantly (p<0.05) compared with ML.

        The study was conducted to investigate the differences in the compounds responsible for volatile flavors in Hanwoo and imported fresh beef from Australia, United States and New Zealand. Different imported beef samples were prepared as Angus beef from Australia, United States and New Zealand and the cross beef from the United States. Significant differences (p<0.05) in hexanal, benzaldehyde, octanal, nonanal, nonenal, decanal, E-2-decenal, hexadecyloxirane, tetradecanal, 2,2-dideutero octadecanal, octadecanal, pentadecane, 2,5-dimethyl pyrazine, 4-methyl-2-propyl-furan, 2-hexylfuran, 2-butylfuran, 2- pentylfuran, 2-heptyl furan were observed between loin and eye of round from Hanwoo and imported beef (p<0.05). In loin muscles, various volatile compounds such as hexanal, heptanal, octanal, E-2-octenal, nonenal, E-2-decenal, E,E,2,4-decadienal, 2-undecenal, heptane, 2-butyl furan were found to be significantly higher in Hanwoo beef as compared to imported beef. However, in the round muscles of Hawnoo eye compounds that were observed to be significantly higher were pentanal, hexanal, heptanal, benzaldehyde, octanal, nonanal, E-2 -decenal, octadecanal, 2-furan methanol and 2-pentyl furan. Further study need to be determined if those volatile compounds can be used as a bio-marker to identify origins of beef.

        This study was carried out to investigate the effect of amino acids complex and choline supplementation on the antioxidant enzyme activities and oxidative stability of Hanwoo (Korean cattle) beef. Fifteen months-old-Hanwoo steers were assigned into two groups and fed on a basal diets with or without amino acids complex (≥25% L-lysine monohydrochloride+≥8% DL- methionine)+choline (≥25% choline chloride) for 12 months. After slaughter, the M. longissimus from carcasses were stored at 4℃ for 7 days. Catalase, glutathione peroxidase and total superoxide dismutase activities were found to be unaffected by supplementation of amino acids+choline. After 2 days of storage, significant decline (p<0.05) in lipid oxidation (2-thiobarbituric acid reactive substances, TBARS) was observed when supplemented with amino acids+choline. However, supplementation of amino acids+choline maintained meat color as indicated by higher CIE L* (Lightness), a* (Redness), b* (Yellowness) and C* (Chroma) values during storage. It was therefore concluded that supplemental amino acids+choline could stabilize the lipid oxidation stability and meat color in Hanwoo beef.

        The current study was carried out to investigate the effect of addition of Rhus veniciflua Stokes oil (RVSO) and black garlic extract (BGE) on the lipid oxidation in Hanwoo (Korean cattle) beef model systems. The RVSO at 0.2% inhibited the TBARS (2-thiobarbituric acid reactive substances) formation when tested in liposome model system. The antioxidant effect of RVSO was further found to be similar to 0.2% butylated hydroxy toluene (BHT) and 0.01% vitamin E. On the other hand, BGE at 0.1% also showed the inhibition of TBARS formation in 4% NaCl-added Hanwoo beef patty and found to have slightly lower (p<0.05) effect than 0.1% vitamin E but higher (p<0.05) effect than 0.1% BHT. Results of this study indicated that both RVSO and BGE possess strong antioxidant effects and help to increase the oxidative stability in Hanwoo beef products.

        The present study investigated the dealing mode and the quality of Chuncheon Dakgalbi on marketing. Distribution of chicken as raw material for Dakgalbi at 100 restaurants in Chuncheon was studied. Boneless chicken was sold at 89, bone-in chicken was sold at 9 and both of them were sold at 2 restaurants, respectively. Consumer's taste for Dakgalbi was surveyed at different area such as apartment (A), university (B) and downtown area (C) in Chuncheon. The redness and taste score of Dakgalbi was found to be significantly higher (p<0.05) among the members of family (A) as compared to others. Saccharinity and salinity of Dakgalbi were rated significant (p<0.05) among university student (B) than other consumers. In conclusion, quality characteristics of Dakgalbi differs with marketing area or consumer group in Chuncheon.

        This study was carried out to investigate the effects of addition of aged garlic extract (AGE) on the color and lipid oxidation of ground chicken during refrigerated storage. The leg meat from 6 weeks-broiler was chopped and added with 4% of distilled water (control) and AGE, respectively, and then stored at 4±0.2℃ for 8 days. The commercial garlic was aged for the relatively short time (40-90℃/300 hr →natural dryness/40 hr→20-30℃/30-50 hr). The pH value was not significantly different between control and AGE-added chicken. The TBARS level of chicken was remarkably inhibited by addition of AGE during storage. In CIE color values, AGE-added chicken showed lower L* and higher b*, C* and Ho values than those of control during storage. Therefore, the addition of AGE in ground chicken enhanced the lipid oxidative stability and change to dark color.

        This study was carried out to investigate the effect of market weight on the sensory attributes of Korean native black pork. The M. longissimus from Korean native black pigs (KNP) with market weight of 56 kg and 70 kg were utilized as experimental materials. The intramuscular fat content, a* (redness) and b* yellowness) values were higher in KNP with market weight of 70 kg than in KNP with market weight of 56 kg (p<0.05). In TPA, hardness, adhesiveness, guminess and chewiness were lower in KNP with market weight of 70 kg than in KNP with market weight of 56 kg (p<0.05). The marbling score, meat color and overall liking among sensory evaluation of raw pork and taste, texture and overall liking among sensory evaluation of cooked pork were higher in KNP with market weight of 70 kg than in KNP with market weight of 56 kg (p<0.05). Therefore, higher market weight of KNP increased the sensory attributes of pork.

        This study was carry out to investigate the quality comparison of ground Korean native black pork compared with modern genotype pork by different fat addition. The Korean native black pig and modern genotype pig were slaughtered at 75 kg and 105 kg of live weight, and for 240 days and 210 days of feeding periods, respectively. The ground lean pork (M. semimembranosus) mixed with ground fat (10, 20 and 30%, respectively) was stored for 9 days at 4℃. The crude fat increased as fat content increased. The pH of two porks increased significantly during storage. It was lower the Korean native black pork during storage than modern genotype pork. The WHC (water-holding capacity) of Korean native black pork was higher than modern genotype pork. The Korean native black pork maintained black reddish color because it had lower CIE L* value and higher CIE a* value than the modern genotype pork. CIE L, b*, C* and h values increased with increasing fat content in two samples but all CIE color values decreased during storage. TBARS (2-thiobarbituric acid reactive substances), POV (peroxide value) and FOX (ferrous oxidation-xylenol orange) of ground pork during storage were increased as fat content increased. Lipid oxidation of Korean native black pork occurred more rapidly than modern genotype pig. The Korean native black pork tended to contain more saturated fatty acids compared with the modern genotype pork. Especially, stearic acid and total SFA (saturated fatty acid) content had significantly higher in Korean native black pork (p<0.05).

        This study was carried out to investigate the comparison of meat quality of Korean native black porks and modern genotype pork fed high and low lysine levels of diets at growing and finishing stages during refrigerated storage after thawing. M. longissimus from Korean native black pigs (gilts) with a live weight of 65 kg and modern genotype pork (gilts) with a live weight of 110 kg were frozen at -80 ℃ for 1 month and placed in the dark room at 1℃ for 7 days after thawing. The moisture content was significantly lower in modern genotype pork fed high lysine level of diets than to the other treatments (p<0.05), but crude fat content was significantly higher in modern genotype pork fed high lysine level of diets (p<0.05). The pH value and sensory evaluation were significantly higher in Korean native black pork than to modern genotype pork (p<0.05), and the drip loss was significantly lower in Korean native black pork (p<0.05). CIE L*, ho and hunter L were significantly lower in modern genotype pork fed high lysine level of diets than to modern genotype pork fed low lysine level of diets (p<0.05). Myristate, palmitate and saturated fatty acid content were significantly lower in Korean native black pork fed high lysine level of diets than to Korean native black pork fed low lysine level of diet (p<0.05), but unsaturated fatty acid content and UFA/SFA ratio were higher in Korean native black pork fed high lysine level of diets (p<0.05). Consequently, as Korean native black pigs were fed high lysine level of diets at growing and finishing stages, saturated fatty acid content of pork increased but unsaturated fatty acid content and UFA/SFA ratio of pork decreased. And the water-holding capacity, color stability and sensory evaluation of Korean native black porks were better than those of modern genotype pork.

M. longissimus from Korean native black pigs (gilts) with a live weight of 65 kg were placed in the dark room at 4℃ for 7 days and utilized for the quality measurements. The proximate composition, drip loss, TBARS value and sensory evaluation of raw and cooked meat were not affected by dietary lysine level. Korean native black pork fed low lysine diets showed the highest redness (a*) at day 7. Consequently, as Korean native black pigs were fed low lysine diets at growing and finishing stages, it was effective in color stability of porks.

        This study was carried out to investigate the effect of feeding level of dietary lysine on the quality of Korean native black pork during cold storage (4℃). After 54 Korean native black pigs was fed by the high, medium, low lysine dietaries at 25 kg live weight, the M. longissimus from 6 carcasses (3 gilts, 3 barrows) slaughtered at 65 kg live weight stored at 4℃ for 7 days. The proximate composition, drip loss, cooking loss, sensory evaluation was affected by feeding level of dietary lysine. The pH value was significantly higher in high lysine treatment than in the other treatments until 5 days (p<0.05) and significantly lower in medium lysine treatment (p<0.05). The CIE L* value was significantly higher in gilts among high lysine treatment (p<0.05) and increased significantly in all treatments until 5 days (p<0.05). The CIE a*, b*, C* values were higher in low lysine treatment. The hardness, adhesiveness, springiness, cohesineness, guminess, chewiness were lower in low lysine treatment and those in 7 days were lower than in 0 day.

        This study was carried out to investigate aroma patterns of Hanwoo (Korean cattle) beef by using an Electronic nose. The M. longissimus muscle and Semimembranosus muscle after 24 hours postmortem was obtained, and half muscles cooked in water batch until internal temperature arrived at 70℃ or microwave for 30 sec. The raw and cooked beef samples stored at 1℃ for 11 days. Sensitivity values (dR/RO) among electronic nose data were changed differently by muscle parts, heat treatments and storage days. The dR/RO values from SY/LG, T30/1, P10/1, P10/2 were decreased at 11th storage compared with those at 1th storage. Mapping these data by using PCA (principal component analysis) showed that raw and cooked beef data were presented on the right and left side of board, respectively. The data of 1st storage were presented on the right side, and flock together. Otherwise, the data of 11th storage were spreaded out more widely on the left side. Consequently, the dR/RO value and PCA mapping by Electronic nose data showed difference by sample treatments and storage days. Therefore it will be possible to able to detect separated aroma patterns of Hanwoo beef by using an Electronic nose.

        The objective of this research was to investigate the effect of immersion in Rhus verniciflua Stokes extract (RVSE) on the total reducing ability (TRA), protein oxidation and myoglobin oxidation of beef steak (Hanwoo longissimus muscle) stored with high oxygen-modified-atmosphere packaging (MAP) (HOMAP, 75% O2+20% CO2+5% N2) and low oxygen-MAP (LOMAP, 0% O2+20% CO2+80% N2) at 4℃ for nine days. RVSE induced TRA (p<0.05), metmyoglobin (MetMb) formation, and the CIE Ho value but reduced the carbonyl content and R630-R580, as an index of the intensity of redness by oxymyoglobin, and the CIE L*, a*, and C* values. HOMAP maintained a lower TRA, MetMb concentration, and CIE H° value but had higher R630-R580 and CIE L*, a*, and C* values compared to LOMAP. Therefore, RVSE induced TRA and protein oxidation stability but reduced myoglobin stability in Hanwoo beef steak. In addition, the effects of HOMAP were opposite those of RVSE.
