        Multiple starters consisting of two Bacillus amyloliquefaciens strains (MJ1-4 and EMD17), Pichiafarinosa SY80, and Rhizopus oryzae were used for Doenjang making. Bacillus strains were selected based on their abilities to inhibit toxinogenic fungi and Bacillus cereus, fibrinolytic activity, and their ability to confer good flavor to Cheonggukjang. P. farinosa SY80 and R. oryzae, previously isolated from soy sauce, were selected because they were not inhibited by two bacilli. Doenjang was prepared by inoculation of multiple starters (A1 Doenjang). Control Doenjang was prepared by inoculation of B. subtilis KACC 16750 (Natto strain) and Aspergillus oryzae KCCM 60166 (A2 Doenjang). Another control (A3 Doenjang) was prepared by inoculation of microorganisms present in rice straw. Doenjang samples were fermented for 70 days at 20℃. pH of 3 samples decreased from the initial value of 6.4 to 5.8~6.0 and titratable acidity (TA) increased from 0.6 to 1.1~1.3. The amount of amino-type nitrogen increased during fermentation. There were slight differences in moisture, crude-protein, and crude-fat contents after 70 days. Contamination of fungi was observed only in A3 Doenjang and B. cereus was not detected from all 3 samples. A1 Doenjang showed the highest fibrinolytic activity and A2 Doenjang the second. These results indicate that Doenjang made with carefully selected starters was functionally improved and microbially more safe.

        고추 유과를 15, 25, 35℃에서 70일간 저장하면서 품질특성을 확인하고, 고추 유과의 유통기한을 예측하였다. 색도를 분석한 결과, 15℃에서 저장했을 때 색도의 변화가 더 적게 나타났고, 특히 적색도(a값)가 온도에 따른 변화가 심하였다. 저장 기간 중 고추 유과의 물성을 비교해 본 결과, 고추 발효 액 첨가가 유과의 경도와 부서짐성에 영향을 준 것으로 보인 다. 경도는 대조구보다 고추 유과가 495.68 g/㎠로 높게 나타 났고, 70일간 저장했을 때 대조구는 35℃가 15℃보다 약 2배 더 증가하였다. 고추 유과도 고온에서 경도가 더 증가하여 1,405.64 g/㎠이었다. 부서짐성은 경도와 마찬가지로 저장기 간이 길수록 온도가 높을수록 증가하는 것으로 나타났고, 35℃ 에서 70일간 저장했을 때 대조구와 비교하여 고추 유과가 688.86 g으로 낮게 측정되었다. 고추 유과의 산도는 대조구보 다 낮게 나타나, 고추 발효액이 첨가된 유과가 저장성이 더 좋은 것을 알 수 있었다. 과산화물가에서도 대조구와 비교했 을 때 대조구는 146.49 meq/㎏이고, 고추 유과는 126.79 meq/ ㎏으로 고추 유과의 산패가 덜 일어났다. 저장 중 관능특성의 변화는 대조구보다 고추 유과의 기호도 변화가 더 적어 고추 유과의 관능적 특성이 더 유지되었다. 식품의 유통기한 산출 시스템을 이용하여 유통기한을 예측한 결과, 품질 지표로 산 가를 이용하여 대조구는 200일로 설정되었고, 고추 유과는 274.78일로 설정되어 고추 유과의 유통기한이 더 길게 예측 되었다. 결과적으로 고추 발효액을 첨가한 고추 유과가 대조 구보다 저장 중 품질의 변화가 적어 저장성이 좋은 것을 알 수 있었다.

        The purpose of this study was performed to determine the whitening effect of organic solvent extracts from the centipede, Scolopendra subspinipes mutilans. We prepared different concentrations (50%, 70% and 100%) of ethanol, methanol, 100% ethyl acetate and water extracts. We tested melanin inhibitory effect and tyrosinase activity using B16/F10 melanoma cell. As a result, treatment of organic solvent extracts is decreased the biosynthesis of melanin and tyrosinase activity to 30~60%. Especially the 70% ethanol extracts was the most effective in B16/F10 melanoma cells. In the study on melanogenic protein expression, 70% ethanol extracts of Scolopendra subspinipes mutilans blocked glycosylation of tyrosinase. Therefore this result suggests that 70% ethanol extracts could be developed as a skin whitening agents.

        The centipede Scolopendra subspinipes mutilans has been a medically important arthropod species by using it as a traditional medicine for the treatment of various diseases. In this study, we derived a novel lactoferricin B like peptide (LBLP) from the whole bodies of adult centipedes, S. s. mutilans, and investigated the antifungal effect of LBLP. LBLP exerted an antifungal and fungicidal activity without hemolysis. To investigate the antifungal mechanism of LBLP, a membrane study with propidium iodide was first conducted against Candida albicans. The result showed that LBLP caused fungal membrane permeabilization. The assays of the three dimensional flow cytometric contour plot and membrane potential further showed cell shrinkage and membrane depolarization by the membrane damage. Finally, we confirmed the membrane-active mechanism of LBLP by synthesizing model membranes, calcein and FITC-dextran loaded large unilamellar vesicles. These results showed that the antifungal effect of LBLP on membrane was due to the formation of pores with radii between 0.74 nm and 1.4 nm. In conclusion, this study suggests that LBLP exerts a potent antifungal activity by pore formation in the membrane, eventually leading to fungal cell death.

        This study investigated the quality characteristics of black soybean paste(Daemacjang) with black soybean content and salt concentration. The total acidity increased as the pH decreased during fermentation period. The amino-type nitrogen content of all samples increased significantly during fermentation time. Total cell counts was not significantly different during fermentation, and mold counts decreased at 3 log cycles. The cell counts of lactic acid bacteria decreased approximately 2 to 3 log cycles in 10% salt concentration (treat B and C), and were not detected in treat A and D. Total polyphenol contents of treat A, B, and C were 42.77%, 52.99% and 52.95% during fermentation up to 70days, respectively, which was higher than D (39.86%). In a sensory evaluation, treat B showed the highest scores for overall acceptability.

        This study was performed to evaluate the quality characteristics of sourdough bread with addition of lactic acid bacteria (LAB) in the antibacterial activity. The starter cultures were used for sourdough bread to increase bread shelf-life: Lactobacillus fermentum, Lactobacillus paracasei KB28, and Pediococcus pentosaceus MJK7. The results showed that the viable counts of lactic acid bacteria were increased in 8.1~9.2 log cfu/㎖, respectively. The pH of the three sourdoughs was lower than that of control. In the texture characteristics, hardness, gumminess, and chewiness were tended to increase on the sourdough bread. Among the three sourdough breads, bread volume and retrogradation of bread were not significantly different. According to the results from preservation period, the sourdough breads with addition of Lb. paracasei KB28, Ped. pentosaceus MJK7 were showed the appearance of mold and bacteria growth in 5~6 days, whereas the control were showed in 3 days. As a result, a sensory evaluation indicated the highest overall acceptance in order of Lb. fermentum, Lb. paracasei KB28, Ped. pentosaceus MJK7. Based on these results, Lb. paracasei KB28 can be applicable to improve the quality of sourdough bread.

        We examined the effects of biological activity Phellinus linteus mycelium culture with cassiae semen extract. Firstly, the optimal temperature, initial pH and culture period for mycelial growth in a liquid culture of P. linteus were determined, and they were 30℃, pH 5.0 and 8 days respectively. The five herbal materials were examined against several health functional efficacies, and, as a result, Cassiae semen was chosen, with its superior inhibitory effects in β-glucuronidase inhibitory activity, electron donating activity, ACE inhibitory, and α-glucosidase inhibitory activities(95.3%, 80.9%, 96.1 and 24.2%, respectively). P. linteus fruit body was investigated on β-glucuronidase inhibitory activity, electron donating activity, ACE inhibitory, and α-glucosidase inhibitory activities, and they were 54.7%, 81.9%, 30.0% and 20.1%, respectively. Accordingly, C. semen was used in the following experiment, to give an additive functional effect on the P. linteus. As the amount of C. semen in the cultural media increased, mycelial weight and β-glucan contents also increased, but final pH was not influenced. In addition, the β-glucuronidase inhibitory activity, electron donating activity, and α- glucosidase inhibitory activity increased. P. linteus mycelium culture showed higher activities in the other three tests above, except for electron donating activity, when C. semen was added to the medium before cultivation.

        The aim of this study was to investigate the correlation among bone mineral density(BMD), body composition and body circumference on 20's college women in Hwaseong. A total of 86 subjects were measured with BMD and body composition and body circumference. To evaluate the correlation between BMD and body composition, bone density and body weight, body mass index(BMI), lean body mass, muscle mass, fat mass and body fat mass were compared. The results of this study, weight was considered the strong correlation with BMD than the height and BMI seems to be greater significance rather than the lumbar spine and femur BMD. In addition, the relationship between body composition and BMD, lean body mass, muscle mass, body fat mass were the most relevant factors and BMD. The relationship between BMD and body circumference that have been difficult because of not enough previous studies but somewhat the study showed that association.

        The purpose of this study was to analyze and compare the effect of resistance exercise and balance exercise on proprioception and WOMAC index of patients with degenerative knee osteoarthritis. A total of 40 subjects participated in this study. The subjects were diagnosed with degenerative knee osteoarthritis and all were more than 60 years old. They were divided into three groups. Group Ⅰ(n=8) was trained with resistance exercise, Group Ⅱ(n=6) was trained with balance exercise and GroupⅢ(n=6) was trained with range of motion as a control. The results of this study were as follows. It was significantly indicated that the resistance exercise group and balance exercise group elicited error-reduction on proprioception goal-angle (p<.05). There was a statistically significant difference on proprioception between resistance exercise group and control(range of motion) group. There was a statistically significant reduction on WOMAC index between resistance exercise group and balance exercise group (p<.05) and on the WOMAC index between resistance exercise group and range of motion group(p<.05). In conclusion, resistance exercise and balance exercise are effective on degenerative knee osteoarthritis and resistance exercise is the most effective for improving proprioception and WOMAC index. More research on the intervention according to the degree of degenerative knee osteoarthritis is needed.

        In our present study, total methanol extracts prepared from B. platyphylla var. japonica showed a significant increase in cell proliferation upon the induction of oxidative stress by hydrogen peroxide or y-ray irradiation. Total methanol extracts were fractionated into five separate preparations i.e. n-hexane, dichloromethane, ethylacetate, n-butanol and water fractions. Among these, the ethylacetate and butanol fractions of B. platyphylla var. japonica showed the highest protective effects against oxidative stress induced by hydrogen peroxide. These fractions also showed strong protective effects against y-ray irradiation. When we evaluated the cytotoxicity of these fractions, the butanol fraction showed no effects in a colony formation assay. In addition, the butanol fraction showed a cell proliferation activation effect evidenced by significant increase in the colony formation of y-ray irradiated cells. Both a radical scavenging activity and clonogenic activity assay suggested that the mechanism behind this protective effect against reactive oxygen species may be due to the radical scavenging and cell proliferation activity of B. platyphylla var. japonica extracts.

Inhibitors of gllanylate cyclase. PI3K, ERK. and p38 MAP kinase blocked H202-indllced cytotoxicity and the expression of HO-l and DSPP mRNAs in pulp cells. These data suggest that the induction of HO-l by H202 in plllp cells plays a protective role against the cytotoxic effects 0 1' HzOz and stimulates DSPP expression‘ reslllting in prematllre odontoblast dilTerentiation throllgh pathways that involve cGMP‘ p38. and ERK.

        P. verruculosum의 xylanase는 iodine, NBS, DEP, 그리고 2, 3-butanedione에 의해 실활되는 것으로 보아 활성중심에 tyrosine, histidine, tryptophan 및 arginine 잔기가 존재함으로서 효소활성에 직접적으로 또는 간접적으로 관여하는 것으로 생각된다. 금속이온들 중 Hg^2+와 Mn^2+에 의해서 현저히 활성이 저해되었으나 Cu^2+에 의해서는 반대로 활성이 크게 증가되었으며 Hg^2+에 의한 활성의 저해효과는 β-mercaptoethanol의 첨가에 의해 보호되었다. P. verruculosum으로부터 분리한 β-xylosidase는 NBS와 SDS에 의해 효소활성이 크게 저해되는 반면 실험에 사용된 다른 수식제들에 의해서는 별 영향을 받지 않았으며 금속이온들 중 Hg^2+에 의해서 크게 활성이 저해됨으로써 효소활성에 tryptophan잔기가 관여할 것으로 생각된다.

        천연물 유래 단일 성분의 지방세포로의 분화 및 지방축적 억제효과에 대한 잠재성을 탐색하기 위해 본 연구에서는 화살나무의 껍질에서 분리 정제한 FG가 3T3-L1 지방전구세포에 있어서 지방세포로의 분화 및 지방구 축적에 미치는 영향에 대해 평가하고, 관련 메카니즘에 대해 검토하였다. FG는 분화용 배지에 포함된 분화 촉진인자들의 자극에 의한 지방생성에 있어 주요한 전사인자인 PPARγ와 그 표적 단백질인 FABP4의 발현을 억제함으로써 지방세포 분화 및 지방구 축적을 억제하는 것으로 나타났다. 이상의 결과로부터 FG가 비만이나 비만과 관련된 당뇨병 등을 예방, 개선하는데 유용한 물질로 사용될 가능성이 있을 것으로 생각된다.

        Background: This study were performed to determine the effect of root pruning of Zizyphus jujuba var. inermis (Bunge) Rehder. Root cutting inhibit vegetative growth and promote reproductive growth as temporarily reducing growth, net assimilation, water potential of leaf and cytokinin level. Methods and Results: The root pruning was treated of the root cutting widths 50, and 80㎝ and the root cutting depths 10, and 20㎝. The amount of root pruning and the number of suckers were the highest in the root-pruning treatment at a width of 50㎝ and a depth of 20㎝. The blooming time was from June 18 to 20, and no difference was observed in the blooming time among the rootpruning treatments. The number of flowers was rather higher in the root-pruning treatment at a width of 50㎝ and a depth of 20㎝ and at a width of 80㎝ and a depth of 20㎝. The percentage of fruit setting was higher in the plants whose roots were pruned at a depth of 20㎝ than in the untreated plants. The fruit size, fruit weight, and sugar content showed no difference among the root-pruning treatments. Conclusions: The results showed that percentage of fruit setting increased with root pruning, while no difference was observed in the growth and fruit quality of plants.

        Background : The most problematic disease in Boxthorn is Anthracnose. New variety with Anthracnose-resistant is good for high yield and Safe fruit production in open field. Therefore it is necessary to develop a New variety with Anthracnose -resistant and high yield. Methods and Results : The new boxthorn line, CB10511-104 was selected from the cross between Cheongun (IT232599) and CB08456-113 to breed new variety with high yield and Anthracnose-resistant in 2011. Its preliminary yield test was performed from 2012 to 2013 and the selected line was named Cheongyang 25. Its regional yield trials were carried out in Cheongyang, Yesan and Jindo for 3 years, from 2014 to 2016. Cheongyang 25 was registered as the new variety, Cheonggeum, in 2016. The specific characteristics were summarized as follows; Tree shape is open type and the leaf is round-lanceolate. The flowers are normal size and purple. The fruit is large size, round oval and yellowish red. The flowering was June 19 with medium flowering. Number of sprout branch by pruning was generated more than the check variety, Cheongmeong. The infection rates on leaves to Eriophys macrodonis Keifer was as strong as 39.6 percent. Anthracnose on fruits in open field was slightly similare compared to the check variety, but check variety was Anthracnose-resistant. The content of betaine and free sugar in dried-fruits were higher than that of the check variety. The dried-fruit yield was decreased about 17 percent in open field. Conclusion : This variety ‘Cheonggeum’ was suitable for cultivation in open field because of Anthracnose-resistant. It is necessary the companion variety, Cheonghong, because of self-incompatible.
