        We investigated the correlation between density of air and the infection rate of airborne microorganisms in mushroom cultivation facilities and found that the correlation was low in places where the infection rate during cultivation was less than 1%. The farms with an infection rate of 2~5% showed a high infection rate in the inoculation room in spring and summer seasons, and in the incubation room in autumn, and the farms with an infection rate of more than 6% showed infection in all the rooms regardless of the season. The farms where the Trichoderma sp. was investigated at the time of the mushroom cultivation showed the highest infection rates of 3.17%, 2.74%, and 2.64% in summer, spring, and autumn, respectively. The farms infected with Neurospora tetrasperma showed a lesser rate of infection than the ones infected with Trichoderma sp., and the highest infection rate of 0.56% was observed in summer. Based on these results, the type of infection could be classified into five groups, where type I was farms where the infection rate is less than 1% in all seasons. Three farms belonged to this type, and the infection rate in this type was lower than that in the other types.

        느타리버섯 재배에서 영양원으로 가장 많이 사용하고 있는 면실박의 첨가비율은 12%이상이면 충분할 것으로 판단된다. 면실박을 12~18% 첨가된 배지에서는 균사생장량은 13.9~14.0 cm로 균사생장이 대조구와 같거나 조금 빨랐다. 그러나 면실박을 10% 이하 첨가한 배지에서는 대조구보다는 균사생장이 느렸다. 면실박 첨가량에 따른 균사밀도는 처리간에는 뚜렷한 차이를 보이지 않고 높은 밀도를 보였다. CN율은 면실박 2%첨가에서 42.5, 면실박 10%첨가에서 26.8, 면실박 12%첨가에서 25.4였으며, 면실박 16% 첨가에서는 20.4 그리고 면실박 18% 첨가에서는 18로 대조구와 비슷한 수치를 보였다. 갓 직경과 두께는 면실박 14% 처리에서 가장 높았고, 대의 굵기는 면실박 12% 첨가된 처리에서 가장 높았다. 대와 갓의 경도는 면실박 16% 첨가된 처리에서 가장 높았다. 대의 색도를 측정한 결과 L값은 면실박이 적게 첨가된 처리구에서 낮은 경향을 보였지만, a, b 값은 처리간에 뚜렷한 차이를 보이지 않았다. 병당 수량은 대조구가 147.2 g/850 ml였 고, 면실박 12% 첨가에서 147.6 g/850 ml으로 대조구보다 조금 높았다.

        본 연구를 통해 병 재배 느타리버섯 ‘춘추2호’의 정밀 재배를 위한 최적 생육모델 개발하기 위하여 느타리 농가를 대상으로 스마트팜 기술을 적용하여 생육환경을 분석한 결과를 보고하고자 한다. 실험 농가의 균상면적은 114 m 2 , 균상형태는 2열 5단, 냉동기는 10마력, 단열은 샌드위치 판넬 100T, 가습기는 초음파 가습기 2대, 난방은 10KW를 사용하였고, 5,500병을 입병하여 재배하고 있었다. 느타리버섯 재배농가에서 생육환경 데이터를 수집하기 위하여 설치한 환경센서부로 부터 버섯의 생육에 직접적으로 영향을 미치는 온도, 습도, 이산화탄소 농도, 조도 등을 수집 분석하였다. 온도는 균 긁기한 후 입상시 19.5 o C에서 시작하여 버섯이 발생되어 병을 뒤집기 후 5 일차까지 거의 21 o C를 유지하고 자실체가 자라서 수확기에 가까워지면 18 o C에서 14 o C를 유지하면서 버섯을 수확 하였다. 습도는 균 긁기한 후 입상시 거의 100%에 가까 웠고, 버섯 발생 및 생육과정 중에도 습도는 거의 95~100%를 유지하였다. 이산화탄소농도는 입상후 5일까 지는 최고 5,500 ppm까지 증가하였고, 6일차부터는 환기를 통해 단계적으로 농도를 낮추어 수확기에는 1,600 ppm 을 유지하였다. 조도는 입상후 6일차까지는 8 lux의 빛을 조사하였고, 그 이후 주기적으로 4 lux의 빛을 조사하면서 생육을 진행하였다. 농가에 재배하고 있는 ‘춘추2호’의 자실체 특성은 갓 직경은 26.5 mm, 갓 두께는 4.9 mm이며, 대 굵기는 8.9 mm, 대 길이는 68.7 mm였다. 대 경도 는 3.9 g/mm, 갓 경도는 0.9 g/mm였고, 대와 갓의 L값은 78.2와 60.5이였다. 자실체 수량은 166.8 g/850 ml였고, 개체중은 12.8 g/10 unit였다.

        Our research on juvenile Oncorhynchus masou masou in oyster mushroom supplemented diet was studied to investigate the effect of feeding. Mixing of feed ingredients for dried oyster mushrooms, 3.5, 7.0, 10.5, 14.0 (%) was added to the amount of oyster mushroom dietary beta-glucan content of the more abundant. After the weight of feed given to salmon survey oyster mushrooms diet for 3.5 to 7.0% was similar to the formula feed and the weight of the fish ate oyster mushroom feed over 10.5% were reduced. The oyster mushroom of the experimental diets containing 3.5 to 7.0 percent hepatosomatic index and feed coefficient figure was similar to those of the formulated diets. Therefore we have juvenile cherry salmon fed diets containing 3.5 to 7.0% was considered good to eat and additional research on the immune response will be carried out was necessary.

        The physicochemical characteristics of oyster mushrooms (Pleurotus ostreatus) cultivated using liquid spawn (MLS) were compared with those of commercial mushrooms cultivated using solid spawn. The color intensity of the two types of mushrooms showed no remarkable difference. The hardness of the MLS-cultivated mushrooms was significantly higher, but their moisture content (86.80%) was significantly lower than that of the commercial mushrooms. Mineral contents in MLS-cultivated mushrooms (421.17 mg/100 g) were significantly higher than those in the commercial mushrooms (333.26–362.78 mg/100 g); in particular, the potassium (K) content was the most abundant in the former. The amino acid content in the MLS-cultivated mushrooms (4,695.22 mg/100 g) was about 1.4–2.0 times that in the commercial mushrooms. The essential amino acid contents and sum of aspartic acid and glutamic acid were higher in the MLS-cultivated mushrooms than in the commercial mushrooms. The β-glucan content in the MLS-cultivated mushrooms was 1.1–2.3 times higher than that in the commercial mushrooms. The total phenol and flavonoid contents and the DPPH and ABTS radical-scavenging activities of the MLS-cultivated mushrooms were significantly higher than those of the commercial mushrooms; however, the reducing power showed an opposite trend. Therefore, MLS-cultivated mushrooms contained higher amounts of valuable components and higher antioxidant activities than commercial mushrooms.

        In recent years, interest in halal authentication from the domestic food and cosmetics field has been growing for advances into the overseas halal market. For halal authentication, the product must not contain haram ingredients derived from pig, dog, human, GMO, etc. In this study, the presence of haram ingredients in plant extracts (carrot, oyster mushroom, and pine needle) treated with papain and bromelain and cosmetics (mask pack and cream) containing these extracts were analyzed by PCR to confirm whether these cosmetics were suitable for halal authentication. Detection limits of the PCR method that specifically detected template DNA of human, pig, dog, and GMO were 1.29×103, 1.14×103, 1.24×102 and 2.02×103 copies/tube, respectively. PCR was not inhibited by the plant extracts or cosmetic ingredients. Results of PCR for the plant extracts or cosmetics containing these extracts were all negative. This PCR method could be used to rapidly identify the presence of haram ingredients in raw materials or final products during the manufacturing process of food and cosmetics.

        본 연구는 병재배 느타리버섯 정밀재배를 위한 최적 생육모델 개발을 위하여 느타리 ‘수한1호’ 농가를 대상으로 스마트팜 기술을 적용하여 생육환경을 분석한 결과를 보고하고자 한다. 실험 농가의 균상면적은 88 m², 균상형 태는 2열 5단, 냉동기는 5마력, 단열은 샌드위치 판넬 100T, 가습기는 초음파 가습기 2대, 난방은 12KW를 사용 하였고, 5,000병을 입병하여 재배하고 있었다. 느타리버섯 재배농가에서 생육환경 데이터를 수집하기 위하여 설치한 환경센서부로부터 버섯의 생육에 직접적으로 영향을 미치는 온도, 습도, 이산화탄소 농도, 조도 등을 수집 분석하였다. 수집한 온도자료를 분석한 결과, 균 긁기한 후 입상 시 온도는 22°C에서 시작하여 버섯이 발생되어 병을 뒤집기를 할때까지 거의 25°C를 유지하고 자실체가 자라서 수확기에 가까워지면 13°C에서 15°C를 유지하면서 버섯을 수확하였다. 습도자료를 분석한 결과, 습도는 입상에서 생육전 과정동안 거의 100%를 유지하였다. 이산화탄소농도 자료를 분석한 결과, 입상후 3일까지는 서서히 증가하였으나, 그 이후 급격히 증가하여 거의 2,600 ppm 까지 증가하였고, 6일차부터는 환기를 통해 단계적으로 농도를 낮추어 수확기에는 1,000 ppm을 유지하였다. 조도 자료를 분석한 결과, 느타리버섯 입상후 초기에는 거의 빛을 주지 않았고 3~4일차에 17 lux의 빛을 조사하였으며, 그 이 후 주기적으로 115~120 lux의 빛을 조사하면서 생육을 진행하였다. 농가에 재배하고 있는 ‘수한1호’의 자실체 특성은 갓 직경은 30.9 mm, 갓 두께는 4.5 mm이며, 대 두께는 11.0 mm, 대 길이는 76.0mm였다. 대 경도는 0.8 g/mm, 갓 경도는 2.8 g/mm였고, 대와 갓의 L값은 79.9와 52.3이였다. 자실체 수량은 160.2 g/850 ml였고, 개체중은 12.8 g/ 10 unit였다.

        큰느타리버섯은 에르고스테롤 및 글루칸과 같은 기능성 물질의 함량이 높아 항산화 활성 및 프리바이오틱 효과를 일으키는 버섯이다. 큰느타리버섯은 향이 강하며 단단해 기호도가 높지만 장기간 소요되는 선박수출 등에서는 선도유지 기간 확보가 필요하다. 버섯의 품질에 영향을 미치는 외부요인은 온도, 상대습도, 공기조성 및 통풍 상태가 있으며 이로 인해 버섯의 호흡량, 수분 함량, 경도, 색도, pH 및 이취 등에 영향을 준다. 큰느타리버섯의 주요 장해는 갈변, 이취, 부패가 있으며, 이를 막기 위해 상품성이 높은 품종을 개발하거나 저장성을 높이는 처리 방법이 고안되고 있다. 버섯의 품질을 유지하기 위한 방법으로는 건조, 감마선 조사, 키토산 처리와 같은 수확 후 처리 방법과 CA 저장과 MA 포장을 통한 저장 방법이 있다. 버섯의 건조는 자연건조, 열풍건조, 동결건조, 진공건조, 전자파진공건조 방법이 있으며 동결건조 방법을 사용한 버섯의 성분저하가 비교적 낮았다. 1 kGy 감마선 조사가 고선량에 비해 저장기간 연장에 효과적이었으며 오일, protocatechuic acid, 왁스 등의 친수성 colloid를 키토산에 첨가하여 코팅처리 하였을 때 경도유지, 호흡 및 갈변이 억제되었다. 큰느타리버섯의 CA 저장조건은 10℃ 이하의 온도에서 5kPa O₂ + 10~15kPa CO₂의 공기 조성이 제시되었으며 MA 포장으로는 미세천공을 갖는 PP필름을 이용한 능동적 기체조성 방법이 저장 중 품질유지에 효과적이었다.

        느타리버섯 수확후 배지를 이용하여 표고 톱밥배지로 활용하기 위한 연구 수행결과 다음과 같다. 느타리버섯 수확후 배지를 톱밥 첨가량의 20~50%로 4처리로 혼합하여 분석한 결과 C/N은 62~76으로 나타났다. 느타리버섯 수확후 배지 첨가구는 대조구에 비해 질소와 폴리페놀 함량은 상대적으로 높고, 과당과 유기산 함량은 낮은 경향이었다. 특히, 미강이 첨가되지 않은 50% 처리구는 과당, 유기산 함량이 현저하게 낮았다. 초발이기간은 20, 25%가 7일로 대조구와 같았으나 30%와 50%는 각각 6일, 11일로 대조에 비해 각각 1, 4일 지연되었다. 표고버섯 3주기 수량은 20% 처리구가 268.7 g으로 대조와 비슷하였으나 첨가수준이 높을수록 감소하여 특히, 50% 첨가구에서는 버섯 발생이 거의 이루어지지 않았다. 따라서 느타리버섯 수확후 배지를 표고 배지로 이용하기 위해서는 톱밥 첨가량의 20% 수준이 바람직할 것으로 생각된다.

        The effects of Postharvest CO2 treatment on the quality and shelf life of oyster mushroom packaged with oriented polypropylene (OPP) film bag were investigated. On the day of harvest, the ‘Gonji-7ho’ oyster mushroom grown by bottle cultivation of Jangheung County, Korea transferred to a laboratory in Wanju County and were cooled in a cold room at 3°C for 1 day and then treated with 30% or 50% CO2 for 3 hours at 3°C. After the CO2 treatment, 400 g of oyster mushroom were sealed into 20 μm thick OPP film bag (width: 29 cm, length: 24 cm) used in the actual farmhouse. The package gas composition, hardness, color change, off-flavor index, browning index, and overall quality were evaluated during storage at room temperature (RT) for 6 days and at 3°C for 21 days. As a result, During storage at RT, the concentration of carbon dioxide in the bag of 30%, 50% CO2 were higher than untreated and shelf-life of oyster mushroom at 50% CO2 was reduced 1 day due to off-flavor while 30% CO2 or untreated was 2 days. During storage at 3°C, the concentration of carbon dioxide in the bag was kept low at 30%, 50% CO2 treatment compared to untreated, the respiration of oyster mushroom at 30, 50% CO2 were lower than untreated during initial 7 days storage at 3°C, but ethylene production were not different. The hardness of oyster mushroom at 30% CO2 was higher, the lightness (L* value) of stem surface was higher, the yellowness (b* value), browning index was lower and odor index was lower than untreated or 50% CO2. 30% CO2 treated oyster mushroom packaged with OPP film bag kept 4.2~16.2% O2 and 4.2~15.5% CO2 concentration in the bag during storage at 3°C, and showed highest overall quality index. Marketable shelf-life was assessed 10 days for untreated, 17 days for 30% CO2, and 16 days for 50% CO2, respectively.

        This study was carried out to develop the technology to manage the growth management of mushroom which was cultivated by long-term knowledge based on the quantified data. In this study, it was developed hardware to monitor and control the growth environment of mushroom cultivation house and an algorithm to automatically grow mushroom. Environmental management for the growth of mushrooms was made possible by cultivation sites, computers and smart phones. In order to manage the environment of mushroom cultivation house, environmental management data of farmers cultivating the highest quality mushrooms in Korea was collected, and a growth management database was created based on the collected data. The management environment for the mushroom cultivation was controlled at ±0.5 °C for temperature, 7 % for upper limit and 3 % for lower limit for relative humidity, and ±10% level for carbon dioxide concentration based on database value. As a result of cultivating mushrooms in such an environment, it was possible to produce mushrooms at almost the same level as those cultivated in farms with the best technology. Therefore, it was considered that the environmental management of the mushroom house managed by the technology based on the long experience could be managed based on the sensor data.

        This study was conducted to investigation species of microbes collected form SMS(spent mushroom substrate) of oyster mushroom. SMS samples were collected from two farms and mushroom research Institute in Gyeonggi-Do. 52 microbial isolates form SMS of oyster mushroom were collected. 24 of these isolates identified Bacillus sp. By using 16s rDNA. Among the isolates, Bacillus sp. was the most abundant with 46% of total isolates, followed by Lactococcus sp. with 20% and Saccharomycetales contained Galactomyces sp. with 19%. To define the optimum conditions for the cell mass of major isolates collected from SMS of oyster mushroom, we have investigated optimum culture condition such as pH, temperature, and incubation time. Optimum initial pH, temperature and incubation time of Bacillus sp. were determined as pH 6.0, 25°C and 48 hours, respectively. In the Lactococcus sp, optimum initial pH 6.0, optimum initial temperature 35°C and optimum growth period 48 hours. Optimum initial conditions of Saccharomycetales were investigated as pH 7.0, temperature 25°C and growth period 36 hours, respectively.

        This experiment was conducted to establish the best salting for oyster mushrooms fermented pickles to develop new product and enhance quality for long term preservation. Changes of brine solution and mushroom were investigated during salting 10, 13, 16, 19% for 20 days by raw, blanched and dried type. The pH of the brine solution in the raw and dried mushroom form decreased and increased in the blanched form during storage. There was general increasing tendency of salinity of the brine solution as preservation period increases. The final salinity of mushroom after 20 days was generally lower than initial salinity and moisture content tended to be lowered as the salinity increases. The final hardness of mushroom after 20 days was mostly high in dried type and tended to be lowered in high salinity. The L value on the stand part of mushroom was brighter as the salinity decreases and the b value tended to be lowered as the salinity increases.

        This study was conducted to investigate the optimum additive ratio of barley flour when used instead of cotton seed meal for the cultivation of oyster mushrooms. Mycelial growth was the fastest to 11.4 cm in medium containing 5% barley flour and to 9.0 cm in medium containing 30% barley flour. The mycelial density was slightly lower at 5% and 10% of barley powder addition, but there was no significant difference between the other treatments. The yield of the fruiting bodies was 158 g/850 mL, which was highest on treatment with 10% barley flour as a substitute for cotton seed meal. However, this was lower on treatments with only barley flour than in the control (156 g/850 mL). The diameter of the pileus and the hardness of stipes were highest with 10% barley flour and 10% in cotton seed meal, respectively. The L value was highest with 10% added barley flour, but the a-value and the b-value were not significantly different between treatments. The pH of the mixed media before inoculation with Pleurotus ostreatus was 4.7–5.0, and the total nitrogen content was 1.7–2.2, which was slightly lower than that of the control. The total carbon content was 44.6–45.0, which was not significantly different from that of the control. However, the content of trace elements such as Cu and Fe was lower than those of the control.

        King oyster mushroom (Pleurotus eryngii), an improved species of oyster mushroom, is a popular ingredient in Asian cuisine. Spleen cells were treated with various concentrations (0, 5, 10, 50, 100, 250, 500, and 1,000 μg/mL) of king oyster water extracts (KOWE); then, the proliferation of the cells was measured 24, 48, and 72 h after each treatment. Also, type 1 T helper cytokine productions (TNF-α, IFN-γ, and IL-2) were measured in activated macrophage by KOWE in seven concentrations. Under the condition of its 50, 100, 250, and 1,000 μg/mL for 48 h, the proliferation of cells was increased. However, there was no significant fluctuation in the spleen cells proliferation for 24 and 72 h-long KOWE exposure. To determine cytokine (TNF-α, IFN-γ, IL-2) productions of type 1 T helper cells, macrophage was stimulated by KOWE for 48 h. Treatment of KOWE gave a rise to the levels of TNF-α and IFN-γ, but not in that of IL-2 productions. These results suggest that king oyster mushroom water extracts may be beneficial for enhancing immune functions in its high concentration.

        The oyster mushroom cultivation house typically has multiple layers of growing shelves that cause the disturbance of air circulation inside the mushroom house. Due to this instability in the internal environment, growth distinction occurs according to the area of the growing shelves. It is known that minimal air circulation around the mushroom cap facilitates the metabolism of mushrooms and improves their quality. For the purpose of this study, a CFD analysis FLUENT R16 has been carried out to improve the internal environment uniformity of the oyster mushroom cultivation house. It is found that installing a section of the working passage towards the ceiling is to maintain the internal environment uniformity of the oyster mushroom cultivation house. When all the environment control equipment – including a unit cooler, an inlet fan, an outlet fan, an air circulation fan, and a humidifier – were operated simultaneously, the reported Root Mean Square (RMS) valuation the growing shelves were as follows: velocity 23.86%, temperature 6.08%, and humidity 2.72%. However, when only a unit cooler and an air circulation fan operated, improved RMS values on the growing shelves were reported as follows: velocity 23.54%, temperature 0.51%, and humidity 0.41%. Therefore, in order to maintain the internal environment uniformity of the mushroom cultivation house, it is essential to reduce the overall operating time of the inlet fan, outlet fan, and humidifier, while simultaneously appropriately manage the internal environment by using a unit cooler and an air circulation fan.

        The beneficial effects of EM on plant growth, yield, quality in agriculture have been consistently demonstrated. In this study, EM of four types used is Lactobaillus sp., saccharomyces cerevisiea, Rhodobacter sp. and Bacillus sp.. Bacillus sp. inhibited Mycelium growth of the oyster mushroom in agar plate. Bacillus sp. is known to suppress plant pathogenic microorganism in soil. The other three type of EM did not inhibit mycelium growth of oyster mushroom. Also when filtering media of Lactobacillus sp. and saccharomyces cerevisiea cultivation add to liquid media(PDB) of oyster mushroom, mycelium growth was a little faster than control. In the column test, Mycelium growth of the medium inoculated with 0.5% saccharomyces cerevisiea was faster than the control. In the substrate inoculated Rhodobacter sp. was similar to the control. In the substrate inoculated Lactobacillus sp. of higher concentration, mycelium growth of the oyster mushroom was showed late than control.

        ‘Mantari’ is a new variety of oyster mushroom for bottle culture. It was bred by crossingmonokaryons isolated from ‘DM11732’ and ‘Chunchu-2ho’. The optimum temperature for the mycelial growth was 26~29°C on PDA medium, and that for the primordia formation and the growth of fruiting body of ‘Mantari’ on sawdust mediawas 18°C and 16°C. It took 32 days to finish spawn running, 4 days to finish primordia formation, and 3 days to finish fruiting body growth in the bottle culture. The fruitcharacteristics: the pileus was round and gray-black in color, and the stipe was long, thin, and light gray in color. The yield per bottle was 179 g/900 ml and was 5% higher than that of the control variety (Chunchu-2ho). The physical properties of the fruit body were as follows: springiness, cohesive, gumminess, and brittleness of the stipe tissue were 96%, 76%, 160 g, and 15 kg, respectively.

In the characteristics of fruit body, pilei were round type and dark grayish, stipe color was gray-white color and stipe shape was long and thin. The yield per bottle was 179g/900ml and was 5% higher than that of control veriety(Chunchu-2ho).
