        This study was conducted to determine the content of inorganic metals in botanical pills and assess the safety of mineral balance in body. Inorganic metals (Fe, Ca, Zn, Na, Mg, K, Pb, Cd, Cr) were detected in 11 kinds, 51 samples by Atomic Absorption Spectrophotometer. The average concentration of inorganic metals in botanical pills was in the order of K(7933.32 mg/kg)$gt;Na(5848.58 mg/kg)$gt;Ca(2441.60 mg/kg)$gt;Mg(1595.34 mg/kg)$gt;Fe(353.14 mg/kg)$gt;Zn(22.49 mg/kg)$gt;Cr(3.51 mg/kg)$gt;Pb(0.24 mg/kg)$gt;Cd(0.09 mg/kg). In samples, Moms and Laminaria contained a great quantity of K and Na, Acanthopanacis cortex, Eucommia ulmoides, Pinus densiflora, Lycii fiuctus, Allium sativum for. pekinense, and Platycode radix had much more amount of K than that of Na, in the mean time, Artemisia capillaris, Carthamus tinctorius seed, and Rubi fiuctus had various kites of plenty inorganic metals. The contents of Pb in grouped samples by used parts, were in the order of radiac(0.54 mg/kg)$gt;cortex(0.36 mg/kg)$gt;leaves (0.20 mg/kg)$gt;fructus(0.20 mg/kg)$gt;seed(0.07 mg/kg), those of Cd were radix(0.16 mg/kg)$gt;leaves(0.09 mg/kg)$gt;fiuctus (0.07 mg/ kg)$gt;seed(0.06 mg/kg)$gt;cortex(0.03 mg/kg), those of Cr were radix(6.34 mg/kg)$gt;cortex(4.25 mg/kg)$gt;fructus (4.20 mg/ kg)$gt;leaves(2.14 mg/kg)$gt;seed(1.67 mg/kg). In the assessment of risk by the daily intake of botanical pills, the amount of Zn, whose PTWI was 7,000 ㎍/kg b.w/week, covered 0.13-0.83%, that of Pb, whose PTWI was 25 ㎍/kg b.w/week, coverd 0.24-1.94%, and that of Cd, whose PTWI was 7 ㎍/kg b.w/week, covered 0.32-2.08% of it.

        The contents of total flavonoids, total antioxidant status and superoxide scavenger activity of edible plants were measured. Among twenty one samples of leafy vegetables and teas, mugwort (Artemesia capillaris) and green teas gave high total flavonoids contents, 48.2 mg/g sample and 44.7 mg/g sample, respectively. The highest concentration of total flavonoids among eighty nine samples analyzed was 52.1 mg/g sample from propolis. When samples were tested for total antioxidant status, a kind of groundsel showed the highest Total Antioxidant Status(TAS) value, 13.4 mM among leafy vegetables and teas and green tea gave high TAS value, 11.84 mM. On the other hand, purslane gave the lowest TAS value, 0.01 mM. The superoxide scavenge activity was measured from the extracts of all edible plants. The superoxide scavenge activity of polygonatum(81.1%) and chrysantemum (78.5%) were the highest among leafy vegetables, teas and medicinalplants. On the other hand, ginseng, poria, cassiae semen and dioscoreae rhizoma showed no superoxide scavenge activities.

        There were few data for the distribution of the indicator organisms in the commercial plant foods, and for the normal flora and for the foodborne agents within the country. First of all it must be investigated the distribution of the indicator organisms. And also it is very important to prepare the sanitation criteria for the plant foods through the microbiological e×amination and the investigation of tendency to change of the indicator organisms according to the storage temperature and period. The average number of total viable counts for grains was 2.9 × 10^5/g, psychrophilic bacteria 2.9 × 10^6/g, heterotrophic bacteria 3.1 × 10³/g, heat-resistant bacteria 2.1 × 10³/g Pseudomonas aeruginosa 23/g. That for beans was 6.3 × 10²/g, psychrophile 34/g, heterotroph 1.7 × 10²/g. That for sesames was 1.4 × 10^5/g, coliform 350/g, psychrophile 7.4 × 10⁴/g, heterotroph 5.8 × 10⁴/g, Pseud. aeruginosa 2.3 × 10³/g. heat-resistant bacteria 150/g. That for potatoes was 2.0 × 10^7/g, coliform 5.0 × 10⁴/g, psychrophile 1.8 × 10^7/g, heterotroph 1.4 × 10^7/g, heatresistant bacteria 3.3 × 10¹/g, Staphylococcus 2.7 × 10^5/g, fecal streptococcus 4.5 × 10³/g, Pseud. aeruginosa 7.0 × 10³/g. That for mushrooms was 1.2 × 10^8/g, psychrophile 9.4 × 10^7/g, heterotroph 1.0 × 10^9/g, heat-resistant bacteria 1.6 × 10^5/g, Pseud. aeruginosa 1.3 × 10³/g. That for vegetables was 5.9 × 10^(11)/g, coliform 1.8 × 10^6/g, psychrophile 1.1 × 10²/g, heterotroph 8.4 × 10^(11)/g, heatresistant bacteria 7.6 × 10^6/g, Staphylococcus 1.1 × 10^7/g, fecal streptococcus l.1 × 10⁴/g, Pseud. aeruginosa 5.2 × 10⁴/g. That for nuts 3.9 × 10⁴/g, coliform 3.9 × 10³/g, psychrophile 4.0 × 10^8/g, heterotroph 3.2 × 10^8/g, heat-resistant bacteria 400/g. In commercial grains and beans, SPC, psychrophile, heterotroph and heat-resistant bacteria stored at 10℃, 20℃, 30℃ were constant. Staphylococcus, coliform, Pseud. aeruginosa were decreased a little in grains, but were not detected in beans. In mushrooms, all indicator organisms were increased as time goes on and were increased rapidly at 20. In sesames, coliform was not detected at all temperature. psychrophile was increased for 7 days, the otners were constant. In potatoes, SPC, psychrophile, heat-resistant bacteria, heterotroph had a tendency to increase and the others were constant. In vegetables, indicator organisms were had a tendency to increase, psychrophile, heterotroph were rapidly increased after 7 days. In nuts, SPC, coliform, psychrophile, heterotroph, heat-resistant bacteria, Pseud. aeruginosa were constant, staphylococcus and fecal streptococcus were not detected.

        This study was performed observe the effect of vegetable oil on the liver of 0.5% cholesterol-fed rats. In this experiment, male rats of Sprague-Dawley strain were used. The rats were divided into 5groups which were fed differently either for 8 weeks: basal diet, 20% sunflower oil diet, 20% soybean oil diet, 20% rapeseed oil diet.,20% coconut oil diet. The total cholesterol, triglyceride level in the liver were showed tendency of increase with increasing of P/S ratios. Bile acid excretion in the fecal increased with increasing of P/S ratios. The value of TBA in the serum and liver were increased in proportion to the amount of polyunsaturated fatty acid. The liver fatty acid of coconut-fed group showed larger variation than fatty acid of the cocount oil. The fat chang of sunflower oil diet in the liver showed the largest change.

        The natural antioxidant such as e-tocopherol and synthetic antioxidant BHT were used to compare antioxidative effects of those antioxidants from the physico-chemical properties and fatty acid composition changes in the soybean oil due to number of frying. The composition of frying oil were consisted of a group(Fresh oil), B gorup(Fresh oil added with 0.05% α-tocopherol), C group(Fresh oil added with 0.2% α-tocopherol), D group(Fresh oil added with 0.1% BHT), E group(Tocopherol removed oil from oil by active alumina column chromatography The results obtained were as follws : 1. The color was determined by the Lovibond colorimeter color intensity increased number of frying oil. 2, The acid value, TBA value and Carbonyl value were increased number of frying oil. 3. Natural antioxidants less effective than BHT but effect of α-tocopherol was very similar to that of BHT. 4. The order of antioxidative effect was 0.1% BHT, 0.2% α-tocopherol, 0.05% α-tocopherol, fresh oil, tocopherol remove oil.

        The effects of procedures for preparation of fatty acid methyl esters for gas chromatography were investigated. A quantitative comparison of four procedures for the preparation of the fatty acid methyl esters from Korean sesame seed lipids which can be representative of fatty acid ranges of Korean vegetable oils has been made. The procedures employed were BF3-methanol, HCI-methanol, sodium methoxide-methanol, and tetramethylammonium hydroxide-methanol. Twelve fatty acids ranged from 14:0 to 24:0 were identified in the lipids from Korean white and black sesame seeds. All four procedures gave similar results for the fatty acids, 16:0, 18:0, 18:1, 18:2, and 18:3 present in the range of 1~44% but only in the HCI-methanol procedure, the fatty acids, 16:1, 20:0, 22:0, 24:0 present in the range of 0.02~1% showed the lowest values. When using tetramethylammonium hydroxide-methanol procedure for determination of total fatty acid composition from white and black sesame seed lipids, unsaponifiable matters including sesamol, sesamolin and sesamin present in the seed lipids are not removed from the resulting reaction mixture. Thus the transesterification mixture is used without further treatment for injection into the gas chromatography. However, the gas chromatographic analysis of the transesterification mixture showed that the unsaponifiable matters had no effect on the fatty acid composition of the seed lipids. From the results, it appears that the BF3-methanol, sodium methoxide-methanol and tetramethylammonium hydroxide-methanol procedures can be used to prepare fatty acid methyl esters from Korean vegetable oils. Among the methods, the tetramethylammonium hydroxide-methanol procedure, which give total fatty acid composition, glyceride fatty acid composition and composition of free fatty acids present, appears to be a simple, convenient and quantitative procedure and applicable to samples containing broad ranges of fatty acids.

        The present study was designed to compare the effect of soybean oils and corn oils on serum levels of total cholesterol, HDL-cholesterol and free cholesterol in cholesterol-fed rats. The results are as fellows: 1. The average body weight gain in soybean oil diet group was lower than that of the control group. 2. The food efficiency ratio in soybean oil diet group was lower than corn oil diet group. 3. The serum levels of total cholesterol in soybean oil diet group than that in corn oil diet group. 4. The serum levels of free cholesterol in soybean oil diet group was lower than that in corn oil diet group. 5. The serum levels of HDL-cholesterol in soybean oil diet group than that in corn oil diet group. 6. The serum levels of VLDL-, LFL-cholesterol in soybean oil diet group was lower than that in corn oil diet group.
