본 연구는 식중독을 일으킬 수 있는 황색포도상구균(Staphylococcus aureus)의 검출을 이용하여 일식당의 식자재, 조리공정, 조리 기구, 조리 종사자의 오염수준을 예측하고 오염에 영향을 미치는 인자를 확인하고자 하였다. 시료는 서울시에 위치한 일식당에서 초밥과 생선회를 수거하였다. 몬테카를로 시뮬레이션을 통해 초기 오염수준으로부터 각 공정별 위해 인자를 고려하여 최종오염수준을 예측한 결과, 새우 및 문어초밥의 경우, 모든 초밥이 저장기간 동안 S. aureus가 증식되는 것으로 나타났으며 특히, 문어초밥이 가장 높은 오염도를 보였다. 이는 생선회가 온도변화에 따른 균의 증식이 활발하고, 일식당에서 초밥을 섭취하기 직전에 초밥 중 생선회의 급속한 온도 변화가 나타나기 때문으로 판단된다. 초밥의 민감도 분석 결과, 완성된 초밥의 섭취 시 온도의 민감도 값이 0.419로 최종오염수준을 증가시키는 것으로 예측되었다. 두 종류의 초밥에서 동일하게 보관 시간과 섭취 시의 온도가 최종 오염수준에 가장 크게 영향을 주는 것으로 나타났다. 이는 일정 시간이 지난 후 초밥을 섭취하는 것이 균의 농도 증가에 가장 크게 영향을 미친다는 것으로 초밥을 조리 후 즉시 섭취하는 것이 균의 증식을 크게 예방할 수 있음을 알 수 있다. 연어, 도미, 방어회의 경우 섭취 시간에서 민감도 값이 0.71로 가장 큰 민감도를 나타내었고, 섭취 시 온도 또한 민감도가 크게 나타났다. 초밥의 시나리오 분석 결과, 실온 보관 시, 섭취시간이 2시간 이내일 때 식중독을 유발하지 않는 안전한 수준임을 알 수 있었다.
It has been considered that 'exhausted eclipses' (日食旣) were total eclipses. However, modern precise calculations show that a significant fraction of such records are not realized to be total. Thus we doubt that the two concepts are equivalent. Here we investigate the meaning of 'exhausted eclipses' in the east-Asian history. We first find that eclipses of magnitude greater than 0.8 were regarded as 'exhausted eclipses' by a Korean astronomer of the 18th-century Choson dynasty. His notion was based upon the definition of 'exhausted eclipses' in the ephemerides of pre-modern Chinese dynasties. According to those ephemerides, the 'exhausted eclipses', whose magnitude is greater than 0.8, have the first contact at the western part of the solar disk and the fourth contact at the eastern part of the solar disk. A simple geometrical calculation shows that such cases really occur when the magnitude of eclipse is greater than 0.7. We pointed out that such an ancient definition might not be impractical for ancient astronomers, because the uncertainty of eclipse magnitude estimated by ancient Chinese ephemerides was 10% and the human sight has a spatial resolution of 1.2 arcmin, which is approximately one twentieth of the Sun's angular diameter.
This study was conducted to evaluate the menu of a Japanese restaurant in a first class tourism hotel. The calculations used for the menu analysis were conducted using MS Excel 2003. Several previous studies have been conducted to analyze menus. For example, Pavesic used of the weighted contribution margins (WCM) and potential food cost (PFC%) to evaluate menus, while Kasavana & Smith used the mix margin (MM%) and unit contribution margin (CM) to evaluate menus. The menu engineering method focused on the customer's viewpoints, while the Cost/Margin analysis method considered the manager's viewpoints. The menus that need continuous keeping Kasavana & Smith (Star) and Pavesic (Standard) included 'Assorted sashimi with side dishes (big), 'Lunch box special', 'Tempura course', 'Broiled Spanish mackerel and side dishes', 'Shrimp tempura', 'Special sushi', 'Seafood Udong', 'Buckwheat noodles'. The results of this study should increase customer satisfaction and profits at the Japanese Restaurant.
This study was performed by questionnaire to investigate the satisfaction and preference on the menu of Japanese restaurant customers in Seoul. The subjects were consisted of 386 participants in Seoul. The results are as follows: Respondents consider that the preferred menu of Japanese restaurants' foods is menus such as 'assorted raw fish', 'sushi', and 'dessert' rather than menus such as 'jin mi', 'seasonal appetizer', 'raw fish with vinegar' and 'clean soup'. The higher intake Japanese cuisine menus was 'dessert' (3.71 point), 'noodle and soup' 'sushi' 'fried dishes', and but 'jin mi' (1.91 point), 'seasonal appetizer' scored the lowest. In result of analyzing difference between importance and satisfaction of the menu, importance is much higher than satisfaction. In terms of IPA analysis on Japanese cuisine menu, it was noteworthy that the 2nd quadrant with high fulfillment but low importance for customers included 'noodle and soup'. The menus that need continuous keeping management with high importance and high fulfillment included 'assorted raw fish', 'roasted dishes', 'fried dishes', 'beef and seafood casserole', 'sushi', 'deopbap', 'dessert'.
This study aimed to analyze the impact of importance and fulfillment(satisfaction) factors of menu quality on customers' intent of revisit of Japanese restaurants, so that it could provide information helpful to build up detailed marketing strategy and present considerations for management's higher sales amount and more efficient business results as well. Importance on menu quality scored higher level than fulfillment on the whole in Japanese restaurants. Notably, in regard to attributes of menu quality, it was found that respondents put higher stress on flavor, nutrition, cleanliness and freshness than anything else. In terms of IPA analysis on Japanese cuisine menu quality, it was noteworthy that the items with high importance but low fulfillment included menu price as an attribute for menu quality, although it was not shown in menu-specific items. In the survey on the associations between fulfillment(customer satisfaction) and intent of revisit, it was found that factors of customer satisfaction included 'trimness of dishes', 'information', 'appropriateness' and 'economic affordable' Out of these factors, it was noted that both 'trimness' and 'economic affordable' had significant effects on customer satisfaction at the significance level ranging from p<0.05 to p<0.001.
The specific purposes of this study are that ; 1) to investigate the distinguished selection attributes on performance of Japanese chain restaurant according to general characteristics of the respondent ; 2) to find out relationships between selection attributes on performance for Japanese restaurant and customer's satisfaction Frequency analysis. one-way ANOVA, reliability analysis, factor analysis, multiple regression were used to analyze the data. Total 350 questionnaires were distributed and 312 were replied(89.14%). Selection attributes on performance for Japanese chain restaurant was divided into 7 factors. There are Factor1 'Store Image & Kindness', Factor2 'Sanitation & Taste', Factor3 'Approximation & Children's Menu', Factor4 'Delivery & Business Hours', Factor5 'Food Quantity & Korean Food', Factor6 'Service & Parking' Factor7 'Price & Publicity'. Monthly income, eating-out expense per once and type of companion have significant influences on selection attributes for performance. Customer's total satisfaction is significantly affected by selection attributes on performance. Factor7 'Price & Publicity' has the most significant influence on customer's satisfaction. We expect that the results can be used to provide basic information to plan marketing strategies, and take improved customer's satisfaction for Japanese chain restaurants.
The purpose of this thesis is a searching out the characteristics of Japanese dwellings implanted into Korea in the time of the rule of Japanese imperialism and its influences on Korean modern dwellings especially in the time of 1930's. At the early stage of the colonial time(1905~1919), the central corridor type Japanese dwellings were implanted into Korea for the Japanese official residences. The central corridor type Japanese dwelling was an urban modern dwelling compromised between Japanese style and western style and distinguished by an outer-court type plan, Japanese entrance hall, central corridor and western style reception room. After the 1920's the central corridor type Japanese dwellings have spreaded itself and became a prototype of a modern dwelling in Korea. The characteristics of the central corridor type Japanese dwellings have influenced on the Korean high class dwellings and Korean architects' proposals for modern dwelling in the time of 1930's. By the implantation and spread of the central corridor type Japanese dwellings, Korean modern dwellings at the same time have affected and undergone transformation. The aspects of transformation were ; The outbreaking of the Japanese style entrance and central corridor, the transformation of MaDang from the inner court with a function of circulation into the outer court garden with plants and the transformation of Korean dwellings from the rural inner court type into the urban outer court type. The central corridor type Japanese dwellings implanted into Korea in the time of the rule of Japanese imperialism makes function as a precedent of a modern urban dwelling to Korean and makes Korean dwellings transform from the rural inner court type into the urban outer court type.
In the time of the rule of Japanese imperialism, Japanese style official residence played major role at the implantation of modern dwellings into Korea and its influences on Korean modern dwellings are distinguishable. This study focuses on the Japanese style official residence implanted into Korea before 1910. Before 1910 Japanese civilians in Korea builded just a traditional Japanese dwellings at the Japanese settlement in the ports opened. But Japanese engineers engaged in governmental organization of construction in the Old-Korean Empire builded a central corridor type Japanese dwellings as official residence. The central corridor type Japanese dwelling was an urban dwelling compromised between Japanese style and western style and distinguished by an outer-court type plan, Japanese entrance hall, central corridor and western style reception room. It is certified that the central corridor type Japanese dwelling was implanted into Korea before 1910 and this was the first time an urban dwelling to be implanted and spread through the whole Korea. The central corridor type Japanese dwelling implanted into Korea took in On-Dol and transformed to Korea-Japanese eclectic style. The central corridor type Japanese dwellings implanted into Korea in the time of the rule of Japanese imperialism makes function as a precedent of a modern urban dwelling to Korean and makes Korean dwellings transform from the rural inner court type into the urban outer court type.
The purpose of this study was to analyze the effects of partial solar eclipse on 21 May 2012 in Korea on meteorological variables in Busan. 0800 LST(Local Standard Time) solar radiation was similar or lower than 0700 LST solar radiation, and sunshine duration decreased by 0.2∼0.5 hours in Busan and great cities under the influence of the partial solar eclipse. Temperature drop due to the partial solar eclipse was 0.2∼2.0℃, time taken to arrive at maximum temperature after onset of eclipse was 8∼62 minutes, and time taken to arrive at minimum temperature after maximum eclipse was -9∼17 minutes in Busan. Change of wind speed was negligible as partial solar eclipse occurred in the morning. Soil temperature of 5 ㎝was minute as well, the increase of soil temperature due to sunset was delayed by more than 1 hour.
This paper examines the effects of the partial solar eclipse of 22 July 2009 across the Korean peninsular on surface temperature and ozone concentrations in over the Busan metropolitan region (BMR). The observed data in the BMR demonstrated that the solar eclipse phenomenon clearly affects the surface ozone concentration as well as the air temperature. The decrease in temperature ranging from 1.2 to 5.4℃ was observed at 11 meteorological sites during the eclipse as a consequence of the solar radiation decrease. A large temperature drop exceeding 4℃ was observed at most area (8 sites) of the BMR. Significant ozone drop (18∼29 ppb) was also observed during the eclipse mainly due to the decreased efficiency of the photochemical ozone formation. The ozone concentration started to decrease at approximately 1 to 2 hours after the event and reached its minimum value for a half hour to 2 hours after maximum eclipse. The rate of ozone fall ranged between 0.18 and 0.49 ppb/min. The comparison between ozone measurements and the expected values derived from the fitted curve analysis showed that the maximum drop in ozone concentrations occurred at noon or 1 PM and was pronounced at industrial areas.
The purpose of this study was to analyze the effects on meteorological variables in Seoul, Busan and Jeju during the partial solar eclipse event of 22 July 2009 in Korea. Solar irradiance decreased 16 and 19 minutes after eclipse in Seoul and Busan, and 6 minutes before eclipse in Jeju. Minimum solar irradiance occurred 7 and 3 minutes after maximum eclipse in Seoul and Busan, respectively, and 8 minutes before maximum eclipse in Jeju. Solar irradiance began to increase after maximum eclipse in Seoul and Busan, and recovered to the original state as eclipse ended. On the other hand, recovery of solar irradiance after maximum eclipse in Jeju was slower than those of two cities. Temperature drop due to partial solar eclipse were 0.7℃, 4.0℃, 1.5℃ in Seoul, Busan, and Jeju, respectively, and time needed to arrive minimum temperature from maximum eclipse were each 12, 32, 30 minutes, respectively. Change of relative humidity during partial solar eclipse were 2.6%, 17.4%, 12.3% in Seoul, Busan, and Jeju, respectively. Temperature drop turned out to be sharper as altitude increases. Wind speed decreased by each about 1.1 ㎧, 3.4 ㎧, 1.4 ㎧ due to partial solar eclipse in Seoul, Busan, and Jeju. Soil temperature of 5 ㎝ equally decreased by 0.2℃ in Seoul and Busan, soil temperature of 10 cm maintained almost constant, and soil temperature of 20 cm was hardly affected by eclipse.
