        Since soil salinization imposes various adverse effects on plants, research on how to relieve salt stress from plants is extremely urgent. We synthesized a new type of cerium-doped carbon quantum dots by a hydrothermal synthesis method. Characterization shows that the carbon quantum dots have a small and uniform particle size, high stability, high water solubility and biocompatibility. Mung bean seeds were soaked in CDs:Ce solutions under a concentration gradient (0.25, 0.5, 1, 2, 3 mg/ mL) and germinated under salt stress (150 mM NaCl). Compared with salt stress, the addition of CDs solutions effectively enhanced the ability of plants to relieve salt stress. The relieving effect on mung bean plants was the most significant after treatment with 2 mg/mL CDs:Ce, and the main root length, plant height and leaf length in comparison with the case of salt stress increased by 83%, 80%, and 60%, respectively. Chlorophyll content, peroxidase activity, superoxide dismutase activity and catalase activity, total protein content increased by 90%, 77%, 76%, 77% and 76%, respectively, malondialdehyde and proline The content decreased by 83% and 77%. Inductively coupled plasma mass spectroscopy proved mung bean plants absorbed CDs:Ce, but the absorption of NaCl decreased by 21.8%. Fluorescence imaging showed CDs:Ce was absorbed by roots, and transferred from the vascular system and apoplastic pathways to stems and leaf veins, and mainly aggregated in intercellular gaps, the vascular system, leaf veins, cilia and stomata. Stereomicroscopy showed that CDs:Ce induction increased the stomatal opening by 15.7%, and improved metabolic efficiency and NaCl excretion from the plants. Hence, CDs:Ce shows great potential in protecting crops from abiotic stress.

        본 연구의 목적은 5% 녹두(Phaseolus aureus L.)의 급여가 고지혈증 유발 Sprague-Dawley (SD)계 흰쥐의 혈청 blood urea nitrogen(BUN), creatinine 및 요산(uric acid)의 농도와 aspartate aminotransferase(AST), alanine aminotransferase(ALT), alkaline phosphatase(ALP), lactate dehydrogenase(LDH), amylase, lipase 및 catalase 활성에 미치는 영향을 규명하고자 시행하였다. 연구 결과 녹두는 고지혈증으로 유발된 흰쥐의 혈청 BUN, creatinine, 요산 농도 및 AST, ALT, ALP, LDH, amylase, lipase의 활성 감소와 catalase 활성을 증가시키는 것으로 나타났다. 따라서 녹두는 신장과 간 등의 기능 개선과 예방에 효과적일 것으로 판단되어 기능성 소재로서의 이용 가능성이 있을 것으로 기 대된다.

        녹두(Phaseolus aureus L.)가 당뇨 유발 흰쥐에 있어서 혈당 및 지질성분, 단백질, 전해질 농 도 등에 미치는 영향을 확인하기 위하여 기본 식이를 섭취시킨 BD군, 기본 식이군에 5% 녹두 급여군 (BM군), 당뇨 유발 실험군(BS군)과 BS군에 5% 녹두를 섭취시킨 실험군(SM군)으로 나누어 실험을 수행 하였다. 혈청 지질성분(총 콜레스테롤, LDL-콜레스테롤, 중성지질, 인지질, 유리 콜레스테롤, 콜레스테롤 에스테르), 혈당 및 유리지방산(non esterified fatty acid, NEFA)의 농도와 동맥경화지수 (atherosclerotic index, AI), 심혈관 위험지수(cardiac risk factor, CRF)는 당뇨 유발군에서 여타 실험군과 비교하였을 때 유의적인 차이를 보이며 증가를 나타내었고(p<0.05), 5% 녹두 급여군에서 감소되는 것으로 나타났다. 당뇨유발군인 BS군에 비해 5% 녹두를 첨가시킨 SM군에서 고밀도 지단백 콜레스테롤 (high density lipoprotein-cholesterol, HDL-콜레스테롤) 및 총 콜레스테롤에 대한 HDL-콜레스테롤의 농도 비는 유의적인 차이를 보이며 증가를 나타내었다(p<0.05). 혈청 단백질 농도에 있어서, 당뇨 유발 군(BS군)에 5% 녹두를 급여(SM군)한 흰쥐의 혈청 알부민(albumin) 농도와 알부민/글로불린 비 (albumin/globulin ratio, A/G 비)는 증가 하는 것으로 관찰되었다. 나트륨(Na) 및 염소(Cl)는 SM군에 서 BS군 보다 농도가 감소된 것으로 확인하였다. 이상의 결과, 5% 녹두는 흰쥐의 혈당 및 지질대사 기 능 개선에 도움이 되는 것으로 판단된다.

        녹두의 기능성 식품 소재로서 활용 가능성을 알아보고자 이화학적 특성에 관하여 분석한 결과, 일반성분 중 탄수화물 함량은 57.20±0.29%로 절반을 차지하였으며, 조단백질 26.40±0.69%, 수분 9.90±0.16%, 조회분 3.54±0.43% 및 조지방 2.96±0.26%로 확인되었다. 녹두의 비타민 성분 중 vitamin B5가 0.62±0.013 mg/100 g으로 높은 함량을 나타내었으며, 비타민 A의 전구체인 β-carotene 이 87.37±0.754 μg RE/100 g으로 동정되었다. 칼륨(K) 함량은 12,428.55±147.55 mg kg-1로 가장 높게 나타났고, 마그네슘(Mg)은 2,053.32±14.13 mg kg-1, 칼슘(Ca) 1,966.40±14.53 mg kg-1을 함유 하고 있었으며, 녹두의 총 지방산 중 포화지방산은 29.23±0.03%의 함유량을 보였으며, 단불포화지방산은 20.30±0.04%, 다불포화지방산은 50.46±0.06%의 비율로 불포화지방산 함유량이 높은 것으로 나타났다. 특히, ω-6계 linoleic acid가 41.19±0.02%, ω-9계 oleic acid 19.98±0.03%를 함유하고 있었다. 총 아미노산 함량은 21.75±0.24 g%이며, glutamic acid 3.93±0.03 g%, aspartic acid 2.68±0.03 g% 등을 함유하고 있었고, glutamic acid 및 aspartic acid가 총 아미노산 함유량의 18.07%, 12.32%를 차지하였으며, 구성 아미노산의 대부분을 차지하는 것으로 나타났다. 녹두 중, 총 유리 아미노산 함량은 336.77±8.66 mg%로 확인되었고, arginine이 81.97±1.31 mg%로 유리 아미노산의 24.34%를 차지하는 것으로 나타났다. glutamic acid, asparagine 및 aspartic acid 순으로 각각, 41.97±0.29, 28.47±0.15 및 26.97±0.12 mg% 함유된 것으로 분석되었다.

        녹두의 생산지역 확대를 위한 기초자료로 활용하고자 중북부 지역에서 생산된 녹두의 품질과 이화학 특성을 검토하였다. 녹두의 일반성분 함량과 색도는 품종 및 파종시기에 따라 유의적인 차이를 나타내었다. 파종시기에 따라 조회분 및 조단백질 함량은 파종시기가 늦어질수록 감소하였고, 탄수화물 함량은 약간 증가하였으며, 적색도는 장안 품종을 제외하고 파종시기가 늦어질수록 증가하였고, 황색도는 금성과 장안 녹두가 감소하였다. 수분결합력은 어울 품종이 1차, 2차 및 3차에서 각각 115.15, 99.76 및 96.31%로 가장 높게 나타났고, 파종시기가 늦어질수록 감소하였다. 용해도와 팽윤력은 품종별로 유의적인 차이를 보였으며, 파종시기에 따라 경선 품종은 증가, 다현 품종은 감소하였으며, 나머지 품종은 파종시기에 따라 유의적인 차이를 보이지 않았다. 총 폴리페놀 함량은 1차와 2차 파종한 장안 품종이 각각 8.59 및 8.57 mg GAE/g으로 높게 나타났고, 파종시기에 따라 소현 품종을 제외하고 유의적으로 감소하였다. 총 플라보노이드 함량은 1차 파종한 장안 품종이 5.25 mg CE/g으로 가장 높았고, 파종시기가 늦어질수록 유의적으로 감소하였다. DPPH radical 소거활성은 1차 파종한 금성과 경선 품종이 2.44 및 2.32 mg TE/g으로 높은 활성을 나타내었고, 파종시기가 늦어짐에 따라 유의적으로 감소하였다. ABTS radical 소거활성은 1차 파종한 장안 품종이 6.98 mg TE/g으로 높은 활성을 나타내었고, 파종시기가 늦어짐에 따라 금성, 어울 및 장안 품종은 감소하였다. 이상의 연구에서 품종 및 파종시기에 따라 페놀 성분 함량과 radical 소거활성이 달라지므로 재배지역의 환경을 고려하여 알맞은 품종과 적정 파종시기에 대한 연구가 필요할 것으로 생각된다.

        The change of quality and physicochemical characteristics of mung-bean flours after germination and roasting treatment were evaluated. The moisture content of the roasted mung-bean flours decreased significantly according to the roasting temperatures and times, and the crude ash, protein and fat contents increased. The lightness of the roasted mung-bean flours significantly decreased, and the redness and yellowness increased. The water binding capacity of the roasted mung-bean flours without and with germination were 151.71 and 192.77% at 240℃ for 20 min, respectively. The water solubility index and swelling power decreased with an increase in roasting temperatures and times. The phenolic compounds and radical scavenging activity of the roasted mung-bean flours increased with an increase in the roasting temperatures and times. The total polyphenol contents of the roasted mung-bean flours without and with germination were 4.81~7.71 and 4.22~5.63 mg GAE/g, and the total flavonoid contents were 2.46~3.05 and 2.45~2.87 mg CE/g, respectively. The DPPH radical scavenging activity of the roasted mung-bean flours, without and with germination, were 106.83~376.08 and 174.41~346.70 mg TE/100 g, and the ABTS radical scavenging activity was 251.67~534.31 and 274.39~430.02 mg TE/100 g, respectively. As a result, it is necessary to set quality standards for each application considering the quality and antioxidant properties of the roasted mung-bean flours.

        Quality characteristics of commercially available soybean and mung-bean flours in Korea were evaluated relative to product information such as bean content, price, chromaticity, proximate composition, water binding capacity, swelling power and solubility. Origin of raw materials was 23 in domestic products and 19 in imported products. The price of the product was 3.48 times more for raw soybean flour, 3.34 times more for fried soybean flour, and 3.47 times more for mung bean flour compared to imported soybean. In the domestic products, the lightness of raw soybean flour was higher than roasted soybean flour. The redness and yellowness of roasted soybean flour were higher than raw soybean flour. Moisture content of raw soybean flour was higher than roasted soybean flour, and crude fat, crude protein and carbohydrate content were higher in imported soybean flour. Ash and crude protein contents of mung bean were slightly higher than imported products. Water binding capacity of roasted soybean flour in domestic products was higher than raw soy flour, and there was no significant difference in solubility and swelling power. Correlation between quality characteristics of commercially available soybean and mung-bean flours products was found to be highly significant among measured items, except for solubility.

        Medicinal porridge (藥粥) is made by putting rice or grains into a pot and boiling with water until a semi-liquid texture is obtained. Porridge is digested fast and absorbed by the body. Children or elderly people with weak digestive ability can eat it without difficulty. The authors of this literature focused on utilization of mung bean porridge (Nokdu-juk) based on SeungjeongwonIlgi (承政院日記), which is the daily record of the Royal Secretariat of the Joseon Dynasty from 1623 to 1910. Four cases were found. The first case used mungbean for treating fever diseases (熱症), the second as a meal alternative, the third for wound recovery, and the last case described the culture of the joseon dynasty. According to the actual cases in SeungjeongwonIlgi (承政院日記), mung bean porridge (Nokdu-juk) was actively used to lower fever and strengthen the spleen and stomach. When suffering from the after effects of a malignant tumor or serious liver disease (肝 病), an infectious disease, or a serious physical wound, people ate mung bean porridge (Nokdu-juk). It is suggested that mung bean porridge (Nokdu-juk) can be used as an alternative food treatment for the current medical field due to the prevalence of pain-killers and psychotropic drug abuse.

        본 연구에서는 발아된 녹두 추출물의 항염증 효능 및 화장품 응용에 관한 연구이다. 동일 농도인 250 ㎍/㎖ 에서 산화질소 생성 억제 비교시 발아 녹두 추출물이 가장 높은 억제 효과를 보였다. 또한 수용성 용매에 따른 결과를 비교하였을 때 1,3-부틸렌글라이콜을 사용하고, 5일간 발아시킨 녹두를 추출한 것이 가장 높은 산화질소 억제 효과를 나타내었다. 염증 반응이 많이 일어나는 염모제에 발아 녹두 추출물을 적용한 결과 발아 녹두 추출물을 포함한 염모제가 포함하지 않은 것 보다 높은 산화 질소 억제 효과를 보였다. 따라서 발아 녹두 추출물은 화장품에 자극 완화제와 항염증 소재로 응용이 기대된다.

        This study investigated the effects of ginkgo nut powder on the antioxidant activity and quality characteristics of mung bean starch gel. Mung bean starch gels were prepared with different amounts of ginkgo nut powder (0, 1, 3, 5, and 7%). The antioxidant activity of ginkgo nut powder and mung bean starch gel was estimated through measuring DPPH free radical scavenging activity and total phenolic acid content. For analyzing quality characteristics several factors were considered: syneresis, pH, color, texture profile analysis, and sensory evaluations. In the results, syneresis in the treated group was higher than the control group. The pH, b values, total phenolic acid content, and DPPH free radical scavenging activity of mung bean starch gels also significantly increased with increasing ginkgo nut powder. In contrast, the L values and a values of mung bean starch gels significantly decreased with increasing ginkgo nut powder. In the texture profile analysis, the mung bean starch gels with 5% and 7% ginkgo nut powder showed significantly lower degrees of hardness, chewiness, and gumminess. On the other hand, cohesiveness was highest in the mung bean starch gels with 5% and 7% ginkgo nut powder. The consumer acceptability score for the mung bean starch gel prepared with 5% and 7% ginkgo nut powder ranked significantly higher than the other groups in flavor and taste. Overall, these results suggest that ginkgo nut powder is a good ingredient for increasing the consumer acceptability and functionality of mung bean starch gel.

        This study was conducted to investigate the physicochemical properties of mung bean starch and the quality characteristics of mung bean starch gels supplemented with gelatin and isolated soy protein (0, 2, 5%) during storage at 5oC for 0, 24, 48, and 72 hours. The swelling power of mung bean starch supplemented with gelatin did not significantly change, whereas those supplemented with isolated soy protein (ISP) significantly increased. The solubility of mung bean starch supplemented with gelatin and ISP, however, significantly increased with increasing concentration. In addition, the soluble amylose and soluble carbohydrate of mung bean starch supplemented with gelatin and ISP significantly decreased with increasing concentration. In terms of pasting properties measured by the Rapid Visco Analyzer (RVA), the pasting temperature of mung bean starch supplemented with gelatin and ISP was not significantly different, whereas peak viscosity, minimum viscosity, final viscosity, breakdown, and consistency decreased. DSC thermograms showed that the onset temperature of mung bean starch supplemented with gelatin and ISP did not significantly change, whereas the enthalpy increased with the addition of 5% ISP. The lightness (L) and redness (a) of mung bean starch gels supplemented with gelatin, ISP, and without additives increased during cold storage, whereas the yellowness (b) decreased. The addition of gelatin and ISP suppressed changes in L, a and b of mung bean starch gel during cold storage. Synereses of mung bean starch gel supplemented with gelatin and ISP was lower than that without additives, with the addition of gelatin suppressing synereses more than ISP. The addition of gelatin and ISP also suppressed increases in hardness, chewiness, and gumminess of mung bean starch gels during cold storage. In the sensory evaluation, the addition of gelatin and ISP suppressed increases in hardness and brittleness of mung bean starch gels during cold storage. The addition of 2%, 5% gelatin and 2% ISP also suppressed a decrease in the overall acceptability of mung bean starch gels during 24-48 hr cold storage. Thus, the addition of 2-5% gelatin and 2% ISP to mung bean starch is appropriate for suppressing the quality deterioration of 24-48 hr coldstored mung bean starch gels.

        본 연구에서는 여러 가지 생리활성을 가지고 있다고 알려 진 감을 활용하고자 감 분말을 0~9% 첨가한 청포묵을 제조 하여 감 묵의 항산화 활성 및 품질특성을 측정하였다. 감 분 말을 청포묵에 첨가한 경우, 시료의 첨가량에 비례하여 총 페 놀 화합물의 함량이 증가하였으며, DPPH 라디칼 소거능 또 한 감 분말의 첨가량에 따라 그 활성이 유의적으로 증가하는 결과를 나타내었다. 항산화 활성의 기능성과 함께 제품의 적 합성 판단을 위해 감 묵의 품질평가를 실시한 결과, 감 묵의 이수율은 대조군에 비해 감 분말 1~7% 첨가 묵의 이수율이 낮게 나타났으며, 감 분말 9% 첨가군은 대조군보다 높게 나 타났다. 감 묵의 pH는 감 분말 첨가량에 비례하여 증가하였 으며, 색도는 감 분말 첨가량이 증가할수록 L값과 a값이 낮아지고, b값이 높아지는 유의적인 차이를 나타냈다. 감 묵의 조 직감 측정 결과 견고성과 탄력성은 유의적인 차이가 없었으 며, 부착성은 7% 첨가군에서 가장 높게 나타났다. 씹힘성 및 검성에서는 9% 첨가군이 가장 낮은 수치를 나타내었고, 응집 성의 경우 시료 첨가량이 증가할수록 낮은 응집성을 보여주 었다. 감 묵의 기호도 검사에서 전반적인 기호도, 외관, 향, 색 등 대부분의 항목에서 감 분말 7% 첨가군이 높은 점수를 받았고, 특성 강도 검사에서는 투명도와 탄력성에서는 유의 적인 차이가 없었으며 단맛은 7%와 9% 첨가군이 유의적으 로 가장 강하다는 결과를 얻었다. 이러한 결과로 보아 감 분 말을 청포묵에 첨가하는 것은 감 묵의 항산화 활성과 기호도 를 증가시켜 청포묵의 가치를 높일 수 있을 것으로 사료되며, 청포묵 제조 시 항산화능이 높고, 기호도가 가장 좋았던 7% 감 분말을 첨가하는 것이 바람직할 것으로 생각된다.

        The bean bug, Riptortus pedestris (F.) (Hemiptera: Alydidae) is one of the most important polyphagous pests in soybean in Korea and Japan. With the review of previous studies on the suitability of different diets, we additionally tested two leguminous plants as food sources of R. pedestris by assessing development and reproduction of the bugs. The tested diets include seeds of acacia, two mung bean varieties (var. Eoul and Dahyeon), and soybean (var. Daewon). Riptortus pedestris fed on mung bean var. Eoul showed higher nymphal mortality than those fed on mung bean var. Dahyeon, acacia, and soybean. On acacia, development time and preoviposition period of R. pedestris was shortest among the tested diets Also, five day fecundity the highest in bugs fed on acacia seeds. These results showed that acacia seed can be a good quality diet for R. pedestris, and both acacia and mung bean could be a suitable host resources for R. pedestris during the period when soybean, a major host crop, is unavailable.

        This study was carried out to investigate the physicochemical properties of mung bean starch and the texture of cold-stored (5℃ for 0, 24, 48, and 72 hours) mung bean starch gels added with soy bean oil (0, 2, 4, 6%). The swelling power of mung bean starch added with soy bean oil did not significantly change, whereas solubility increased significantly. Soluble carbohydrate content of mung bean starch added with soy bean oil decreased without any significant differences, whereas soluble amylose content decreased significantly. In RVA viscosity, pasting temperature and peak viscosity of mung bean starch added with soy bean oil were not significantly different, whereas minimum viscosity decreased and breakdown and consistency increased significantly. In RVA viscosity, there were no differences according to concentration of soy bean oil. DSC thermograms show that onset temperature of mung bean starch added with soy bean oil did not significantly change, whereas the enthalpy increased in the case of 4% and 6% oil addition. Rupture properties of freshly prepared mung bean starch gels added with soy bean oil increased in the case of 2% and 4% oil addition, and oil addition to mung bean starch gels suppressed changes in rupture properties during cold storage. There were no significant differences in the texture of freshly prepared mung bean starch gels added with soy bean oil, whereas hardness, chewiness, and gumminess of cold-stored mung bean starch gels added with soy bean oil decreased. In the above textural charactristics, there were no differences due to concentration of soy bean oil. Thus, the addition of 2-4% soy bean oil to mung bean starch is appropriate for improving the quality characteristics of cold-stored mung bean starch gels.

        This study aimed to investigate the improvement effect of 5% (w/w) mung bean (Phaseolus aureus L.) on lipid composition and protein concentration in hyperlipidemic rats. Seven-week-old male (Sprague-Dawley) rats were divided into four groups (n=6, each), and fed experimental diets containing mung bean meal [basal diet+5% (w/w) mung bean (BM), basal-hyperlipidemic diet+5% (w/w) mung bean (BHM)], basal-hyperlipidemic diet (BH), and control (basal diet, BD). Lipid composition in the mung bean diet groups (BM and BHM) evidenced significant reductions in serum total cholesterol, low-density lipoprotein cholesterol, atherosclerotic index, cardiac risk factor, triglyceride, phospholipid, free cholesterol, cholesteryl ester, blood glucose, nonesterified fatty acid, and an elevation in high-density lipoprotein cholesterol. The serum albumin/globulin ratio was increased in mung bean diet-supplemented rats compared to that in hyperlipidemic rats (p < 0.05). Total calcium, phosphorus and potassium concentrations in sera were higher in the BM, BHM and BD groups than in the BH group. Concentrations of sodium and chlorine in sera were lower in the mung bean diet-supplemented groups than in the hyperlipidemic group. The in vivo experiments showed that ingestion of mung bean was effective in improving lipid composition, protein concentration, and blood glucose.
