        Flammulina velutipesis highly valued and widely consumed because of its nutritional and functional benefits, and its global demand is steadily increasing. However, rapid quality deterioration and short shelf life create an urgent need for effective preservation and advanced quality assessment of Flammulina velutipes. The aim of this review was to identify methods that reduce postharvest quality loss, extend shelf life, and optimize storage and distribution practices for Flammulina velutipes. Chemical treatments (including antioxidants, 1-methylcyclopropene, and edible coatings), low-temperature plasma, and innovative nanocomposite-based packaging have been effective in maintaining Flammulina velutipesquality after harvest. Nevertheless, further discussions on the economic feasibility, safety, and sustainability of these technologies are essential for their practical and industrial applications in Flammulina velutipespreservation.

        본 연구는 작약의 품종간 개화시기 차이와 저온에서 장기 저 장이 가능한 품종을 선발하여 절화 유통 기간을 연장하기 위하 여 수행하였다. 작약 24품종을 대상으로 2022년 국립원예특작 과학원 시험포장에서 개화시기와 절화 품질을 조사하였다. 봉오 리 상태에서 수확한 작약을 건조 저장법으로 -1℃에서 60일 저장한 후 절화 수명과 절화품질을 조사하였다. ‘의성작약’은 홑 꽃이었고 나머지 품종은 겹꽃이었다. 개화시기는 5월 10일부터 18일 사이였으며, ‘Etched Salmon’, ‘Monsieur Jules Elie’, ‘Gilbert’, ‘Henry Bockstoce’는 개화일이 5월 10일로 가장 빨랐고, ‘Elsa Sass’는 5월 18일로 가장 늦었다. 식물체 키는 74.6∼107.8cm 였고, 절화 무게는 ‘Henry Bockstoce’ 품종 이 89.8g으로 가장 무거웠고, ‘Angel Cheeks’ 품종이 26.7g으 로 가장 가벼웠다. 꽃의 주된 색은 흰색, 빨강색, 분홍색, 자주색 이었다. -1℃에서 60일간 저장 후에 꽃과 잎의 상태가 아주 양 호한 품종은 ‘Kansas’, ‘Ole Faithful’, ‘Sonw Mountain’이 었다. 절화수명은 ‘Nick Shaylor’ 품종이 8일로 가장 길었고, 다음으로 ‘Blush Queen’, ‘Elsa Sass’ 품종이 7일이었으며, ‘Gilbert’, ‘Highlight’ 품종이 1일로 가장 짧았다. 작약은 저온 장기 저장에서 일부 품종을 제외하고는 꽃과 잎에 저온장해 증 상이 발생하였다. 이와같은 결과는 작약재배시에 품종 선택과 수확후 저온 장기 저장을 통하여 유통기간을 연장하고 하고자 할 때 기초자료로 활용될 수 있을 것으로 기대된다.

        There are a number of methods to evaluate the quality of squid. However, when purchasing the fish, consumers and retails rely only on the sensory test and flavor in the field. Therefore, this study was aimed to prove relationship between scientific indicator and sensory test. Total viable cell count (TVC), viable cell count of Pseudomonas spp., pH and volatile basic nitrogen (VBN) were selected as scientific indicators and mesured during the storage of squid at different temperature. The squid was storaged at 3 different temperature (5oC, 15oC, 20oC). Off flavor determination time was measured by R-index, and kinetic modeling was conducted. Activation energies of offflavor determination time, TVC, Pseudomonas spp, VBN, and pH were 51.210 kJ/mol, 42.88 kJ/mol, 50.283 kJ/mol, 72.594 kJ/mol and 41.99 kJ/mol respectively. Activation energy of off-flavor determination time was approximated to viable cell count of Pseudomonas spp., TVC, pH and VBN as an order. Especially, viable cell count of Pseudomonas spp. had best match of the activation energy. Therefore, it was judged that indicator of off-flavor determine time was viable cell count of Pseudomonas spp..

        본 연구는 국내 냉동보관창고 보관온도에 대한 조사자료를 활용하여, 온도분포를 추정하였고 이를 미생물 위해 평가(microbial risk assessment; MRA)의 입력변수로 활용 할 수 있도록 적정 확률분포 모델을 제시하였다. 조사에 참여한 8곳의 냉동보관창고에서 측정된 공간상의 온도는 최저 -25.8oC, 최고 -10.3oC, 평균 -20.48 ± 3.08oC이었으며, - 18oC이상의 냉동창고 비율은 20.4%로 조사되었다. 공간별 온도분포는 자연대류를 이용하는 냉동창고의 경우 상단 (2.4~4 m) -22.57 ± 0.84oC, 중단(1.5~2.4 m) -22.49 ± 1.05oC, 하단(0.7~1.5 m) -22.68 ± 1.03oC, 최고온도차이는 1.78oC이 었으며, 강제대류를 이용하는 냉동창고의 온도분포는 상단 (2.4~4 m) -17.81 ± 1.47oC, 중단(1.5~2.4 m) -17.94 ± 1.44oC, 하단(0.7~1.5 m) -18.08 ± 1.42oC, 최고온도차이는 0.94oC로 조사되었다. 보관온도는 냉동창고 모든 공간에서 온도가 일정하게 유지되는 것이 아니라 편차가 존재하는 것으로 나타났다. 이상의 수집된 온도자료는 @RISK를 이용, 적합성 검정(GOF: A-D, K-S test)을 수행하여, MRA에서 활용할 수 있는 국내 냉동보관창고 온도분포에 대한 가장 적합한 확률분포모델로 Lognormal [5.9731,3.3483, shift(-26.4281)] 이 선정하였다.

        Quality assessment of sweet persimmon or “Fuyu” was evaluated over room temperature distribution periods after 40-day storage at 0oC cold room. All Hunter’s values (L, a, and b) of sweet persimmon were significantly decreased after 4-day room temperature distribution while the flesh firmness was drastically decreased after 3-day room temperature distribution. Glucose and fructose contents were significantly increased by the degradation of sucrose after 3-day room temperature distribution. The highest extraction yield was obtained in the flesh of persimmon. Extraction yields of each part of “Fuyu” persimmon were 15.53% for flesh, 10.53 for seed, and 13.83 for flower bud. However, the total phenolic content of flesh was 4.8 μg/mg which was extremely lower than that of the seed (175.5 μg/ mg) and flower bud (178.2 μg/mg) of sweet persimmon. With high phenolic content, both the flower bud and seed of sweet persimmon showed excellent antioxidant activities by 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azinobis( 3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) free radical scavenging test. The results showed a great potential for byproducts (seed and flower bud) of long-term, cold-stored sweet persimmon “Fuyu” as a good antioxidant material for novel functional foods.

        2006년에 준공한 양양양수발전댐에서 동물플랑크톤의 시 공간적인 밀도변동을 파악하기 위해 2007~2009년 월 1회 조사(결빙기 제외)를 시행 분석하였다. 고산 삼림에 위치한 양수발전댐은 거의 매일 밤에 하부댐에서 양수한 물을 상부댐으로 양수하여 낮에 방류를 통해 전력을 생산하고 있다. 매일 반복되는 수체의 교란은 기존의 댐과는 다른 독특한 동물플랑크톤의 시공간적인 변동을 초래할 것으로 예상하였다. Chl-a 농도는 초겨울에 가장 높은 양상을 보인 한편, 몬순강우 시기에는 가장 낮은 농도를 보이는 일반적인 특성 또한 보였다. 동물플랑크톤의 밀도는 하부댐에 비해 상부댐에서 높게 나타났는데, 이는 하부댐과는 달리 상부댐에는 어류의 포식압에 의한 영향이 작기 때문으로 사료된다. 윤충류(특히, Keratella cochlearis)의 출현 시기와 식물플랑크톤의 현존량이 높아지는 시기 사이에 뚜렷한 차이가 있었다. 이는 윤충류가 식물플랑크톤 이외에 용존유기물과 박테리아 등과 같은 먹이원에 일부 의존하고 있음을 시사한다. 본 논문에서는 동물플랑크톤에 포함시키지는 않았으나 mixotrophic dinoflagellate (Peridinium bipes f. ocultatum)이 상당한 출현을 보였는데 Peridinium은 식물플랑크톤과 동물플랑크톤의 사이에 위치하는 혼합영양방식을 가지고 있어 이들 종의 생태적인 특성을 연구하는 것은 외부기원유기물의 기여가 큰 수환경내 물질순환을 이해하는데 중요한 지표가 될 수 있다. 본 논문은 고산에 위치하거나 주변 삼림으로부터 외부기원유기물의 기여도가 높은 저수지 및 인공댐에 서식하는 동물플랑크톤군집에 대한 생태학적인 메커니즘을 이해하는데 기초정보로서 활용될 수 있다.

        This study was to present the proper probability distribution models that based on the data for surveys of food cold storage temperatures as the input variables to the further MRA (Microbial risk assessment). The temperature was measured by directly visiting 7 food plants. The overall mean temperature for food cold storages in the survey was 2.55 ± 3.55oC, with 2.5% of above 10oC, −3.2oC and 14.9oC as a minimum and maximum. Temperature distributions by space-locations was 0.80 ± 1.69oC, 0.59 ± 1.68oC, and 0.65 ± 1.46oC as an upper (2.4~4 m), middle (1.5~2.4 m), and lower (0.7~1.5 m), respectively. Probability distributions were also created using @RISK program based on the measured temperature data. Statistical ranking was determined by the goodness of fit (GOF) to determine the proper probability distribution model. This result showed that the LogLogistic (−4.189, 5.9098, 3.2565) distribution models was found to be the most appropriate for relative MRA conduction.

        There were few data for the distribution of the indicator organisms in the commercial plant foods, and for the normal flora and for the foodborne agents within the country. First of all it must be investigated the distribution of the indicator organisms. And also it is very important to prepare the sanitation criteria for the plant foods through the microbiological e×amination and the investigation of tendency to change of the indicator organisms according to the storage temperature and period. The average number of total viable counts for grains was 2.9 × 10^5/g, psychrophilic bacteria 2.9 × 10^6/g, heterotrophic bacteria 3.1 × 10³/g, heat-resistant bacteria 2.1 × 10³/g Pseudomonas aeruginosa 23/g. That for beans was 6.3 × 10²/g, psychrophile 34/g, heterotroph 1.7 × 10²/g. That for sesames was 1.4 × 10^5/g, coliform 350/g, psychrophile 7.4 × 10⁴/g, heterotroph 5.8 × 10⁴/g, Pseud. aeruginosa 2.3 × 10³/g. heat-resistant bacteria 150/g. That for potatoes was 2.0 × 10^7/g, coliform 5.0 × 10⁴/g, psychrophile 1.8 × 10^7/g, heterotroph 1.4 × 10^7/g, heatresistant bacteria 3.3 × 10¹/g, Staphylococcus 2.7 × 10^5/g, fecal streptococcus 4.5 × 10³/g, Pseud. aeruginosa 7.0 × 10³/g. That for mushrooms was 1.2 × 10^8/g, psychrophile 9.4 × 10^7/g, heterotroph 1.0 × 10^9/g, heat-resistant bacteria 1.6 × 10^5/g, Pseud. aeruginosa 1.3 × 10³/g. That for vegetables was 5.9 × 10^(11)/g, coliform 1.8 × 10^6/g, psychrophile 1.1 × 10²/g, heterotroph 8.4 × 10^(11)/g, heatresistant bacteria 7.6 × 10^6/g, Staphylococcus 1.1 × 10^7/g, fecal streptococcus l.1 × 10⁴/g, Pseud. aeruginosa 5.2 × 10⁴/g. That for nuts 3.9 × 10⁴/g, coliform 3.9 × 10³/g, psychrophile 4.0 × 10^8/g, heterotroph 3.2 × 10^8/g, heat-resistant bacteria 400/g. In commercial grains and beans, SPC, psychrophile, heterotroph and heat-resistant bacteria stored at 10℃, 20℃, 30℃ were constant. Staphylococcus, coliform, Pseud. aeruginosa were decreased a little in grains, but were not detected in beans. In mushrooms, all indicator organisms were increased as time goes on and were increased rapidly at 20. In sesames, coliform was not detected at all temperature. psychrophile was increased for 7 days, the otners were constant. In potatoes, SPC, psychrophile, heat-resistant bacteria, heterotroph had a tendency to increase and the others were constant. In vegetables, indicator organisms were had a tendency to increase, psychrophile, heterotroph were rapidly increased after 7 days. In nuts, SPC, coliform, psychrophile, heterotroph, heat-resistant bacteria, Pseud. aeruginosa were constant, staphylococcus and fecal streptococcus were not detected.

        The average number of total viable counts for the commercial pork tested was 19/g, coliform 1.8/g, psychrophilic bacteria 15/g, heterotrophic bacteria 12/g, fecal streptococcus 6.2/100 g, Pseudomonas aeruginosa 13/100 g and none of heat-resistant bacteria and Staphylococcus was detected. That for the commercial beef tested was 130/g, coliform 5.2/g, psychrophile 140/g, heterotroph 28/g, Staphylococcus 1.2/g, fecal streptococcus 9.5/100 g, Pseud. aeruginosa 1.9/100 g and heat-resistant bacteria was not detected. That for the commercial chicken tested was 8800/g, coliform 53/g, psychrophile 4600/g, heterotroph 4700/g, fecal streptococcus 9.9/100 g, Pseud. aeruginosa 2.5/100 g. That for milk was 4700/ml, psychrophile 120/ml, heterotroph 420/ml and the others were not detected. That for the commercial cheese was 3.2/g, psychrophile 2.3/g, heterotroph 1.6/g, Staphylococcus 1/g, fecal streptococcus 9.1/g. That for fermented milk was 10^7/ml, heatresistant bacteria 10^6/ml, fecal streptococcus 2400/100 ml, lactobacillus 3.2 × 10^(15)/ml, in accordance with lactic acid bacteria and the others were not detected. There was not detected any indicator organisms from ham, sausage, butter, eggs and quails in the commercial fooods tested. SPC, coliform, psychrophile and heterotroph in commercial meats stored at 10℃ were increased rapidly as time goes on but heat-resistant bacteria, staphylococcus, fecal streptococcus and Pseud. aeruginosa were constant. At 20℃, SPC, coliform, psychrophile, heterotroph and fecal streptococcus were the highest at 7 days and heat-resistant bacteria, staphylococcus and Pseud. aeruginosa were increased a little. At 30℃, all indicators were increased rapidly for 3 and 7 days and then decreased rapidly. All indicator organisms were increased at the level of 10/g for 14 days in meat products stored at 10℃, but SPC, psychrophile and heterotroph in meat products stored at 20℃ were increased at the level of 10^5/g. It showed that the indicators in meat products stored at 30℃ had a tendency to increase at the level of l0₂/g relative to those stored at 20℃. SPC, psychrophile and heterotroph in milk stored at 10 increased up to the level of 10₄/ml, but coliform, staphylococcus, fecal streptococcus and Pseud. aeruginosa were not detected. As stored at 20℃ and 30℃, they were increased rapidly for 1 or 3 days and then constant for a long time.

        This paper intends to investigate commercial fish and shellfish 25 species (fish 8 species, shellfish 7 species, crustacean 3 species, molusc 4 species and echinodermata) for the distribution of sanitary indicator organisms (total viable counts, coliforms, staphylococci, vibrios, and enterococci) and diatributional change of indicator organisms according to storage temperature and period. The logarithmic mean of total viable counts for total commercial fish and shellfish 25 species was 5.41±0.26 CFU/g, and in accordance with fish and shellfishes, crustacean 6.76±0.67 CFU/g, shellfish 5.67±0.56 CFU/g, echinodermata 5.47±0.50 CFU/g, fish 5.021±0.38 CFU/g, and mollusc 5.03±0.65 CFU/g. The logarithmic mean of enterococci was 2.36±0.37 CFU/g, and in accordance with fish and shellfish, crustacean 3.44±0.12 CFU/g, shellfish 3.87±0.45 CFU/g, echinodermata 3.38±0.0 CFU/g, fish 2.16±0.41 CFU/g and mollusc 0.01±0.0 CFUIg. The logarithmic mean of vibrios was 1.60±0.59 CFUIg, and in accordance with fish and shellfish, crustacean 4.23±0.11 CFU/g, shellfish 3.58±0.90 CFUIg, echinodermata 1.64±0.34 CFU/g, fish 1.79±0.67 CFU/g and mollusc 1.07±0.61 CFU/g. The logarithmic mean of staphylococci was 1.60±0.59 CFU/g, and in accordance with fish and shellfish, shellfish 0.01±0.00 CFU/g, echinodermata 3.51±0.60 CFU/g, fish 1.68±0.64 CFU/g, crustacean 0.34±0.33 and mollusc 2.90±0.11 CFU/g. The logarithmic mean of coliforma was 2.2±0.32 CFU/g, and in accordance with fish and shellfish, echinodermata 3.58±0.89 CFU/g was highest, shellfish 3.25±0.30 CFU/g, crustacean 3.23±0.49 CFU/g, fish 2.18±0.63 CFU/g, peeled shellfish 1.80±0.51 CFU/ g and mollusc 1.55±0.95 CFU/g. As the results of research of the change of the contaminated indicator microflora in working with storage period at 10℃, 20℃ and 30℃, total viable counts was increased without storage temperature and enterococci were decreased slowly at 10℃, but increased at 20 and 30℃ Vibrios were decreased slowly at 10℃, decreased at 20℃ and 30℃ in 2 days after increased rapidly. Staphylococci were increased promptly without storage temperature in 2 days, then the total viable counts were maintained. Coliforms were increased at 10℃ by 7 days, then decreased or maintained after 14 days, changed at 20℃ in accordance with fish species in 2 days, then returned to the initial total viable count, and decreased rapidly at 30℃ on 2 days. By the way, there were no difference among the species.

        For the investigation of the quality loss of mulberry during distribution, the deterioration rate, microorganism growth, and sensory quality of mulberry kept at 20, 10 and 0℃, respectively, were investigated. Based on the results, the optimum temperature for extending the freshness of mulberry was examined in the temperature range of -1.5 to 1.5℃. The level of mold in the mulberry kept at 20 and 10℃, respectively, was much higher than that kept at 0℃. The quality of the mulberry deteriorated seriously after two days at 20℃, after six days at 10℃, and after 12 days at 0℃. The marketability of mulberry as determined via sensory evaluation was much more prolonged by decreasing the keeping temperature from 20 to 0℃. To extend the freshness of mulberry using these results, the optimum temperature was evaluated at the range of -1.5 to 1.5℃ for 25 days. During storage, the changes in the color and pH of the berry were not significantly different by storage temperature, but the microbial levels and deterioration rate increased in the order of 1.5, 0, and -1.5℃. In particular, the firmness of the mulberry decreased rapidly at 1.5℃, showing a significant difference from the others. The titratable acidity and sugar contents decreased gradually at all the applied temperatures. The anthocyanin content decreased sharply at 1.5℃ but gently changed at -1.5℃. Through the sensory results of this study, it was adjudged that the marketability of mulberry could be maintained about 0.7 times at 1.5℃ and 1.3 times at -1.5℃ compared with the marketability at 0℃, respectively.
