We investigated the antioxidant, physicochemical, and sensory characteristics of dried type sodium-reduced bibimbap using dandelion complex powder (DCP). DCP is known to add moisture to the skin and relieve symptoms of atopic dermatitis. The sodium content of the standard sample was 1,110.87 mg per serving. The sodium was significantly reduced by 30%, resulting in 762.62 mg of sodium for the reduced sodium group (p<0.05). The ash contents of the standard sample group with DCP showed the highest value (3.17%) in all samples and was affected by minerals of DCP (p<0.05). The total flavonoid contents and ABTS radical scavenging activity, indicators of antioxidant, anticancer and antibacterial activities, showed significantly high activities with addition of DCP (p<0.05). In the sensory results, bulgogi and savory flavor of the samples with DCP showed significantly higher values, and samples with DCP received the highest scores for after-taste. All samples were confirmed to be microbiologically safe according to the food code applied to food manufacturers. Pathogenic microorganisms tests were either negative or not detected in all samples.
This study aimed to investigate the effects of Dandelion (Taraxzcum coreanum) supplementation on milk yield, milk composition and blood characteristics in lactating dairy cows. Eight lactating dairy cows were divided into two groups (control: TMR supplementation, treatment: TMR with Dandelion supplementation). The milk yield, milk fat, lactose, solids not fat (SNF) and somatic cells counts (SCC) were not significantly different between the control group and the treatment group, whereas milk protein, milk urea nitrogen (MUN) and free fat acid (FFA) were significantly higher in the treatment group compared to the control (p<0.05). The blood components of the treatment group were compared with those of the control group and only aspartate aminotransferase (AST) appeared significantly high (p<0.05). The other blood components were not significantly different in the two groups. Blood corpuscle components in the groups were not significantly different. Especially, all blood corpuscle components in the treatment group were within the normal range. However, the white blood cells (WBC), lymphocytes (LYM) and hematocrits (HCT) in the control group exceeded the normal range. Based on the above results, the addition of Dandelion to feed increased milk protein, MUN and FFA, but did not significantly affect the composition of the blood and corpuscle in Holstein milking cows.
This study was conducted to investigate the effect of the addition of dandelion on color, texture, and antioxidant activity in Jeolpyon. Jeolpyon was prepared with varying amounts of dandelion ranging up to 20%. They were stored for 3 days at room temperature, and the color and texture were analyzed at different time intervals. L and a values decreased with increasing dandelion concentration while b values increased with increasing dandelion concentration in Jeolpyon. From texture analysis by Rheometer, the hardness and chewiness seem to be affected dramatically by the addition of dandelion in Jeolpyon. During storage, the control Jeolpyon without dandelion displayed greater than two fold increase in hardness, chewiness and brittleness, while the Jeolpyon with added dandelion had only slight increase during storage. The addition of dandelion in Jeolpyon also increased antioxidant activities such as DPPH radical scavenging activity, ABTS radical scavenging activity and reducing power. The antioxidant activities increased linearly with increasing dandelion concentration in Jeolpyon. The increase of antioxidant activities in Jeolpyon with the addition of dandelion may be attributed to the polyphenols in dandelion since the amount of total polyphenols increased with increasing amounts of dandelion in Jeolpyon. In sensory evaluation, the panels of twenties, thirties, and forties gave high scores to Jeolpyon with dandelion containing 10% 15%, and 20%, respectively in overall evaluation.
Background : Excess alcohol consumption can lead to alcoholic liver damage and gastritis. Korean thistle (Cirsium japonicum var. maackii) has been reported that it’s administration protective from liver from lipid accumulation and toxicity. Also, Korean dandelion (Taraxacum coreanum Nakai) has been traditionally used for treating various inflammation-related diseases including ethanol-induced gastritis. In this study, we aimed to determine whether the combination treatment of Korean thistle and Korean dandelion could regulate alcoholic liver damage and gastritis in mice.
Methods and Results : Seven-week-old mice were treated with ethanol (5 g/㎏ of body weight) by gavage every 12 h for a total of three doses to induce acute liver damage and gastritis. Ethanol extract of Korean thistle, Korean dandelion or combination was gavaged simultaneously with ethanol for three doses. The results showed that the combination treatment of Korean thistle and Korean dandelion significantly inhibited alcohol-induced increase of serum alanine transaminase and aspartate transaminase levels, liver weight, and hepatic caspase-3 expressions. Hepatic histopathological changes induced by alcohol were also remarkably improved by the combination treatment. The combination treatment inhibited alcohol-induced Morphological changes of gastritis and attenuated the expressions of pro-inflammatory protein, such as inducible nitric oxide synthase.
Conclusion : The results of our study suggest that the combination treatment of Korean thistle and dandelion may simultaneously alleviate acute alcohol-induced gastritis and liver damage.
Dandelion has been widely utilized for medicinal and edible purposes. This research was conducted to evaluate the effect of supplemental LED (light-emitting diode) light on germination, growth characteristics and anthocyanin content of dandelion (Taraxacum officinale) seedling using LED blue (460 nm), red (660 nm, R), blue + red (B:R=6:4) and fluorescent lamp light treatment. By LED illumination to T. officinale seed germination speed was delayed, and germination rate was the highest in the fluorescent light. The growth characteristics (plant height, number of leaves, root length and fresh weight) were greatly influenced by supplemental LED light compared with control treatment, and the growth promotion was the most effective in the red LED illumination. After 60 days of red and mixed LED light treatments, anthocyanin content of dandelion plants was significantly changed. The anthocyanin content was increased by 12~19 mg/100 g under the red LED and the mixed light conditions compared with the control and the blue LED. Results indicate that illumination with red and mix LEDs, compared with other light treatments, is beneficial for promotion of growth and anthocyanin content in dandelion.
Ionizing radiations have been effective mutagen to overcome the limitation of the useful genetic resources in natural environment. This study was conducted to investigate an effect of proton beam on germination, growth patterns in the irradiated dandelion (Taraxacum officinale), and genetic variation in 12 morphological mutants induced in proton-beam irradiated dandelion. Percentage germination rate was drastically decreased over 250Gy. The lethal dose 50 (LD50) of germination was estimated between 250 Gy to 500 Gy. Significant decreases in growth patterns (plant height, number of leaf and fresh weight) were observed by increase of dose (Gy) of proton beam irradiation. According to the correlation analysis between dosage and growth factors, the orders of compactness of correlation were germination, plant height, fresh weight and number of leaf, respectively. Twelve morphological variants such as, dwarf, color, plastid, growth and leaf shape were screened at 50 to 250 Gy of the beam irradiation. As a result of ISSR analysis of the 12 variants, out of 33 bands detected overall, 8 bands were identified to be polymorphic with a rate of 24.2% at the control group. While 33 bands detected overall, 21 bands were identified to be polymorphic with a rate of 63.6% at the proton beam irradiation. The result indicates that the dandelion with proton beam treatment might be promoted variation at DNA level
Dandelion has been widely used as a folkloric medicine for treatment of diverse diseases. This study was conducted to evaluate the effect of light spectrum using red (660 nm), blue (460 nm), red and blue mixed (Red : Blue = 6 : 4) LED (light emitting diodes) and fluorescent lamp on growth and functional components of dandelion (Taraxacum officinale). When LED was illuminated to T. officinale cv. Goldenboll, seed germination was delayed, and germination rate was the highest in the control (fluorescent light). The growth (plant height, root length and fresh weight) except leaf number was increased under the LED treatments compared with the control, and the growth promotion was the most effective in the red LED illumination. Total polyphenol contents in dandelion irradiated with the red and blue mixed or the red LED were 121.77 mg% or 115.36 mg%, respectively, which were greater than those in dandelion treated with blue LED and fluorescent lamp. Asparagine, proline, serine, threonine, glutamic acid and arginine were the predominant amino acids in dandelion and total amino acid was the highest under the Red LED illumination. The results indicate that application of the red and the mixed LED illumination promote growth and increase functional components during cultivation of dandelion
This study was carried out to investigate the physiochemical and microbiological changes of dandelion during fermentation. Thirty and fifty percentage raw sugar groups (SFE30 and SFE50) were introduced into dandelions and fermented for 120 days at 15-20℃. This study was conducted to investigate the utilization of sucrose on lactic acid bacteria from dandelions and their effect on the pH, titratable acidity, microorganism and formation of organic acids in dandelions during fermentation. The number of lactic acid bacteria increased remarkably up to 15 days of fermentation and then decreased rapidly thereafter. The maximum number of lactic acid bacteria, 7.9 log CFU/mL was reached at pH 4.17 and the pH of dandelion showed a slight decrease during fermentation and decreased steadily up to 90 days to reach an optimum pH of 4.0. The titratable acidity of dandelions fermented increased during fermentation. The concentration of organic acid, amino acid and free sugar in SFE30 was higher than both SFE50 and DWE. The results of dandelions fermented were remarkably retarded in the 50% raw sugar group compared to the 30% raw sugar group.
In this study, we established a novel somatic embryogenesis and plant regeneration system through cell suspension culture of white dandelion (Taraxacum coreanum NAKAI.). Embryogenic calli could be initiated from leaf and root explants of sterile seedlings on solid Murashige and Skoog (MS) medium supplemented with 1.0 mg/L 2,4-dichlorophenoxyacetic acid (2,4-D) after 3-week cultures. To proliferate embryogenic calli rapidly, cell suspension culture was performed with transferred to liquid MS medium with various combinations of plant growth regulators (PGRs) including 2,4-D, α-naphthalene acetic acid (NAA), indole-3-acetic acid (IAA), N6-benzylamino purine (BAP), thidiazuron (TDZ), and kinetin. During suspension cultures, embryogenic calli not only greatly proliferated, but shoot organogenesis also simultaneously occurred from the surface of somatic embryos. Among them, TDZ at lower concentration, 0.1 mg/L produced the highest efficiency of somatic embryo formation and shoot organogenesis. Rooting of embryogenic calli with adventitious shoots was done on solid MS medium containing 0.1 mg/L NAA and 0.3% activated carbon. Nearly 80% of embryogenic calli with shoot organogenesis could be rooted normal. Well-rooted plantlets were transferred into pots under a greenhouse condition, and plants derived from this system appeared phenotypically normal.
The propose of this study was to investigate the antioxidant activity of 80% ethanol extracts and various solvent fractions of dandelion (Taraxacmn officinale) leaves and roots, Total phenolics and phenolic acid contents were also examined. The total phenol content of leaves and roots were and respectively. Eight phenolic acids were separated by GC, among which caffeic acid (113.7 mg%)and m-coumaric acid (152.6 mg) were the dominant phenolic acids in leaves and roots, respectively. Amongst solvent functions of leaves and roots, the ethyl acetate fraction showed the strongest radical scavenging activity. A strong correlation was found between total phenol content and electron-donating ability, and ABTS radical scavenging activity showed a similar trend as electron-donating ability. Hydroxyl-radical-scavenging activity and lipid peroxidation were significantly higher in the ethyl acetate fraction than other factions. In particular, the SOD-like activity was highest (43.6%) in the ethyl acetate fraction of dandelion leaves, and was higher than that of trolox. Thus, the ethyl acetate fraction of dandelion leaves exhibited significant phenol content, antioxidant activity, and free-radical-scavenging effects.
산채 자원의 발굴과 산업화를 위한 기초자료 확보 측면에서 산채 557종류에 대해 2006년 12월까지 발표된 국내 문헌을 중심으로 항균, 항산화, 항암 및 항당료성 산채의 종류와 내용을 조사하였다. 산채를 종류별로 나열 한 다음 항균, 항산화, 항암 및 항당료성 효과와 관련된 문헌을 표기함으로써 산채에 따른 연구 성과와 기능성 효과 파악에 크게 도움이 되었다. 문헌에 항균효과로 있는 것으로 나타난 산채 종류 수는 36종류(6.5%)였으며, 항산화 효과가 있는 것으로 나타난 것은 25종류(4.5%)였다. 문헌에 항암효과가 있는 것으로 산채 종류 수는 44종류(7.9%)였으며, 항당료 효과가 있는 것으로 나타난 것은 47종류(8.4%)였고, 기타 기능성 효과가 있는 것으로 나타난 것은 165종류(29.6%)였다.

민들레 잎분말 첨가에 따른 기능성 식빵의 품질특성을 분석하기 위하여 반죽수율, 반죽의 미세구조, 빵부피 및 비부피, 식빵 단면의 air cell 분포상태, 제빵수율, 기계적 및 관능적 품질특성을 분석하였다. 그 결과, 민들레의 잎분말 첨가는 글루텐 형성이나 효모의 발효 등에 크게 영향을 미치지 않아 빵 용적의 부피감소를 초래하지 않고 비교적 고른air cell을 형성하여 제빵적성이 우수한 것으로 판단된다. 특히 관능적 품질특성에서 전체적인 기호도
민들레 추출물의 4 종의 젖산균 즉, Leuconostoc mesenteroides, Lactobacillus brevis, Lactobacillus plantarum 및 Lactobacillus acidophilus에 대한 항균력과 김치의 가스발생에 미치는 영향을 조사하였다. pH, 산도, 탁도 및 clear zone으로 평가한 결과, 민들레 물추출물과 70% methanol 추출물 (0.5%)은 4종 젖산균의 생육을 저해시키지 않았으나 eth
