        Changes in contents of free sugars, amino acids, and fatty acids of legumes were analyzed for each phase of in vitro digestion. In addition, contents of resistant starch in raw and digested pulses were compared. Soybeans, kidney beans, cowpeas, and chickpeas were analyzed. An in vitro digestion model was used to analyze contents of nutrients using LC-MS and GC-MS. Stachyose in kidneybean, cowpea, and chickpea increased as the digestion phase progressed. In four types of legumes, raffinose slightly decreased or showed no significant difference between the Oral phase and the BBMV phase. Content of glucose, a monosaccharide, increased during the BBMV phase. During the digestion phase, levels of free amino acids and free fatty acids also increased. Content of resistant starch was reduced compared to that in the raw material. It was 0.01g/100 g food in soybean, 1.06 g/100 g food in red kidney bean, 0.77g/ 100g food in cowpea, and 0.76 g/100 g food in chickpea. It was confirmed that nutrients in the in vitro digestion model were liberated at each digestion phase with changes in the content of resistant starch. These results are expected to be used as fundamental data for obtaining bioavailability of nutrients.

        Livestock production costs are heavily influenced by the cost of feed, The use of domestically grown forages is more desirable for livestock feed production. As part of this study, triticale, which is an extremely palatable and easily cultivable crop in Korea, was used to produce low moisture silage bales with lactic acid bacteria (LAB) and then stored for different periods. We examined the nutrient content of silage, such as crude protein (CP), acid detergent fiber (ADF) and neutral detergent fiber (NDF), as well as their organic acids, including lactic acid, acetic acid, butyric acid, at different storage periods. The nutrient content of silages, such as crude protein, ADF, and NDF, did not change significantly throughout storage periods. Organic acid data indicated that lactic acid concentrations increased with increasing moisture contents and storage periods up to nine months. However, further extending storage to 12 months resulted in a reduction in the lactic acid content of all silages as well as an increase in their pH. Based on the present results, it suggested that the production of low moisture silage with the LAB may be able to preserve and maintain its quality without altering its nutritional composition. Also, the lactate content of the silage remained significant for at least nine months.

        본 연구는 4가지 환경요인에 따른 떡갈나무 유식물의 생육 반응 분석과 생태적 지위폭을 측정하였다. 환경요인은 광, 수분, 토성 그리고 유기물 함량이고 각각 4구배로 처리하였다. 광량이 많을수록 잎 무게, 지상부 무게, 지하부 무게 그리고 식물체 무게가 증가하였다. 수분함량처리구와 토성처리구에서 생육 반응은 차이가 없었다. 유기물 함량이 많을수록 지상부 무게가 증가하였지만, 나머지 형질의 생육 반응의 차이는 없었다. 생태적 지위폭은 광요인에서 0.865, 수분요인에서 0.995, 토성요인에서 0.994 그리고 유기물 함량 요인에서 0.988이었다. 생태학적 지위폭은 수분함량 처리구에서 가장 넓었고 광처리구에서 가장 좁았다. 이는 떡갈나무의 생육 반응이 광량의 양이 많을수록 생육이 좋고, 광에 민감함을 의미한다. 따라서 생육 반응과 생태적 지위폭을 결정짓는 것은 광 요인이다.

        Introduction Drawing from Kahneman and Tversky’s, (1979) prospect theory, this conceptual paper attempts to go beyond our knowledge of how consumers understand, perceive, use, and apply nutritional information on nutritional labels especially at the point of purchase (Cowburn & Stockley, 2005; Grunert & Wills, 2007; Miller & Cassady, 2015) to examine whether a health-conscious consumer’s food product choice decision will largely be based on negative or positive nutrients on the nutritional label. This has become necessary because of the criticality of consumers’ decisions regarding nutrition issues to marketers and policymakers (Chen, 2013; Clare & Burghardt, 2015; Ellison et al., 2013) which has resulted in a growing interest in nutritional information issues among researchers. A review of the extant relevant literature also shows that, studies examining how consumers place value on the positive nutrients (those that enhance and improve their health – e.g. Vitamins) and negative nutrients (those that have deteriorating effect on their health – e.g. Fats) and how they affect their purchasing decision are scarce. Conclusion This paper argues that, it is not enough to know how consumers understand, perceive, use and apply the nutritional information especially at the point of purchase etc. shown in the literature. There is the need to go further to examine the influence the nutrient content claim (both positive and negative nutrients) have on consumer nutritional choice decision when purchasing a food product. There is also a need to go beyond the dieting and ill consumers who because of their conditions seek specific nutrients in their foods and consider the larger consumer segment who are health-conscious by taking Burton and Andrews (1996) and Baltas’ (2001) research a step further. The study provides evidence for the use of prospect theory in nutritional label issues and go a long way to reinforce its application in this regard. The study enables marketers to: gain understanding of what nutrient content claim will cause a consumer to decide to purchase a food product when seen on a nutritional label; shape the format of the nutritional information on nutritional labels for easy use by consumers; and know what to emphasize in communicating nutritional information to their consumers.

        Traditionally, food and medicines are considered as having common roots. That is, their energies share the same source (藥食同源), which has created a unique food culture, and nurtured a unique academic area of dietary medicine (藥膳食料 學). This study aimed to develop a desirable dietary life-style based on the oriental dietary medicine theorem originated from the schema of four qi as well as five flavors of foods (四氣五味), originated from the yin-yang and five phase theory based on a clear understanding of a modern point of view, and experimental analysis of nutrients and dietary effects of clear heat effect materials. This study can promote more healthy life-styles and prevent adult diseases by following oriental dietary medicine theory. We should develop a Yack-sun theory and dietary culture that is suitable for physical and genetic health.

        본 연구는 미생물 첨가가 느타리버섯 폐배지의 영양소 함량, 발효특성 및 미생물상에 미치는 영향을 조사하기 위해 수행하였다. 시험은 느타리버섯 폐배지에 미생물 무첨가구(CON), 고초균 첨가구 (Bacillus subtilis 2⨯1010 cfu/g; BS), 유산균 첨가구(Lactobacillus plantarum 2⨯1010 cfu/g; LP) 및 혼합균 첨가구(Bacillus subtilis : Lactobacillus plantarum = 1:1; BL)로 4 시험구를 설정하고 6일간 발효시켰다. 발효 직후 0, 1, 2, 4 및 6일에 시료를 채취하여 분석에 이용하였다. 발효 6일후 조단백질과 조지방 함량은 BS구에서 가장 높았다(P<0.05). NDF 함량은 LP구와 BL구에서, ADF 함량은 미생물을 첨가한 모든 시험구에서 높은(P<0.05) 반면, in vitro 건물소화율은 CON구가 높았다 (P<0.05). Lactate와 propionate 함량은 CON구와 BS구가 타 시험구에 비해 높았다(P<0.05). 한편 발효 0일에 유산균 함량은 BS구와 LP구에서 높았으며(P<0.05), 발효 1일에 유산균 함량은 LP구에서, 고초균 함량은 BL구에서 각각 높았다(P<0.05). 발효 2일에 lactate와 propionate 함량은 LP구와 BL구에서 타 시험구에 비해 높았다(P<0.05). 이상에서와 같이 BS 첨가는 발효과정 중 유기산 생성량 개선에는 유리하나 건물소화율에는 부정적인 영향을 미칠 것으로 사료된다.

        본 실험은 수경재배시 마죠람과 오레가노의 알맞은 배양액 농도를 구명하기 위하여 실시했다. 배양액은 유럽채소연구센터 허브액을 사용했다. 처리농도는 0.5, 1.0, 2.0, 3.0배액 등 4수준이었고 재배기간은 40일이었다. 마죠람은 지상부 생육, 지하부 생육, 비타민 C,총 정유생산량은 0.5배액에서 가정 조았다. 그러나 무기물함량은 20.배액에서, 정유함량은 3배액에서 좋았으며 엽록소 함량은 고농도에서 감소하였다. 오래가노의 생육 0.5배야ㅐㄱ에서 조았으며, 3.0배액에서는 고사하였다. 엽록소 함량은 2.0배액에서 낮았으나 비타민 C는 이온농도에 영향을 받지 않았다. 무기물과 정유함량은 1.0배액에서 높았으나, 정유생산량은 0.5배액에서 높았다. 이사의 결과로 볼 때 마죠람과 오레가노 수경재배시 적절한 배양액 농도는 허브 배야액 0.5배인 것으로 생각된다.

        시설재배 참외를 위한 새로운 방식의 순환식 수경재배시스템을 고안하여 참외 수경재배의 가능성을 검정하고, 순환식 수경재배 시의 배양액 관리기술을 확립하기 위하여 세 가지 수경재배방식에서 순환배양액의 무기이온 함량의 변화를 조사하였다. 참외의 수경재배에서 토양재배와 비교하여 양호한 수량과 품질을 나타내었다. 참외의 수경재배는 고형배지방식이 적합한 것으로 보였으며 NFT방식은 고온기의 장해발생으로 적합하지 않은 것으로 생각되었다. 참외의 배양액은 야마자키 조성 멜론 배양액을 EC 2.0dS.m-로 전 생육기간에 동일하게 공급하는 것이 적절한 것으로 밝혀졌다. 순환방식에서도 배양액의 EC와 pH는 비교적 안정적으로 유지되었으며 순환배양액내의 다량원소와 미량원소도 계속적으로 일정한 함량으로 유지되어 참외용 수경재배방식이 적절한 것을 확인할 수 있었다. NO3-N, Ca, Mg은 모든 재배방식에서 비슷한 양상으로 안정적인 함량변화를 나타내었고, P은 다른 두 방식에 비해 펄라이트 배지에서 약 1me.ι- 정도 흡수가 저하하였으며, K은 펄라이트 배지에서는 불규칙한 양상을 보였으나 코코피트 배지에서는 안정적인 함량변화를 나타내었다. 미량원소는 Mo을 제외하고는 고형배지 방식에서는 대체적으로 안정된 함량의 추이를 나타내어 미량원소의 흡수가 원활하게 이루어진 것을 알 수 있었다. 그러나 NFT방식에서는 B와 Mn은 비교적 안정된 함량변화를 나타내었으나 다른 원소들은 불규칙적인 변화를 나타내었다. 특히 고온기에 미량원소의 흡수가 저하한 것을 알 수 있었으며 Cu. Zn, Mo의 흡수가 원활하지 않았다. 본 실험의 결과를 통하여 참외를 위한 새로운 순환식 고형배지방식은 참외시설재배에서의 문제점을 해결하는 적절한 방법이 될 것으로 생각되었다.

        순환식 담액수경 상추재배에서 양액의 pH 변화는 미량원소 수준에 관계없이 생육 중기에 낮아지다가 생육후반에 회복되었는데 양액 내에 Humus첨가에 의해 양액의 pH 변화가 완만해졌다. 생육은 Humus첨가에 의해 양호한 경향을 나타냈고 미량원소수준이 높아질수록 저조하여 Cu · Zn농도 5ppm이상에서 황화현상 등의 피해가 발생하였으며, Humus 첨가에 의해 중금속에 의한 생체중 감소가 현저히 억제되었으며 과잉피해증상이 완화되는 경향을 나타내었다. 무기성분 흡수에서는 Zn은 흡수억제 효과가 없었으나 Cu원소의 흡수는 억제되어 중금속의 피해 우려시 Humus의 효과가 어느 정도 인정된다.

        본 실험은 고기능성 채소 생산을 위한 배양액내의 적정 셀레니움 농도를 구명하고자 수행되었다. 벨기에의 채소연구소에서 허브재배를 위해 개발된 양액을 이용하여 각각 Na2SeO4를 0, 2, 4, 6, 8mg/l농도로 처리하였다. 배양액내 셀레니움의 농도가 국화과 식물인 향쑥의 생육에 미치는 영향을 알아본 결과 저농도의 처리는 생육을 향상시켰으나 6mg/l이상의 고농도 처리는 생육을 감소시켰다. 엽록소의 함량은 셀레니움 처리에 의해 증가되었는데 배양액 내의 selenate ion 농도가 높을수록 전체 엽록소함량도 증가되었다. 비타민 C의 함량은 좋은 생장을 보였던 4mg/l처리까지는 증가하였으나 그 이상으로 농도가 증가했을 때 비타민C의 함량은 감소하였다. 저농도의 selenate 이온 농도는 정유의 함량을 증가시켰으나 고농도에서는 정유의 함량이 감소되었다. 식물에 의한 셀레니움의 흡수는 배양액내의 selenate 이온 농도가 증가할수록 촉진되었다.

        The purpose of the present study is to assess nutrient content for providing nutrition information such as nutrition labeling on Korean dishes in restaurant and food service institutions. The content of nutrients was calculated in recipies used to prepare dishes which has been frequently consumed in such four groups as the literature, foodservice institutions of industries, restaurants, and households. The numbers of dishes surveyed were 15. Total numbers of literture used for recipies analysis are 20. Recipies used in foodservice institutions of industries were abstracted from the journal 'Guk-Min Young-Yang' published in Korea dietetic association and obtained with the help of dietitians working in those institutions. Also, recipies has been using in restaurants were given from the Korea restaurant association. Recipies in households was calculated from the secondary analysis of the Korean National Nutrition Survey. Nutrient content from foods except steamed rice and side dishes in each dish was calculated using data of Korean food composition table published. The content of energy and protein in 'Gal-bi tang' (beef-rib soup) were highest in recipes used at restaurants, vitamin C in recipes of food service institutions of industries due to the generous use of meats and vegetables than other recipies. 'Doen-jang chigae' (soybean paste stew) showed the lowest content of energy in results analyzing recipes presented on the literature and varied protein level by four groups for difference of protein source used. The content of energy in 'Gop-chang jeongol' (small intestines stew) is 150 kcal more than 'Soegogi jeongol' (beef stew) in general. The energy level of 'Daeji-galbi' jim (braised pork ribs) and 'Dak jim' (braised chicken) turned out to be the highest in recipies presented on literature. Variation of each nutrient content including energy and protein was relatively high, since some of foods used in 'Pibimbab' (mixed rice) varied with four groups. Amounts of energy and protein in 'Naeng-myeun' (cold noodles) is the highest in recipies of foodservice institution of industries because much amounts of noodle and meats were used comparing to other groups. The average content of energy in 'Pulgogi' (grilled meat with sauce) was 50% to Korea recommended amounts of one meal, 833.3 kcal. Content of vitamin B1 in 'Jeuk pyeunuk' (boiled pork), which is made of pork meat, was higher than other dishes. The ingredients of frequently consumed Korean dishes were highly variable among the four groups which inevitably results in variation of nutrient content in each dishes. The high variation of nutrient content in each dish according to study requires careful collecting of the large number of recipies in presenting representative nutrient content for nutrition labeling on dishes in restaurant and food service institutions effectively.

        양액재배에서 제주송이가 다른 배지와 비교하여 방울토마토의 수량 및 품질에 미치는 영향과 양액성분 변화를 조사하여 제주송이를 양액재배용 고형배지로 실용화하기 위하여 시험한 결과는 다음과 같다. 1. 건엽비, 건과비, 당산비는 1익㉣ 1회 1시간 담액후에 완전 배액한 구에서 높았다. 2. 방울토마토 생과중은 상위 화방으로 갈수록 암면구와 담액수경구는 작아졌으나, 송이구와 일향토구, 펄라이트구 등 고형배지경에서 무거웠다. 3. 방울토마토의 생육이 왕성한 시기에 양액성분중 다량원소를 분석한 결과는 송이 재배구에서 인산과 칼륨 농도가 낮았다. 4. 방울토마토의 수량과 당도는 암면과 일향토구에서 높은 경향을 보였다. 5. 일반적으로 양액재배에서는 수분의 증발과 식물의 수분 흡수 증산작용으로 비료염의 농도가 높아가는데 송이구도 다른 고형배지경과 비슷한 결과를 보였다. 6. 제주 송이 양액재배용 고형배지로 손쉽게 이용할 수 있는 가벼운 자재로 가공개발 연구가 있어야 할 것으로 본다.

        This experiment was conducted to identify the variations in inorganic nutrients and plant growth in millet (Panicum miliaceum L.) due to soil salinity. The soil series was Munpo and soil texture was silt loam. The experimental soil was amended so that the soil had salinities of 0.8 dS m-1, 1.6 dS m-1, 3.2 dS m-1 and 4.8 dS m-1. Millet was transplanted 15 days after sowing. As soil salinity increased, the degree of reduced growth was in the order of seed production > root dry matter > plant dry matter > culm length > tiller number > stem thickness > Panicle length. Seed production was decreased to 18.9% in soil salinity of 1.6 dS m-1, 36.9% in of 3.2 dS m-1, and 50.7% in EC of 4.8 dS m-1. Root dry matter decreased to 35.8% in EC of 3.2 dS m-1, and to 40.5% in EC of 4.8 dS m-1. As soil salinity increased, Total nitrogen content increased in all aboveground parts, roots and seeds. However, There was no difference in CaO, P2O5, K2O and, MgO in soils of different salinity. On the other hand, Na2O content was higher in the order roots> shoots> seed, and in the case of roots, Na2O content increased to 1.02% in soil salinity of 4.8 dS m-1. However, up to soil salinity of 1.6 dS m-1, the Na2O content of the seed was similar to that in plant grown in the Control conditions(0.8 dS m-1). In conclusion, taking into consideration economic factors, millet could be cultivated in soil with salinities of up to approximately 1.6 dS m-1, and seed produced from reclaimedland would be suitable for human consumption.

        We examined the effects of light colors (wavelength) and light quantities on the yield ratio and quality of cultivated cowpea sprouts. All light colors resulted in a lower cowpea sprout yield ratio compared to the untreated condition (darkness), but were similar in hard seed ratio. All light colors promoted the growth of the epicotyl and root when compared to the untreated condition, but limited the growth of the hypocotyl. White light (458 nm) significantly improved grade by increasing the lightness of the cotyledon and the hypocotyl and the yellowness of the hypocotyl. The Fe content of cowpea sprouts was higher in those grown under red light (632 nm), and the total amino acid content was higher for those grown under yellow light (560 nm), white light (458 nm), and blue light (460 nm) compared to plants grown in the untreated condition (darkness). The yield ratio of cowpea sprouts was lower in the yellow light condition (560 nm) at lower light quantity, but no differences were observed at other light colors and quantities. The lightness and yellowness of cowpea sprouts was higher in the yellow light (560 nm) and red light (632 nm) at lower light quantity, redness was lower. No significant differences were observed in the content of normal and inorganic components according to the light quantities of each light color, except that Fe content was higher in sprouts grown under red light (632 nm) as light quantity increased. Total amino acid content was slightly higher in sprouts grown under white light (458 nm) and blue light (460 nm) as light quantity increased.

        The purpose of this study was to establish the optimal growth temperature and to select genetic resources for production of cowpea sprouts. Seowon was treated between 15°C and 30°C at intervals of 3°C to investigate growth temperature. Twelve resources, including Seowon, IT154149, IT154153, Tvu7426, and Tvu7778, were used for cultivating sprouts at a temperature of 27°C. The yield ratio of cowpea sprouts was highest at 27°C (657%), and was reduced when growth temperature was decreased. The hard seed rate was lower when the growth temperature was increased. Vitamin C content was highest at 24°C (2.85 mg/g), ranged between 2.15 and 2.29 mg/g at other growth temperatures, and increased with the length of the growth period. The inorganic component content of cowpea sprouts did not vary based on growth temperature, while the amino acid content increased with increasing growth temperature between 15°C and 24°C, and then subsequently decreased as growth temperature rose from 24°C to 30°C. IT154153 had the highest yield ratio of cowpea sprouts per genetic resource (647%), followed by Seowon (615%), and Tvu7426 (608%). Genetic resources with a higher yield ratio had smaller seeds, a thinner seed coat, and superior germinability. The inorganic components found at highest concentrations in the cowpea sprouts were potassium, magnesium, calcium, sodium, iron, molybdenum, and zinc (in that order). In comparison to raw seeds, the protein, calcium, zinc, molybdenum, and iron content in the cowpea sprouts was higher, while the content of aluminum and boron was lower.

        This study was to verity that the uptake inhibition and accumulation of nitrogen in different potassium levels. Lettuce was used as model plant in this study and grown in pot of 10cm's in diameter and depth with mixture media of vermiculite and perlite under supply of different culture solution for three weeks. Nitrogen absorption at root was inhibited by increased potassium concentration in nutrient solution, and nitrate accumulation of plant was depended on absorption of nitrogen because nitrate content of 0 K level was 4-5 times higher than that of 2 K level, Concentration of ascorbic acid was decreased by increasing the nitrogen absorption, since ascorbic acid (AsA) content of 2K level was higher than those of OK level in both of old leaf and flesh leaf

        냉수관계일수가 엽신, 지경, 영곡의 무기성분조성에 미치는 영향을 조사분석하였던바 다음과 같은 결과를 얻었다. 1. 엽신, 지경, 영각의 무기성분조성은 냉수관계일수가 길어질수록 전질소함량은 증가하나 인산, 가리, 규산함량조은 낮았으며 숙기별로는 전질소와 인산은 출수기 가리는 엽신과 지경에서는 출수기, 영각은 성숙기, 규산은 성숙기에 많았고 지경의 무기성분함량은 엽신보다는 영각과 유사한 양식을 나타냈다. 2. 냉수에 의해 도체가 저질소흡수과정장해를 받으면 인산, 가리, 규산도 흡수장해를 받으며 그 경향은 지경보다는 엽신과 영각의 영양장해가 현저하였으며 도체에 전질소함량이 높고 규산함량이 낮으면 지경과 영화의 퇴화 및 불임이 증가되고 지경의 영양장해가 엽신과 영각보다 퇴화 및 불임에 밀접하게 관여하였다.
