        노니의 주요 산지인 사모아, 인도네시아, 중국(하이난), 하와이, 태국, 타히티에서 생산된 노니 열매를 착즙하여 산지별 노니열매 착즙액의 이화학적 특성, 기능성 성분 및 항산화 활성을 비교분석하였다. 산지별 노니열매 착즙액의 pH는 3.63-3.83 수준으로 나타났으며, 색도는 태국산이 다른 산지 노니열매 착즙액보다 L, a, b 값 모두 유의적으로 낮은 값으로 나타났다. 고형분 함량은 5.97-6.97 °Brix 범위로 하와이산이 6.97 °Brix로 가장 높았으며, 반면 인도네시 아산이 5.97 °Brix로 가장 낮은 값을 나타내었다. 태국산이 가장 많은 스코폴레틴과 루틴을 함유하고 있었으며, 인도네시아산이 다른 지역에서 생산된 노니열매 착즙액보다 폴리페놀 함량이 유의적으로 가장 높았다. 항산화 활성 중 DPPH 라디칼 소거능은 인도네시아 > 하와이 > 타히티 > 태국 > 사모아 > 중국 순으로 나타났으며, ABTS 라디칼 소거능은 인도네시아 > 하와이 > 타히티 > 사모아 > 중국 > 태국 순으로 나타나 인도네시아산이 가장 높은 항산화능 을 보였다. 이상의 결과, 태국산이 스코폴레틴과 루틴의 함량이 가장 높았으며, 반면 인도네시아산이 가장 우수한 항산화 활성을 가지는 것을 확인하였다.

        The objective of this study was to compare antioxidant activities of green tea, rosemary, lemon and bamboo leaves extracts using three different extraction methods (80% ethanol sonication extraction, distilled water autoclave extraction, distilled water extraction at room temperature). As a result, green tea and rosemary extracts showed relatively high antioxidant activities compared with those of lemon and bamboo leaves. These green tea and rosemary extracts were subsequently added to soymilk and their mixtures were examined for antioxidant activities. Soymilk added with 10% green tea distilled water autoclave extracts and distilled water at room temperature extracts showed relatively high DPPH, 85.09±2.26%, 84.38±1.97%, and ABTS radical scavenging activities, 73.43±2.78%, 81.34±4.78%, respectively. On the other hand, soymilk added with 10% rosemary distilled water autoclave extracts showed remarkably higher DPPH radical scavenging activity while their ABTS radical scavenging ability was similar to that of non-added soymilk. In conclusion, our results suggest that the addition of green tea distilled water autoclave extracts, distilled water at room temperature extracts and rosemary distilled water autoclave extracts to soymilk could contribute to the development of added value soymilk products with increased antioxidant activities.

        This study was carried out to investigate the anti-oxidative and anti-inflammatory effects of hot water extracts of Ligularia fischeri cultivated in Youngyanggun. We obtained hot water extract (HWE) and cold water extract (CWE) from L. fischeri. The anti-oxidative activities of L. fischeri extracts were measured by 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity. The anti-inflammatory effects of L. fischeri were evaluated in human mast cell line-1 (HMC-1) cells stimulated with phorbol-12-myristate-13-acetate plus A23187 (PMACI). The solid yields of HWE was 150% higher than CWE solid yield. Total polyphenol contents of HWE were 198.07±0.24 mg/g. The value of anti-oxidative activities of HWE were shown IC50 28.2±0.04 ug/mL. We showed that HWE significantly reduced the PMACI-induced the production of IL-6 (0.01-1 mg/mL), IL-8 (0.1-1 mg/mL), and TNF-α (0.01-1 mg/mL). These results indicate that the HWE of L. fischeri can be used as a functional material due to its antioxidant and anti-inflammatory activities.

        This study was conducted to investigate the quality properties depending on the cultivation methods (general, organic, pesticide-free) of yuza and its various parts (peel, pulp, seed). The contents of hesperidin were the highest in yuza feel grown by pesticide-free method (13.23 mg/g). The contents of naringin presented a higher content in the peel, especially which of the general (4.62 mg/g) showed the highest value. Vitamin C analysis showed the highest content in the peel, significantly varied according to the cultivation method and various parts (p<0.05). Vitamin C value was significantly highest in organic peel, which was 770.02 mg/100 g, whereas among the peel, the pulp and the seed were it the lowest in the seed. The content of total polyphenols were the highest in general peel (0.85 mg/g). Flavonoid content of pesticide-free seed was significantly higher than those of the other yuja samples which was 0.89 mg/g (p<0.05). The DPPH radical scavenging activity was relatively more active in the peel among the above-mentioned three parts, especially the pesticide-free peel was most active, which was 73.94%. The ABTS radical scavenging activity of organic peel was significantly active among the samples, which was 84.47% (p<0.05). Based on these results, it can be said that yuja has variety of useful components in the pulp and the seed as well as the peel: and thus it’s hight recommended to develop more varied yuja products.

        The physiological properties of extracts from Hizikia fusiforme with different extraction methods (hot water extraction, autoclave extraction and high pressure extraction) were investigated. The amounts of substances related to polyphenol and flavonoids contents were the highest in autoclave extract (30.51 mg/g and 4.78 mg/g, respectively). The DPPH radical scavenging activity was the highest in the autoclave extract (81.80%) at the 5 mg/mL. Autoclave extract exhibited the strongest ABTS radical scavenging activity and reducing power among the three extraction methods. However, ferrous ion chelating, TBA reactive substances and xanthine oxidase inhibition activity of high pressure extract were higher than those of the other extracts. Additionally, the tyrosinase and elastase inhibition activities of high pressure extract with a concentration of 1 mg/mL were higher than those of the other extracts. These results suggest that extracts of Hizikia fusiforme have a potential to act as functional materials, and autoclave and high pressure extractions are superior to hot water extraction for enhancement of the biological activity.

        This study investigated the antioxidant and antidiabetic activities of Stachys sieboldii Miq. extracts by solvents (water, ethanol, butanol, chloroform, and hexane). The contents of total polyphenols (7.18-37.25 mg/g) and flavonoids (0.21-5.21 mg/g) in extracts from Stachys sieboldii Miq. showed a significant difference dependent on the extraction solvents, butanol > ethanol > water > chloroform > hexane. Antioxidant activities by DPPH and ABTS radical scavenging were increased in a dose-dependent manner. These activity trends associated with the extraction solvent were different at each concentration, but resembled phenolic compound contents trend, generally. FRAP value increased in a dose-dependent manner, but there was a difference in radical scavenging activities when comparing between extraction solvents by butanol > ethanol > hexane > chloroform > water on all concentrations. The trend of α-amylase inhibition of extracts from 1,000 μg/mL to 2,000 μg/mL was not affected as enzyme activity is promoted and not inhibited. The inhibition of α-glucosidase was increased in a dose-dependent manner without water extracts, the activity on hexane extracts was higher than others per the extraction solvent. α-Glucosidase inhibition of hexane extracts showed 57.76% at 250 μg/mL, which is 2.8 times higher than the second highest chloroform extract (20.65%). From these results, we presume that the active ingredients of Stachys sieboldii Miq. is different according to the extraction solvent and also the activity is different by these major functional groups.

        The purpose of this study was to measure the bioactivity and antioxidant activity of peel from Gardenia jasminoides fructus Ellis (GJE) in Namhae, Korea, following some established methods. CM (Chloroform:Methanol, 2:1, v/v), 70% ethanol, and n-butanol extracts were collected. Flavonoid content and value as a functional food ingredient of GJE peel was investigated through assessing antioxidant [DPPH (1,1'-diphenyl-2-picrylhydrazyl), ABTS (2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic acid)], and hydroxyl radical scavenging activities; superoxide dismutase like ability; ferrous ion-chelating capacity; and tannin content by solvent extraction. Solvent extract antioxidant activities significantly increased (p<0.05) at increasing concentrations (0.2, 0.4, 0.6 mg/mL). GJE peel extracts were less active than the positive control [ascorbic acid, BHA (butylated hydroxyanisole), and EDTA (ethylenediaminetetraacetic acid disodium salt dihydrate)]. Based on the results of this study, GJE peel could be used as a natural antioxidant source due to its high antioxidant activity and bioactive compound content.

        The purpose of this study was to investigate the bioactivity of extracts from the seeds of Gardenia jasminoides Ellis fructus (GJE) found in Namhae, Korea. Extraction was performed using three solvents, 70% methanol, Distilled Water (DW), and Ethyl Acetate (EA). We determined the total phenol and phytic acid contents of the extracts to evaluate their nitrogen oxide scavenging activity, antioxidant activity, reducing power, and lipid peroxidation inhibition ability. The phytic acid content of GJE was found to be 1.157 mg PAE (Phytic Acid Equivalent) /g DW. The yields of the three extraction processes were as follows: DW, 36.61%; 70% methanol, 30.10%; and EA, 20.40%. The physiological activities of the extract solvents increased significantly with increasing concentrations (0.2, 0.4, and 0.6 mg/mL) (p<0.05), but were lower than those of ascorbic acid, BHA, and trolox. Total phenol content was the highest in the 70% methanol extract, followed by DW and EA extracts. Further, nitrogen oxide scavenging activity and antioxidant activity were the highest for the 70% methanol extract followed by DW and EA extracts. Based on these results, the bioactivities of the 70% methanol and DW extracts of GJ seeds were excellent. These extracts can be used as natural antioxidants

        This study was conducted to investigate the effect of Lentinus edodes powder on the quality characteristics and antioxidant of rice cookies. The cookies for this experiment was made by 3 main ingredients including rice powder, flour, Lentinus edodes powder. The proportion of rice powder was fixed to 50% for the total amount of ingredients. The amount of reminded 2 ingredients (flour and Lentinus edodes powder) were varied. The amount of flour was decreased up to 38%, and the addition of Lentinus edodes powder was increased to 4%, 8% and 12%. Density of the dough, hardness, total polyphenol content, DPPH free radical scavenging activity, and reducing power increased with increasing Lentinus edodes powder content. Moisture content, pH of the dough, spread factor, loss rate, leavening rate, and L values of the cookies were decreased with increasing Lentinus edodes powder content. The result of consumer acceptance test revealed that there were no significant differences in smell, taste and overall acceptability, while the preference of color decreased as the amount of Lentinus edodes powder increased. To sum up, the cookies with 12% Lentinus edodes powder can produced the best results in terms of quality and antioxidant potential.

        Background: Invasion of these invasive plants in the ecosystem threatens the habitat of endemic species, reduces biodiversity, and causes a disturbance in the ecological system. Hypochaeris radicata L. (Asteraceae), the most invasive plant in Korea, particularly in Jeju Island, invades farmlands, and autochthonous forests, resulting in the establishment of monocultures and modification of the ecosystem structure. Methods and Results: In this study was, we evaluated the biological activity of 70% ethanolic extracts from different parts of Hypochaeris radicata L. The biological activities of 70% ethanolic extracts of different parts, such as flower, leaf, stem, and root, of H. radicata were investigated. The total polyphenol content was highest in flower extracts (50.82 ± 3.16 ㎎ · GAE/g). In addition, the highest flavonoid content was observed in flower extract (15.19 ± 2.03㎎ · QE/g). The flower extract of H. radicata exhibited stronger DPPH radical-scavenging activities, ABTS radical scavenging activities, and reducing power than the other parts. The flower extract of H. radicata was observed to have the highest tyrosinase and α-glucosidase inhibitory activities. Conclusions: The flower extracts of H. radicata exhibited remarkable antioxidant activity as well as tyrosinase and α-glucosidase inhibitory effects. These activities might be related to the phenolic compounds present in the H. radicata flower extract.

        Background : Glehnia littoralis F. and Peucedanum japonicum T. is mostly founded coastal region of Korea, Japan, Taiwan, and China. Recently, because interests of health functional food has been increased the role of miscellaneous medicinal crop is not only strengthen provided energy but also health functional role and many researchers showed interest in plants to in beauty treatment and functional healthy food. The objectives of this research was to analyse antioxidant activity of G. littoralis and P. japonicum. using various plant parts. Methods and Results : Different analysis including DPPH free radical scavenging activity, Total phenolic contents and Total flavonoid content were performed to evaluate the antioxidant activity of different plant part in G. littoralis and P. japonicum. DPPH free radical scavenging activity was calculated a RC50 value (㎍/㎖). Total phenolic contents and total flavonoid contents were expressed as milligrams of gallic acid and quercetin equivalent per gram of dry weight. Respectively, RC50 value of DPPH radical scavenging was higher (900.78 ± 87.53 ㎍ /㎖) in leave of P. japonicum and the lowest RC50 value of DPPH radical scavenging was observed (3806.74 ± 1361.38 ㎍/㎖) in root of G. littoralis. The highest total phenolic level was 5241.46 ± 228.52 ㎎․GAE/g and total flavonoid level was 426.11 ± 37.34 ㎎․QE/㎎ were detected in leaf of G. littoralis. Results showed that DPPH free radical scavenging activity, total phenolic contents and total flavonoid content were higher in leaf of G. littoralis and P. japonicum. Conclusion : Thus, medicinal plants can be an important resource for producing cosmetic and functional health food.

        Background : The effects of heat treatments on the phycochemical charateristics and antioxidant activities of ginkgo nuts were investigated by roasting at various temperatures (150, 180, and 210℃) for 60 min. Methods and Results : For each roasting temperatures, pH, total acidity, chromaticity, total cyanide content, reducing power, total polyphenol content, 2,2’-diphenyl-1-picrylhydrazyl (DPPH) and 2,2’-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities were compared and analyzed. As the roasting temperature and time increased, the pH and total cyanide content decreased from 7.32 to 6.31 and from 697 to 282 ㎍/㎎, respectively, while total acidity increased from 0.40 to 0.84%. There was an 11 or more color difference (ΔE) between the non-heated ginkgo nut and heated ginkgo nuts, indicating a remarkable color difference. The antioxidant activities, including reducing power, total polyphenol content, and DPPH and ABTS radical scavenging activities increased rapidly at 210℃ according to increasing in roasting temperature and time. Conclusion : These results suggest that the ginkgo nut with heat treatment could be used in food materials and medicines for decreasing cyanide content as well as for increasing antioxidant compound content.

        본 연구에서는 숙성 흑율피 가루를 1, 3 또는 5% 첨가한 숙성 흑율피 양갱을 제조하여 품질 특성, 관능적 특성 및 항산화 특성을 분석하였다. 숙성 흑율피 양갱의 수분함량은 1% 첨가군은 대조군과 유사하였으나 숙성 흑율피 첨가량이 증가함에 따라 수분 함량은 증가하였다. 당도와 환원당은 숙성 흑율피 첨가량이 증가됨에 따라 낮아졌다. pH는 숙성 흑율피 첨가량이 증가함에 따라 감소하였고, 산도는 높아졌다. 명도(lightness)와 황색도(yellowness)는 숙성 흑율피 첨가량이 증가할수록 낮아졌으며, 적색도(redness)는 높아졌다. 기계적 조직감 측정결과, 경도(hardness)는 대조군이 높았고, 숙성 흑율피 첨가량이 증가함에 따라 경도는 증가하였다, 응집성(cohesiveness)은 숙성 흑율피 1% 첨가 양갱과 3% 첨가 양갱은 유의적인 차이를 나타내지 않았지만, 첨가량이 증가함에 따라 응집성은 감소하였다. 탄력성(springness)은 숙성 흑율피 첨가량이 증가할수록 낮아졌다. 총 페놀 함량은 숙성 흑율피 첨가량이 증가함에 따라 증가하였다. DPPH 라디칼 소거능과 hydroxyl 라디칼 소거능은 양갱에 숙성 흑율피 첨가량이 많을수록 IC50 값이 낮아져 항산화능이 높아졌다. 기호도 검사 결과, 숙성 흑율피 3% 첨가군의 전체적인 기호도 점수가 5.2점으로 가장 높은 점수를 받았다. 이상의 결과로부터 숙성 흑율피를 3% 첨가하여 양갱을 제조할 때 품질 특성, 항산화성 및 관능적 특성이 우수하였으므로, 이를 바탕으로 기능성 식품으로서 개발가능성이 높을 것으로 사료된다.

        해방풍이 가지는 건강 기능성 소재로서의 가치를 확인하고자, 해방풍 부위별 용매추출물의 항산화 활성 및 면역조절 효과를 조사하였다. 해방풍 부위별 용매추출물의 추출수율은 10.73-30.57이며, 총 폴리페놀 및 총 플라보노이드 함량은 해방풍 잎 70% 에탄올 추출물(EL)에서 각각 10.79 g/100 g 및 2.01 g/100 g으로 가장 높은 값을 나타내었다. DPPH radical 및 ABTS radical 소거활성은 해방풍 잎 70% 에탄올 추출물(EL)이 100-1,000 μg/mL 농도에서 12.90-84.70% 및 11.78-57.64%로 가장 우수한 radical 소거활성을 나타내었으며, superoxide radical 소거활성 및 FRAP 활성은 해방풍 잎 70% 에탄올 추출물(EL)이 100-1,000 μg/mL 농도에서 각각 49.91-84.05% 및 255.38-975.28 μM로 가장 우수한 활성을 나타내었다. 대식세포주인 RAW 264.7 세포에 해방풍 부위별 용매추출물을 처리하였을 때 nitric oxide 생성 억제능을 확인하기 위해 분석한 결과, 추출용매에 따른 nitric oxide 생성량은 70% 에탄올 및 70% 메탄올 추출물에서 가장 낮은 생성량을 보였으며, 해방풍 부위별에 따른 nitric oxide 생성량은 뿌리, 잎 및 씨앗 순으로 낮았다. 그 중에서 해방풍 뿌리 70% 에탄올 추출물(ER)에서 가장 낮은 nitric oxide 생성량을 보여 우수한 nitric oxide 억제 효과를 확인하였으며, 이를 이용하여 기능성 소재, 미용식품 및 화장품 제조용 원료 등 다양하게 활용 가능할 것으로 사료된다.

        This study attempted to investigate the antioxidant properties of four different species of sand dune plants (Calystegia soldanella, Messerschmidia sibirica, Vitex rotundifolia and Rosa rugosa). In order to validate the antioxidant activity of these plants, we first determined the total amount of flavonoid versus phenolic contents (TFC/TPC) and extracted crude flavonoids for measuring antioxidant activities that were determined by DPPH, ABTS and FRAP assays with radical scavenging effects. We found that highest amounts of TPC were detected in R. rugose with values of 110.20 ㎎/g (leaves) and 65.71 ㎎/g (stems), while the highest amounts of TFC in V. rotundifolia with values of 38.07 ㎎/g (leaves) and 6.55 ㎎/g (stems). We further examined how closely related the amounts of TFC/TPC in antioxidant activities and found that R. rugose has the highest activities of radical scavenging with values of 63.4 ㎍/㎖ and 51.2 ㎍/㎖ determined by DPPH and ABTS assays compared with the value of 21.2 ㎍/㎖ by FRAP assay. It is of note that there is a statistically significant correlation between the resulting antioxidant activities and the total ratio of TFC and TPC, suggesting that the different amounts of TFC/TPC may directly contribute to the various antioxidant activities.

        This study was conducted to investigate the antibacterial, antioxidant, and in vitro greenhouse gas mitigation activities of fermented Scutellaria baicalensis Georgi extract. Seven starter cultures were used, comprising four of lactic acid bacteria and three of Saccharomyces cerevisiae. Ten grams of S. baicalensis Georgi powder was diluted in 90 mL autoclaved MRS broth. Each seed culture was inoculated with 3-10% (v/v) S. baicalensis Georgi MRS broth and incubated at 30℃ for 48 h. Among the starter cultures used, only Lactobacillus plantarum EJ43 could withstand the fermentation conditions. This fermentation broth was dried and extracted with ethanol to assess its antibacterial, antioxidant, and in vitro methane mitigation activities. The extract of S. baicalensis Georgi fermented by L. plantarum EJ43 (SBLp) showed higher antibacterial activity (bigger clear zone) compared to the unfermented S. baicalensis Georgi extract (SB0). SBLp also presented 1.2 folds higher antioxidant activity than SB0. During in vitro rumen fermentation, SBLp showed reduction in methane production compared to SB0 or the control. In conclusion, fermentation by L. plantarum EJ43 may enhance antibacterial and antioxidant activities of S. baicalensis Georgi and decrease enteric methane production.

        This study was conducted to investigate the antioxidant activity in the leaves and stems of 50 tomato accessions, in order to examine the possibility of using tomato by-products as a functional material. The extracts of the leaves (LE) and stems (SE) were analyzed for DPPH, ABTS, and total polyphenol content (TPC). Antioxidant activities and TPC differed significantly between the LE and SE of the 50 tomato accessions. TPC in LE and SE showed wide variation, ranging from 24.4 to 60.6 and 12.5 to 18.8 ㎎ GAE/g, respectively. The DPPH and ABTS antioxidant activities of LE ranged from 10.0 to 38.2% (scavenging effect) and 20.8 to 59.0 ㎎ ASC/g, respectively, while the DPPH and ABTS measurements of SE were 1.4 to 8.8% and 2.2 to 22.5 ㎎ ASC/g, respectively. As assessed by the relative antioxidant capacity index (RACI), IT033117 and IT203466 had the highest antioxidant activity in LE and SE, respectively. These results will expand the knowledge of antioxidant activity and provide information on tomato accessions valuable for the development of functional foods and food additives.
