        오미자 추출액의 추출 특성과 추출액의 항산화성을 검토하여 오미자의 추출 조건을 결정함으로써 오미자 유효성분의 식품 소재화를 위한 기초자료를 얻고자 하였다. 용매와의 비율을 결정하기 위해 8배, 10배, 12배, 14배의 water를 가하여 추출 수율을 비교한 결과 water와의 비율이 10배일 때 추출 수율이 가장 좋은 것으로 나타났다. 탁도는 Water 추출액에서 가장 높았으며, 추출용매의 ethanol 농도가 증가할수록 낮아졌다. 적정산도는 추출용매의 50% ethanol에서 가장 높았으나, 전체적으로 산도가 매우 낮았다. 유리당 함량은 fructose 1.24~4.42mg%, glucose 3.65~4.71mg%, sucrose 0.89~1.69mg%로 glucose의 함량이 가장 높았으며, 당질의 대부분을 glucose와 fructose인 것으로 나타났다. 총 폴리페놀 함량을 나타낸 것으로 50% ethanol 추출액은 0.98%, 75% ethanol 추출액은 0.89%, water 추출액은 0.58%로 나타나 50% ethanol 추출액에서 가장 높은 함량을 나타내었으며. water에 비해 유기용매 추출시 높은 함량을 보였다. 전자공여능은 water 추출액 60.87%, 50% ethanol 추출액 57.24%, 75% ethanol 추출액 55.61%로 나타나 용매별 전자공여능 효과가 큰 차이는 나타나지 않았으며. water 추출액이 다른 용매에 비해 높은 전자공여 효과를 보여 주었다. SOD 유사환성 측정 결과는 50% ethanol 추출액에서 33.65%로 가장 높은 활성을 나타냈었으며, 50% ethanol 추출액이 다른 두 용매 보다 우수한 것으로 나타나 총 폴리페놀 함량과 전자공여능 측정 결과 와 비슷한 경향을 보여주었다.

        겨울철 저온에 의한 식물의 반응 및 생리적 상태를 확인하기 위해 문주란(Crinum asiaticum var. japonicum)을 대상으로 엽록소형광과 항산화효소 찬성의 변화를 조사하였다. O-J-I-P곡선을 분석한 결과 겨울철에 J, I, P-단계에서의 형광세기가 현저하게 간소하였다. 문주란 잎의 광계II의 광화학적 효율, 즉 Fv/Fm은 겨울철의 온도변화 추이와 유사하게 낮은 값을 나타내어 겨울철 저온이 스트레스 요인으로. 작용하는 것으로 보인다.

        삼백초가 TCDD 투여로 유발된 rat의 간손상에 미치는 효과를 알아보기 위해 NTT, TTA, STT군의 3군으로 각각 10마리씩 나누어 TCDD를 투여하고 4주 동안 물질을 투여하였다. 4주 후 희생시켜서 생체 내 간 조직 활성 효과 및 항산화 효과를 관찰한 결과 1. AST 활성도는 STT군이 TTA군과 비교해서 70.05%의 억제 효과를 보였다. 반면에, ALT활성도는 STT군이 TTA군에 비해 24.00% 감소하였으며, 64.80%의 억제 효과를 보였다. 2. SOD는 TTA군이 NTT군보다 137.78% 감소하였으며, STT군은 TTA군에 비해 81.94%로 상승되었다. Catalase는 TTA군은 NTT군 보다 199.13% 감소하였으며, STT군의 catalase 활성도는 TTA 군과 비교하여 52.48% 증가하였고 55.45%의 회복율을 보였다. 3. TTA군의 GSH함량은 NTT군 보다 291.29% 감소하고 STT군은 TTA군과 비교하여 74.20% 증가하였으며, 98.72%로 회복되었다. TTA군의 GSSG함량은 NTT꾼 보다 46.80% 증가하였고 STT군의 간 조직중의 GSSG 함량은 TTA군과 비교하여 61.08% 감소하였으며, 81.01%로 억제되었다.

        The antioxidative, radical scavenging and cyto-protective effects of Cassia torn L. seeds and it major component, nor-rubrofusarin-6-β-D-glucoside (nor-rubrofusarin), were studied to evaluate their inhibitory activity against hydrogen peroxide-induced oxidative stress. 70% ethanol extract of Cassia tora L. seeds and nor-rubrofusarin also were tested for the evaluation of anticlastogenicity against mitomycin C-induced micronucleated reticulocytes in mouse peripheral blood. The extract of Cassia tora seeds and nor-rubrofusarin showed an antioxidative effect on the lipid peroxidation of ethyl linoleate with Fenton's reagent and free radical scavenging effect to DPPH radical generation, respectively. They showed a protective effect against H₂O₂-induced cytotoxicity in CHL cells. The extract of Cassia tora L. seeds and nor-rubrofusarin showed a strong anticlastogenicity against mitomycin C-induced micronuclei formation. Results from our study indicate that the extract of Cassia tora L. seeds and nor-rubrofusarin are capable of protecting the lipid peroxidation, free radical generation and cytotoxicity induced by reactive oxygen species. They also have an anticlastogenicity toward DNA crosslinking agent like mitomycin C.

        해양 미생물로부터 사람 Low Density Lipoprotein(LDL)에 대한 항산화 활성 균주를 검색 하였든 바 부산 인근연안에서 항산화 활성이 높은 Bacillus sp. RH-5를 분리 동정하였다. Bacillus sp. RH-5의 항산화 활성물질의 생산 거 배지는 1.0% glucose, 0.25% polypeptone, 0.25% yeast extract, 0.01% FeSO_4?7H_2O, 50% sea water이였다. 이때 최적 조건은 pH 7.0, 배양 온도는 30℃ 및 배양 시간은 48시간에서 항산화 활성이 가장 높았다. 사람 LDL을 1~5 μM CuSO_4 존재하에서 산화 시킨 결과 Bacillus sp. RH-5 배양액의 ethyl acetate 추출물의 500 및 1,000 ㎍/ml에서 산화가 억제되었으며 또 5 μM CuSO_4 존재하에서 산화시킨 LDL의 전기영동거리는 native LDL보다 다소 높았으나 LDL에 ethyl acetate추출물을 첨가한 경우 그 이동거리는 native LDL과 거의 비슷하였다.

        The yields of solvent fractions of irradiated red ginseng powder were increased in the order of petroleum ether(PE)$lt;diethyl ether(DE)$lt;ethyl acetate(EA)$lt;n-butanol (BU)$lt;aqueous fraction(AQ), and did not show any changes in fraction yields by irradiation dose levels. Inhibition activities of lipid peroxide formation were increased in the order of AQ$lt;BU $lt;PE$lt;EA$lt;DE. Inhibition activities of malonaldehyde formation were increased in the order of AQ≤BU$lt;EA$lt;PE$lt;DE. AQ fraction showed little effects on the antioxidative activity and all the activities of the samples did not changed by gamma irradiation. The reverse mutation assay using Salmonella typhunurium (TA98, TA100 and TA102) demonstrated that the nonirradiated and irradiated red ginseng powder extract did not have mutagenic activity (presence of S9 mix or not). The chromosomal aberration test in mammalian animal cell (Chinese hamster lung fibroblast, CHL) showed no significant increase in incidence of structural and numerical aberrations, comparing gamma-irradiated red ginseng powder extracts to nonirradiated red ginseng powder extract in the concentration of the sample producing cytotoxicity(presence of S9 mix or not). Therefore, gamma-irradiatied red ginseng powder (upto 10 kGy) could be safe on the genotoxic point of view.

        The extracts of Quercisemen(Quereus acutissima Carruthers seed) powder was obtained by the extraction with distilled water, water : acetonet(1:1, v/v), ethanol and ethyl ether, respectively. As a result this experiment, the antioxidative activity of each solvent extracts on linoleic acid were examined as follows: 1. Each fraction extracted by the acetone : water(1:1, v/v), water and ethanol respectively showed high antioxidative activity. 2. A fraction of the tannin extracted from the solvent, acetone, water(1:1, v/v) showed even more antioxidative activity than that of the α-tocopherol or BHT. 3. Acceleration of peroxide reaction by Fe++ and Cu++ on the linoleic acid was strongly inhibited by adding the tannin, 4. Organic acid, such as malic acid, citiric acid and tartaric acid with the tannin were showed the synergistic effect fo the antioxidation reaction.

        Background: To enhance the taste and physiological characteristics of Lycii fructus (Gugija) extracts, we investigated the changes in the physiological characteristics of Gugija extracts caused by adding white ginseng (WG) and red ginseng (RG) Methods and Results: Gugija extracts, including 10G10, 10GW-G8 : 2, -G6 : 4, -G4 : 6, -G2 : 8, and -G0 (mixtures made by replacing 0, 20, 40, 60, 80, and 100% of Gugija with WG), as well as 10G10, 10GR-G8 : 2, -G6 : 4, -G4 : 6, -G2 : 8, and -G0 (mixture made by replacing 0, 20, 40, 60, 80, and 100% of Gugija with RG) were extracted with water at 10 times the respective mixture's volume. The antioxidant activities of Gugija extracts were investigated by assessing their 1,1-diphenyl-2-picrydrazyl (DPPH) and 2,2’-azinobis(3ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activity, ferric reducing antioxidant potential (FRAP) activity, nitrite scavenging activity, and angiotensin converting enzyme (ACE) inhibitory activity. As the amount of WG added increased, the DPPH, and, ABTS radical scavenging activity, and FRAP activity of the Gugija extract decreased. The half maximal inhibitory concentration (IC50) value of 10G10, 10GW-G6 : 4, 10GR-G6 : 4, and 10GR-G0 for DPPH radical scavenging activity were 25.50 ± 1.04, 52.06 ± 1.46, 16.87 ± 1.24, and 9.50 ± 0.16 ㎕/㎖, respectively. On the other hand, the physiological activity of Gugija extract increased with the addition of increasing amounts of RG. However, ACE inhibitory activity was the highest (50.25 ± 2.58%) in the Gugija 10-fold extract without any added RG. Conclusions: From the above results, we suggest that adding RG to Gugija extracts increase their antioxidant, FRAP, and nitrite scavenging activities.

        Background : The Dolwoe is a native plant to Asia and a medicinal plant belonging to the family of cucurbitaceae. It is generally consumed in the form of tea. The purpose of this study was to investigate the effects of roasting treatment and the extracts of ethanol and water on antioxidant activity and to examine the possibility of raw materials for health functional food. Methods and Results : In this study, each specimen was extracted as water and ethanol by dividing it into Dolwoe leaves that were treated with roasting treatment, or hot air drying. To compare each extract, the total phenol and flavonoids content were measured, and the TEAC experimental method was conducted in which ABTS radical was indexed to trolox to measure antioxidant activity. Also, The degree of reduction of iron ions was measured using the FRAP experimental method to compare the reducing power of each extract. As a result of the experiment, the total phenol content was between 35.54 and 71.52 ㎎·GAE, the ethanol extract of roasted leaves showed more than twice the amount of phenol than the ethanol extract of dried leaves. The total flavonoids content was 5.37 to 28.91 ㎎·QE/g, with roasted leaves ethanol extracts with high total phenol content. In particular, antioxidant activity with TEAC 153.90 ± 1.72 mM·TE/g, FRAP 320.78 ± 1.44 mM·FE/g in ethanol extract of roasted leaves showed high activity in proportion to the total phenol and flavonoids content and hydroxyl radical scavenging was found to be the highest in the ethanol extract of roasted leaves. Conclusion : Total phenol and flavonoid content, antioxidant effects were highest when the Dolwoe leaves were processed for roasting treatment and extracted as ethanol. Therefore, extraction under the following conditions will have a useful effect as a health functional food.

        Background : In this study, we have examined antioxidative effects and antimicrobial activity of methanol extracts of several plant resources (three varieties of Asimina triloba L., Momordica charantia L., Psidium guajava L. and Alium ampeloprasum L.) Methods and Results : The antioxidant activities were assayed by five methods based on total polyphenol and flavonoid contents, scavenging of DPPH, ABTS and reducing power analysis. Total polyphenol contents was the highest in Psidium guajava and Mango, the varieties of Asimina triloba as the contents of 95.85, 95.81 ㎎/g, respectively. Total flavonoid content was the highest in Psidium guajava (54.3 ㎎/g). DPPH free radical scavening activity of all extracts was ranged from 10.5 - 85.8%, and significantry great activities was found at Psidium guajava leaf. Methanol extracts of Psidium guajava and Asimina triloba showed showed greater ABTS scavening activities compared to others. Reducing power of all extracts was linearly proportional to the concentration. Especially, the extracts of Psidium guajava and three varieties of Asimina triloba showed greater reducing power than that of other resources. The antimicrobial activities of extracts were tested by paper disc assay and minimum inhibitory concentration test. Antimicrobial activity of Psidium guajava leaf extract was shown relatively high activity against all investigated strains. Conclusion : The results suggest that Psidium guajava leaf extract be a new functional cosmetic ingredient with antioxidant effect and antimicrobial activity.

        This study investigated the nutritional properties and biological activities of Ganoderma lucidum (GL). The round type of GL contained higher carbohydrate content, while the Nokgak type of GL contained higher crude ash, crude fat, and crude protein content. The most abundant amino acid, fatty acid, mineral, and soluble vitamin observed were valine (round type: 11.90 mg/g and Nokgak type: 17.18 mg/g), linoleic acid (round type: 47.56% and Nokgak type: 75.68%), potassium (round type: 116.50 mg/100 g and Nokgak type: 184.36 mg/100 g), and vitamin B3 (round type: 1.78 mg/100 g and Nokgak type: 1.81 mg/100 g), respectively. In addition, the β-glucan content were 34.15 g/100 g (round type) and 30.07 g/100 g (Nokgak type). The GL 70% ethanol extract at 40℃ showed higher radical scavenging as well as carbohydrate and lipid enzyme inhibition than other conditions. At 1 mg/mL of treatment with the 70% ethanol extract at 40℃ of round type GL, the DPPH, ABTS, hydroxyl radical scavenging, and α-glucosidase, α-amylase, and pancreatic lipase inhibition activities obtained were approximately 92.85, 99.74, 58.09, 89.68, 44.68, and 67.56%, respectively.

        This study was carried out to investigate the physicochemical and antioxidant properties of fermented milk with addition of hot water extract of Cordyceps militaris grown upon Tenebrio molitor. The general components of Cordyceps militaris grown upon Tenebrio molitor are moisture 10.85%, crude protein 18.44%, crude fat 2.07%, crude ash 5.46%. The DPPH radical scavenging activities of different solvents were the highest (74.81 EDA%) with hot water extract sample. The acidity of fermented milk was high with increasing amount of extracts. The pH of fermented milk reached 4.60-4.66 after 4 h of fermentation, and the number of lactic acid bacteria was highest (11.70 log CFU/mL) with 1% fermented milk. The moisture content of fermented milk showed no significant difference. In addition, contents of crude protein were not significantly different according to addition amount. Regarding Hunter’s color values, L value decreased as the amount of extract increased, whereas a value and b value increased. The content of free amino acid increased with increasing amount of extract. The DPPH free radical scavenging ability and ABTS free radical scavenging ability of fermented milk were significantly different as the addition amount of extract increased. In the sensory evaluation, fermented milk containing 1% of extract showed the highest preference.

        We evaluated the antioxidative activity of extracts of P. lobata root depending on roasting conditions. P. lobata roots were roasted at three different temperature at 150℃, 200℃, and 250℃ and three different time at 10 min, 20 min, and 30 min respectively. Roasted P. lobata root was extracted using water at 85℃ for 6 h and filtered using filter paper, followed by then evaporated (12±0.3 °Brix) and freeze-dried. The concentration of maker compound puerarin was determined using a high performance liquid chromatography system. 2 phenolic compounds, flavonoid contents, and antioxidant activities of the extract powder were evaluated. Puerarin contents, Phenolic compounds, and flavonoid contents of roasted P. lobata root were higher than those of unroasted P. lobata root. The results of DPPH and ABTS showed that roasted P. lobata root possessed higher antioxidant activity than unroasted P. lobata root. This study suggested that roasting process could be applied to P. lobata root in order to achieve its high quality and functionality.

        The content of bioactive substances and antioxidative activity in conventionally grown brown rice (CGBR) and organically grown brown rice (OGBR) were compared. Minerals (mg/100 g) such as magnesium (OGBR, 168.59±2.62; CGBR, 121.43±2.22), copper (OGBR, 0.50±0.06; CGBR, 0.41±0.05), and manganese (OGBR, 4.70±0.04; CGBR, 2.49±0.02) were higher in OGBR than in CGBR (p<0.05). In addition, levels of (μg/100 g) vitamins B2 (OGBR, 27.22±2.56; CGBR, 22.12±2.24) and B6 (OGBR, 46.32±2.66; CGBR, 39.91±3.32) were higher in OGBR than in CGBR (p<0.05). The contents (mg/100 g) of β-sitosterol (OGBR, 27.40±2.79; CGBR, 24.75±1.06), total phenolic (OGBR, 6.72±0.02; CGBR, 6.64±0.02), and ferulic acid (OGBR, 1.75±0.45; CGBR, 1.11±0.14) as well as the antioxidative activity (OGBR, 53.09±1.90%; CGBR, 48.29±3.38%) evaluated using 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical-scavenging assay were higher in OGBR than in CGBR, although no significant differences between samples were observed. In comparison to the control group, brown rice samples significantly inhibited cholesteryl ester hydroperoxide formation in rat plasma subjected to copper ion-induced lipid peroxidation. The inhibitory effect of OGBR was higher than that of CGBR. These results indicate that OGBR showed higher levels of bioactive substances and enhanced antioxidative activity than CGBR, although the differences were not statistically significant.

        Background : Plants are the rich source of antioxidants, which plays a very important role in maintaining human health. Their antioxidant property protects cells of different organs of human beings against free radicals and free radical mediated diseases. Even though, there is lack of knowledge on the antioxidant effect of lutein present in plants. In the present study, lutein was isolated from the GreenTea leaves (Camellia sinensis) which is used as a dietary source. Methods and Results : The procedure adopted for the isolation and purification of lutein using acetone extraction and preparative high performance liquid chromatography (HPLC) is simple and less time consuming. Free radicals scavenging activity of isolated lutein from acetone extract of GreenTea was assessed by DPPH radical scavenging assay and reducing power. The isolated lutein scavenged 79% of DPPH radicals at 20 ㎍/㎖ and two fold lower concentration compared to the standard antioxidants (α-tocopherol). No significant differences were found between the reducing power of the lutein and BHT when their concentrations were high. However, significant differences were observed at relatively low concentrations, the reducing power of lutein was isolated from the GreenTea leaves was stronger than those of their acetone extract and standard antioxidants (BHA). Both electron spin resonance (ESR) and in vitro assay confirmed that lutein was isolated from the GreenTea leaves, exhibited a greater capacity for scavenging superoxide (O2 •-) and hydroxyl (OH •) radicals than standard antioxidants β-carotene and α-tocopherol respectively. Conclusion : The results proven that lutein isolated from GreenTea leaves has an efficient antioxidant ability, it could serve as an antioxidant to scavenge reactive oxygen species.

        Backgrounds : Pomelo (Citrus grandis Osbeck) is the kind of citrus fruit which is Dicotyledoneae belongs to Rutaceae and special product in Jeju island. According to the previous researches, coumarin, eliocitrin, naringin are identified and these kinds of constituents revealed to be effective as anticancer, antioxidant, and antidiabetic. Until recently, there are many investigations about its functional properties were reported, but investigation about biological activities depend on extraction conditions are not sufficient. Methods and Results : 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity was performed by the method of Blois with minor modification. After adding DPPH radical to each sample solutions, the mixtures were incubated in 30 minutes at aphotic place. Then, the degree of scavenging activity was recorded by microplate reader at 490 nm. The scavenging activity was expressed by RC50, which is the concentration of sample solution necessitated to scavenge 50% DPPH radical against negative control. For α-glucosidase inhibitory activity, the method using p-nitrophenyl-α-D-glucopyranoside (pNPG) was applied. To each samples, α-glucosidase and pNPG were mixed and incubated, consequently, Na2CO3 was added to terminate the reaction. Finally, absorbance was read at 450 nm. The same as DPPH radical scavenging activity, the inhibition was explicitly expressed by the amount of sample solution to inhibit 50% α-glucosidase, IC50. The 80% MeOH extract demonstrated the highest radical scavenging activity with 74.32±8.45 μg/ml. α-Glucosidase inhibitory activity was carried out to evaluate the inhibitory activity of sugar digestion and absorption and 60, 80% MeOH extract exhibited 416.35±11.07 μg/ml and 336.57±2.03 μg/ml, respectively. Conclusion : The DPPH radical scavenging and α-glucosidase inhibitory activity were evaluated in this study. The highest DPPH radical scavenging activity was seen in 80% Citrus grandis Osbeck MeOH extract, following 60% MeOH extract exhibited the second highest scavenging activity. Also, 80% MeOH extract showed 336.57±2.03 μg/ml, which was the highest α-glucosidase inhibition among all extracts.

        고구마 잎을 건조 채소화 하기 위한 기초자료를 제공하 기 위해서 열풍건조한 고구마 잎 메탄올 추출물에 함유된 총 탄닌, 총 플라보노이드, 총 폴리페놀 함량을 분석하고, 항산화 효과로 DPPH 라디칼 소거활성, ABTS 라디칼 소거 능, 아질산염 소거능 등을 분석 비교 검토하였다. 총 탄닌 함량은 신미 40℃에서 10.87 mg/g, 70℃에서 7.28 mg/g으로 감소되었고, 총 플라보노이드는 하얀미 40℃에서 55.37 mg/g, 70℃에서 39.63 mg/g으로 감소되었다. 즉 저온건조가 고온건조보다 이들 물질의 함량이 많았다. DPPH 라디칼소 거 활성은 신미와 하얀미 40℃에서 84.33%와 85.25%로 가 장 높았으며, ABTS 라디칼 소거능도 40℃ 처리구에서 80% 가 넘는 높은 값이었다. 아질산염 소거능은 신미와 하얀미 가 40℃에서 76.15%와 73.74%로 가장 높았고 70℃에서는 낮았다. 품종 간에는 하얀미가 신미보다 페놀성 물질과 항 산화 물질이 더 많은 것으로 나타났다. 즉 건조한 고구마 잎의 항산화 효과는 품종간의 차이는 있었으나, 40℃ 시료 에서 높고, 70℃ 시료에서 낮았다. 이는 건조온도에 의해 영향을 받는 것으로서 낮은 온도에서 건조하는 것이 유효성 분의 감소가 적어 항산화 능력이 높은 결과이었다.

        본 연구는 제주 자생 식물들의 항산화 활성을 측정함으로써 천연항산화 소재로의 활용 가능성이 있는 유망 자원을 발굴하 고자 하였다. 제주도에서 자생하는 식물 11종을 대상으로 총 폴 리페놀 화합물 함량 측정 및 항산화 활성을 측정하였다. 항산화 기능이 좋은 식물 8종을 우선 선별하여 유기용매 분획을 실시하 고 같은 실험을 농도별로 진행하여 가능성이 있는 유망 후보를 선별 하였다. DPPH free radical 소거 활성은 구실잣밤나무의 ethyl acetate 층과 애기달맞이의 buthanol 층에서 각각 IC50값 이 1.6 ㎍/㎖, 2.4 ㎍/㎖로 좋은 활성을 나타내었다. Nitric oxide 생성 저해 활성은 밤나무의 ethyl acetate 층에서 강한 저 해율 보였다. Xanthine oxidase의 억제 효과는 밤나무의 ethyl acetate 층에서 IC50 값이 16 ㎍/㎖로 우수한 활성을 나타내었 다. Superoxide radical 소거 효과는 구실잣밤나무의 ethyl acetate 층에서 IC50 7 ㎍/㎖로 좋은 활성을 나타내었고, hydroxyl radical 소거 활성은 구실잣밤나무의 buthanol 층에서 76%로 우수한 활성을 나타냄을 확인 할 수 있었다. 밤나무를 비롯한 항 산화 효과가 우수한 식물종에 대해 단일 물질에 대한 분리 작업 과 함께 항염증이나 항암, 항노화 등의 실험이 더 깊이 있게 진 행된다면 새로운 천연물 유래 생리 활성 물질로서 학술 및 산업 적 활용이 가능할 것으로 기대된다.

        유색 수수인 황금찰수수를 도정할 때 grain과 함께 발생 하는 도정부산물인 hull과 bran의 4가지 용매 추출물의 총 폴리페놀 함량, 항산화 활성, 천연색소 함량과 RAW 264.7 세포주를 이용하여 항염증 활성을 검정하였으며 결과를 요 약하면 아래와 같다. 1. 도정부산물인 hull의 100% 메탄올과 70% 에탄올 추 출물에서 총 폴리페놀 함량이 29.4±0.4와 29.7±0.2 mg GAE/100 g으로 가장 많았고, ABTS 라디컬 소거능(IC50) 이 6.8±0.4, 6.3±0.1 μg/mL로 가장 높은 항산화 활성 을 나타내었다. 2. 총 천연색소 함량에서도 수수 hull의 0.5% 염산 함유 100% 메탄올 추출물에서 322.6±14.5 mg/100g으로 가 장 많은 색소 함량을 나타내었고 hull, bran, grain 모 두의 경우에서 0.5% 염산을 함유한 100% 메탄올을 용매로 추출한 경우에서 가장 많아 수수를 이용하여 천연색소를 추출할 경우 수수 부산물인 hull을 산을 함 유한 메탄올로 추출하였을 때 가장 많은 색소 추출물 을 얻을 수 있었다. 3. 수수 도정부산물과 grain 추출물을 LPS로 NO 생성을 유도한 RAW 264.7 세포에 처리하였을 때, 세포 독성 이 없는 100 ug/mL 농도 이하에서의 NO 생성 억제량 은 hull, bran, grain 추출물의 순으로 나타났고 hull 추 출물의 경우에 농도에 따라 가장 큰 NO 생성 억제를 보였으며 천연색소 화합물 중에서는 apigeninidin의 NO 생성 억제 활성을 확인하였다. 4. 위 결과를 종합해 볼 때, 수수 도정부산물 중 hull은 grain 에 비해 총 폴리페놀 화합물과 천연색소 함량이 높고 항산화 활성과 RAW 264.7 대식세포에서의 NO 생성 량 억제 활성이 우수하여 앞으로 수수 부산물이 항산 화 및 항염증 소재로 가능성이 있음을 확인하였다.
