        The purpose of this study was to obtain data on the contribution of job characteristics (work, autonomy, reward, community, fairness, value) towards job burnout (emotional exhaustion, cynicism), job engagement (vigor, dedication, absorption) and turnover intention in school foodservice employees. Typically, 594 school foodservice employees in the Busan area participated in our survey. Workload (β=-0.512, p<0.001) had the highest negative influence on emotional exhaustion, whereas reward (β=-0.216, p<0.001) and community (β=-0.214, p<0.001) had the highest negative influence on cynicism. Community (β=0.305, p<0.001) and workload p<0.001) had the highest positive influence on vigor. Community (β=0.261, p<0.001) and (β=0.238, p<0.001) had the highest positive influence on dedication. (β=0.287, p<0.001) and community (β=0.224, p<0.001) had the highest positive influence on absorption. Workload (β=-0.195, p<0.001) and community (β=-0.182, p<0.001) had the highest negative influence on turnover intention. Overall, the results show that job characteristics are very important factors affecting foodservice employee’s burnout, engagement, and turnover intention. So should try to reduce the employees’ workload and increase the rewards for them along with activating communication among each other.         This study conducted an empirical analysis of the effects of job characteristics on work-family conflict relation and quality of life, as well as moderating effects in accordance with operation type, by targeting 245 dietitian/cooks working for contract foodservice companies. The results of this study are as follows. First, the autonomy and feedback had negative (−) effects on work-family conflict while functional diversity had positive (+) effects on work-family conflict. Job identity and job importance had no relation with work-family conflict. Second, work-family conflict had negative (−) effects on job satisfaction, work-family relation, job support, general happiness, and job environment while having positive (+) effects on job stress. Third, in all paths except for the path with effects of work-family conflict on job stress, there were no differences between the group of shops operating 365 days and the group of shops operating 5 days a week. It would be helpful to the effective operation of human resources by emphasizing the necessity of differentiated management for companies with shops operating 365 days and shops operating 5 days a week, as well as managing employees’ job characteristic factors, work-family conflict, and even quality of life.

        본 연구의 조사대상자인 경기 북부(의정부, 양주, 동두천)에 거주하는 노인을 성별을 기준으로 구분하여 노인의 급식 서비스 이용 현황 및 만족도를 조사하였다. 일반적 특성을 보면, 평균 연령은 76.7세이며, 남성과 여성이 각각 35.7, 64.3%, 배우자 사별은 남자노인은 46.9%, 여자노인은 85.0%로 나타났다. 학력은 중학교졸 이하가 전체의 88.1%로 대다수를 차지하였고, 과거 직업은 대부분 무직(33.6%)이거나 자영업(13.4%)에 종사하였다. 남자노인과 여자노인 각각 78.1, 79.2%로 비교적 자유로운 일상 활동이 가능하였고, 건강정보 출처는 남자노인과 여자노인 각각 건강전문가(49.0, 45.7%), 대중매체(34.4, 33.5%)의 순이었고, 건강정보 출처 신뢰도 역시 남자노인과 여자노인 각각 건강전문가(65.6, 59.8%), 대중매체(19.5, 20.8%)의 순이었다. 운동 횟수는 남자노인은 '1주일에 1~2회'(43.8%), '매일'(21.9%)의 순이었으나, 여자노인은 '거의 하지 않는다'가 63.0%로 가장 많다고 응답하여 성별에 따른 차이를 보였다. 노인들이 현재 앓고 있는 질환은 남자노인은 '고혈압'(27.1%), '당뇨병'(21.9%), '뇌졸중'(19.8%)의 순이었고, 여자노인은 '고혈압'(32.4%), '당뇨병'(24.9%), '관절염'(15.0%)의 순으로 응답하였다. 급식서비스를 이용하는 이유로는 남자노인은 '혼자 차려먹기 귀찮아서'(28.1%), '친구를 만날 수 있어서'(25.0%), '경제적인 이유'(14.6%)의 순이었으나, 여자노인은 '경제적인 이유'(25.4%), '친구를 만날 수 있어서'(23.1%), '혼자 차려먹기 귀찮아서'(23.1%)의 순으로 응답하였다. 노인의 복지시설 급식서비스의 시행을 알게 된 경위는 남자노인과 여자노인 각각 전체의 36.5, 68.8%가 '집 가까이 있어서' 자연스럽게 알게 되었고, 30.2, 8.7%가 '가족의 소개로 알게 되었다고 응답하였으며, 남자노인과 여자노인의 65.6, 43.4%가 질환별 급식서비스가 '필요하다'고 응답하였다. 남자노인과 여자노인 각각 전체의 56.3, 72.3%, 52.1, 86.7%, 53.1, 89.6%가 급식의 맛, 위생 상태, 온도가 '만족한다'고 응답하여, 특히 여자노인의 만족도가 남자보인보다 훨씬 더 높다는 것을 알 수 있었다. 복지 시설 만족도는 남자노인과 여자노인 각각 전체의 78.1, 69.9%가 '만족한다'고 응답하였고, 이들 중 만족한다고 응답한 노인들을 대상으로 조사한 만족 이유로는 남자노인과 여자노인 각각 '식사를 제공하여서'(28.0, 37.2%), '노인들과 어울려 노는 것이 좋아서'(20.0, 22.3%), '시설이 좋아서'(18.7, 18.2%)의 순으로 응답하였다. 시설종사자 만족도는 '기타 및 무응답'이 남자노인과 여자노인 각각 49.3, 67.8%이었으며, 남자노인은 '시설 행정직원'(13.3%), '간호사'(9.3%), 여자노인은 '간호사'(12.4%), '시설 행정직원'(8.3%)의 순으로 응답하였다. 이상과 같은 결과들을 토대로 복지 관련 시설을 이용하는 노인들의 급식 및 복지서비스의 향상을 위한 기초자료로 제공 및 활용하고, 향후 경기 북부 실버산업의 활성화를 도모하고자 하였다.

        The objective of this study was to examine the effects of relationships between food service companies and their client companies by surveying employees working at cafeterias among a food service companies' client companies. For this purpose, previous research was reviewed, and confirmatory research was conducted using a questionnaire. In the questionnaire survey, the subjects were sampled through convenience sampling from the client companies of A Food Service Company, and 182 valid questionnaires were used in the analysis. The results of this study are summarized as follows. First, the characteristics of the relationship between the food service company and its client companies, which were reputation, communication, operation skill, and contact-point employees' service quality, had a significant effect on trust, and the effect was high in the order of contact-point employees' service quality, communication, operation skill, and reputation. Satisfaction was significantly affected by reputation, operation skill, and contact-point employee' service quality, but not by communication. The effect was high in the order of contact-point employees' service quality, reputation, and operation skill. In addition, reputation, communication, operation skill, and contact-point employees' service quality had a significant effect on long-term orientation, and the effects were high in the order of reputation, contact-point employees' service quality, communication, and operation skill. Second, with regard to the quality of relationships between a food service company and its client companies, trust had a significant effect on satisfaction. Third, among the factors related to the quality of relationships between the food service company and its client companies, trust and satisfaction had a significant effect on long-term orientation, and the effect of satisfaction was higher than that of trust. This study has scientific significance as one of only a few studies on factors affecting the long-term relationship between food service companies and their client companies, along with managerial implications that contact-point employees' capabilities are most important in service businesses, and thus efforts should be made at employing and educating them properly.

        This study examined the effects of added amounts of shrimp powder on the physical and sensory properties of Jook for elderly foodservice operation. According to the amylograph data, the composite shrimp flour-wheat flour samples increased the gelatinization temperature, with increasing shrimp-flour content; moreover, initial viscosity at 95℃, viscosity at 95℃ after 15 minutes, and maximum viscosity were reduced. As the level of shrimp powder in samples increased, L-values decreased, and a-values and b-values increased. In addition, the Jook had higher viscosity and lower spreadability values as the amount of shrimp powder increased. Sensory characteristics, such as nutty taste, color, viscosity, and overall preference increased significantly with the addition of shrimp powder. In conclusion, to enhance the quality of Jook, a 3% addition of shrimp powder would be the most beneficial.

        The purpose of this study was to investigate the consumer characteristics in foodservice according to university students' lifestyles. The data were collected by the questionnaire survey of 520 university students from Daegu Gyeongbuk Province. The SPSS/Win 12.0 program was used to analyse the samples. The results are as follows: 1) Lifestyle was divided into 10 factors and 3 clusters, namely "Convenience Intention" (cluster I), "Health Information Intention" (cluster II), and "Gender Equality Intention" (cluster III). 2) The differences in general characteristics between the three clusters were founded on gender, frequency of visits, companion, information type, and the type of restaurant. 3) The characteristics of cluster I (Convenience Intention) are explained by it consisting of the group with low averages in consumer dissatisfaction, complaints, compensation, and repurchase intention, where as cluster II was the high average group and cluster III the middle average group. Based on these results, consumer characteristics in foodservice are discussed.

        한식 외식업체의 환경특성과 서비스품질 및 재구매 의도에 관한 연구를 실증 조사하여 살펴봄으로써 한식 외식업체의 어떠한 환경특성 요인이 서비스품질과 고객의 재구매 의도에 영향을 미치는 가를 살펴보았다. 첫째, 27개의 한식 외식업체 환경특성에 대한 요인분석 결과, 불평에 대한 처리와 외식업체에서의 전망 변수를 제외하고 서비스 요인, 분위기 요인, 식음료 요인, 이벤트 요인 등의 4개 요인이 도출되었다. 둘째, 실증분석 결과 도출된 4개의 환경특성 요인들 중에서 서비스 요인과 식음료 요인이 서비스품질 중에서 종사원 서비스품질에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 셋째, 실증분석 결과 도출된 4개의 환경특성 요인들 중에서 서비스 요인과 식음료 요인, 그리고 이벤트 요인이 서비스품질 중에서 식음료 서비스품질에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 넷째, 실증분석 결과 도출된 4개의 환경특성 요인들 중에서 분위기 요인은 서비스품질(종사원 서비스품질, 식음료 서비스 품질)에 유의한 정(+)의 영향을 미치지 않는 것으로 나타났다. 다섯째, 실증분석 결과 서비스품질 요인들인 종사원 서비스 품질과 식음료 서비스품질은 각각 재구매 의도에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 이와 같이 한식 외식업체의 환경특성과 서비스품질 및 재구매 의도에 관한 연구를 실증 조사하여 각각의 관계를 살펴본 결과, 다음과 같은 시사점을 나타낼 수 있다. 첫째, 기존 선행 연구에서와 같이 분위기 요인을 제외하고는 모든 환경특성 요인들이 서비스품질에 영향을 미치는 것으로 나타났다. 이는 한식 외식업체를 이용하는 이용 고객이 일반 서양의 레스토랑을 이용할 때와는 다르게 분위기 요인에 대하여 크게 관심을 두지 않기 때문이란 것을 나타낸다. 둘째, 전반적 종사원 서비스품질과 식음료품질이 재구매 의도에 영향을 미치는 것으로 나타났다. 이러한 결과는 한식 외식업체에 있어서 종사원의 전반적인 서비스품질과 식음료품질에 영향을 미치는 요인이 무엇인가를 확인하고 이를 강화하기 위한 전략을 수립하여야 한다는 것을 의미한다. 셋째, 본 연구의 결과는 한식 외식업체들이 고객들의 재구매 의도를 높이기 위해서는 한식 외식업체의 서비스요인, 식음료요인, 이벤트 요인 등을 강화함으로써 전반적인 종사원 서비스 품질과 식음료품질을 높이는 전략을 취해야 한다는 것을 시사해주고 있다. 본 연구는 대구 경북소재 한식 외식업체만을 대상으로 하여 연구를 실시하여 연구의 일반화와 한식 외식업체를 이용하는 이용 고객들이 한식 외식업체를 재방문하는 재구매 의도가 발생하는데 있어 발생하는 과정을 설명하는 종단적 연구를 실시하지 못한 한계점을 가지고 있다.

        The objective of this study was to investigate the effects of personal and job characteristics on the organizational commitment and job satisfaction of dietitians employed in different foodservice settings. The subjects were dietitians(n=830) employed by schools, hospitals, and industries in Daegu Gyeongbuk area. A questionnaire was used to determine personal and job characteristics, commitment and satisfaction. Organizational commitment scores were the highest for hospital dietitians, and the lowest for industry dietitians (p<0.05). Industry dietitians felt significantly less loyal to their organizations than did the other dietitians(p<0.05). School and hospital dietitians were significantly more likely to say they cared about the fate of their organizations and thought their organizations were the best to work for. Age, education, length of employment, and wages were positively associated with hospital dietitians' commitment(p<0.05). For all dietitians, the fewer the work hours, the higher the commitment(p<0.05). When asked to rate their satisfaction with various aspects of their jobs, dietitians expressed the most satisfaction with co-workers, and the least satisfaction with promotion opportunities. School dietitians were significantly less satisfied with pay and promotion than were the other dietitians. Organizational commitment was associated with wages(0.05), autonomy(0.08), feedback(0.16), dealings with others(0.07), and task identity(0.09). Job satisfaction was affected by educational level(-0.13), wages(0.10), autonomy(0.18), friendship opportunities(0.14), feedback(0.16), task identity(-0.11) and organizational commitment(0.40) (Lisrel program).

        The objectives of this study were to analyze customer satisfaction by operational characteristics in business & industry foodservice operated by contracted foodservice management company. The instruments were developed by reviewing literatures on customer satisfaction and by intervewing with managers, employers and customers. A total of 1000 questionnaires were hand delivered at the ten contracted foodservice operations by designated coordinators. A total of 833 questionnaires were usable; resulting in an 83.3% response rate. Statistical data analysis was completed using the SAS 6.04 for description, T-test, ANOVA. Overall customer satisfaction score for office building foodservice was significantly higher than those for manufacturing company foodservice. As for the type of management contracts, overall customer satisfaction score for management fee contracts was significantly higher than those for profit and loss contracts. With regard to payment method, overall customer satisfaction score for meal card was higher than those for POS system. Concerning the categories of service, overall customer satisfaction for combo-tray service was higher than those for cafeteria-tray service and partially self-service. As for types of menus, the score of overall customer satisfaction was not significantly different between cafeteria menu and double choice menu.

        Consumer's perceptions of the qualities of food and food-related services were surveyed through questionnaires by 672 adults randomly selected from 20 industrial foodservice in Pusan and Kyeung Nam area. The results are as follows: 1) By age, the elderly group gaved the highest mean score not only for freshness and temperature among the food characteristics but also for cleanliness of dishes and materials of dishes among the food-related service. 2) By occupation, the white collar worker group gaved the highest mean score in all characteristics of food and food-related service than did the blue collar worker group. Especially for courtesy of employees, the mean rating given by the white collar worker group was 3.15/5.00, but by the blue collar worker group was 2.67/5.00. 3) Good appetitive group rated taste of food 3.15/5.00, quality of food vs. food price 3.17/5.00, and freshness 3.15/5.00. But poor appetitive group rated taste of food 2.44/5.00, quality of food vs. food price 2.65/5.00, and freshness 2.70/5.00. 4) Men agreed that the rice and soup were right in amount. And women responded that the rice was in a large amount and the soup was not enough. 5) The white collar worker group agreed that the rice, the soup, the side dish, and the kimchi were right in amount. However the blue collar worker group agreed that the rice was right in amount, the soup and the side dish were not enough, and the kimchi was in a large amount. For seasoning of food, the white collar worker group responded that the salty taste and the hotness were just right. But the blue collar worker group responded that the food was neither salty nor hot at all. 6) The taste of food was shown to be positively correlated (p<0.001) with various food item combinations, freshness of food, and the variety of cooking methods.

        Hospitalized patients' perceptions of the quality of hospital foodservice and their importance were surveyed through questionnaires by 820(men 435, women 385) hospitalized patients in Seoul. The results are as follows: Most respondents agreed with the following foodservice characteristics that meals arrived exactly the same time every day(74.6%), cleanliness of dishes(64.9%), employees leave food within reach(60.2%), and employees who bring meals are cheerful(58.7%). Only 34.2% of respondents agreed to variety of menu; 12.9% of respondents viewed these foodservice characteristics as important in selecting a hospital; cleanliness of dishes(66.4%), variety of menu(55.0%), and varying food item combination(45.9%) were considered important by respondents; appetite, mood, and atmosphere of ward were positively correlated(p<0.001) with rating of the foodservice characteristics, but length of hospitalization was negatively correlated(p<0.001) with them; familiarity with cooking method, varying food item combination, cleanliness of the dishes, and foodservice employees' pleasant greeting were positively correlated(p<0.001) with rating of the taste, nutrition, and fresshness of the food characteristics.

        Hospitalized patients' perceptions of the quality of hospital food and their importance were surveyed through questionnaires by 820(men 435, women 385) hospitalized patients in Seoul. The results are as follows: Men rated the size of food portion as being smaller, compared with women. The mean rating for nutrition of food was 3.24, freshness 3.15, taste 2.88, temperature 2.82; Among the food characteristics, nutrition was considered important by largest percentage(75.5%) of respondents, the taste ranked second(74.4%), and freshness was 62.2%; Appetite, atmosphere of ward were positively correlated(p<0.001) with rating of the taste, nutrition, and freshness, but length of hospitalization was negatively correlated (p<0.001) with them; Multiple regression analysis showed that appetite made the greatest contribution and length of hospitalization made the second greatest contribution. The third was atmosphere of ward, and the forth mood condition.

        The purposes of this study were to: (a) measure the levels of job satisfaction with five facets of a job: the work itself, promotion, pay, supervision and co-workers and (b) investigate relationships between job characteristics and job satisfaction levels of the dietitians in school foodservice. Subjects consisted of 151 dietitians, with 91 in Seoul and 60 in KyoungKi-Do. The survey form was developed on modifying Job Descriptive Index developed by Smith, Kendall, Hulin and Job Characteristics Inventory developed by Sims, Szilagy, Keller. The responding rate was 81.7%. Data were analyzed for frequencies, means, t-test, ANOVA, Pearson correlation and multiple regression using SPSS PC Package. The results of this study were as follows: 1) Less than a half of the sample(40.9%) were 31 to 35 years, married were 62% and junior college graduates were 33.9%. 2) A striking majority of the respondents(81.7%) ranked work itself as the the most important aspect of their jobs. 3) The dietitians were the most satisfied with work itself, then supervision, co-workers, wage and promotion in decreasing order. 4) In relations of demographic factors to the job satisfaction, satisfactions with wage and co-workers were found significantly related to education. 5) Task identity was the most prevalent job characteristics. 6) The R2 for the multiple regression model was 0.26, indicating that 26% of the variance in job satisfaction could be accounted for the job characteristics. This model showed that friendship of job characteristics made the greatest contributions. The second was variety and the third was dealing with others. Especially dealing with others was negatively related to job satisfaction.
