        As an indicator of skin health, acidified skin surface pH ranging from 5 to 7 is crucial for maintaining skin barrier. In this study, we evaluated the relationship between skin pH and dietary pattern (DP) as well as nutrient or food intake in 48 healthy middle aged adults. Skin pH was measured in the skin surface of the inner arm, and blood lipid profile was analyzed. Dietary intake data were obtained using 1 day 24 hour recall method, and DP was extracted using factor analysis. Results revealed that skin pH ranged from 5.15 to 6.88 in all subjects. There was no significant difference in skin pH between males and females. When subjects were grouped by tertile of skin pH, the food intake of fruit, and the nutrient intake of omega 6 fatty acid, potassium, vitamin A, vitamin C, β-carotene, and riboflavin in the first tertile group with skin pH ranging from 5.15 to 5.68 were significantly higher than in the third tertile group with skin pH ranging from 6.26 to 6.88. There was no difference in blood lipid profile between the first and the third tertile group. Among 5 DP extracted by factor analysis, DP5 characterized by a high intake of nuts and fruits as well as a low intake of beverages and alcohol was inversely correlated with skin pH after adjusting for gender and age. DP5 was positively correlated with nutrient intake of carbohydrate, fiber, potassium, iron, vitamin A, vitamin C, β-carotene, thiamine, and riboflavin but negatively correlated with sodium after adjusting for gender, age, smoking, and energy intake. Therefore, acidified skin pH could be maintained by these DP and nutrients.

        This study was conducted to develop an agent-based computing platform enabling simulation of on-farm produce contamination by enteric foodborne pathogens, which is herein called PPMCS (Preharvest Produce Microbial Contamination Simulator). Also, fecal contamination of preharvest produce was simulated using PPMCS. Although Agent-based Modeling and Simulation, the tool applied in this study, is rather popular in where socio-economical human behaviors or ecological fate of animals in their niche are to be predicted, the incidence of on-farm produce contamination which are thought to be sporadic has never been simulated using this tool. The agents in PPMCS including crop, animal as a source of fecal contamination, and fly as a vector spreading the fecal contamination are given their intrinsic behaviors that are set to be executed at certain probability. Once all these agents are on-set following the intrinsic behavioral rules, consequences as the sum of all the behaviors in the system can be monitored real-time. When fecal contamination of preharvest produce was simulated in PPMCS as numbers of animals, flies, and initially contaminated plants change, the number of animals intruding cropping area affected most on the number of contaminated plants at harvest. For further application, the behaviors and variables of the agents are adjustable depending on user’s own scenario of interest. This feature allows PPMCS to be utilized in where different simulating conditions are tested.

        This study was conducted to investigate the microbial loads in mulberry fruits depending on cultivation environment and fruit ripeness. The population levels of total aerobic bacteria in mulberry fruits collected from open field orchards were higher than those from three plots protected within plastic green houses. In regards to fruit ripeness, the levels of total aerobic bacteria in ripe black fruits were higher than those in unripe green and red mulberry. From the farms into where livestock animals were allowed to enter, Escherichia coli was detected in soil at a level of 4.26~4.94 log CFU/g and in mulberry fruits at 5.03~6.07 log CFU/g, while no coliform and E. coli were detected from where the intrusion of livestock was prevented. We also examined the density change of inoculated E. coli in mulberry fruits as they were becoming mature. While E. coli did not increase in green fruits, two and four log CFU/g increases at 20oC and 37oC, respectively, were observed with red and fully mature black mulberries during 48 hours incubation. To ensure the food safety of mulberry, it is suggested that the introduction of E. coli into a farm through livestock should be prevented and more hygienic caution should be taken especially when the fruits are ripe.

        Dyslipidemia, defined as elevated triglyceride (TG), total- and LDL-C, and/or decreased HDL-C levels, is considered a principal risk factor for cardiovascular disease. The low-density lipoprotein receptor (LDLR) family has been considered a key player in the prevention of dyslipidemia. The LDLR family consists of cytoplasmic membrane proteins and plays an important role not only in ligand–receptor binding and uptake, but also in various cell signaling pathways. Emerging reports state that various functional ingredients dynamically modulate the function of the LDLR family. For instance, oats stimulated the LDLR function in vivo, resulting in decreased body weight and improved serum lipid profiles. The stimulation of LRP6 by functional ingredients in vitro activated the Wnt/β-catenin pathway, subsequently suppressing the intracellular TG via inhibition of SREBP1, PPARγ, and C/EBPα. Furthermore, the extract of Cistanchetubulosa enhanced the expression of the mRNA of VLDLR, followed by a reduction in the serum cholesterol level. In addition, fermented soy milk diminished TG and total cholesterol levels while increasing HDL-C levels via activation of LRP1. To summarize, modulating the function of the LDLR family by diverse functional ingredients may be a potent therapeutic remedy for the treatment of dyslipidemia and cardiovascular diseases.

        This study was performed to investigate the quality characteristics of Yanggaeng, including color, pH, total polyphenol contents, and antioxidant activities, with the addition of aged garlic extract (0, 3, 6, 9 or 12%), aged at low temperatures. Among the color characteristics, the lightness value decreased, and the redness and yellowness values increased, proportional to the amount of garlic extract concentrate added to Yanggaeng. The pH of Yanggaeng significantly (p<0.05) decreased according to the amount of aged garlic extract added. Total phenol contents of control (0% aged garlic extract added Yanggaeng) was the lowest, followed by 3, 6, 9, 12% aged garlic extract added to Yanggaeng (88.15, 118.39, 156.91, 208.79 mg/g, respectively). Antioxidant activities, such as DPPH and ABTS radical scavenging activity, significantly increased with increase in the aged garlic extract concentration. In the sensory evaluation for Yanggaeng, 6% aged garlic extract added to Yanggaeng had the highest score in taste, flavor, and overall acceptance. Based on these results, it is suggest that the addition of 6% aged garlic extract to Yanggaeng can be developed as a product for the elderly.

        Development of elderly foods that improve health among the older population is needed. The purpose of this study was to investigate the preference of specific foods for development as elderly foods. A one-to-one survey method was used for data collection from 150 elderly people attending senior welfare centers. The results of the study showed that the preferred cooking materials were vegetables, meats and fishes; and preferred cooking method was soup and stew rather than deep-frying. The elderly preferred meats and seafood but they did not eat them frequently. The results of investigating the preference of specific foods including meats, Kimchi, nuts and rice cakes indicated that old people liked broiled meats, Chinese cabbage Kimchi, walnuts and nonglutinous rice cakes the most, and they did not feel comfortable with chewing the foods. Most respondents were not familiar with the elderly foods. Moreover, the most important factors affecting their choice of elderly foods were hygiene, nutrition and flavor

        This study was conducted to assess the recognition and consumption of meal alone and processed food according to major of college students in Seoul Metropolitan area and Chungcheong province, Republic of Korea. To accomplish this, a survey was conducted to investigate 353 college students (171 food & nutrition majors and 182 non-majors) regarding their general characteristics, dietary behaviors, meal alone issues, and the purchase and consumption of processed food. Most major and non-major students skipped breakfast. The main reason for skipping was not having time. Majors and non-majors put great importance on their lunch and evening meal, respectively. Nutrition information routes for majors were ‘college class’ (62.5%) and ‘TV radio’ (17.5%). However, the routes for non-majors to obtain nutrition information were ‘internet smart phones’ (41.1%) and ‘TV radio’ (28.3%). These results suggest the need to provide correct information concerning nutrition to college students. Most major and non-major students tend to have 0 to 2 times of meal alone per week. The main reason for meal alone was schedule unsuitable for eating with family or friends. The most critical factors for majors and non-majors when they chose menu to have meal alone were personal taste and money, respectively. The primary consideration for choosing processed food was price and the main purchase route was convenience store. The main reason for consuming processed food was easy-to-cook. Of processed foods, the most favored ones were noodles and fish products. Meal alone frequency was positively correlated with age (p<0.05), grade (p<0.05) and monthly allowance (p<0.05). Preference and consumption frequency of processed food were negatively correlated with concern about nutrition (p<0.05) and meal frequency (p<0.05), respectively. Based on these results, greater efforts should be made to provide meaningful information regarding programs for nutrition education to improve their dietary habits. Research and development of processed food specifically for college students eating alone should be increased.

        The purpose of this study was to find efficient and customized tools for delivering the benefit of health functional foods (HFFs). Delivery tools which could influence the impact of advertising were images, explanations of ingredients, diagrams of health benefit, patents, and comments from authority. Six advertisements were developed using these tools: “A”: relevant image + explanation of ingredients + scientific diagram of efficacy; “B”: relevant image + explanation of ingredients; “C”: relevant image; “D”: irrelevant image; “E”: irrelevant image + explanation of ingredient + patent; “F”: irrelevant image + explanation of ingredient + comments from authority. To analyze the consumer perceptions on HFFs and advertisement effects, 300 respondents were requested to answer a questionnaire comprising of the following questions: 5 questions of attitudes (necessity of HFFs, trust in HFFs, gathering information, watching advertisements and trust in advertisement claims) and 6 questions on the 6 developed advertisements (attention, understanding, sufficiency of information, sympathy, trust, and purchase). Scoring was done as per the 5 Likert scale. There was a higher proportion of females and the elderly, as compared to males and youngsters. The overall consumer attitudes were positive. Explanation of ingredients, scientific diagram of health benefit, patents and expert comments were helpful factors in increasing the advertisement evaluation by consumer, but the images were not. Advertisement evaluation of consumer did not differ with gender and age. However, differences were observed between some of the consumer attitudes (necessity of HFFs, trust in HFFs, gathering information and trust in advertisements claim) and advertisement evaluations (attention, understanding, sympathy and purchase). Our results indicate that for consumers utilizing the HFFs, advertisements with concrete tools such as diagrams, patent, and expert comments are more helpful. However, for consumers who do not have interest in HFFs, the scientific information was irrelevant. We believe that to maximize the effect of health information in advertisements, consumers should be segmented, and customized tools for each segment needs to be developed.

        본 연구는 축산식품으로부터 식중독균 검출을 위한 시료 전처리법을 확립하기 위해 전처리용액, 균질화 시간, 시료와 전처리용액의 비율에 따른 회수율을 비교하였다. 이를 위하여 햄, 발효유, 소고기에 E. coli O157:H7, S. aureus, S. Typhimurium를 7.0 log CFU/g로 접종하고 PW, SS, BPD, BPW로 처리하였다. 또한 균질화 시간은 30, 60, 90, 120, 300초, 시료와 전처리용액 비율은 1:2, 1:4, 1:9, 1:19로 각각 처리하였다. 그 결과 발효유와 소고기에서는 BPW로 처리하였을 때 전반적으로 식중독균의 회수율이 높았으나(p < 0.05), 햄의 경우에는 전처리 용액에 따른 유의적 차이는 없다. 전처리용액의 최적 비율은 햄, 발효유, 소고기가 각각 1:9, 1:2, 1:4였으며(p < 0.05), 균질화 시간은 모든 시료에서 120초로 처리했을 때 유의적으로 가장 높은 회수율이 나타났다(p < 0.05). 따라서 선정된 최적 전처리 조건에서 식중독균 회수율을 수행한 결과 모든 시료및 균종에서 85%이상의 높은 회수율을 보였다. 이상의 결과를 종합해 볼 때 축산식품으로부터 식중독균 검출을 위한 전처리 용액 및 시료와 전처리용액의 비율은 시료의 종류에 따라 적절한 것으로 사용하는 것이 식중독균 검출의 정확성을 높일 수 있을 것으로 판단되어진다.

        엥겔계수에 의하면 1980년 이전까지는 빈곤단계에 해당한다. 이 시기의 특징은 기본적인 배고픔을 충족하기 위한 양식소비가 증가하고 식물성 소비 중심의 단일성을 그 특징으로 한 다. 개혁·개방 이후 1980년대 초반부터 1995년까지가 대체로 원바오 단계에 해당한다. 이 단 계는 알류, 수산물, 조류(가금육), 소고기, 양고기의 소비량이 양적으로 늘어나는 특징을 갖고 있다. 반면 양식, 채소 등 식물성 식품의 소비량은 양적으로 감소하고 있다. 이 단계에 다원 화가 시작되는 추세가 나타난다. 샤오캉 단계에도 우유, 조류, 소고기, 양고기, 과일, 수산물, 알류의 소비량이 양적으로 늘어 나는 추세가 심화되고 있다. 양식, 채소 등 식물성 식품의 소비량이 양적으로 감소하는 추세 도 원바오 단계와 마찬가지로 샤오캉 단계에도 계속되고 있다. 다원화 추세가 양적으로 심화 되고 있는 것이다. 지출 금액 기준에서 보아도 이와 유사한 결과이다. 샤오캉 단계에서 지출 금액이 높은 항목은 우유·유제품, 수산물 등이다. 지출 금액 기준의 외식비 통계를 보면 샤오 캉 단계에 우유·유제품, 수산물에 이어 세 번째로 증가율이 높다. 반면 지출 금액 기준으로 증가율이 낮은 항목 가운데 하나는 양식이라는 점에서 양적 기준의 결과와 유사하다. 부유단계는 양적 기준에 의하면 조류, 우유, 수산물에 증가율이 높다. 조류, 수산물의 소비량 증가는 가공(냉동가공 포함)을 통해 상품화되기 용이한 식품이다. 하지만 부유단계에서도 양적으로 양식, 채소, 돼지고기의 소비량이 여전히 가장 높은 품목이다. 지출금액 기준으로 보아도 역시 유사한 연구결과이다. 우유·유제품과 육류·조류·가공제품의 증가율이 높다. 특히 부유단계에는 외식비의 비중을 가장 늘린다는 사실도 확인되었다. 증가율이 낮은 항목은 역 시 기본식품인 양식이다. 소득 수준별로 보아도 위와 유사한 결과를 보인다. 고소득층은 지출금액면에서 수산물과 우유·유제품의 소비량을 더욱 늘리고 양식의 소비량을 줄인다.

        This study investigated the nutrition education realities and nutrition status of children in community child centers, by analyzing the status of nutrition education, nutrition quotient (NQ), and the level of maintaining dietary guidelines. The subjects were 173 children from grades 1 to 6, enrolled in community child centers, Jinju, Kyungnam. The NQ was examined by a questionnaire, which was a checklist of 19 food behavior items. The distribution of scores (out of 100) in the nutrition quotient were as follows: total score of NQ was 59.4, balance 56.6, diversity 60.6, moderation 65.6, regularity 60.9, and practice 56.7. Nutrition quotient was higher in the higher graders due to significant differences in the area of variety. The level of maintaining dietary guidelines was higher in girls, especially in the area ‘eat politely with family’, and higher amongst the upper graders in the area ‘have safe snack wisely’. To improve the eating habits and nutritional status of the children in community child centers, their nutritional state should be checked with regular and systematic education, and their nutritional management should be pursued continuously. Since the assessment of the eating behaviors and the nutritional state of children is important at home as well as in schools and community child centers, nutritional education should be further extended to the parents and their care givers. This study can be implemented as basic material for the nutritional education of children, to minimize the dangers of malnutrition and to help build up the right eating habits amongst children in community child centers.

        This study is intended to research workers’ health, diet and the demand of nutrition education service in Seoul and Gyeonggi-do province. We implemented the survey from September 2012 through August 2013, and analyzed the data from 589 workers’ questionnaires out of 890. For the analysis of the compiled data, we utilized the SPSS version 18.0 statistical package program. The study showed that majority of the workers participated in the survey consisted of 447 male (75.9%) and 142 female (24.1%). BMI showed that these men were overweight (24.5±2.72) and women were normal weight (22.2± 2.70). Participants often diagnosed with hypertension or hyperlipidemia. In terms of health status, 34.5% answered satisfactory, the most concerned illness was high blood pressure, and the bad eating habits were often associated with general overeating and excessive intake of salt. 65.5% of participants had a meal three times per day. 49.4% of male participants had a meal less than 15 minutes and 66.2% of female participants had a meal between 15 and 30 minutes. The average of workers who needed to nutrition education is 3.74+0.85. The most desired way of learning was through counseling (36.7%), with overweight and weight management identified as the most interested topics. A relatively high portion (80%) passed the nutrition knowledge assessment test. According to the survey the highest rate of full-time employment is 85.2% which showed in small work places (the number of people on meal plan was 100~300), however the lowest rate of full-time employment showed 70.0% in large workplaces (the number of people on meal plan was within 1,000).

        SNS (Social network service) characteristics are perceived to simplify use. We carried out empirical studies on these parameters to observe the impact on the image of catering SNS online by word-of-mouth. The subjects of the study were as follows: 32.3% (392 persons) 19 years old, 67.7% (821 persons) over 19 years, 51.0% (619 persons) in their 20s, 22.1% (268 persons) in their 30s, 17.6% in their 50s, and 9.3% (112 persons) over 50 years. After verifying the hypothesis proposed that SNS characteristics perceived the ease of use, the significant factor identified in usability were connectivity Speed (β=0.213), playfulness (β=0.246), information (β=0.115), and reciprocity (β=0.357). Dual reciprocity had the most impact. It was observed that a longer impact of these significant factors improved the feel and fun of use. If SNS companies cater to, quick and easy, diverse, reliable and latest information, they can increase the ease of use, and availability, depending on the goals. Also, significant factors in the SNS features and online word of mouth was playfulness (β=0.312), information (β=0.207), reciprocity (β=0.066) and perceived ease of use, and usefulness (β=0.293), double playfulness had the maximum impact. These features provided more fun, reliable information, and could quickly deliver the latest information. The more the perceived usefulness, and ease of use, higher was the online word-of-mouth effect. SNS usage characteristics of connectivity Speed did not show any statistical significance in online word-of-mouth. Thus, catering businesses need to find ways to increase the ease of use, make the usefulness multifaceted, constantly checking the catering information on the SNS and ensuring to get the latest information is from diverse and reliable sources. This would increase the fun for the customer making the SNS to actively be utilized as a marketing tool.

        In this study, we aimed to develop a mixed tea prepared with roasted mulberry leaf and fruit using response surface methodology (RSM). Roasting of mulberry leaf was by 6 stages, as shown in Fig. 1; and mulberry fruit was roasted in 4 stages, as shown in Fig. 2. Subsequently, physicochemical measurements such as total polyphenol content, nitric oxide production content, and α-glucosidase inhibitory effect were obtained for each sample. Central composite design was applied to prepare samples containing varying contents of roasted mulberry leaf (RoML) and roasted mulberry fruit (RoMF); subsequently, sensory evaluation was conducted. The total polyphenol content of roasted samples (RoML and RoMF) were significantly higher than that of raw samples (RaML and RaMF), respectively. The nitric oxide (NO) production of roasted samples were significantly lower than that of control (LPS induced RAW 264.7 cell). The α-glucosidase inhibitory effect of roasted samples was significantly higher than that of raw samples, respectively. Based on the RSM estimation for determination of optimum ratio by sensory evaluation (taste, color, and flavor) among 13 mixed samples, the optimum mixing ratio of RoML and RoMF for taste, color, and flavor were 1.64 g (RoML) and 0.88 g (RoMF), 1.35 g (RoML) and 0.92 g (RoMF), 1.65 g (RoML) 1.03 g (RoMF), respectively. Based on results of three sensory evaluations, mixing ratio comprising 1.54 g of RoML and 0.92 g of RoMF is desirable for delicious tea with functionality.

        This study aimed to compare energy nutrient intake, health related factors, physical characteristics, blood biochemical indices, prevalence of metabolic syndrome and odds ratio (OR) of metabolic syndrome based on dietary fat energy ratio. Subjects were 1,205 men aged 40~64 years. The average fat intake was 52.8 g. Subjects were divided into three groups (deficient, normal, excess) based on dietary fat energy ratio. The dietary fat energy rations of the three groups were 36.9%, 42.9% and 20.2%, respectively. Energy and protein intake were increased significantly with dietary fat energy ratio (p<0.001), whereas carbohydrate intake decreased (p<0.001). In health related factors, amount of smoking alone showed increase based on dietary fat energy ratio (p<0.001). In comparing physical characteristics, blood pressure and blood biochemical indices, excepting diastolic blood pressure, increased significantly based on dietary fat energy ratio (p<0.01~p<0.001). The rate that exceeded criteria in risk factors for metabolic syndrome was higher in the serum triglyceride (41.2%) and was lower in the waist circumference (22.2%). Prevalence of metabolic syndrome was 37.9%, and showed significant correlation to dietary fat energy ratio (p<0.05). The OR of metabolic syndrome was higher in deficient and excess group than in normal group, but it had no relationship between fat energy ratio and metabolic syndrome. The results of this study provide basic data to establish fat intake guidelines for prevention of metabolic syndrome in middle-aged men.

        Probiotic functional foods are known to have various functional effects such as intestinal regulation, modulation of immune system, reduction of allergies, and lowering of cholesterol. The purpose of this study was to select probiotic strain that is most suitable for freeze-dried coffee for the development of functional coffee products. The survival rate of probiotics, at drinking condition of coffee, at acid, at bile and after freeze-dried in coffee were measured on 1 strain isolated from commercial freeze-dried coffee, 8 strains used as fermented milk starter, 1 Bifidobacterium and 1 Bacillus coagulans. Bacillus coagulans showed the highest survival rate from 2.4×107 cfu/g to 2.0×107 cfu/g especially after freeze-drying. The results at drinking condition of coffee, at acid tolerance, at bile tolerance and at storage test showed significantly better survival rate of Bacillus coagulans than that of control (Lactobacillus casei). Especially, Bacillus coagulans showed 3.8-fold higher survival rate at acid tolerance (pH 1, 120 minutes) than control. Thus, the lactic acid-producing Bacillus coagulans is characterized as a probiotic strain suitable for functional coffee formulation and commercialization.
