        학교 급식 식재료로 사용되는 농산물 중 잔류농약의 안전성을 평가하고자 서울시내 초, 중, 고등학교 110곳에서 316건의 시료를 수거하여 잔류농약을 분석하였다. 185종의 농약에 대해 GC-ECD, GC-NPD, GC-MSD 및 HPLC-UVD를 이용한 다종농약 다성분 분석법으로 잔류농약을 분석하였고, 분석결과 26건의 시료에서 농약이 검출되었고, 취나물과 들깻잎에서 각각 57.1, 55.6%의 높은 검출율을 나타내었다. 농약 성분별 검출빈도는 프로시미돈, 엔도설판, 아족시스트로빈의 순으로 높게 나타났으며, 2종 이상의 농약이 동시에 검출된 것은 3건이었다. 그리고 검출된 시료 중 잔류 허용기준을 초과한 시료는 6건이었으며 시금치, 취나물, 양배추에서 엔도설판, 깻잎에서는 디니코나졸과 카보후란, 고추에서는 에토프로포스가 잔류허용기준치를 초과하여 검출되었다. 위해성 평가결과 들깻잎에서 검출된 카보후란의 hazard index가 3.8%로 가장 높았으며, 다른 농산물들은 모두 2% 미만을 나타내어 위해도가 매우 낮은 것으로 조사 되었다. 따라서 서울지역 학교급식 식재료로 사용되는 농산물은 비교적 안전한 수준으로 농약관리가 이루어지는 것으로 판단되며, 지속적으로 농약의 안전한 사용을 위한 홍보와 교육이 이루어져야 할 것으로 여겨진다.

        This study analyses the factors that affect the satisfaction of school meals program. To obtain the data, 54 elementary, middle and high schools in Jeonbuk area were chosen for survey. A ordered probit model analysis is conducted to identify the key explanatory variables that affect the satisfaction of school meals about elementary, middle and high school’s students. Also, a ordered probit model is used to calculate marginal effects of several key variables. The study finds that key factors that affect to increase the satisfaction of school meals are rural area schools, elementary school’s students, and education for school meals or food nutrition. The satisfaction of school meals in urban and rural school’s students are significantly different. Also, the satisfaction of school meals about elementary, middle and high school's students are significantly different. To do this, importance of school meals is to build up the safe agricultural supply system. For safe agricultural supply system, local agricultural products provided in school meals should be supplied based on GAP, HACCP certificated companies such as US FTS(Farm to School) program.

        이 연구에서는 Fairclough의 비판적 담론분석 모델을 적용하여 서울시 무상급식 정책결정과정에 나타난 정책담론들이 수행하는 역할 및 특성을 규명하는데 목적을 두고 있다. 이를 위해 담론 투쟁과정에서 부각된 담론들에 대한 신문기사의 텍스트 분석을 통해 진보와 보수의 논리를 기술하고, 양자 간 대립하며 전개하고 있는 담론을 해석하였다. 또한, 사회적 실천관계에서는 정책이 형성되는 상황적 맥락과 결정이 이루어지는 제도적 맥락을 살펴보았다. 연구결과에 따른 이 연구의 결론 요약하면 다음과 같다. 첫째, 서울시 무상급식 정책결정과정에서 정책담론들은 진보와 보수 세력들의 정치적 이해관계와 결합하며 논쟁이 된 것으로 볼 수 있다. 둘째, 무상급식 정책결정과정에서의 정책행위자들, 즉 진보와 보수는 자신들의 논리를 정당화하기 위한 다양한 행동전략을 구사했으며 이 과정에서 정책담론이 중심적인 역할을 하였다. 셋째, 서울시 무상급식에 관한 정책결정은 정책행위자들의 이해와 타협에 의한 결정이라기보다는 담론투쟁에 의한 결과라 할 수 있다.

        As a result of analysis on situations of environment-friendly school meals, it was obtained that student"s parents were interested in food safety and the importance of sanitary supervision. Many parents responded that environment-friendly school meals increased the health and eating habits of their children. The higher and higher educated parents responded that environment-friendly school meals effected on the children’s health positively. Also, the higher educated parents responded that environment-friendly school meals effected on the children’s eating habits positively. After the environment-friendly school meals, the item increase to purchase was vegetables by 25% of the consumers who purchase environment-friendly agri-products. The second and third increasing items were respectively fruits and rice. When environment-friendly agri-products were consumpted and influenced positively through school meals, the consumption of environment-friendly agricultural products will be increased. The expansion of environment-friendly school lunch program cannot bring the consumption expansion of environment-friendly agri-products immediately. However, when the persistent promotion and student"s parents confidence on environment-friendly agri-products were accumulated and experienced positive effects through school meals, it will give a positive effect on the consumption of environment-friendly agr-products.

        This study was conducted to investigate the perception of the management of food service in schools. The subjects consisted of 271 school dietitians in the Daegu and Gyeongbuk areas. The questionnaire included the food temperature management and the frequency of the food quality confirmation. The sanitation performance of the delivery workers was evaluated with a 5-point Likert scale. The food items for which the proper temperatures while they were being received were difficult to maintain were as follows: ready-to-use vegetables, 49.8%; frozen foods, 30.3%; and fish paste, 27.7%. The frequencies of the food quality confirmation whenever the foods were received were as follows: for beef, 87.5%; pork, 84.5%; chicken, 84.1%; eggs, 73.4%; seafood, 59.4%; and processed foods, 52.8%. The total mean score of the dietitian-perceived sanitation management performance of the delivery workers was 3.86/5.00. The school dietitians said the percentage of the mixed delivery of food items in vans was 80.4%. The percentage of the dietitians who thought this mixed delivery influenced food sanitation and quality was 92.3%. Therefore, safe foods should be supplied to schools with a thorough inspection process and hygiene education, and professional research is required on the appropriate inspection process.

        This study was conducted to investigate the food purchasing management of school food services. The subjects consisted of 271 school dietitians in the Daegu and Gyeongbuk area. The percentages of ready-to-use vegetables actually being used were as follows: root of balloon flowers, 88.4%; garlic, 87.8%; blanched bracken, 80.1%; raw lotus root, 65.7%; burdock, 63.5%; small green onion, 63.5%; stem of taro, 57.6%; ginger, 35.1%; radish root, 30.6%; blanched asterscaber, 29.2%; large type welsh onion, 25.8%; carrot, 25.5%; onion, 21.4%; and potato, 8.9%. The percentages of HACCP-certified products being used were as follows: meat, 75.9%; eggs, 66.7%; soybean curds, 65.5%; ready-to-use seafood, 55.1%; starch jellies, 49.9%; spice, 44.9%; kimchi, 30.9%; ready-to-use vegetables, 22.7%; and fruits, 6.9%. The percentages of environment-friendly food items being used were as follows: eggs, 31.0%; meat, 28.7%; soybean curds, 22.1%; and fruits, 17.7%. Of these food items, meat and ready-to-use seafood were being used the most in the elementary schools. The percentages of imported food items being used were as follows: starch jelly, 29.2%; ready-to-use seafood, 24.7%; soybean curds, 20.5%; spice, 15.9%; and fruits, 10.1%. The food items requiring HACCP certification were as follows: beef and pork, 81.5%; chicken, 80.1%; ready-to-use seafood, 78.6%; frozen dumplings, 73.8%; soybean curds, 71.6%; peeled eggs, 70.8%; fish paste, 69.4%; starch jelly, 65.7%; milk, 63.1%; kimchi, 54.6%; spice, 50.6%; frozen noodle, 45.4%; ready-to-use vegetables, 44.3%; and bean sprouts, 29.5%. It was confirmed that 8.1% of the sanitation monitoring results were intentionally misreported. Therefore, to supply good and safe foods to schools, active management is needed in schools and food manufacturing and delivery companies.

        The objectives of this study were to find development process and strategies for school lunch program using environmentally friendly agri-products (EFA). In order to improve the quality of school lunch program from elementary school to high school, the demand of EFA is increasing step by step such as a parent’s association and the citizen group. For that reason, establishment by regional ordinance for school lunch program using EFA is rapidly expanded throughout the country. To develop school lunch program using EFA, we have to consider WTO regulations and product reliable EFA under the demand-supply stabilization. Moreover, environmentally friendly agri-policy to be more focused on the promotion the consumer’s interests and food safety need.

        The objectives of this study were to analysis willingness to pay (WTP) for environmental-friendly agri-product (EFAP) food service of child-care centers. To analysis preference about EFAP and WTP, parent’ survey were conducted residing in Asan city. The sample size of the survey is 143 respectively. As a result, most of parents really recognized that EFAP is good for their children as well as they want to change food material from general agri-product to EFAP. Moreover, additional willingness to pay for EFAP food service is 8,360 won on average per month. Therefore, environmental-friendly agri-policy to be more focused on the promotion of the consumer"s interests and food security needs.

        The objectives of this study were to analysis satisfaction and additional cost scale about environmental-friendly agri-product school meal program. To analysis satisfaction about environmental-friendly agri-product (EFAP), parent’ survey were conducted residing in Cheonan city. The sample size of the survey is 304 respectively. As a result, parents of students recognized that EFAP is good for their children as well as they really want to change food material from general agri-product to EFAP. Therefore, environmental-friendly agri-policy to be more focused on consumption behavior and food security needs. In order to perfectly change food material to EFAP, about 1 trillion won will be additionally needed. It means that the market demand of EFAP will be dramatically increased. On the other hand, safe school meal program is one of the most important in a child’s life, vital for proper growth and development.

        In the grilled fish paste stored at , the total aerobic bacterial counts were effectively reduced by 2.5 kGy or more. In the samples stored at , the total aerobic bacterial counts of the samples irradiated at 7.5 kGy were below to the limit of detection (2 log CFU/g). The TBA values of the irradiated samples were considerably higher than those of the controls but not proportional to the irradiation dose. It is apparent that an irradiation treatment causes very little textural degradation and the sensorial quality of the sample was maintained by an irradiation at 7.5 kGy or more.
