본 연구에서는 식품용 기구 및 용기·포장으로부터 식품유사용매로 이행되는 12종의 자외선흡수제(Uvinul 3000, Cyasorb UV 24, Uvinul 3040, Tinuvin 312 및 P, Seesorb 202, Chimassorb 81, Tinuvin 329, 234, 326, 328 및 327) 의 분석법을 확립하였다. 식품유사용매 중 물, 4% 초산, 50% 에탄올의 경우 hydrophilic-lipophilic balance (HLB) 카트리지로 고체상 추출법(Solid Phase Extraction)을 이용 하였고, n-헵탄의 경우 이소프로판올로 희석하여 HPLCUVD (310 nm)로 자외선흡수제의 이행량을 분석하였다. 확 립된 분석법으로 일회용기, 밀폐용기, 일회용백, 소스병, 물병, 도시락 등 국내 유통 폴리에틸렌(60건) 및 폴리프로 필렌(140건) 재질의 식품용 기구 및 용기·포장 200건으로부터 식품유사용매로 이행되는 12종의 자외선흡수제 이행량 조사 결과, 물, 4% 초산, 50% 에탄올, n-헵탄 4가지 식품유사용매 모두에서 자외선흡수제는 검출되지 않았다. 따라서, 실제 가정에서 폴리에틸렌이나 폴리프로필렌 재 질의 식품용 기구 및 용기·포장을 사용하는 환경에서는 자외선흡수제의 이행 정도는 안전한 수준인 것으로 판단 된다. 또한, 자외선흡수제를 0.1 wt%, 0.5 wt%씩 첨가하여 제작한 시편에서의 이행정도는 0.02~0.5% 수준으로 나타나 통상적인 식품용 기구 및 용기·포장을 사용하는 조건에서 자외선흡수제의 이행량은 크지 않은 것으로 나타났고, 안전한 수준임을 확인할 수 있었다. 본 연구에서 확립 된 12종 자외선흡수제의 식품유사용매로의 이행량 동시분 석법은 폴리에틸렌 및 폴리프로필렌 식품용 기구 및 용 기·포장의 안전관리를 위한 기초자료로 활용될 수 있을 것으로 기대된다.
본 연구에서는 식품용 기구 및 용기·포장으로부터 식 품유사용매로 이행되는 10종의 산화방지제(butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), Cyanox 2246, 425 and 1790, Irgafos 168, 및 Irganox 1010, 1330, 3114 and 1076)의 분석법을 확립하였다. 식품유사용 매 중 물, 4% 초산, 50% 에탄올의 경우 hydrophiliclipophilic balance (HLB) 카트리지로 고체상 추출(SPE, Solid Phase Extraction)을 하였고, n-헵탄의 경우 이소프로 필알콜로 희석하여 HPLC-UVD (276 nm)로 산화방지제의 이행량을 분석하였다. 확립된 분석법으로 위생백, 지퍼백, 우유팩, 주스팩, 가공식품용 포장지, 밀폐용기, 일회용기 등 국내 유통 폴리에틸렌(78건) 및 폴리프로필렌(122건) 재질의 식품용 기구 및 용기·포장 200건으로부터 식품 유사용매로 이행되는 10종의 산화방지제 이행량 조사 결과, 총 78건의 폴리에틸렌 식품용 기구 및 용기·포장 중 5건에서 Irganox 1010이 ND~1.444 mg/L 검출되었고, 총 122건의 폴리프로필렌 식품용 기구 및 용기·포장 중 41건에서 Irganox 1010이 ND~3.106 mg/L, 28건에서 Irganox 1076이 ND~4.752 mg/L, 34건에서 Irgafos 168이 ND~ 3.635 mg/L 검출되어 총 3종의 산화방지제가 검출되었다. 검출된 Irganox 1010, Irganox 1076, Irgafos 168에 대해 일 일추정섭취량(EDI)을 계산하고 일일섭취한계량(TDI)과 비 교하여 위해도를 평가한 결과, 폴리에틸렌 재질 중 Irganox 1010은 TDI 대비 0.0067%, 폴리프로필렌 재질 중 Irganox 1010, Irganox 1076, Irgafos 168은 TDI 대비 0.0073%, 0.1800%, 0.0200%로 안전한 수준임을 확인하였다. 본 연구에서 확립된 폴리에틸렌 및 폴리프로필렌 식품용 기구 및 용기·포장 중 산화방지제 분석법 및 안전성 평가 결과는 앞으로 기구 및 용기·포장의 안전관리를 위한 과학적인 근거자료로 활용될 것으로 판단된다.
HPLC-size-exclusion chromatography에 의해 가공식품에서 알긴산프로필렌글리콜의 함량을 분석하는 방법이 개발 되었다. 알긴산프로필렌글리콜을 분석하기 위해 GF-7M HQ column과 LT-ELSD detector가 선정되었다. 알긴산프 로필렌글리콜 분석을 위한 전처리 조건으로는 20oC에서 150 rpm으로 3시간 동안 추출하는 방법이 선정되었다. 알긴산프로필렌글리콜을 5 농도(300, 500, 700, 1,000, and 1,500 mg/kg) 범위에서 검량선을 작성한 결과 직선성(R2) 은 0.9873으로 측정되었다. HPLC system에 의한 알긴산 프로필렌글리콜 분석시 검출한계(LOD) 및 정량한계(LOQ) 는 각각 171.43 mg/kg 및 519.50 mg/kg이었다. Size-exclusion chromatography에 의해 얻은 회수율 및 변동 계수(coefficient of variation)는 각각 86.1~110.4% 및 4.1~13.5% 이었다. 본 연구에서 개발된 HPLC-size-exclusion chromatography system을 적용하여 134 품목의 가공식품에서 알긴 산프로필렌글리콜 함량을 분석하였다. 이 결과들은 이 방법이 가공식품에서 알긴산프로필렌글리콜 함량을 분석하는데 적용할 수 있는 방법이라는 것을 나타낸다.
This study was applied to the PCA (Primary Components Analysis) for the sixteen table setting at the 2017 Yeongju local food contest. In this contest, we have developed a seonbibansang and a temple one-dish meal. As a result of the correlation analysis, the applicability and composition were 0.7980, harmony and taste were 0.7747 and easiness and composition were 0.7435. In the Primary Component Y1, all the variables X1…X10 mean that the quality of the food had positive values greater than zero. The second Primary Component Y2 has a large positive value while X4, X5, X6, X7, X9 have negative values. Y2 is a value representing the sanitation variable, and can be considered a traditional and characteristic table setting natural to the native food in Yeongju. In addition, we developed an-hyangbansang and seonmyoaecheong food content by applying PCA factors (the elements of harmony, ease and sanitation). Table setting of an-hyangbansang provided energy 61.5%, protein 20.0% and fat 18.5% and seonmyoaecheong provided energy 62.7%, protein 15.4% and fat 22.2%. This satisfied the necessary amount of caloric nutrient intake that could be provided in a meal. Especially through story-telling, a modern interpretation - or rebranding - of local and traditional foods could make these traditional food products familiar to consumers currently. The developed table setting is felt to be conductive to the possible commercialization and introduction of traditional food into the mainstream commercial food service industry.
The purpose of this study was to provide the basic information for developing sugar related nutrition education programs for children in child-care facilities and their parents. The results showed that the total score of parent’s dietary attitudes towards sugar-rich foods was 17.94 and the total score of parent’s nutritional knowledge was 3.67. A positive relationship was observed among items of parent’s dietary attitudes (p<0.01), and some correlations were also observed between the total score of parent’s nutritional knowledge and the total score of parent’s dietary attitudes (p<0.05 or p<0.01). The total average score of children’s eating behaviors for sugar-rich foods was 23.98, and the item with the highest score was ‘I often eat candy, chocolate and jelly’. For children, food that received the highest preference was chocolate, and soft drinks received the lowest preference. The most frequently consumed food item was candy or caramel, and the least frequently consumed food item was soft drinks. There were positive correlation among the total score of children’s eating behaviors, food preferences, and food intake frequency (p<0.01). When parent’s tried to reduce the sugar intake, children’s total score of eating behaviors (p<0.001) and food intake frequency (p<0.001) for sugar-rich food was lower. We conclude that parent’s dietary attitudes may influence children’s eating behaviors, food preferences, and food intake frequency for sugar-rich foods.
This study investigated the nutrition knowledge, dietary habits, and food intake frequency according to hospitalization after breast cancer surgery and experience of breast cancer among female adults residing in the Bucheon area. Subjects were 52 female breast cancer survivors 27 in the hospitalization group (HG) and 25 in the non-hospitalization group (non-HG)] and 52 controls. Data included the results of self-administered questionnaires, as well as anthropometric data and blood biochemical values of breast cancer survivors collected from electronic medical records. Statistical analysis was performed using SPSS 20.0 program. Nutrition knowledge and dietary habits revealed no significant differences between HG and non-HG, but intake frequency of root and tuber crops and kimchi was significantly higher in the HG group than the non-HG group (p<0.05). According to experience of breast cancer, total scores of nutrition knowledge among survivors (8.2) were significantly higher than those of the control group (6.3) (p<0.001). Fish and shellfish and fruit intake frequencies were significantly higher in the survivors group, whereas intake frequency of fast food, convenience food, and alcohol was significantly lower compared to the control group. Overall, these findings indicate it is necessary to develop and spread nutrition education guidelines to prevent the occurrence and recurrence of breast cancer.
We recently reported the in vitro and in vivo antiobesity effects of Tenebrio molitor larvae, a traditional food in manycountries, but it remains unknown how the larvae affect appetite regulation in mice with diet-induced obesity. We hypothesizedthat the extract of T. molitor larvae mediates appetite by regulating neuropeptide expression. We investigated T. molitorlarvae extract's (TME's) effects on anorexigenesis and endoplasmic reticulum (ER) stress–induced orexigenic neuropeptideexpression in the hypothalami of obese mice. Central administration of TME suppressed feeding by down-regulating theexpression of the orexigenic neuropeptides neuropeptide Y and agouti-related protein. T. molitor larvae extract significantlyreduced the expression of ER stress response genes. These results suggest that TME and its bioactive components arepotential therapeutics for obesity and ER stress–driven disease states.
Understanding biotic interactions is important to illustrate ecological functions of stream environments. The purposeof this study is to compare the ecological functions of natural and artificial streams. For linking species, we used bioticinteraction databases and made food-webs for species lists of 18 streams in Seoul, Korea. We conducted species removalanalysis of networks and compared network beta-diversity between watersheds. The results showed that natural streamswere more affected by a removal of keystone species than artificial streams. The cheonggye watershed including artificialstreams had high dissimilarities among streams, presenting that artificial streams had different functions from natural streams.
The potential abilities of 3-methylbenzaldehyde derived from Myosotis arvensis oil and its structural analogues to actas new acaricide and mite kit (mite color deformation) against Tyrophagus putrescentiae (Schrank) were evaluated in thepresent study. Based on the LD50 values, 2,4,5-trimethylbenzaldehyde (0.78 μg/cm3) had highest vapor action against T.putrescentiae, followed by 2,4-methylbenzaldehyde (1.14 μg/cm3), 2,5-dimethylbenzaldehyde (1.29 μg/cm3), 2-methylbenzaldehyde (1.32 μg/cm3), 2,3-dimethylbenzaldehyde (1.55 μg/ cm3), 3-methylbenzaldehyde (1.97 μg/cm3), and4-methylbenzaldehyde (2.34 μg/cm3). The color deformation of seven methylbenzaldehyde analogues mixed with2,3-dihydroxybenzaldehyde against T. putrescentiae showed mite color deformation, from coloress to reddish brown, andvaluable to distinguish with the naked eye. In addition, there was no antagonistic interactions between 2,3-dihydroxybenzaldehydeand the methylbenzaldehyde analogues. These finding suggests that the methylbenzaldehyde analogues could be developedas dual functional agent to protect from fall in the commercial value of stored food products.
지구 온난화, 석유고갈, 환경오염에 대한 해결 방안으로 수송부분에서 국제적으로 바이오연 료에 관한 연구가 활발하게 이루어지고 있다. 그 중 바이오디젤은 석유계 디젤과 비교해 이산화탄소 및 대기오염 물질 배출이 적고 세탄가가 높은 장점을 가지고 있다. 현재 국내 바이오디젤 수요는 지속적으로 증가하고 있으나 원료부족으로 인해 수입의존도가 커지고 있는 상황이다. 이러한 문제를 해결하기 위해 본 연구는 현재 사용되지 않는 음폐유(약 33 % 유리지방 산 함유)를 Amberlyst-15 촉매가 이용한 에스테르화 반응을 통해 바이오디젤 원료로서 활용가능성을 확인 하였다. 다양한 반응 조건의 영향을 조사하기 위한 실험을 수행한 결과 반응온도 383 K에서 97.62 %의 전환 율을 얻었으며, 반응속도는 353 K에서 373 K로 증가 할 때 최대 1.99 배까지 상승하였다. 또한 동역학 적 결과를 이용하여 29.75 kJ/mol의 활성화 에너지를 확인하여 선행연구에서 연구된 타 고체촉매에 비 해 에스테르화반응에 Amberlyst-15 더 적합함을 확인하였다. 그리고 메탄올 몰 비가 증가함에 따라 최 대 91.43 %의 반응 전환율을 확인하였고, 촉매량 영향의 경우 0 wt%에서 20 wt%까지 증가시킨 결과 반응 전환율이 43.78 %에서 94.62 %까지, 초기 반응 속도는 1.1∼1.4 배로 상승하는 것을 확인하였 다. 교반속도의 경우 100∼900 rpm의 조건에 따라 실험을 수행하였으나 반응 전환율에는 큰 영향을 주 지 않음을 확인하였고 반응 시간에 따른 영향의 경우 240 분 까지 산가 감소를 보이다가 300 분이 지 나면서부터 산가가 상승하는 결과를 가져왔다. 그리고 위 실험들을 통해 도출된 최적 조건을 적용하여 음폐유 에스테르화 반응에 적용하였고 그 결과 반응시간 60 분에서 음폐유와 모사 폐유지간의 13 %의 반응 전환율 차이를 보였으나 최종 240 분 반응 전환율은 모사 폐유지 98.12 %, 음폐유는 97.62 %로 거의 유사한 결과를 얻었다.
The objective of this study was to increase the efficiency of starch extraction from potato sludge by different concentration of food-grade hemicellulase. The potato sludge, which is a by-product of potato processing industry, was treated with food-grade hemicellulase. Starch extraction efficiency displayed no significant difference in hemicellulase concentration. The purities of potato starch increased from 83.40 to 95.91, 97.44, 95.58, and 97.79%, with treated 0.5, 0.75, 1.0, and 1.5% hemicellulase, respectively. The physicochemical properties of the starches, such as granule structure, particle size, pasting, and thermal transition, were not affected by the concentration of hemicellulase. These results indicate that food-grade hemicellulase treatment is an efficient method for starch extraction from potato sludge.
During the decay process of food waste, odor and leachate are generally produced because food is easily decomposed due to its high organic and moisture contents. In this study, various food waste samples, including samples artificially prepared and collected from actual waste containers, were tested to determine odor and leachate production as the samples were decomposed at a constant temperature of 35°C. In the air phase, total volatile organic compounds (TVOCs), acetaldehyde (AA), methyl mercaptan (MM), hydrogen sulfide (H2S), and dimethyl sulfide (DMS) were measured as a function of the decay period for four days. The results of the experiment showed that TVOC and AA were produced at higher concentrations in the actual food waste than in all artificial wastes. The AA concentration accounted for about 90% of the TVOC in all of the waste samples except for the food waste containing meat and fish only. The concentrations of volatile sulfur compounds (VSCs) were generally lower than 100 μg/kg, and the concentration of DMS was the highest among the VSCs. In the waste sample containing meat and fish only; however, the concentration of VSCs increased up to 1,700 μg/kg, and mostly consisted of MM and DMS. Complex odor concentrations were found to be the highest after a decay period of 12-48 hours. In addition, the complex odor was mostly related to VSCs with low odor thresholds rather than the TVOC. The pH values mostly decreased from 5 to 3.5 as the waste samples were in the decomposition periods, while the pH value increased to 6 in the food waste containing meat and fish only. Consequently, odor intensity and leachate production were the highest in the 12-48 hour range as the decomposition started, and thus an appropriate control strategy needs to be implemented based on the waste composition and the decay period.
농산물 가공은 농산물을 원물로 판매할 때보다 부가가치를 제고할 수 있는 방안의 하나로, 품질이 상 대적으로 낮거나 상품성이 없는 농산물을 가공을 통해 농가소득을 높일 수 있는 중요한 정책 수단의 하 나로 인식되어 왔다. 정부도 농산물 가공의 중요성을 인식하고 농산물 가공을 적극 장려하고 있다. 하 지만 식품의 가공은 농산물과는 달리 다양한 법적·제도적 규제를 받는다. 이런 법적·제도적 규제를 정확히 알지 못하고 농산물 가공을 시작할 경우 의도치 않게 법을 위반할 수도 있다. 따라서 이 논문에 서는 농산물 가공과 관련된 중요한 법규를 중심으로 농산물 가공을 위해 준수해야 할 법규의 내용을 검 토한다.
Excessive body weight gain during the growth period of early life may predispose individuals towards obesity and metabolic disorder in later life. We investigated the possibility of using the food efficiency ratio as an early indicator for predicting susceptibility to diet-induced obesity and insulin resistance. Four-week-old, prepubertal, male Sprague Dawley rats were divided into obesity-prone and obesity-resistant groups based on food efficiency ratio values after five days on a high-fat diet. Metabolic parameters measured after 2, 6, and 10 weeks, and specific phenotypes were compared with each group. Obesityprone rats had higher increases in body weight and fat mass compared to obesity-resistant rats over the study period. Obesity-prone rats became glucose intolerant early in this study and remained so throughout the experimental period, with increases in fat weight and leptin levels occurring first, followed by increases in insulin level. Gluconeogenesis and insulin resistance significantly increased in obesity-prone groups in which activities of glucose-6-phosphatase and phosphoenolpyruvate carboxykinase were increased and glucokinase activity decreased. Higher food efficiency ratio at an early age was closely correlated with body fat accumulation, hyperleptinemia, and hyperinsulinemia of middle and elderly age. We suggest a high food efficiency ratio in prepubertal subjects may be a useful predictor of future obesity and insulin resistance.
The consumption of high-salt foods is an independent risk factor for increased hypertension. Thus, evaluating the relationship of taste sensitivity and pleasantness of high-salt foods such as Korean jang products, would help contribute to an understanding of salty food eating behaviors of the Korean rural elderly. This study aimed to verify the association between taste sensitivity and salinity of Korean jang products, and the preferences of food groups and nutrient intake in the rural elderly. We studied 269 elderly persons (males 83, females 186) aged above 65 years, residing in the rural area, Sunchang gun Jeonbuk. For each subject, a recognition threshold of 4 basic tastes and pleasant concentrations of NaCl were estimated using the sip- and–spit method. Taste preferences, frequency of intake of food groups, nutrient intakes, and salinity and sweetness of Korean jang products (Doenjang, Ganjang, Gochujang) were assessed. No association was found between salt taste recognition threshold and optimally preferred concentration of salt and salinity of Korean jang products. However, the sweet taste recognition threshold was positively related to the sweetness of Korean jang products. Also, the salinity of Doenjang positively correlated with the frequencies of food groups and nutrient intakes. That is to say that the sweet taste sensitivity was related to the sweetness of Korean jang products, but was not sensitive to the salty taste. The salinity of Doenjang correlated with the consumption of food and nutrient intakes. Taken together, these findings suggest the need for appropriate intervention and education to reduce the salinity of Doenjang, which is an important modifiable factor contributing to reducing sodium intake in the rural elderly.
Stress has been associated with poor eating behavior and diet quality. Yet, the relationship between nutrient and food intake and perceived stress in Korean female adults has not been validated. The purpose of this study is to identify the relationship between nutrient and food intake and perceived stress in Korean female adults. This is a cross-sectional study based on the 2014-2015 Korean National Health and Nutritional Examination Survey data. This study investigated 2,010 female adults age 19~64. In this study, according to subjects' perceived stress, we classified subjects into very low-stress recognition group (VLSRG) (n=211), low-stress recognition group (VSRG) (n=1,223), high-stress recognition group (HSRG) (n=488) and very high-stress recognition group (VHSRG) (n=88). Daily nutrients and food group intake, food groups consumed (Dietary Diversity Score, DDS) were analyzed using data from the 24-recall method. The VHSRG had a larger proportion of subjects that were younger (p<0.0001), single (p<0.0001) and smokers (p<0.0001) compared to the VLSRG. Energy and food intake did not differ between the four groups. Percentage of subjects with protein (p=0.0322), vitamin A (p=0.0364) and vitamin C (p=0.0115) intake lower than the EAR (estimated average requirement) in the VHSRG were significantly lowest in the four groups. Also, food intake percentage from fruits and seaweed groups in the VHSRG were lower than other groups (p=0.0034, p=0.0015). DDS in the VHSRG (3.87) was significantly lowest in the four groups (p=0.0022). Results suggest that perceived stress in Korean female adults may by significant to consider in nutritional education programs.
식품용 금속 캔의 내면 코팅에 사용되는 에폭시 수지로 부터 용출되어 식품으로 이행될 수 있는 BPA, phenol, ptert- butylphenol과 BADGE, BFDGE 및 그 가수분해산물과 염화물 등 총 9종의 비스페놀 관련물질들을 HPLC/FLD 를 사용하여 동시 분석하는 방법을 확립하여 검량선 및 회 수율을 검토하고 식품유사용매로의 이행량을 조사하였다. 23종류의 식품용 금속 캔 총 161건을 대상으로 60oC에서 30분간 용출한 결과물, 4% 초산, 50% 에탄올 및 n-heptane 에서 전부 불검출이었다. 95oC에서 30분간 용출한 결과는 식품유사용매로 4% 초산과 50% 에탄올을 사용한 경우 BPA는 불검출~10.77 μg/L, phenol은 불검출~2.35 μg/L 검출되어 정량한계 수준이었으며, 국내 용출규격인 600 μg/ L에 비해 매우 낮은 수준임을 확인하였다. 또한 금속 캔은 저장성이 우수하여 식품을 장기간 보관하는 특징이 있어 보관기간(0~90일) 및 온도조건(4, 25, 60oC)에 따른 BPA 등 9개의 BPA 관련물질들의 이행량의 변화를 측정하였다. 온도조건이 4oC 및 25oC인 경우 90일 동안 모든 식품유 사용매에서 BPA를 비롯하여 9종의 BPA 관련물질들은 검 출되지 않았다. 식품유사용매로 물과 4% 초산을 사용하여 60oC의 온도에서 90일간 저장한 경우 BPA와 BADGE·2H2O 는 시간이 지남에 따라 약하게 증가하는 경향을 보였으나, 이행량이 70일 이후부터 급격한 증가 없이 대체로 유지되는 수준이었고, 검출값 또한 정량한계 수준으로 매우 낮 게 나타났다. 따라서 식품용 금속 캔으로부터 BPA를 비롯한 관련 물질들의 이행량은 안전한 수준으로 관리되고 있음을 알 수 있었다.
This study examined the traditional edible basis and ingredients of Song-gi used for Pyeon of Jong-ga ancestral ritual food. Through an investigation of references, a case study, and ingredient analysis for traditional edible basis of Song-gi, the nutritional value and availability as food material were reviewed. Among the 4 kinds of pine trees from 4,705 types of edible materials usable as food listed in the 《Korea Food Standards Codex》, ‘Pinus radiata D. Don’, in which the husk is acknowledged as an edible food, was applied in this study. This study processed the Song-gi following the method of jongga and divided into pine inner bark (PIB) and pine inner bark powder (PIBP) to analyze the general composition and dietary fiber. The main composition of PIB was carbohydrate, in which the content was 88.7% per 100 g. The content of dietary fiber was 73.7% per 100 g and the insoluble dietary fiber reached 92.3% in total dietary fiber. In conclusion, the edibility of Song-gi, which has a considerable amount of insoluble dietary fiber caused constipation because it absorbed the moisture in the intestine due to the lack of nutrients but may be developed as a functional food that helps the digestive activation of the intestine and improve the health of the intestine if taken with balanced nutrition.
식품의약품안전처는 효율적인 식중독 예방 교육·홍보를 위하여 모바일 증강현실 게임인 ‘식중독잡GO’를 개발 하고 식품안전의 날 등 11개 행사에서 시범운영을 하였다. 행사장에서 ‘식중독잡GO’를 체험한 사람을 대상으로 식중독에 대한 인지정도를 설문조사를 통해 살펴보았다. 설문조사 결과 ‘식중독잡GO’ 게임 전후대비 식중독예방 3대 요령 인지도는 게임 전 51.8%에서 게임 후 78.8%로 향상되었고, 개별 식중독균 인지도는 평균 2.1배 향상되었 다. 설문조사자의 95%가 식중독 이해에 도움이 되었다고 응답하였으며, 90%가 게임이 재미있었다고 응답하였다. 따라서, ‘식중독잡GO’를 유·초·중·고등 교육에 적용을 하면 식중독균의 주요증상, 원인식품 등 식중독 예방 요령의 다양한 교육적 효과를 기대할 수 있을 것으로 사료된다.
