        This study was conducted on children from 10 community children centers located in northern Seoul. The quality factors of the food services of the community children centers were divided into five factors, including sanitation, food, environment, subsidiary service and staff. Analysis of the differences in the importance of factors and satisfaction with the food service quality indicated satisfaction to be higher than importance for in all the factors except 'environment'. In particular, of the food service qualities, significant differences were found between importance and satisfaction in relation to the attributes of 'food' and 'environment'. As a result of IPA of the food service qualities in community children centers, 'sanitation' was found to be in the maintenance area, 'environment' to be in the area of concentration, and the quality attributes of 'staff' and 'subsidiary service' were found to be in the low priority area. In contrast, the 'food' quality corresponded to the area of oversupply.

        2010년부터 2012년까지 충북지역 시장, 대형마트 등에서 유통되고 있는 학교급식에 공급되고 있는 근대, 들깻잎, 부 추, 시금치, 쑥갓, 아욱, 얼갈이배추를 대상으로 GC/ECD와 GC/MSD를 사용하여 205종의 농약에 대하여 잔류 검사를 하 였다. 그 결과, 농약성분은 시금치 23.4%, 얼갈이배추 20.6%, 근대 14.9%, 아욱 14.0%, 들깻잎 13.1%, 부추 8.4%, 쑥갓 5.6% 순으로 검출되었으며, 이중 잔류허용기준을 초과한 것은 시 금치, 근대, 부추, 들깻잎, 아욱 순으로 양이 많았다. 쑥갓과 얼갈이배추는 대부분의 농약이 잔류허용기준 이하였다. 잔류 허용기준을 초과한 농약은 chlorpyrifos, cypermethrin, diflubenzuron endosulfan, flufenoxuron, etoxazole lufenuron, carbendazim, trifloxystrobin, pencycuron, procymidone 11종으로 초과 농산 물은 부추, 시금치, 들깻잎, 근대, 아욱이었다. 검출된 농약과 그 검출량을 토대로 1일 섭취허용량을 산출하여 식품을 통해 매일 섭취되는 농약이 인간에게 미치는 위해도를 평가한 결 과, ADI 대비 최저 0.00084%에서 최고 50.8200로 낮은 %ADI 값을 보였고, 7품목에 대한 농산물 섭취에 위한 위해성은 낮 은 것으로 판단되었다. 이상의 결과로 볼 때 현재 우리나라 학교급식 식재료 채소의 잔류농약의 위해성은 문제가 없는 것으로 판단된다. 현재 잔류농약에 대한 규제는 강화되고 있 으므로 안전성에 대한 소비자의 불안감은 줄어들 것으로 보 이지만 학교급식에서 다빈도로 사용되고 있으므로 계속 모 니터링이 필요할 것으로 보인다.

        This study aimed to analyze the effect of demographic characteristics of consumers and quality recognition factors on purchase intention of organic wine, and to provide preliminary data necessary for the development of wine industry. By factor analysis of collected surveys, quality recognition factors of both the experienced and non-experienced group of organic wine environment/health, varieties of grapes, price, and four brand elements. First, among demographic characteristics, only income level hae a significant influence on the changes in quality recognition causes. Each of quality recognition causes of organic wine had a significant relation with purchase intent. The result of our analysis suggested that ‘environment/health’ was most influential for the experienced group, and ‘health’ was most influential for the non-experienced group. Therefore, this hypothesis is supported.

        It is well known that sunflower (SF) sprout has more beneficial effects than SF seed due to increased levels of phytochemical components such as vitamins, total phenolics, and isoflavones during germination. This study investigated the physicochemical properties and antioxidative activities of SF seed during both germination and cultivation. In a proximate analysis, the water content of SF groat was 9.17% and then increased to 15.32% on the 11th day after seeding. On a dry weight basis, crude fat content decreased while the contents of carbohydrates, crude protein, and crude ash increased. As cultivation proceeded, the contents of minerals were in decreasing order of K, Mg, Ca, Na, Zn, Fe, Mn, and Cu, in which SF sprout cultivated for 9 or 11 days contained the highest mineral contents. Though vitamin C was not detected on SF groat, the content of vitamin C continuously increased up to the 5th day of cultivation and then decreased gradually. Vitamin E content in SF groat was higher than that in SF sprout. It was also found that the vitamin E content in SF sprout was the highest on the 5th day of cultivation. Daidzin was not detected in SF groat, but its concentration reached a maximum on the 5th day of cultivation in SF sprouts. Furthermore, higher amounts of daidzein were observed on the 3rd, 5th, and 9th days of cultivation. The highest total isoflavone content was observed on either the 3rd or 5th day of cultivation. The highest content of total phenolics was observed on the 5th of cultivation. When DPPH radical and peroxyl radical scavenging activities of SF sprout were measured in order to measure antioxidant efficacy, it was found that 5 day-cultivated SF sprout had the highest scavenging activities. In conclusion, SF sprout cultivated for 9 or 11 days was found to be a good source of minerals. Furthermore, the fifth-day after seeding was the optimal time for the production of SF sprout with effective natural antioxidant activity and high amounts of functional components such as vitamins, total phenolics, and isoflavones.

        In order to perform the protein analysis using the paraffin sections previous fixed with formalin, we applied the ImmunoMemBlot (IMB) method1) to detect the epitopes of target proteins with specific antibodies. In this study the protein extracts were obtained from the paraffin sections of each representative case of ameloblastoma, adenomatoid odontogenic tumor (AOT), and normal gingiva, and more a protein extract from fresh tissue of ameloblastoma was also compared to evaluate the IMB results used with 24 different antibodies. First of all, in the comparison between the paraffin section extract and fresh tissue extract of ameloblastoma, the latter consistently showed more positive IMB reaction than the former. Meanwhile, the paraffin section extract of ameloblastoma was more comparable with that of normal gingival, disclosing that most of proliferating genes, oncogenes, and apoptosis related genes, i.e., PCNA, CDK4, c-erbB2, CEA, p53, Bax, Bad, FLIP, FAS, Bcl-2, p21, N-ras, MMP-2, MMP-9, caspase-3, -8, -9, were highly expressed in ameloblastoma, but EGFR, HGF, and VEGF were similarly expressed both in the ameloblastoma and in normal human gingiva. On the other hand, the comparison between ameloblastoma and AOT both in the immunohistochemistry and IMB using their paraffin section extracts clearly demonstrated that the ameloblastoma showed more expression of proliferating genes and oncogenes while the AOT showed more expression of apoptosis related genes, i.e., Bax, Bad, FLIP, and caspase-9. Taken together, these data suggest that the IMB can be used for the primary screening of quantitative protein analysis using the paraffin section extract, and that the IMB results could be evaluated in conjunction with the immunohistochemical observation.

        Immuno-MemBlot is a technique for detecting, analyzing, and identifying proteins, similar to the Western blot technique but differing in that protein samples are not separated electrophoretically but are spotted through circular or slot templates directly onto the membrane. Recently we developed a new Immuno-MemBlot (IMB) method applying immunoreactions and coloring procedures directly in the wells of MemBlot apparatus, which were connected by canals to perform drainage for reagent application and buffer irrigation. This IMB method was designed to get theimmunoblot results more rapidly and clearly than the previous immunoblot ones. This study is aimed to evaluate the analytical accuracy of IMB using different biological assay. In the sensitivity test of IMB the monoclonal antibody can clearly detect the 30 ng (about 12 pM) of Mucocidin peptide (35 mer), and is also available to detect at least 10 ng (about 4 pM) of Mucocidin peptide (35 mer). The IMB was effective in the quantitative analysis of methothrexate (MTX) assay for cellular apoptosis. And more, this IMB is useful to screen large number of specific samples with ease and accuracy in a short time. In the screenings for the presence of Mucocidin in saliva the quantitative comparison is conspicuous among 48 persons depend on the different conditions ofgender, drinking and smoking habits, and oral diseases. Therefore, it is presumed that, even though the target proteins were partly degraded, a specific epitope can be detected if a monoclonal antibody was still reactive. Conclusively, these data suggest that the IMB can be useful in the primary qualitativeand quantitative analysis of proteins in various fluids, i.e., blood, saliva, tear, urine, etc.

        This study was aimed to determine microbiological quality by adding green tea extracts to chicken meat salad. For this study, Chicken meat salad were prepared with two production method. (method 1: addition of green tea extracts to boiling phase, method 2: addition of green tea extracts to salad dressing) Microbiological effects of green tea extracts were assessed during production process by measuring process time, temperature, pH and Aw and determining total plate counts and coliforms. Effects of green tea extracts on total plate counts and coliforms were observed during holding at 3, 10, 25±1℃ for 12 hours. Green tea extracts improved the microbiological quality and showed antibacterial properties when they are added to chicken meat salad.

        The purposes of this study were to (a) measure plate waste of school lunches, (b) evaluate the nutrients actually consumed by students in elementary school foodservice. The survey was conducted between May 11 and July 1, 1998 through the practical measurement and questionnaires. Statistical data analysis was completed using SAS program for descriptive analysis and T-test. The results were summarized as follows: 1. The mean plate waste of menu group were soup, vegetable side dishes, kimchi, and meat side dish in order. 2. There was little difference between estimation and weighing of plate waste. 3. The satisfaction of children with school lunches were significantly higher for boys(73.55%) than for girls(71.13%). The highest level of the satisfaction was meat side dishes among boys and girls. 4. The majority reasons for leaving leftover were 'too big portion' and 'food is not tasty'. 5. There was significant negative correlation between plate waste and student's satisfaction. In summary, increased satisfaction with school lunches in most menus resulted in decreased plate waste rate. 6. Comparison of 13 RDA, energy, vitamin A and calcium were below recommended allowances for boys while energy vitamin A, calcium and iron were for girls. In general, the nutrient intake was more adequate for boys than girls because of the girl's lower allowances.

        Vending machines play an important role of giving convenience and simplicity in modem life style. So they became an indispensible element in life of modern people. This study was peformed to investigate customer's actual status in use as well as the degree of satisfaction and requirement of food and beverage vending machines. The results of this study can be summarized as follows. 1. About the advantage of using the vending machines, respondents answered 'convenience' for 50.2% and 'closeness' for 33.6% of all the answers. About the dissatisfaction for vending machine, three factors of 'inappropriate taste, temperature. quantity' and 'unsanitary pakage material and food' were the main causes. 2. About the credit of food quality,48.6% of respondents answered' some what doubtful'.58.1% of respondents pointed out that they couldn't confide in freshness and shelf-life' 3. 48.2% of respondents agreed that vending machines would be needed more in the future. Respondents wanted lots of food to be served from vending machines. The foods which respondents wanted to be served from vending machines were noodle(30.8%), rice(19%), pastry(18.2%), bread(17.45) gruel(7.3%) and snack(7.3%).

        Well-balanced meal is very important in its quantity and quality. Especially on the quantity field it becomes difficult for a foodservice operation to decide proper portion for individuals uniformly. These study was focused to setting up a proper portion by each food service operation. The results obtained were: 1. Individual consumption size from dormitory food service of college: cooked rice 282 g, soups 161 g, pot stewes 162 g, stir fries 53 g, stews 32 g, kimchies 47 g, fresh and boiled salads 43 g, one course dishies 477 g, pan broiles 44 g, meunieres 124 g. Individual consumption size from industry foodservice (white collar worker): cooked rices 228 g, soups 205 g, pot stewes 251 g, stir fries 20 g, stewes 76 g, kimchies 57 g, fresh and boiled salads 36 g, one course dishies 423 g, pan broiles 63 g, meunieres 38 g. 2. Proper portion of meal based on a statistical data is as follows: at college foodservice - cooked rices 280~290 g, soups 155~170 g, pot stewes 170 g, stir fries 60 g, stewes 35 g, kimchies 40~60 g, fresh and boiled salads 50 g, one course dishies 480 g, pan broiles 50 g, meunieres 130 g and at industry foodservice (white collar worker) - cooked rices 220~250 g, soups 210 g, pot stewes 250 g, stir fries 20 g, stewes 80 g, kimchies 60 g, fresh and boiled salads 40 g, one course dishies 430 g, pan broiles 70 g, meunieres 40 g.

        식물 세포벽으로보터 펙틴을 추출하는데 있어 펙틴의 중합도를 높인 고 기능의 펙티을 추출하기 위해 펙틴의 효소추출법을 사용하여 기존의 고온 산처리 펙틴 추출법과 비교하여 다음과 같은 결론을 얻었다. 1. 불용성의 WAIP로부터 일련의 산 추출 공정과 hemicellulase를 이용한 일련의 효소 추출 공정을 거친 결과, 추출물의 수율은 효소 추출법이 더 놓았다. 2. 효소 추출법에 있어 추출 조건을 다양하게 변화시켜 가며 수율을 검토한 결과, 최적의 추출 조건은 hemicellulase 1.5g을 24hr동안 38℃에서 반응시킨 것으로 나타났다. 3. 펙틴의 주요 성분인 galacturonic acid 함량으로 추출물의 펙틴 순도와 수율을 비교한 결과 산 추출물에 비해 효소 추출물은 수율은 높은 대신 순도가 낮았고 메톡실 함량은 비슷하였다. 4. 효소 추출법에서 추출한 펙틴물질은 중성당 분석, GC, HPLE등을 통해 성분을 정밀하게 분석하고 다양한 방법으로 고기능 펙틴을 추출할 수 있는 조건도 찾고, 그를 통해 정확한 식물 세포벽 모델이 제시 될 수 있을 것이다.
