        This study was conducted to develop and evaluate food safety training program for employees in foodservice operations. The developed CD-ROM was consisted of 5 parts: foodbome illness, personal hygiene, food handling in food production steps, HACCP system, and sanitary facilities. It has made slides for all contents, the animation and movie to raise interests and concentrations, and illustrations and pictures to understand. The evaluation checklists were developed 15 questionnaires including understanding(5), information(3), concentration(4), recommendation(2), and the most important factor(1) and measured by Likert 5-point scale. Fifty-four dietitians in Daegu and Gyeongbuk schools, hospitals, and industries foodservice operations responded to the surveys. The results are as follows; The most important part in the CD-ROM was personal hygiene(33.3%). The total mean was 3.95±0.41, 3.91±0.46 on understanding, 3.89±0.50 on information, 3.87±0.55 on concentration and 4.29±0.49 on recommendation. The score was significantly higher in the recommendation part than others. Overall, as the developed CD-ROM has achieved fine score, a study on the effect of education needs to be followed. Moreover, consistent and organized education by developing a variety of sanitation education methods should be conducted.

        This study was carried out to investigate the effect of Lythrum salicaria L. ethanol extract on anti-obesity effects in rat fed a high fat diet for 8 weeks to induce obese rat model. Male SD rats were divided into normal group, control (high fat diet) group, positive control (Garcinia Cambogia extracts) group, high fat group supplemented with ethanol extracts of Lythrum salicaria L. (EELS). The body weight gain and control (high fat diet) were increased by a high fat diet, but decreased in the EELS. At the end of the experiment, the body weight in high fat diet groups was higher than that of normal diet group, while the body weights of EELS and positive control group were significantly reduced by 16.62%, as compared with that of high fat diet group (p < 0.05). The levels of serum triglyceride, total cholesterol in EELS group were significantly decreased as compared with high fat diet group (p < 0.05). The liver and mesenteric adipose tissue weights of control (high fat diet) increase than that for normal group, whereas EELS and positive control group were significantly decreased (p < 0.05). Levels of triglyceride in liver were significantly lower in EELS group than those in high fat diet group (p < 0.05). These results indicate that Lythrum salicaria L. extract may improve lipid metabolism and reduce fat accumulation and body weight.

        In this study, the bioactivities of ethanol (EELS) and water extract (WELS) from the leaf of Lythrum salicaria L. were investigated. In the anti-cancer activity, the growths of both human prostate cancer (DU145) and human colonic carcinoma cell (HT29) were inhibited up 60% by adding 10 mg/ml of EELS. Anti-inflammatory activity of EELS and WELS have been evaluated on lipopolysaccharide (LPS) induced release of nitric oxide (NO) by the macrophage RAW 264.7 cells. EELS and WELS inhibited inflammatory by 57.3 and 46.9% in 10 mg/ml, respectively. In the anti-oxidative activity, IC50 of DPPH radical scavenging activity was respectively 60.71 and 92.90 μg/ml by EELS and WELS. In the anti-diabetic activity, IC50 of α-amylase inhibitory activity of EELS and WELS were respectively 5,250 and 5,020 μg/ml. IC50 of α-glucosidase inhibitory activity was 7.96 and 68.41 μg/ml by EELS and WELS. In the anti-obesity, IC50 of lipase inhibitory activity was 880 and 9,840 μg/ml by EELS and WELS. Finally, EELS and WELS exhibited anti-oxidative, anti-inflammatory, anti-diabetic activity and anti-obesity. It suggests that Lythrum salicaria L. could be potentially used as a resource of bioactive materials for health functional foods.

        Eleuthero(Eleutherococcus senticosus Maxim.) cortex is well known as a herb medicine for tonic. This study was performed to improve the quality of dried E. senticosus cortex. Investigation of quality factor and contents of efficient compounds under different steaming times and drying methods were performed to determine the proper processing and drying conditions of Eleuthero cortex harvested on March in annual stems. The proper steaming time for peeling bark to make high quality Eleuthero cortex took less than 20 mins. Eleutheroside B and E contents among drying methods were significantly different at 5% level DMRT. The 50℃ heat drying was the most advisable condition for drying, when drying and keeping contents of effective compounds.

        Volatile flavor compounds from the shoot and root of Angelica gigas Nakai were extracted by HE (Hydrodis-tillation extraction), SDE (Simultaneous steam distillation & extraction), and SFE (Supercritical fluid extraction system),and analyzed by GC-MS. The amount and the number of chemical components in essential oils from shoot and root by SFEwas the higher than those by other extraction methods. Respectively, thirty one constituents were identified from the essen-tial oil of the shoot and root by HE, twenty seven and twenty three constituents were identified from the essential oil of shootand root by SDE, thirty one and forty five constituents were identified from the essential oil of shoot and root by SFE. Theresult showed large differences in extraction methods and in plant parts of Angelica gigas Nakai. Also, the bioactive com-pounds in root part was identified as nodakenin and decursinol (11.95% and 8.42%, respectively) by SFE. These results sug-gested that SFE was the best extraction method for the increasing of extraction yield, the determination of volatilecomponents and the increasing of bioactive compounds in the shoot and root of Angelica gigas Nakai.

        The mushroom Agrocybe chaxingu was analyzed to evaluate the nutritional value of this potential food. The moisture content was 88.9% in the fruiting body of A. chaxingu, and the proportions of ash, crude fiber, carbohydrate, crude protein, and crude fat were 0.9%, 1.4%, 7.2%, 2.5% and 0.4% by weight, respectively. A. chaxingu contained 1.29 mg/100 g edible weight of vitamin , and the contents of vitamin , vitamin , and vitamin C were 0.15 mg, 0.32 mg, and 18.4 mg per 100 g of wet mushroom. Potassium (3,318 mg/100 g, dry basis) was found at the highest concentration in A. chaxingu. In addition, the mushroom contained many other minerals (all figures are mg per 100 g of dried mushroom) such as phosphorus (909.7), magnesium (141.3), sodium (12.7), zinc (7.4), iron (6.5), copper (2.8), manganese (0.8), and nickel (0.1). The results indicate that A. chaxingu is a valuable nutrient source.
