In order to obtain basic data for utilization of the aerial parts of Cnidium officinale Makino (APCO), the antioxidant properties of the aerial parts and rhizomes of C. officinale were measured using DPPH and ABTS radicals, and nitrite scavenging assays. The ethyl acetate (EA) fraction prepared from the aerial parts of APCO showed the strongest antioxidant activities, and contained high level of total phenolic compounds (325.81 mgTE/g) and flavonoids (259.16 mgRE/g). The concentrations for 50% reductions (RC50) values of the DPPH and ABTS radicals, and nitrite by the EA fraction of APCO were 11.27 μg/ml, 14.34 μg/ml, and 10.26 μg/ml, respectively. APCO exhibited approximately 3-9 times higher antioxidant activity than rhizomes of C. officinale. The antioxidant capacities of APCO were positively correlated with its total phenolic contents. Therefore, it was concluded that the aerial parts of C. officinale can be a useful and cost-effective source of natural antioxidant for food or cosmetics.

Adenophora racemosa is recently reported as a new Korean endemic plant species. However, the phylogenetic relationship of this genus has been controversial due to the morphological similarity and frequent morphological change of aerial parts. To verify the phylogenetic position of Adenophora racemosa and phylogenetic relationship of genus Adenophora, we analyzed the internal transcribed spacer (ITS) sequence of nuclear ribosomal DNA (nrDNA) and random amplified polymorphic DNA (RAPD) using 21 individual of 6 Adenophora species, A. verticillata, A. divaricata, A. racemosa, A. remotiflora, A. stricata and A. tetraphylla. In comparative analysis of the nrDNA-ITS sequences, we could not found not only any species specific nucleotide sequence but also could not estimated their inter or intra species. In the phylogenic analysis based on the RAPD derived DNA polymorphism, Adenophora species were classified into four groups by clustering analysis of the UPGMA. These results suggest that the DNA fingerprinting based on RAPD is more suitable than nrDNA-ITS sequence for the phylogenetic analysis of Adenophora species.

This work was to improve antimicrobial activities of horseradish by encapsulated with edible biopolymers such as lecithin and gelatin since it has been difficult to directly use horseradish extracts into foods and food containers due to its strong and undesirable flavors. It was shown that most of the nanoparticles containing the extracts were well formed in round shape with below 400 nm diameter as well as fairly stable and less odd flavors in various pH ranges by measuring zeta potentials. The encapsulation efficiencies of nanoparticles were estimated as 66.6% and 53.4% for lecithin and gelatin, respectively. Minimal Inhibitory Concentration (MIC) of both nanoparticles against G(+), Listeria monocytogenes and G(-), Salmonella typhimurium were also measured as 79 ppm based on AIT concentrations in the extracts, whose activities were about 65% higher than the case of adding crude extract. It was also found that the nanoparticles efficiently penetrated into the cell membrane and started to destruct the cells after 6 hours cultivation under Transmision Electron Microscopy observation. These results prove that the nano-encapsulation of the horseradish extracts can be employed to directly treat into the foods and food containers for antimicrobial purposes with the aids of aerosolization system, by using small amounts of the extracts and having less flavors due to masking effects of nanoparticles.

Complementary and alternative medicines are considered as a promising research field to develop new therapies for various allergic diseases. In this study, we investigated the anti-allergic effect of Agrimonia pilosa Ledeb (AP) by using passive cutaneous anaphylaxis in mice and its mechanism of action in mast cells. The extract of AP reversibly inhibited degranulation in RBL-2H3 cells and bone marrow-derived mast cells (BMMCs). AP also suppressed the passive cutaneous anaphylaxis inducing by IgE and antigen (Ag) in a dose-dependent manner. In the study to find its mechanism of action, AP inhibited the phosphorylation of Syk kinase, a pivotal protein which is regulated by Src-family kinase for activation of mast cells. In addition, AP also suppressed activation of Akt and Erk1/2 that are critical for the production of cytokines in mast cells. The results strongly suggest that AP exerts anti-allergic activity in vitro and in vivo through the inhibition of activation of Syk in mast cells.

Some fatty acids(palmitic acid, stearic acid, oleic acid, linoleic acid and linolenic acid) in foxtail millet seeds were evaluated. In this study, 32 varieties of accession collected from different place of South Korea were used in order to evaluate their fatty acid composition and concentration. These samples were analyzed by GC with HP20 column. Significant variability in individual fatty acids was observed. The palmitic acid ranged from 10.9 to 13.5%, stearic acid from 2.5 to 8.3%, oleic acid from 10.0 to 15.8%, linoleic acid from 62.5 to 67.9% and linolenic acid ranged from 3.0 to 5.2%. This variability can be exploited for selection of plant and for studying the genetic variability in millet. These selections can also be utilized for genetic improvement of the crops.

In this study, the bioactivities of ethanol (EELS) and water extract (WELS) from the leaf of Lythrum salicaria L. were investigated. In the anti-cancer activity, the growths of both human prostate cancer (DU145) and human colonic carcinoma cell (HT29) were inhibited up 60% by adding 10 mg/ml of EELS. Anti-inflammatory activity of EELS and WELS have been evaluated on lipopolysaccharide (LPS) induced release of nitric oxide (NO) by the macrophage RAW 264.7 cells. EELS and WELS inhibited inflammatory by 57.3 and 46.9% in 10 mg/ml, respectively. In the anti-oxidative activity, IC50 of DPPH radical scavenging activity was respectively 60.71 and 92.90 μg/ml by EELS and WELS. In the anti-diabetic activity, IC50 of α-amylase inhibitory activity of EELS and WELS were respectively 5,250 and 5,020 μg/ml. IC50 of α-glucosidase inhibitory activity was 7.96 and 68.41 μg/ml by EELS and WELS. In the anti-obesity, IC50 of lipase inhibitory activity was 880 and 9,840 μg/ml by EELS and WELS. Finally, EELS and WELS exhibited anti-oxidative, anti-inflammatory, anti-diabetic activity and anti-obesity. It suggests that Lythrum salicaria L. could be potentially used as a resource of bioactive materials for health functional foods.

Root yield and quality of ginseng cultured in paddy soil was low relatively compared with that of upland soil because of moisture injury in root during rainy season. Drainage class in soils generally divided into 6 classes, and it is possible to cultivate ginseng practically in imperfectly drainage class (IDC). This study carried out to select the varieties that is suitable for paddy soil, which is easy to be generated rusty-colored root and physiological-discolored leaf. Experiment plot arranged with the condition of soil humidity contents such as poorly drainage class (PDC) and imperfectly drainage class (IDC), and upland soil. Growth characteristics and root yield were investigated in four-year-old ginseng of varieties, Cheonpoong (CP), Yeonpoong (YP), Hwangsookjong (HS), and Jakyeongjong (JK). CP among four varieties showed the highest yield in IDC and CP was the lowest ratio in leaf discoloration and rusty-colored root. HS was followed by CP in the order of root yield, but it had the weakness that the ratio of rusty-colored root was high respectively.

The bark of Berberis koreana Palibin was fermented by Bifidobacterium longum B6 and Lactobacillus paracasei at 37℃ for 72 hour, then extracted by water solvent at 100℃ for 180 min. Total pholyphenol and flavonoid contents were improved by fermentation process, compared to conventional water extraction. The barks of B. koreana Palibin extracts by B. longum B6 (FE-B.L.) and by L. paracasei (FE-L.P.) showed 17% and 16% cytotoxicity on human normal cell lines(HEK293) at 1.0 mg/ml of the highest concentration, respectively, which was about 3~5% lower than 20% from normal extracts (NE). DPPH radical scavenging activity of the FE-B.L. and FE-L.P. were about 73% and 75.9% higher than 56.8% of NE. The highest inhibitory potency on xathine oxidase and superoxide dismutase (SOD)-like activities were also measured as 31.9% and 61.9% by adding FE-L.P. of 1.0 mg/ml. On tyrosinase inhibition test, the FE-L.P. showed highest activity as 75.9% at 1.0 mg/ml. Generally, FE-L.P. showed higher antioxidant activities as well as higher tyrosinase inhibition activity, possibly due to high contents of total pholyphenol and flavonoid. In general, fermentation of barks of B. koreana Palibin has relatively better biological activities than normal extracts. Specifically, the extracts fermented by L. paracasei showed higher activities than that from B. longum B6.

The use of cellulolytic lactic acid bacteria in new method to prepare high nutrition complementary foods was investigated. For the screening of cellulolytic lactic acid bacteria, more than 1,150 bacterial colony were isolated from diluted infant feces samples. A typical strain which appeared the most excellent cellulolytic activities was identified novel acidophilic Enterococcus sp. TO-94 through the results of morphological, biochemical and chemotaxonomic characteristics and 16S rDNA sequencing. The optimal lactic acid fermentation conditions of Omija(Schizandra chinensis Baillon) by Enterococcus sp. TO-94 were as follows: pH and temperature were 3.0 and 37℃, respectively, and fermentation time was 20hrs. The fructose and glucose were major free sugar and the contents were 5.83 and 4.30 mg/g after fermentation, respectively. The contents of lactic acid and acetic acid were 9.84 mg/g and 2.08 mg/g after fermentation, respectively. The vitamin B1, B2, niacin, folic acid and C were major vitamin in the fermented broth, the contents were 1.5~3 times higher than those of initial fermentation time. Also, the contents of polyphenol and anthocyanine were 3.8 and 1.2 times higher than those of initial fermentation time.
