        배의 가공 활용을 위해 숙기가 다른 원황, 신고 및 추황배 를 이용하여 식초를 제조하여 이화학적 특성 및 항산화활성 을 조사하였다. 숙기가 다른 배의 특성 조사 결과 경도는 숙기가 가까운 원황은 낮았고 미숙과인 신고, 추황배는 높 았으며, 당도는 유의적인 차이가 없었다. 품종별 배식초의 품질 특성을 조사한 결과 총 산 함량은 4.89~7.98%로 추황 배가 가장 높았고, 색도 L* 값은 원황 신고 추황배를 이용하 여 제조한 식초의 색도 L* 값은 유의적인 차이를 나타내지 않았고, 적색도 a* 값은 원황 배를 이용하여 제조한 식초가 가장 높았으며, 황색도 b* 값은 신고배를 이용하여 제조한 식초가 가장 높은 값을 나타내었다. 주요 유리당은 glucose, fructose, sorbitol로 품종에 관계없이 sorbitol의 함량이 가장 높았다. 총 폴리페놀 및 플라보노이드 함량은 35.2~55.3, 8.4~14.4 mg/100 g으로 추황배를 이용하여 제조한 식초가 높았고, 원황, 신고를 이용하여 제조한 식초가 낮았다. 항산 화 활성은 총페놀과 정의 상관을 보였으며, DPPH 라디컬 소거능은 세가지 품종 배를 이용하여 제조한 식가 45.0~ 62.1%였고, ABTS+ radical 소거능은 73.8~78.2%를 나타내 었다. 이상의 결과로부터 낙과나 비 상품과인 원황, 신고 및 추황배를 사용하여 기호성을 갖춘 식초를 제조할 수 있는 것으로 판단되어 이에 대한 관능적 특성 및 대규모 생산에 대한 추후 연구가 필요할 것으로 사료된다.

        Antioxidant activity and inhibitory effect on oxidative DNA damage of ethyl acetate fractions extracted from Cone of Red Pine (Pinus densiflora) were investigated to find utilization of Cone, by-product of Red Pine, thrown out after berry shatter, as a new natural plant resource. Cone from P. densiflora was extracted with methanol (MeOH) and separated to petroleum ether, ethyl acetate and water fraction. Among them, ethyl acetate fraction was used. The antioxidant activity was conducted by the 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical, 2, 2'-Azino-bis (3-ethylbenzothiazoline-6 sulfonic acid) diammonium salt (ABTS) radical scavenging assay, Fe 2+ chelating assay and reducing power assay. The inhibitory effect on oxidative DNA damage was determined by DNA cleavage assay using φX-174 RF I plasmid. The results of DPPH and ABTS radical scavenging activity at 200 ㎍/㎖ of extracts were 86.50% and 95.80% respectively, which were similar figures compared with L-ascorbic acid as control. Fe 2+ chelating activity was 77.96% and reducing power was 0.77 at 200 ㎍/㎖. Total phenolic component was 27.29±0.3 ㎎/g and Vitamin C content was 1.84±0.1 ㎎/g. Also ethyl acetate fraction from Cone has inhibitory effect, using φX-174 RF I plasmid on DNA cleavage assay. In conclusion, Cone, by-product of P. densiflora, showed high antioxidant activity and inhibitory effect on oxidative DNA damage. Therefore this study suggests Cone, useless by-product, can be developed as a new natural plant resource with lots of utilization such as an effective antioxidant, natural medicine, food, cosmetics and so on.

        This study is focused on the evaluation of growth parameters, total polyphenol content (TPC), chlorophyll content as well as the DPPH (1,1-diphenyl-2-picryhydrazyl) free radical scavenging activity of young barley seedling (YBS) affected by elicitation. Salicylic acid (SA), methyl jasmonate (MJ), amino acid liquid fertilizer (ALF) and microbial metabolism activator (MMA) were used. Elicitation was conducted for two times and various concentrations were used in this study. The result revealed that, MJ 1 ml/L treated-YBS gave the longest seedling length of 1.33 cm, followed by the ones treated with SA 1.38 mg/L and ALF 2 ml/L, respectively. ALF 3 ml/L treatment gave the highest fresh weight of 10 seedlings, followed by MJ 5 ml/L and SA 13.8 mg/L treatment with 1.56 g, 1.55 g and 1.53 g respectively. SA 138.12 mg/L elicitor treated-YBS gave the highest Chl a, Chl b content of 8.57 μg/mg and 3.83 μg/mg, respectively while the highest carotenoid content was found in MJ ml/L treatment with 1.62 μg/mg. Among elicitor treated-YBS, SA showed better TPC. The highest TPC was found in SA 1.38 mg/L treatment with 18.82 mg/g TAE. Likewise, SA 1.38 mg/L showed the highest DPPH free radical scavenging activity among all the treatments. However, the lowest TPC was found in ALF 1ml/L treated-YBS with 9.46 mg/g TAE, which was even lower than the control (14.31 mg/g TAE).

        Background : This study aimed to investigate the antioxidant and antiproliferative activities of extract from different parts of water chestnut (Trapa japonica Flerow). Methods and Results : The total polyphenol content of pericarp and seed extract was 438.31 ㎎/g and 25.32 ㎎/g respectively. DPPH radical scavenging assay showed that the half maximal inhibitory concentration (IC50 values) of pericarp and seed extract were 5.28 ㎍/㎖ and 355.51 ㎍/㎖ respectively. In addition, the pericarp extract showed strong reducing power. In the MTT assay, the pericarp extract significantly inhibited the viability of A549, AGS, HeLa, PC-3, HCT116, HT29 and SW620 cell lines compared with the seed extract. Conclusions : These results suggest that T. japonica Flerow extracts have significant antioxidant and antiproliferative activity.

        The purpose of this study was to improve the functionality of a healthy drink with examining the possibility of manufacturing different enzymes (alpha-, beta-, glucose-amylase) in barley malts (BM) produced in various malting periods. The study showed that enzyme treatment increased significantly total polyphenol content (TPC), DPPH radical scavenging activity and hydroxly radical scavenging activity in malted liquid samples (MLS) which obtained from various malting periods. The highest of TPC were found in Gluco-24M with 1.981 ㎎TAE/㎖, followed by Beta-24M and Alpha-72M with 1.878 ㎎TAE/㎖ and 1.845 ㎎TAE/㎖, respectively. The DPPH result revealed that percent of inhibition increased by 71-75% compared to the control. No statistical difference was found between MLS obtained by 24 hr of malting (24 M) and 72 hr of malting (72 M) after enzyme treatment. In addition, an increasing of hydroxyl radical was in the same trend to the TPC and DPPH. The hydroxyl radical scavenging activity of enzyme treated samples was 1,5 times higher than the control. These results suggest the possibility of enzyme application to barley malts obtained in various germination periods for improving quality and functionality of barley malts.

        Total phenolic compounds and antioxidant activity were investigated in leaves of organic apricot, filbert, mulberry, persimmon, and pomegranate trees during growing season. Total phenolic compounds and antioxidant activity in leaves of organic apricot and filbert trees were gradually increased from May to June, attained peak in July, thereafter decreased to minimum level in October. In leaves of organic mulberry tree total phenolic compounds and antioxidant activity were simultaneously increased from May to June and sharply decrease to very low level. The leaves of organic persimmon trees showed very high level of total phenolic compounds and antioxidant activity from May to June, thereafter gradually decrease to October. The leaves of organic pomegranate trees showed extraordinarily highest level of total phenolic compounds among five fruit trees investigated in the study during growing stages, as well as maintained higher than 91 percent of antioxidant activity from May to October. Correlation coefficients between total phenolic compound and antioxidant activity of the leaves of five organic trees were the highest in mulberry leaves, and then persimmon, filbert, apricot, and pomegranate, respectively. However, correlation coefficients between total phenolic compound and antioxidant activity of the leaves of organic pomegranate were very low level, and not significant in their relationship.

        Schisandra chinensis (Sc), a species of the family Schisandraceae used fruits as medicinal herbs. In the study, we performed to determine a comparison of antioxidant activity from Sc water extracts depending on stir-frying and stir-frying with liquids by 30% ethanol pretreatments. The contents of polyphenol and flavonoid, DPPH radical scavenging, ABTS radical scavenging and reducing power activity were measured to evaluate the antioxidant activity. Total polyphenol and flavonoid contents of Sc extracts were increased in stir-frying and 30% ethanol stir-frying pretreatments compared to a control. In particular, contents of stir-frying pretreatments Sc were highest increased at 220℃ treatments. The DPPH radical scavenging activity were highest increased in stir-frying pretreatments at 220℃. And result that measurement of the ABTS radical scavenging, it showed higher activity in 30% ethanol stir-frying pretreatments at 180℃ and 220℃. But Sc in the 140℃ showed higher activity in stir-frying pretreatments. In the reducing power activity, stir-frying pretreatments increased higher than 30% ethanol stir-frying pretreatments at 220℃. As in results, antioxidant activity of Sc water extracts in stir-frying and stir-frying with liquids process increased higher than a control, and it was most effectively in stir-frying pretreatments at 220℃.

        In vitro and in vivo experiments using Achyranthis radix and Drynariae rhizoma extracts were conducted. Antioxidant properties were analyzed and the effects on bone, glucose and lipid metabolism were investigated. Drynariae rhizoma (64.67%) obtained higher DPPH radical scavenging activity compared to Achyranthis radix (19.03%). Similar results were obtained in the reducing power. No differences were observed on the ABTS radical scavenging ability and SOD. In contrast, Achyranthis radix (77.60%) has higher chelating ability compared to Drynariae rhizoma (46.21%). In vivo experiments revealed higher plasma TBARS in OVX-DR than in OVX-AR. Opposite result was seen in erythrocyte TBARS. Hepatic, nephritic and erythrocyte enzymes were considered for the antioxidant enzyme activities. GSH-Px and PON of hepatic enzymes were higher in OVX-AR. While the CAT and GR were higher in OVX-DR. SOD, GSH-Px, GR and PON of nephritic enzymes of OVX-DR were higher compared to OVX-AR. Almost similar values were obtained in CAT using both extracts. The OVX treated rats obtained higher CAT and GR in the erythrocyte enzymes compared to SHAM. The SOD of erythrocyte enzymes in OVX-DR was higher compared to OVX-AR. On the other hand, the GSH-Px was higher in OVX-AR.

        This study was conducted to clarify the antimicrobial effect, antioxidant and tyrosinase inhibitory activities of the biological composition having the Phytolacca americana, and to enhance the natural materials utilization of foods and cosmetics. The antimicrobial activities of the different parts of P. americana were evaluated using the agar diffusion test. The antimicrobial activity of P. americana was relatively high in Malassezia furfur known as a skin fungi and Vibrio parahaemolyticus compared to Escherichia coli and Staphylococcus epidermidis. However, the antimicrobial activity in Vibrio parahaemolyticus did not show at all parts of P. americana. Both the DPPH radical scavenging activity and ABTS radical scavenging activity have been increased with the higher concentration of methanol extract. In particular, leaf extract of P. americana exhibited the highest activity both ABTS radical scavenging activity and DPPH radical scavenging activity. The nitrite scavenging activity was decreased when the pH was changed from pH 1.2 to pH 6.0. The highest nitrite scavenging activity was exhibited from the methanol extract of fruit, followed by root, stem, and leaf at pH 1.2. However, the nitrite scavenging activity at pH of 6.0 was not almost detected. All plant parts of P. americana showed tyrosinase inhibitory activity. The highest activity was found in the stem, and followed by root, leaf, and fruit in order. These tyrosinase inhibitory activity was progressively increased in a concentration-dependent manner. In this experiment on the methanol extracts of different organ from P. americana, we confirmed that the extract of P. americana showed potent tyrosinase inhibitory activity. Taken together, we conjectured that the P. americana had the potent biological activities, therefore this plant having various functional components could be a good material for development into source of natural food additives and cosmetics

        유기 및 일반재배에 따른 풋고추의 이화학적 품질특성 및 항산화활성을 비교하고자 무게, 길이, 수분함량, 표면색도, 경도, DPPH 및 ABTS radical 소거능, 총페놀함량 등을 분석하였다. 무게, 길이의 경우 전반적으로 유기농 풋고추에서 무게가 적고, 길이가 짧았으며 수분함량의 경우 유기 및 일반재배 간 비슷한 값을 나타내었다. 표면색에 있어서 유기농 풋고추의 L과 b값이 높았고, a값은 일반재배 풋고추의 값이 높았으며 재배조건에 따른 L, a, b값의 유의적인 차이를 보였다. 항산화활성의 경우 DPPH radical 소거능은 유기농 풋고추가, ABTS radical 소거능은 일반재배 풋고추가 높은 활성을 보였다. 총 페놀 함량은 유기농 풋고추 값이 높았으나 유의적 차이를 보이지 않았다. 본 연구에서는 무게, 길이 등의 외적 품질에 대해서 일반재배 풋고추의 값이 높았고, 항산화활성에 대해서는 전반적으로 유기농 풋고추에서 다소 높은 활성을 보였으나 유기 및 일반재배에 따른 내외적 품질비교를 위해서 더 많은 분석이 추가로 진행되어야 할 필요가 있다고 사료된다.

        본 연구에서는 수입산 열대·아열대 과일의 항산화 효과를 비교하기 위하여 총 폴리페놀 함량, DPPH radical 소거능, ABTS radical 소거능, superoxide anion radical 소거능, FRAP 활성, tyrosinase 저해효과, 환원력 등을 측정하였다. 총 폴리페놀 함량은 석류가 12.22 mg GAE/g으로 가장 높았고 그 다음 순으로 파인애플이 3.77 mg GAE/g이었으며, 용과, 그린키위, 파파야, 옐로우망고가 2.45~2.99 mg GAE/g의 범위로 나타났다. 석류는 DPPH, ABTS, superoxide anion radical 소거능, 환원력에서 다른 과일보다 높은 활성을 보여주었고 그 다음으로 파인애플이 높은 활성을 보였다. 특히 석류는 추출물의 농도가 증가함에 따라 전반적으로 활성이 증가하는 경향을 보였고 시료 농도 5 mg/mL에서는 DPPH radical 소거능과 ABTS radical 소거능 및 환원력이 양성대조군으로 사용한 ascorbic acid와 대등한 효과를 보였다. 반면에, 용과와 파파야는 대부분의 항산화 효과 실험에서 낮은 활성을 나타내었다.

        본 연구에서는 부재료를 첨가하지 않는 건 블루베리를 제조기술을 확립하고자 건조 온도를 달리하여 건 블루베리의 품질변화와 항산화 특성을 조사하였다. 즉, 건 블루베리 제조는 건조 온도에 따라 A(40℃, 72시간), B(40℃, 48시간 및 50℃, 24시간), C(50℃, 72시간), D(60℃, 72시간)로 하였다. 건 블루베리의 수율을 측정한 결과 17.73~31.17%의 범위이었으며 건조 온도가 낮을수록 유의적으로 높게 나타났다(p<0.05). pH는 A가 가장 높았으며 가용성 고형분 함량은 건조 온도가 높을수록 유의적으로 높아지는 것으로 나타났다(p<0.05). 수분함량 및 수분활성도는 건조 온도가 높을수록 낮아지는 경향으로 나타났다. 색도를 측정한 결과 L값은 건조 온도가 낮은 A가 높게 나타난 반면 a값 및 b값의 경우는 건조 온도가 높은 D가 높게 나타났다. 건조된 건 블루베리의 색도는 건조 온도가 높을수록 건조는 빨리 되었지만 육안으로 보았을 때 과피의 색이 주황색으로 변하여 상품으로 적절하지 않았다. 조직감 변화는 경도(hardness), 점성(gumminess) 및 씹힘성(chewiness)은 건조 온도가 높을수록 높은 값을 나타내었으며 탄력성(springiness)과 응집성(cohesiveness)은 비슷한 경향으로 건조 온도가 높을수록 약간 증가하는 경향이었지만 유의적인 차이는 없었다(p<0.05). 관능적 특성에서 전반적인 기호도는 B > A > C > D순으로 평가되었다. 항산화 특성으로 총 폴리페놀 함량과 DPPH radical 소거능을 측정한 결과 건조 온도가 낮을수록 항산화 활성이 높게 나타났다. 따라서 건 블루베리 제조에 적당한 처리군은 B로 열풍건조 온도를 40℃로 하여 48시간 건조 후 온도를 50℃로 높여 24시간 동안 건조하는 것이 품질이 우수한 상품과 형성율을 높이는데 좋을 것으로 생각된다.

        Grain color distinguishes between the pigmentation of the outer layer of the kernel. It is known that environmental factors affects the production of anthocyanins and abiotic stresses like high light intensity, low temperature, high salinity and/or drought stress, and others increase their amounts. After 7 days the germination rate between yellow and dark-purple seeds were almost the same with and without stress (100% yellow seeds under stress and without stress germinated, 93.3% under stress and 96.6% without stress of purple seeds germinated), even though at the final stage the germination was almost the same, we can conclude base on our observations that the germination takes place at a different rate. We think that this might be related to the seed color, since the germination of purple seeds under salt stress started earlier than the yellow ones, until both reached the same point. The antioxidant activity was higher in seedlings from dark-purple seeds than the yellow ones, and they were higher under salt stress than without it, supporting our hypothesis that the purple color in wheat seeds works as a protection under salt stress. Furthermore, the qRT-pCR showed that some genes related to the flavonoid pathway were expressed or had more expression in the seedlings from dark-purple seeds than yellow ones.

        Flavonoids and total polyphenols are important secondary plant metabolites, as they play a role in reducing the oxidative stress caused by ROS In this study, we investigated for flavonoid contents, total polyphenol contents, and antioxidant activities in 27 accessions from 10 Vicia species. Among 27 vicia accessions, NAC17 (V. monantha) and NAC14 (V. hyrcanica) had the highest total flavonoid (1.42 ± 0.09 mg/g) and total polyphenol (124.2 ± 0.5 μg/GAE mg) contents, respectively. In four flavonoids, naringenin showed the highest concentrations in Vicia species. The DPPH and ABTS were the range from 0.2 (NAC24, V. sativa subsp. nigra) to 18.5 (NAC13, V. faba) μg/ASC mg and 19.1 (NAC7, V. cracca) to 253.4 (NAC13, V. faba) μg/Trolox mg, respectively. Among the 10 Vicia species, V. monantha and V. hyrcanica had the highest flavonoid (1.31 ± 0.09 mg/g) and total polyphenol (116.5 ± 2.0 μg/GAE mg) contents, respectively. The highest antioxidant activity was detected in V. faba. These results will expand the flavonoid database and provide information on Vicia species valuable for development of functional foods or feed-additives resources.

        Total phenol, flavonoid and antioxidant components of cabbage leaf samples derived from different cultivar were determined. Total phenol compound content showed the highest amount in methanol extracts from ‘YR Howol’ cultivar (11.72 ㎎/g), followed by ‘Harutame’ (10.66㎎/g), ‘Winstar’ (10.34 ㎎/g) and YR Hero (10.20 ㎎/g). The highest amount of total flavonoid content was observed from the methanol extracts of Harutame (5.39 ㎎/g), followed by Winstar (4.28 ㎎/g), Wialhowol (4.10 ㎎/g). The SOD enzyme activity showed a high activity of ‘YR Hogeo’ cultivar, and the cultivar of ‘YR Howol’ cultivar showed the lowest activity of SOD. The activity of CAT and APX showed higher values ‘Ogane’ and ‘YR Hogeol’ cultivars than the other cultivars. The POD activities showed relatively high values ‘Ogane’ and ‘YR Howol’ cultivars compared with other cultivars. The free radical (DPPH) scavenging activity showed lower IC50 values of ‘Harutame’ (15.71) and ‘YR Howol’ cultivar (16.88), however methanol extract of ‘YR Hero’ cultivar (22.49) being the highest. The extracts of all cabbage cultivars in the reaction solution of pH 1.2 could be decomposed nitrite more than 50%. Especially, the cultivar ‘YR Hogeol’ and ‘Ogane’ showed a relatively high nitrite scavenging activity for each 60.13% and 57.20% respectively. The IC50 values of antioxidant activity determined by ABTS were lower in ‘Harutame’ (17.04) and ‘YR Howol’ cultivar (17.97), and its results observed similar with values obtained from the same extracts by DPPH method. The result of this study suggests that the methanol extract of Brassica oleracea L. contains the high amount of phenolic and higher radical scavenging activities.

        This experiment was conducted to obtain the have higher contents of pharmaceutical constituents as well as higher yield from colchicine induced diploid and tetraploid extracts of Platycodon grandiflorum. In order to determine the biological activity, this study was focused to evaluate the cytotoxicity, antimicrobial on the bronthus disease bacteria, antioxidant enzyme activity of diploid and tetraploid extracts in P. grandiflorum. The activities of antioxidant enzyme according to different solvent extracts were measured as superoxide dismutase (SOD), catalase (CAT), peroxidase (POD), and ascorbate peroxidase (APX). The cytotoxicity of methanol extracts of P. grandiflorum showed significant differences between tetraploid and diploid. That is, the cytotoxic effect against human cancer cell was higher in tetraploid than in diploid. At all extracts concentration, tetraploid samples showed high toxicity and the IC50 (concentration causing 50% cell death) value showed the highest on HCT-116 cell (105.91 μg/mL), and exhibited significant activity against the Hep 3B cell (140.67 μg/mL), SNU-1066 cell (154.01 μg/mL), Hela cell (158.37 μg/mL), SNU-601 cell (182.67 μg/mL), Calu-6 cell (190.42 μg/mL), MCF-7 cell (510.19 μg/mL). Antimicrobial activities of diploid P. grandiflorum were relatively low compared to tetraploid P. grandiflorum on most of the bacterial strains. In tetraploid P. grandiflorum, K. pneumoniae showed the clear zone formation (18~19 mm) of growth inhibition, followed by the clear zone formation of 13~15 mm on C. diphtheria and S. pyogenes. The antimicrobial activities in diploid P. grandiflorum were the highest on K. pneumonia (14~15 mm), and showed the clear zone formation of 11~12 mm on C. diphtheria and 12~13 mm on S. pyogenes. The antimicrobial activity is thought to look different depending on the bacterial strains and the polyploidy of P. grandiflorum. The root extract of P. grandiflorum had the highest (97.2%) SOD enzyme activity in ethyl acetate partition layer of tetraploid while water partition layer of diploid showed the lowest (48.6%) SOD enzyme activity. The activity of CAT showed higher values in the root of tetraploid than in the diploid of P. grandiflorum in all partition layers except butyl alcohol. The activities of APX and POD showed higher values in the root of tetraploid than in the diploid of P. grandiflorum in all fraction solvents except water layer. These results indicate that the tetraploid P. grandiflorum can be used as a source for developing cytotoxic agent and antimicrobials which can act against bronchus diseases bacterial strains.

        A total of CNU 28 colored hybrids developed at the Chungnam National University were evaluated to identify new cultivars with functionality. These color waxy corn hybrids appeared to have high antioxidant activity. The SOD activity in the developed color waxy corn was high; CNU13H-3, in white hybrid, and CNU13H-44, in yellow hybrid, was 5% and 27% higher than the Yeonnong and Daehakchal Gold 1 of control hybrids, respectively. The DPPH activity in CNU13H-44, of yellow hybrid, and CNU13H-75 of purple hybrid were high as 32.6 mg/g and 40.1 mg/g, respectively. We have already reported that color hybrids have high antioxidant activity. In this study also was same results. On the basis of our findings, these hybrids will be planted in next time to compare their productivity and area adaptation.

        본 연구는 열처리 온도 및 시간이 토종 다래(A. arguta) 퓨레의 품질 특성 및 항산화 활성에 미치는 영향을 알아보기 위해서 70, 80, 90℃의 온도에서 각각 1, 3, 5분간 열처리하여 pH, 당도, pulp 함량, 색도, 점도, 조직감 및 미생물 수 등의 품질특성과 비타민 C, 총 페놀, 항산화 활성을 분석하였다. pH, 당도 그리고 pulp 함량의 경우 열처리 온도가 증가하고 열처리 시간이 길어질수록 감소하는 경향을 나타내었고, L, a, b값과 갈변도는 증가하는 경향으로 나타났으며, 점도와 adhesiveness 또한 증가하는 경향을 나타내었다. 일반세균과 곰팡이 수는 열처리 온도가 증가하고, 시간이 경과함에 따라 감소하는 경향을 보였다. 대장균군과 효모는 모든 조건에서 검출되지 않았다. 비타민 C와 총 페놀 함량은 온도가 증가하고 열처리 시간이 길어질수록 감소하는 경향을 나타내었고 70℃온도에서의 열처리와 모든 열처리 온도에서 1분간 열처리 시 대조구와 유사하였고 90℃에서 5분간 처리 시 크게 감소하는 것으로 나타났다. 항산화 활성은 비타민 C와 총 페놀 함량과 유사한 결과를 나타내었고, 따라서 다래의 항산화 활성은 비타민 C와 총 페놀이 주요한 요인으로 작용한다고 사료된다. 본 연구의 앞선 결과를 통해서 다래 퓨레를 90℃에서 5분간 열처리 시 이화학적 특성과 항산화 활성이 크게 감소하여 품질이 저하되는 것을 확인할 수 있었다. 결과적으로 본 연구 결과는 다래 퓨레의 안정성 및 상품적 가치판단에 따른 기초자료를 제공할 것으로 사료된다.
