        This paper elucidates the novel direction of food research in the era of the 4th Industrial Revolution characterized by personalized approaches. Since conventional approaches for identifying novel food materials for health benefits are expensive and time-consuming, there is a need to shift towards AI-based approaches which offer more efficient and costeffective methods, thus accelerating progress in the field of food science. However, relevant research papers in this field present several challenges such as regional and ethnic differences and lack of standardized data. To tackle this problem, our study proposes to address the issues by acquiring and normalizing food and biological big data. In addition, the paper demonstrates the association between heath status and biological big data such as metabolome, epigenome, and microbiome for personalized healthcare. Through the integration of food-health-bio data with AI technologies, we propose solutions for personalized healthcare that are both effective and validated.

        This study investigated the nutritional compositions and physiochemical properties of three domestically cultivated jujube fruits (Boeun, Sangwhang, and Bokjo). Nutrient contents were analyzed by freeze-drying the jujube fruits. The results showed that the proximate compositions of the three jujube cultivars ranged from 7.85~13.52% for moisture, 4.65~5.24% for crude protein, 1.29~2.38% for crude ash, 0.17~1.09% for crude lipid, and 7.66~16.63% for crude fiber. The above proximate contents of jujube cultivars were significantly different. Mineral contents of Al, Fe, Mg, Ca, Na, and K in the three jujube fruits were also determined. Mn, Cu and Zn were not detected in any of the varieties. The content of Al was higher in Sangwhang, while Boeun had higher contents of Ca and K. The total polyphenol, ABTS values, and hypoglycemic effect were slightly higher in Boeun as compared to the other varieties. Taken together, Boeun could be an important source of natural antioxidant as a functional food.

        This study investigated the quality characteristics and volatile flavor components of aronia wine (Aronia melanocarpa (0~100%)). After 12 days of fermentation, the alcohol contents of aronia wines ranged between 9.0~12.0%. The pH level and total acidity of aronia wines were 3.20~3.68 and 0.57~0.76 g/100 mL, respectively. The organic acid analysis of wine containing 100% aronia, revealed malic acid content at 3.70 mg/mL, followed by tartaric acid, lactic acid, and citric acid. As the aronia content increased, both the total polyphenol content and the antioxidant activity (the DPPH radical scavenging activity) also significantly increased. The total polyphenol content was the highest in the wine with 100% aronia (461.33 mg%), and the antioxidant activity showed the highest values in the wine with 100% aronia (91.91%). Volatile flavor component analysis of aronia wines identified 8 alcohols, 12 esters, 4 ketones, and 7 other compounds. In the sensory evaluation, the color, flavor, and taste of wine with 20% aronia showed higher values than other aronia wines. Based on the results of the present study, we suggest that 20% aronia is most beneficial in improving the quality as well as sensory characteristics of the wine.

        This study investigates the quality characteristics of sweet persimmon jam added with aronia juice. Sweet persimmon jam was prepared with sweet persimmon, sugar, pectin and various amounts (20, 40, 60, 80%) of aronia juice, and it was assessed for pH, total acidity, color, sensory evaluation and hydrogen donating ability on 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) radical scavenging effects and content of the total polyphenols, respectively. Increasing the amount of aronia juice decreased the pH, whereas the total acidity gradually increased. In addition, with an increased amount of aronia juice, the lightness (L) and yellowness (b) significantly decreased, while redness (a) gradually increased. By increasing the amount of aronia juice, the polyphenol contents, DPPH and ABTS radical scavenging activities were increased. The results of the sensory evaluation showed that the sweet persimmon jam added with 80% aronia juice had the highest overall-acceptability scores. The results suggest enhancing the quality, palatability and acceptability of sweet persimmon jam by adding 60~80% of aronia juice.

        This study was carried out to evaluate the quality characteristics of Korean domestic commercial white wines. Four sample wines were analyzed in terms of their pH, total acidity, volatile acidity, alcohol content, soluble solid, free SO2, total SO2, color, free sugar content, organic acid, volatile compounds, total polyphenol content, DPPH radical scavenging activity and sensory characteristics. The pH of wines ranged from 3.06 to 3.76 and their total acidity from 0.43 to 0.83% (v/v). The alcohol content of samples ranged from 9.4 to 12.8% (v/v) and their soluble solid contents from 9.9 to 12.3 °Brix. The free SO2 and total SO2 contents of the W1 wine were lower than those of the other wines, while the color intensity, a (redness) and b (yellowness) of W1 wine were higher than the values of the other wines. The malic acid contents of the four wines indicated that complete malolactic fermentation (MLF) occurred in W1, incomplete MLF in W3, and was absent in W2 and W4. Aroma analysis resulted in identification of 10 alcohols, 11 esters, 2 ketones and 6 miscellaneous compounds. 2,3-Epoxybutane and 1-(ethenyloxy)-pentane levels in were significantly higher W1 than the other wines, while several types of ester predominated in W2, W3 and W4. W1 had the lowest sensory score among the four wines. Therefore, the quality characteristics of domestic white wines are considered to be acceptable.

        Vitamin K (phylloquinone) is an essential cofactor in the synthesis of active blood-clotting factors II, VII, IX and X. Deficiency of vitamin K leads to inadequate activity of these factors, resulting in bleeding. In this study, we investigated vitamin K1 content of agricultural products that are widely and specifically grown in Korea including 9 leaves and vegetables, 16 fruits, and 11 cereals and specialty crops. Vitamin K1 analysis of the agro-samples was by a validated, modified, reversed phase-HPLC method with fluorescence detection after post-column derivatization. The vitamin K1 content ranged from 1.83 to 682.73 μg/100 g in leaves and vegetables, 0.17 to 28.22 μg/100 g in fruits, and ND to 279 μg/100 g in cereals and specialty crops. Among the 36 samples, high content of vitamin K1 were found in Gugija (Lycium chinense Miller) leaves (average 682.73 μg/100 g) and Hansan ramie leaves (average 423.12 μg/100 g); however, mushroom, amaranth and Chinese artichoke showed no detectable levels. The results of ourstudy provide reliable vitamin K1 content of Korean grown agricultural products that expand nutritional information and food composition database.

        The nutritional compositions and physicochemical properties of two aronia varieties (Viking and Nero) cultivated in Chungbuk were investigated. The proximate compositions of Nero and Viking powder were:13% moisture, 0.58% and 0.6% ash, 0.73% and 0.33% crude lipid, 5.47% and 6.51% crude protein, 15.65% and 16.15% crude dietary fiber, and 64.36 and 64.43% crude carbohydrate, respectively. The proximate contents of the aronia samples were not significantly different. Among the physicochemical properties, there was also no significant change in total anthocyanin and antioxidant activity. However, Viking had higher total polyphenol contents and α-glucosidase inhibition activity than Nero. The mineral contents of Al, Fe, Mn, Mg, Ca, Na, K, Cu and Zn in the two aronias were determined. Cu and Zn were not detected in both varieties. With regard to Al, Na and K, Nero was higher than Viking, while Ca was higher in Viking than Nero. From the results, Viking could be suggested to be beneficial for food processing.

        Mulberry (oddi) is one of the most popular functional foods with many physiological components. This study investigated and compared the nutritional compositions and physiological activities of four mulberry fruits from Morus albo L. including Cheongilppong, Iksuppong, Suwonppong and Cheongsuppong (a new cultivar from Chungcheongbuk-do). To analyze the nutrient contents, mulberry fruits were freeze-dried. The results showed that the proximate compositions of the four mulberry cultivars ranged from 9.61~14.11% for moisture, 8.28~11.90% for crude protein, 3.70~4.86% for crude ash, 4.28~5.54% for crude lipid and 7.46~10.78% for crude fiber. The above proximate contents of mulberry cultivars were not significantly different. However, Cheongsuppong had the highest content of reducing sugar, 74.7%. Chungsuppong and Iksuppong showed higher contents of total polyphenol and anthocyanin than other mulberry cultivars, while all mulberry cultivars showed high antioxidant activities. Hypoglycemic effect had a slightly higher level in Suwonppong and Cheongsuppong than in the other samples. Taken together, the new cultivar “Cheongsu” oddi can be suggested as a potential source of functional food.

        2013년 하계기간 중 우리나라의 서울, 충남, 전북 지역 등지에서 유충이 두충(Eucommia ulmoides Oliv.)의 잎을 가해하며 심각한 피해를 발 생시키는 새로운 해충을 채집하여 사육한 후 우화한 성충을 분류동정 한 결과 두충밤나방(신칭) (Protegira songi Chen & Zhang)으로 확인되어 보 고한다. 또한 본 연구를 통해 상기종의 기주식물이 우리나라에서는 처음으로 확인된다. 아울러 본 종에 대한 발생 및 피해상황과 분류학적 특징을 기재함과 동시에 암수생식기의 특징을 도해하여 제시하였다.

        재배토성이 감초 생육 및 품질에 미치는 영향을 구명코자 2009년부터 2년간 시험을 수행한 결과를 요약하면 다음과 같다. 1. 재배년생별 생육중 경엽은 1년생, 포복경 2년생, 근은 2년생에서 양호한 경향을 보였으며, 토성에 따라서 경엽중은 사양토에서 무거웠고, 초장, 분지수, 경태는 사질식양토에서 우수하였다. 2. 포복경의 길이, 수, 무게 등 생육은 사질식양토 >사양토 >양질사토 순으로 좋았다. 3. 주근과 지근의 생육은 양질사토에서 길었으며, 주근경, 지근경은 사양토에서 굵었다. 지근수는 사질식양토에서 다소 많았다. 4. 근 수량은 주근, 지근 등에서 사양토 >사질식양토 >양질사토 순으로 많으며, 1년생과 2년생 근 상품 수량은 사양토에서 양질사토 204 kg/10a 대비 57%, 2년생은 71% 각각 증수하였다. 5. 글리시리진(glycyrrhizinic acid)의 함량은 1년생은 사질식 양토에서 1.62%, 2년생은 사양토에서 1.58%로 가장 높았다.

        본 연구는 유기액비 재료가 유기액비 제조시 화학적 특성 변화에 미치는 영향을 구명코자 충청북도농업기술원 플라스틱하우스에서 수행하였다. 계분, 대두박, 쌀겨 등 3처리를 하였다. 본 시험에서 얻어진 결과를 다음과 같이 요약할 수 있다. 액비 원료의 총 질소 함량은 대두박이 55 mg·kg−1으로 가장많았으며, 인산과 칼륨 함량은 계분에서 가장 많았다. 계분의pH는 중성에 가까웠으며, 대두박과 쌀겨는 강산성을 띠었다. 계분 액비의 EC는 발효기간이 증가할수록 증가하였고, 대두박과 쌀겨 액비는 발효기간 중 증가하다가 감소, 증가하는 경향이었다. 계분 액비의 황화수소 발생량은 발효 후 2주차에는3,200 mg·L−1이었으나, 발효 12주차에는 1,600 mg·L−1으로 감소하였고, 대두박과 쌀겨 액비는 발효 과정중 황화수소 가스가 발생하지 않았거나 거의 발생하지 않았다. 질소와 칼슘 함량은 계분 액비와 대두박 액비에서 가장 많았다. 인산, 마그네슘의 함량은 쌀겨 액비에서 각각 5.6 g·kg−1, 1.5 g·kg−1으로 가장 높았다. 칼륨은 처리에 따라 4.3-4.4g·kg-1으로 차이가 없었다.

        Gynura procumbens (Family Asteraceae) is a medicinal plant commonly found in tropical Asia countries such as China, Thailand, Indonesia, Malaysia, and Vietnam. Traditionally, it is widely used in many different countries for the treatment of a wide variety of health ailments such as kidney discomfort, rheumatism, diabetes mellitus, constipation, and hypertension. The objective of this study was to select the natural growth media for hydroponic cultivation of Gynura procumbens. The commercially available thirty four different organic nutrient solutions were analyzed for growing Gynura procumbens. After analysis, two organic nutrient solution were selected, mixed (pH 5.5~6.5 / EC 0.5~1.0 ds/m) and then used as organic fertilizers. Thirty day old seedlings were planted and the environmental conditions of the rhizosphere were also examined to select the natural media composition. The minimum temperature of rhizosphere by type of natural media was highest in cocopeat media and lowest in perlite media. Furthermore, plant growth was examined from 50 days old seedlings, and vermiculite was observed to be most effective and perlite was the least effective component as natural media. The total polyphenol content of the studied plant material was also higher in vermiculite in comparison to other growth media. The Gynura procumbens yields were also higher in vermiculite in comparison to other growth media. Thus, vermiculite can be used to improve Gynura procumbens plant growth as a natural growth media.
