        한국방송통신대학교에서 육성한 큰눈자미벼는 흑진주벼와 수원425호의 교배후대에서 C3G 색소함량이 높은 계통을 모본으로 선정하고, 쌀눈 크기가 큰 EM76을 부본으로 인공교배하여 육성한 품종으로(품종출원 2009-479호) 품질특성을 조사한 결과는 다음과 같다. 1. 큰눈자미벼는 흑진주벼에 비해 1000립중은 111%, 1립당 쌀눈의 무게는 건물중으로 282% 컸다. 그리고 현미 100 g에 함유된 안토시아닌의 주색소 C3G 함량은 큰눈자미벼의 경우 흑진주벼보다 2.2배 높은 593 mg(100 g 종자)을 함유하였다. 2. 큰눈자미벼의 단백질함량은 8.3%로 흑진주벼의 8.0%에 비해 다소 높았고, 아미노산조성을 보면 lysine 함량이 높았고 methionine과 cystein 함량은 다소 감소하였다. 3. 큰눈자미벼 품종의 현미 지질함량은 5.71%로 흑진주벼의 3.73%에 비해 1.5배 증가하였다. 큰눈자미벼의 지방산 중 팔미틴산과 올레산은 증가하였고, 리놀레산 함량은 감소하였다. 따라서 큰눈자미벼 품종은 고영양미로서 이용가치가 클 것으로 판단되었다.

        본 연구는 쌀을 다량 첨가하여 양조한 맥주의 품질을 조사하고 쌀의 첨가 시 당화도가 떨어지는 것을 보완하기 위하여 아밀라아제를 첨가하여 품질의 변화를 분석하였다. 품질 평가를 위하여 당화액인 wort의 당도, 환원당, pH, 점도의 변화를 측정하였고, 최종 제품인 맥주의 알코올 함량, 거품안정성, 쓴맛, 색도의 변화를 측정하였다. 실험에는 쌀을 200 mesh의 쌀가루를 맥아와 쌀가루의 총량에 대하여 0, 40, 50, 60, 70%를 첨가하였다. 실험결과 쌀 함량이 증가함에 따라 wort의 당도, 환원당 및 점도는 감소하였고, pH는 증가하여 당화력이 떨어졌다. 그러나 아밀라아제 첨가에 의하여 당화력이 다시 회복되었다. 쌀 함량 증가에 따라 맥주의 알코올 함량 및 거품안정성은 감소하였고, 쓴맛과 노란색이 증가하였다. 또한 쌀 첨가량이 증가할수록 혼탁한 느낌이 강하였다.

        This study was conducted to investigate the effects of acorn (Quercus autissima carruther) powder on the antioxidant activity and quality characteristics of cookies. Cookies were prepared with different amounts of acorn powder (at ratios of 0, 0.5, 1, 3 and 5% to total flour quantity). Antioxidant activity was estimated based on DPPH free radical scavenging activity and total phenol content in acorn powder and cookies. To analyze quality characteristics, bulk density, pH of the dough, spread factor, loss rate, leavening rate, color, texture profile analysis, and sensory evaluations were measured. Loss rate, a values, total polyphenol contents and DPPH free radical scavenging activity of cookies significantly increased with increasing acorn powder content (p〈0.01), whereas pH of the dough, L values and b values of the cookies significantly decreased with increasing acorn powder content (p〈0.01). The results of sensory evaluation (appearance, taste, flavor, texture and overall preference) demonstrate that the 3% acorn cookie group showed the highest degree of preference among all items of added acorn powder. From these results, we suggest that acorn is a good ingredient for increasing the consumer acceptability and functionality of cookies.

        Eggplant pickles were classified into three groups based on salt concentration (1, 3, 5%) and three groups based on drying time (30, 60 and 120 minutes), followed by storage at 5℃ for 28 days. Raw eggplant contains 94.82% water content. The increase in salt concentration and drying time caused a decrease in the moisture content. Compared to the 0.27% ash content of raw eggplant, the ash content of eggplant pickles increased noticeably with increasing salt concentration due to penetration into the eggplant pickles. pH values decreased significantly as the levels of salt concentration and dying time increased (p〈0.05). In terms of storage time, pH values decreased from 21 days. The variation in salinity increased significantly as the concentration of salt increased. Compared to normal pickles salted at 5.39% salinity, eggplant pickles constituted 0.27~0.77% (1%), 0.40~1.14% (3%), and 0.47~11.20% (5%) 'low-salinity' eggplant pickles. Reducing-sugar content differed on the dates of 7, 14 and 21 in drying time and at 3% salinity. Hardness differed at 30, 60, and 120M on the 28th and 1, 5% salt concentration. Resilience differed according to drying time and from dates of 0 to 14th. The number of total microbes decreased at low salinity. In terms of storage time, the number of microbes tended to decrease after the 21st. In the consumer preference test, lightness of 5%-30M was the highest value.

        The purpose of this study was to bake sweet rice muffins with oak mushroom (Lentinus edodes) powder. The process included substituting sweet rice flour for cake flour and adding oak mushroom powder. This study determined the optimal mixing conditions of oak mushroom muffins by adjusting the amounts of oak mushroom powder, whole eggs, and soybean oil. The mixing conditions for the oak mushroom muffins included 3 categories: oak mushroom powder (X1), whole eggs (X2), and soybean oil (X3) by Central Composite Design (CCD) which was optimized by Response Surface Methodology (RSM). Oak mushroom muffin formulation was optimized using rheology. Yellowness (p〈0.001) and redness (p〈0.05) displayed a linear model pattern, whereas lightness (p〈0.05) was represented by a quadratic model. Among the sensory properties, variables that appeared to show significant values such as appearance (p〈0.5), texture (p〈0.5), and overall quality (p〈0.5) were used to identify optimums. The result of mechanical properties showed significant values in gumminess (p〈0.5) and chewiness (p〈0.5). The numerical and graphical methods used in this study determined that the optimum formulation for oak mushroom powder sweet rice muffins was 8.75 g of oak mushroom powder, 235.95 g of whole eggs, and 19.93 g of soybean oil.

        The purpose of this study was to investigate the effects of dill on the quality characteristics of tomato sauce during 60 days of storage. As storage time increased, the pH stays between 4.10-4.22 on all additives. The lowest pH appeared on a 0% dill added sample during the storage period, except at 45 or 60 days of storage. The more dill was added, the less sugar appeared, and this was generally consistent across other samples. As storage times increased, the sugar content showed a tendency to decrease in all additives. Salinity turned out to be between 0.90-1.48 among all of the additives. For the L-value, the more dill was added, the less the L-value decreased, and this was consistent across all the samples. As the storage period increased, the L-value showed a tendency to decrease in all samples. The more dill was added, the more the a-value showed a tendency to decrease. The b-value showed a tendency to decline the more dill was added. Also, as storage time increased, the b-value decreased in all samples. Viscosity showed a tendency to increase in all samples the more dill was added. The reducing sugar content was kept between 44.83-55.38. A sensory evaluation was performed by 15 professional panelists with scoring tests for color, flavor, taste, aftertaste, viscosity, and overall acceptability. The tomato sauce with 2% dill showed the best score in the color, flavor, and overall acceptability. From the above results, the data suggests that an addition of 2% fresh dill to tomato sauce is recommended for commercial use.

        본 실험은 호박분말 급여가 돈육의 품질 특성에 미치는 영향을 조사하기 위하여 평균 개시체중 64.5 kg인 총 20두의 3원 교잡종(Landrace×Yorkshire×Duroc)을 대상으로 호박분말 급여량을 0, 2, 5 및 7%로 처리구별 5두씩 공시하여 출하전 30일간 급여하였다. 호박분말 급여구에서 높은 수분 함량 및 조지방 함량을 나타내었다. 명도(lightness) 값은 처리구들 간 유의적인 차이가 나타나지 않았으나(p>0.05), 적색도(redness)는 2% 및 7% 호박분말 급여구가 대조구에 비해 유의적으로 높은 값을 나타내었다. 육즙 및 가열감량은 모든 처리구에서 유의적인 차이가 없었으나, 5% 호박분말 급여구에서 높은 pH 및 모든 호박분말 급여구에서 낮은 전단가 값을 나타내었다. 호박분말 급여구에서 대조구에 비해 낮은 콜레스테롤 함량을 보이며, 호박분말 급여수준이 증가할수록 콜레스테롤 함량이 감소하였다. 또한 호박분말 급여구에서 높은 myristic acid(C14:0) 함량을 보인 반면, 2% 및 5% 호박분말 급여구에서 높은 palmitoleic acid(C16:1) 함량 나타내었다. 따라서 호박분말 급여는 돈육의 사후 pH와 수분함량을 높이고, 전단가 및 콜레스테롤 함량을 감소시키는 등 돈육 품질을 개선시키는 것으로 나타났다.

        This research focused on the effects of adding Hizikia fusiforme to Jeolpyun. We were able to demonstrate in this study that Jeolpyun after the addition of Hizikia fusiforme had the potential to become a functional food. Jeolpyun with 0, 2, 4, 6, and 8% of Hizikia fusiforme was analyzed by water content, color, sensory and textural characteristics immediately after production and one day later. The five different types of Jeolpyun did not show any significant differences in water content. However, all the Jeolpyun with Hizikia fusiforme showed slightly higher water retention ratio than the control after storage. As the result of Hunter's color values, lightness decreased significantly as the amount of Hizikia fusiforme increased. Redness increased in the Jeolpyun with Hizikia fusiforme compared with the control. Yellowness was highest in the Jeolpyun with 2% of Hizikia fusiforme and decreased with an increase in its content. In the textural analysis, hardness, chewiness, adhesiveness and gumminess of Jeolpyun with 2% and 4% of Hizikia fusiforme were similar to those of the control, whereas springiness of Jeolpyun with 2%, 4% and 6% of Hizikia fusiforme were similar to that of the control group. Cohesiveness significantly decreased as the amount of Hizikia fusiforme increased. When the Jeolpyun was preserved for one day, all five Jeolpyun showed significant increases in hardness, gumminess and chewiness. However, their adhesiveness significantly decreased. Cohesiveness decreased in all Jeolpyun except for the 8% Jeolpyun. In sensory evaluation, color and aroma became stronger as the content of Hijikia fuziforme increased, and 2% Jeolpyun showed similar hardness with the control. Jeolpyun with Hijikia fuziforme showed no difference in cohesiveness with the control, but the adhesiveness showed a little increase when compared to the control. The overall acceptability of 2% Jeolpyun showed slightly higher than control. After one day of storage, Jeolpyun with 2% of Hijikia fuziforme also showed the highest overall acceptability. And the overall acceptability showed the biggest decrease in the control group. Overall acceptability showed strong negative correlation with color, aroma and hardness, and showed strong positive correlation with cohesiveness and adhesiveness. After one day of storage, overall acceptability showed a decrease in correlation with color and smell and an increase in correlation with cohesiveness, compared to before storage. Results of multiple regression analysis showed that hardness had the biggest influence(-) on the overall acceptability of Jeolpyun, aroma and cohesiveness ranked second(-) and third(+) respectively. After one day of storage, cohesiveness had the biggest influence on the overall acceptability of Jeolpyun. Color and adhesiveness ranked second(-) and third(+) respectively. It can be seen that different factors influence overall acceptability of Jeolpyun after storage.

        This study compared the quality and antioxidant characteristics of commercial and traditional Doenjangs from various regions of Korea. The pH, salinity, and brix degree of the samples tested ranged from 4.61~6.36, 0.90~1.00% and 0.97~1.10 °Bx, respectively. The pH was highest for Doenjang made in the Jeonnam region. No significant differences in the salinity or brix degree of Doenjang from different regions of Korea were found(p>0.05). The L, a, and b-values for color of the Doenjang samples ranged from 52.92~55.00, 0.03~0.62 and -0.74~2.70, respectively. The total polyphenol content(TPC) ranged from 18.71~25.78 ㎎ GAE/㎖, and the 1, 1-diphenyl-2-picrylhydrazyl(DPPH) and 2, 2-azinobis(3-ethyl benzothiazoline)-6-sulfonic acid(ABTS) radical scavenging activities ranged from 6.43~14.38 and 2.46~7.08 ㎎ AE/㎖, respectively. The TPC was highest for Doenjang from Gyeongnam, while that from Gyeongbuk had the lowest content. The DPPH radical scavenging activity was highest for Doenjang from Jeonnam and lowest for Doenjang from Gangwon. The ABTS radical scavenging activities for Doenjang from Gyeonggi and Gyeongbuk were lower in comparison to samples from other regions. Consequently these results should provide better information for standardizing and improving the quality and functional activity of commercial Doenjang in Korea.

        The objective of this study was to address the issues associated with the solubility of the pork meat oligopeptide, while maintaining its original nutritional value and improving its digestibility. The pork meat oligopeptide was used to produce an oral liquid supplement that was contained in a 200 ㎖ can. The formulation was designed to satisfy 20% of the daily recommended nutrition intake of an adult male aged between 20 and 29. Analysis of the quality characteristics showed that this formulation was highly homogenized as an oral liquid supplement with advanced solubility. In addition, based on the viscosity, pH, color value, turbidity, and brix, the product was shown to advanced processing quality with great solubility; however, there was some concern that the taste would be deteriorated due to the bitter taste of the peptide. Thus, further studies need to be performed before this formulation can be commercialized.

        In this study red ginseng was extracted with ethanol and then fermented by yeasts including Lactobacillus casei and Bifidobacterium longum. Fermented red ginseng extracts(FRGE) were found to be more effective antioxidants in vitro with regards to 1, 1-diphenyl-2-picrylhydrazyl(DPPH) radical scavenging activity than red ginseng extracts(RGE). In FRGE, the contents of ginsenosides Rb1, -Rb2 and -Rc were much lower than in RGE, however, the contents of ginsenosides 20(S)-Rg3, 20(R)-Rg3 and compound K were higher than RGE. FRGE was added to Yanggaeng(0, 5, 10, 15, 20%), and physicochemical and sensory evaluations of the Yanggaeng were conducted. The L and b values of Yanggaeng with added FRGE were decreased by increasing the ratio of FRGE, while the a value was increased. Sensory evaluations for, taste, color, flavor, texture and overall acceptability of Yanggaeng with addition of FRGE (10%) were applicable for improving the Yanggaeng product.

        This paper examines the effects of various methods of soft steaming(i.e., forced convection-boiler, forced convection-fan, and natural convection) on the quality of potatoes. In particular, the paper investigates the effects of cooking conditions (the steaming method, the treatment time, and the temperature) on the color(L, a, b), moisture content, texture profile, and ascorbic acid of potatoes. The results indicate that not only the cooking method, the treatment time, and the temperature but also the heat transfer mechanism had considerable influence on potato quality. In addition, natural convection steaming was superior to other treatment methods in terms of nutrient retention and texture maintenance. The results of this study should be useful for establishing commercial standards for processing potatoes and improving the quality of thermally processed foods.

        This study was conducted to evaluate the effects of sweet pumpkin (Cucurbita Maxima D.) powder on the quality characteristics of cookies. The cookies were made with various sweet pumpkin powder levels (10%, 20%, and 30%). The pH of the dough increased while the density of the dough decreased as the amount of sweet pumpkin powder increased. The width of cookies determined by water content in dough increased with increasing sweet pumpkin powder level. The L value of cookies was significantly the largest in the control group. The b value was the highest for the 30% substituted sample group. According to textural measurements, the hardness, cohesiveness, springiness, and brittleness of the cookies with sweet pumpkin powder were higher in concentration than those of the control group. According to the sensory evaluation, the appearance, color, flavor, and texture of cookies with 10-20% sweet pumpkin powder were higher compared to those of the control group. The overall most acceptable cookie group was that with 10% added sweet pumpkin powder.

        In this study, the effects of yacon (Smallanthus sonchifolius) leaf on the quality characteristics of cookies were examined. In order to investigate its effects, four different amounts (0%: Control, Y-0.5, Y-1.0, Y-1.5) of yacon leaf powder were added to the cookie dough. Among the physicochemical and sensory characteristics, the density and pH of the dough, spread factor, color value, firmness, consumer acceptability, and Pearson's correlation coefficients were measured. Although there was no significant difference in pH of the doughs among the groups, density significantly decreased with increasing amount of yacon leaf powder (p<0.05). While the L, a, b values, and hardness decreased significantly, DPPH free radical scavenging activity increased significantly as the content of yacon leaf powder increased (p<0.05). Overall acceptability, appearance, taste, and texture between the control and Y-0.5 groups showed no significant differences. This study suggests the possibility of yacon leaf as an ingredient that increases the functionality of cookies.

        본 연구에서는 국내에서 유통되고 있는 청국장을 수집하고 품질 특성을 분석하였으며, 우수한 품질의 청국장 제조를 위한 종균 개발의 기초 자료로 활용하고자 한다. 먼저 국내에서 시판 되는 청국장을 수집하여 분석한 결과, 수분함량은 56.3∼62.1%, 염도는 0.23∼11.51%, 총질소 함량과 아미노태 질소 함량은 각각 5.82∼8.76%, 173.71∼2,700.66 mg%를 나타내었다. 총질소에 대한 아미노태 질소 함량의 비를 나타내는 질소분해율은 2.88∼26.93%를 나타내었다. 수집된 청국장의 최대 히스타민과 티라민 함량은 각각 755.40, 1913.51 mg/kg로 나타냈다. 청국장의 최대 생균수는 9.6 × 109 CFU/g이었다. 이상의 결과로 국내 청국장은 종류가 매우 다양하며 제품마다 풍미와 영양성분이 현저한 차이가 있음을 확인하였다. 이는 지역마다 다른 품종의 원료대두의 사용 및 균일화·체계화되지 못한 발효공정에 기인한 것이라 사료된다.
