        To extend the shelf-life of chicken breast meat, samples were treated with gel-packs containing slow-released ClO2 gas at 7-15 ppm for 8 days at 4℃. And the changes in lipid oxidation and taste compounds of the samples were investigated. TBARS value of the chicken breast was slightly increased during storage. TBARS value of gas treatments was similar to the control during storage. There were 14 fatty acids in the chicken breast. And there was no change in the fatty acid composition during storage, and there was no significant difference between the control and gas treatments. The content of free amino acids was gradually increased during storage. The content of free amino acids were not significantly different between the control and gas treatments during storage. The content of GMP in the control and gas treatments were decreased during storage. However, gas treatments showed slightly higher content than that of control. AMP was not significantly different between the control and gas treatments. IMP gradually decreased during storage and the content of inosine and hypoxanthine was increased. IMP, inosine and hypoxanthine contents of gas treatment were similar to control, but the control tended to change more rapidly than those of gas treatments.

        This study was undertaken to find out the effect of cholesterol and serum albumin on sperm ability and lipid peroxidation levels period to the liquid storage of miniature pig sperm. Ejaculated semen from miniature pigs was collected by gloved-hand method into a pre-warmed () thermos bottle, and extended with Modena solution {with and without BSA, methyl-beta-cyclodextrin (-cholesterol) and cholesterol loaded cyclodextrin (+cholesterol)}. Each semen was assessed for viability (SYBR-14/PI staining) and acrosome intactness, intensity and capacitation status by chlorotetracycline (CTC) staining at 1, 3, 5, 7 and 10 days of storage. At for the effects of cholesterol and serum albumin on lipid peroxidation, semen were incubated with (), and lipid peroxidation level were measured by flow cytometry using the lipid peroxidation reporter probe . The result, lipid peroxidation level in sperm added with cholesterol were lower in compared to the added sperm with serum albumin. Also, added cholesterol to sperm had significant (p<0.05) higher viability when storage for 7 and 10 days and lower when 10 days of storage percentage of acrosome-reacted sperm (AR pattern) in acrosome state as say result compared to other treated groups. In conclusion, role of cholesterol during lipid storage in miniature pig spermatozoa was protected boar spermatozoa from lipid peroxidation prior to lipid storage. Addition serum albumin during lipid storage in sperm may be induce sperm membrane damage by lipid peroxidation. Therefore, addition of cholesterol to miniature pig sperm will be lead to extension of liquid storage periods.

        In this study, we examined the effects of egg yolk powder added to flour dough on the lipid oxidation of fried products during storage. The flour dough containing the egg yolk powder (0, 5, and 10%) was fried in sunflower oil at 180℃ for 90 sec. The fried products were then stored at 60℃ for 9 days in the dark. The lipid oxidation of the fried products was evaluated by fatty acid composition, peroxide values (POV), conjugated dienoic acid (CDA) contents, and thiobarbituric acid (TBA) values. The color and phospholipids (PL) contents of the fried products were also determined by colorimetry and high performance liquid chromatography, respectively. The addition of egg yolk powder to the dough decreased the POV, CDA contents, and TBA values of the fried products during storage. Although POV, CDA contents, and TBA values significantly increased in the products without egg yolk powder during storage, little change was observed in the products with egg yolk powder. The PL contents remained relatively constant in the fried products added with egg yolk powder during storage. The lightness and greenness of the fried products decreased, and the yellowness increased, as the storage time increased. The results clearly indicate that the addition of egg yolk powder to the dough improved the lipid oxidative stabiliy of the fried products during storage in the dark, and the PL in the egg yolk might have contributed to the improvements in lipid oxidative stability.

        This study was carried out to investigate the effects of addition of aged garlic extract (AGE) on the color and lipid oxidation of ground chicken during refrigerated storage. The leg meat from 6 weeks-broiler was chopped and added with 4% of distilled water (control) and AGE, respectively, and then stored at 4±0.2℃ for 8 days. The commercial garlic was aged for the relatively short time (40-90℃/300 hr →natural dryness/40 hr→20-30℃/30-50 hr). The pH value was not significantly different between control and AGE-added chicken. The TBARS level of chicken was remarkably inhibited by addition of AGE during storage. In CIE color values, AGE-added chicken showed lower L* and higher b*, C* and Ho values than those of control during storage. Therefore, the addition of AGE in ground chicken enhanced the lipid oxidative stability and change to dark color.

        Phytic acid, making up 1-5% of the composition of many plant seeds and cereals, is known to form iron-chelates and inhibit lipid peroxidation. Thiobarbituric acid reactive substances (TBARS), as an indication of lipid peroxidation, were measured in beef round, chicken breast, pork loin, and halibut muscle after the meats were stored for 0, 1, 3, 5, and 7 days at various temperatures [frozen (-20℃), refrigerator (4℃), and room temperature (25℃)]. Phytic acid effectively inhibited lipid peroxidation in beef round, chicken breast, halibut, and pork loin muscle (p$lt;0.05). The inhibitory effect of phytic acid was dependent on concentration, storage time, and temperature. At frozen temperature, the inhibitory effect of phytic acid was minimal, whereas at room temperature, the inhibitory effect of phytic acid was maximal, probably due to the variation of the control TBARS values. At the concentration of 10 mM, phytic acid completely inhibited lipid peroxidation in all the muscle foods by maintaining TBARS values close to the level of the controls, regardless of storage time or temperature (p$lt;0.05). The rate of lipid peroxidation was the highest in beef round muscle, although they had a close TBARS value at 0 day. Addition of phytic acid to lipid-containing foods such as meats, fish meal pastes, and canned seafoods may prevent lipid peroxidation, resulting in improvement of the sensory quality of many foods and prolonged shelf-life.

        This study was conducted to investigate the changes in lipid components of red pepper under various processing conditions such as drying, exposing to lights, extraction and storage conditions. The material used in this study were Chungyang cultivars which contained the largest amount of capsaicinoids and Dabok cultivars which is most popular among the various cultivars produced in Korea. Total lipid content of Chungyang was 15.7% and those of Dabok, Udeungsang and Hongilpum were about 17%. The neutral lipid content in free lipid of red pepper was 78.5~80.3% Phospholipid and glycolipid content in bound lipid were 53.8~56.9% and 35.3~38.7% respectively. The major fatty acids of lipid were linoleic, palmitic and oleic acid. Linoleic acid was presented mainly in pericarp, seed and placenta, whereas the most of palmitic acid was presented in stem. Lipid content of cut and whole red pepper were decreased 24.7~28% and 18.1~21.5% by drying for 48hrs at 65℃ and 95℃. And lipid content was also decreased 3.5~3.6% when the red pepper powder was exposed to 15,000 lux of incandescent light for 30 days at 40℃ and 4~4.9% to fluorescent light. The lipid was extracted the highest content of 50.5~51.7% by acid solution(pH2) and the lowest content by neutral solution, and the higher the salt concentration, the greater the lipid was extracted. During storage at 4℃, 25℃, 40℃, for 30 days the lipid content was not much changed but linoleic acid content was decreased during storage at the same conditions.

        Fried vegetable mix, fried fish mix and fried chicken which prepared as convenient style at traditional market in Chonju were collected and evaluated their chemical composition, lipid and microbial changes during storage at different temperature for confirming those fried.food stability. The POV and AV of oil in samples and total bacterial count during storage at 5, 15, 20 and 30℃ were monitered. The POV, AV of oil, and total viable count were greatly changed depending on storage temperature during storage. Those factors can be effectively used for shelf-life determination. Following POV, AV and total bacterial count tested of each sample, shelf-life can be suggested as within 1 day at 30℃, 2-3 days at 15-20℃ and over 5 days at 5℃.

        Ham, sausage and bacon were treated with common household processing techniques including refrigerated storage(0, 14, 28 days) and cooking(pan-frying, microwaving, boiling). Lipid oxidation was evaluated by measuring fatty acid composition, malonaldehyde(MA), TBA values and by measuring fluorescent products. Major fatty acid composition were oleic acid and followed respectively palmitic acid, stearic acid, linoleic acid, linolenic acid. There was no significant difference in fatty acid composition by cooking method but there was a tendency of being increased of unsaturated fatty acid during 28days storage. Ma, TBA and fluorescent products showed a tendency of being increased continually according to storage days rather than cooking method.

        The effect of frozen storage and cooking methods on lipid oxidation in chicken meat was studied. Chicken meats were stored 0, 30, 60, 90, 120 days at -18℃ and were evaluated before and after cooking. 1. The crude fat content of chicken meat is the highest thigh meat with skin in microwaving. Fat content was increased duting 30 days of frozen storage, and then after. 2. Peroxide value, acid value and TBA value was increased during the days of storage because lipid autoxidation was processed cooking and during frozen storage time. The peoxide value and acid value were higher compared to sample cooked by other methods. 3. The fluoresence units were increased with frozen storage, and initial levels of fluoresent after processing. 4. The fatty acid composition of chicken meat fats is mainly palmitic acid and oleic acid, and the effect of frozen storage and meats part is not significantly change but fatty acid significantly change according to frying that linoleic acid was increased during frozen time. From all the results obtained in this study it can be conclude that lipid autoxidation of the chicken meat frozen storage at 18℃ was consistantly processed, and breast meat oxidation was increased than thigh meat because chicken breast meat include many polyunsaturated fatty acid. Frying was significantly increased highest than other cooking methods.

        Frog legs were stored before and after 30, 60, 90, 120 days at -30℃ and -70℃. The amounts of triglycerides, glycolipide and phospholipids by TLC and composition of fatty acids by GC were shown in this experiment, there fore, I have got these following results. 1. The amount of PL in frog legs consisted of 80% of the total lipids before storage. As the days of storage was longer, the amount of TG was increased, while PL and GL were decreased. 2. TG and ES & HC were composed of 66% to 77% of the neutral lipids composition before storage. As the days of storage was longer, the amount of MG, DG. FFA and ES & HC were increased, while FS and TG were decreased. 3. PE and PC were composed of 78% to 81% of the phospholipids composition before storage. As the days of storage was longer, the amount of FA and PS were increased, while PC and PE were decreased. 4. The composition of fatty acids in neutral lipids of frozen frog legs at -30℃, 120 days was studied, Capric acid. Stearic acid, Behnic acid. Oleic acid and Linoleic acid were increased as compared with initial neutral lipids.

        사과의 감압저장중(減壓貯藏中) 저장생리(貯藏生理)에 영향을 미치는 과피지질(果皮脂質)과 품질(品質)의 측도(測度)가 되는 색소(色素)의 변화(變化)에 대해 조사(調査)한 결과(結果)는 다음과 같다. 전지질(全脂質) 함량(含量)은 국광(國光)이 Fuji보다 높았으며, 두 품종(品種) 모두 저장(貯藏) 60일(日)까지 감소(減少)하다가 저장말기(貯藏末期)까지는 증가(增加)하였으며 특히 저온구(低溫區)에서 변화(變化) 폭(幅)이 현저하였다. 중성지질(中性脂質) 함량(含量)은 Fuji의 상온구(常溫區)에서는 전반적(全般的)으로 증가(增加)하였고 저온구(低溫區)에서는 60일(日)까지 감소(減少)하다가 그 이후(以後)로는 증가(增加)하였으며 국광(國光)은 60일(日)까지 약간씩 감소(減少)하다가 그 이후(以後)로는 증가(增加)하였다. 당지질(糖脂質)은 두 품종(品種) 모두 30일(日)까지 감소(減少)한 후(後) 60일(日)까지는 증가(增加)하였다가 저장말기(貯藏末期)까지는 감소(減少)하였는데, 저온구(低溫區)에서 변화폭(變化幅)이 더 컸다. 인지질(燐脂質)은 Fuji에서 전반적(全般的)으로 감소(減少)하는 경향이었고 국광(國光)에서는 저장전반(貯藏全般)을 통해 변화(變化)가 거의 없었다. 포화지방산(飽和脂肪酸)에 대한 불포화지방산(不飽和脂肪酸)의 함량비(含量比)는 중성지질(中性脂質)에서 Fuji는 감소(減少)하였으나 국광(國光)은 증가(增加)하였고, 당지질(糖脂質)에서 Fuji는 60일(日)까지 감소(減少)한 후(後) 저장말기(貯藏末期)까지 증가(增加)하였고 국광(國光)은 저장전반(貯藏全般)에 걸쳐 증가(增加)하였다. 인지질(燐脂質)의 경우는 두 품종(品種) 모두 전반적(全般的)으로 증가(增加)하는 경향(傾向)이었으며 SAP-L, NAP-L, SAP-N, NAP-N 순(順)으로 비율(比率)이 높았다. Chlorophyll 함량(含量)은 국광(國光)이 Fuji보다 다소 높았고 저온감압구(低溫減壓區)에서 감소(減少) 경향(傾向)이 가장 적었다. Carotenoid, anthocyanin의 함량변화(含量變化) 상온상압구(常溫常壓區)에서 증가폭(增加幅)이 가장 컸으며 저온감압구(低溫減壓區)는 착색(着色)이 가장 지연(遲延)되었다.

        본 연구에서는 오디 농축액을 우리나라 전통한과인 약과에 첨가하여 약과의 저장 중 품질 특성에 미치는 영향에 대하여 분석하였다. 약과의 수분함량은 대조군에 비하여, 오디 농축액 3% 첨가 약과가 높은 수분함량을 나타내었다. 저장 기간별 약과의 수분함량은 모든 군에서 2주 동안 급격한 수분함량의 감소를 나타내었고, 2주와 3주의 수분함량 변화는 유의적 차이를 나타내지 않았다(p<0.05). 오디 농축액을 첨가한 약과의 색도는 0주차의 오디 약과에서는 명도(L)는 대조군에 비해 오디 농축액의 첨가량이 많아질수록 낮아지는 경향을 보였고, 적색도(a)는 대조군 5.88, 오디 농축액 3% 첨가군은 6.69로 오디 농축액을 첨가할수록 높게 나타났다. 또한 황색도(b)는 18.32~11.51로 오디 농축액 첨가량이 높아질수록 낮아지는 경향을 보였다. 명도(L)는 저장기간이 지남에 따라 대조군이 58.56에서 46.45로, 오디 농축액 3% 첨가군은 43.82에서 35.92로 낮아졌고, 적색도(a)와 황색도(b) 모두 3주가 경과하면서 높아지는 것을 볼 수 있었다. 지질산패정도를 알아보는 실험중 산가는 시간이 경과함에 따라 유의적 차이가 나타나(p<0.05) 3주차 오디 농축액을 첨가한 약과는 1.65~1.91의 산가를 나타내었고, 대조군은 1.97로 오디 농축액 첨가군이 대조군보다 산가보다 더 낮게 나타났다. 과산화물가는 0주차에는 시료간의 유의적인 차이가 나타나지 않다가 3주차에는 대조군 63.80 meq/kg, 오디 농축액 1% 첨가군 58.46 meq/kg, 2% 첨가군 55.00 meq/kg, 3% 첨가군 52.54 meq/kg로 대조군의 과산화물가가 오디 농축액 첨가군에 비해 높은 경향을 나타내었다. 0주차 TBA가는 11.25~13.11로 오디 농축액을 첨가할수록 낮은 값을 나타내었고, 3주가 경과한 후 TBA측정 결과 대조군이 가장 높은 TBA가를 나타내었으며 오디 농축액 3% 첨가군이 가장 낮게 측정되었다. DPPH 라디칼소거능은 오디 농축액의 첨가량이 많아질수록 증가하는 경향을 나타내었고, 저장 기간 동안 모든 군의 DPPH라디칼소거능은 감소하였으나 오디 농축액 첨가군이 대조군에 비해 낮은 IC50값을 유지하였다. 실험의 결과들로부터 오디농축액의 첨가량이 증가할수록 항산화성이 높아지고, 지질산패를 억제되는 것을 확인하였다. 이는 항산화성의 증가로 인해 오디 농축액을 넣은 약과가 넣지 않은 약과보다 지질산패가 억제되는 것으로 사료되며, 약과 제조시 오디농축액을 첨가하면 저장성이 증대된 약과를 생산할 수 있을 것으로 기대된다.

        햄버거 패티에 L. monocytogenes cocktail을 인위적으로 접종한 후 UV-C 조사 처리에 따른 저장 중 미생물 수 변화를 조사하였다. 햄버거 패티에 접종된 L. monocytogenes의 초기 균수가 6-7 log CFU/mL가 되게 하였고, 사용된 UV-C 조사선량은 1, 5, 10 kJ/이었으며 조사된 시료는 에서 7일 동안 저장하였다. UV-C 조사는 L. monocytogenes 수에 있어서 조사선량이 증가할수록 유의적으로
