        The rice bran, a by-product of rice milling process, is well known for various functional components, such as tocopherol, tocotrienol, γ-oryzanol, carrying antioxidant activities. This study was conducted to investigate the antioxidant components and antioxidant activities in rice bran of different Korean rice cultivars. The 8 isomers of vitamin E, γ-oryzanol, flavonoids, and polyphenolics in rice bran from 16 Korean premium and high quality rice cultivars were quantified. DPPH and ABTS radical scavenging activities and reducing power of the ethanol extracts of rice bran were measured. ‘Hopum’ showed the highest total vitamin E content, 221.47 μg/g among the cultivars, and ‘Hanseol’ showed the lowest content. The rice bran showed different compositions of α-, β-, γ-, δ- tocopherol and tocotrienol among rice cultivars. The antioxidant contents were also different by cultivar; the γ-oryzanol contents ranged from 1.99 mg/g (Unkwang) to 4.30 mg/g (Chilbo), the polyphenol contents ranged from 427.22 mg gallic acid eq./100 g (Odaebyeo) to 775.80 mg gallic acid eq./100 g (Hopum). ‘Hopum’ also had the highest DPPH and ABTS free radical scavenging activities, 9.82% and 187.5 AEAC mg/100 g, respectively. In vitro, the rice bran extracts from ‘Hopum’ had significantly higher antioxidant activities than that of other cultivars.

        재배지역에 따른 기장 품종 선정을 위한 기초자료로 활용하고자 내륙평야지인 경남 밀양과 산간지인 강원 원주, 해안지인 전남 신안에서 5품종의 기장을 재배하여 수확된 시료를 메탄올로 추출하여 항산화성분 함량 분석 및 항산화활성을 검정하였다. 재배지역에 따른 기장 종자 메탄올 추출물의 항산화성분의 함량을 측정한 결과 총 폴리페놀 함량은 신안에서 재배한 붉은기장과 벼룩기장이 각각 2.54 및 2.65 mg/g으로 가장 높은 함량을 나타내었다. 총 플라보노이드 함량은 원주에서 재배한 붉은기장과 벼룩기장이 각각 2.66 및 2.59 mg/g으로 가장 높은 함량을 나타내었으며, 총 탄닌함량은 신안에서 재배한 벼룩기장과 노란찰기장이 각각 1.87및 1.42 mg/g으로 가장 높은 함량을 나타내었다. 재배환경에 따른 조의 조곡 메탄올 추출물의 DPPH radical 소거활성은 신안에서 재배한 붉은기장과 벼룩기장이 각각 8.54 및 8.53 mg TE/g으로 가장 높은 활성을 보였고 ABTS radical 소거활성 또한 신안에서 재배한 붉은기장과 벼룩기장이 각각 19.48 및 19.29 mg TE/g으로 가장 높은 활성을 보였다. 전체적으로 항산화성분의 함량과 항산화활성은 재배지역과 품종과 유의적인 차이를 보이는 것으로 나타났다.

        This studies was carried out to assess antioxidant activity between flavonoid compounds (rutin, qurcetin, luteolin) and maysin(2''-O-6-C-(6-deoxy-xylo-hexose-4ulosyl)luteolin) isolated from corn silks of Zea mays L. Maysin extracted by corn silks was the highest free radical scavenging among flavonoid compounds such as rutin, qurcetin, and luteolin. But, the other flavonoid compounds(luteolin) showed the strongest free radical scanverning activity. In the results of peroxidase activity(POD), maysin don't indicated the remarkable peroxidase inhibiton activities. At the lowest concentration, NBT(Nitro blue tetrazolium) reduction activity of rutin, qurcetin, and luteolin were the low inhibition activities but maysin showed the highest Nitro blue tetrazolium reduction activity. Lipid peroxidase inhibition activities using Thiobarbituric acid(TBA) method, maysin showed the highest lipid peroxidase inhibition in three concentration levels..

        국산 녹차의 채취시기별 주요 화학성분과 항산화 특성을 평가하기 위하여 폴리페놀, 플라보노이드, 데아닌, 유리아미노산 함량과 항산화 및 라디칼 소거능에 대하여 조사하였다. 총 폴리페놀 함량은 중작 37.16 mg/g로 가장 높았으며, 다음으로 세작 24.65 mg/g, 대작 23.28 mg/g, 우전 19.55 mg/g 순이었으며, 총 플라보노이드는 대작이 350.83 mg%으로 중작 270.36 mg%, 세작 256.88 mg%, 우전 220.8

        The objective of this research was to evaluate the ability of water and ethanol extracts from mulberry fruit (Morus alba L.) to influence the inhibitory activity of angiotensin converting enzyme (ACE) and xanthine oxidase(XOase). The total phenol contents and sixteen phenolic compounds were investigated in water and ethanol extracts. In order to understand the factors responsible for the potent antioxidant and antihypertensive ability of mulberry, it has been evaluated for anti-oxidative activity using Fenton's reagent/ethyl linoleate system and for free radical scavenging activity using the 1,1-diphenyl-2-picryl hydrazyl free radical generating system. The total phenol contents and total of phenolic compounds in ethanol extract showed higher levels than water extract in mulberry fruit six phenolic compounds (chlorogenic acid, narigin, syringic acid, quercetin, naringenin, kampferol) has a higher individual phenolic compound content in the 60% ethanol extraction than 80% ethanol extract. The inhibitory activity on angiotensin converting enzyme (ACE) were highest in 80% ethanol extract (9.0%). Also, activity of xanthine oxidase(XOase) inhibition appeared highest in 80% ethanol extracts and correlated well with the total phenolic content, which was modulated by the concentration of individual phenolic compounds. This result revealed, that strong biological activity was caused by specific phenol compound contents. Utilization of water and ethanol extracts from mulberry fruit are expected to be good candidate for development into source of free radical scavengers and anti-hypertentive activity

        눈개승마의 총 엽록소, 총 카로테노이드 함량은 무차광에 비하여 차광율이 높을 수록 높았다. 지방산함량은 무차광 재배에 비하여 차광 재배 및 식용 가능시기간의 생육 후기에 감소되었다. 식용가능시기에서의 지방산 종류간의 함량은 oleic acid, palmitc acid, linoleic acid, stearic acid 순으로 높았으며, 무차광에 비하여 차광율이 높을 수록 낮았다. 특히 linoleic산의 함량은 타 지방산에 비하여 차광정도에 따른 함량의 감소율이 매우 높았다. 차광율 및 수확시기간의 휘발성 정유성분의 함량은 차광율이 높을 수록 증가하였고, 초기수확이 높았다. DPPH 소거활성은 6.64-14.49(IC50 : μg/ml)로 항산화 활성이 매우 높게 나타났고 차광정도가 높을 수록 낮았고, 조기 수확 할 수록 높았다. POD 및 SOD 활성은 식물체에 비하여 종자가 매우 낮았고, 무차광에 비하여 차광 재배 시에 증가하였다. POD활성은 식용가능시기의 생육 초기에 비하여 후기에 높았으나, SOD활성은 감소되었다. POD Isozyme band 수는 이식묘의 종자, 잎 및 줄기에서 각 각 6개의 밴드를 나타내었으나, 뿌리에는 없었다. SOD Isozyme band는 송자와 잎에 비하여 뿌리에서 뚜렷하였다.

        This objective of this study was to determined the activity of antioxidants of DPPH, SOD and total phenolic compounds in mushroom(P. eryngii spp.) extract. The antioxidant acitivity using DPPH showed that strain No. 2007(31.78~%) and strain No.2014(27.45~%) were the highest DPPH inhibition. Among the thirteen mushroom examined, strain No. 2014(58.30~%) and strain No. 2010(57.19~%) had the highest SOD activity. The highest total phenol content were in strain No.2013(1465.03~mug/g) and strain No.2005(1401.09~mug/g) . Our study suggest that it may be possible to improve mushroom with high natural antioxidant.

        뽕나무 열매(오디)를 이용하여 천연항산화제를 개발할 목적으로 오디로부터 페놀성 물질을 추출하여 항산화 활성을 측정하였다. 페놀성 물질의 추출은 60 ethanol을 사용하여추출하는 것이 수율이 가장 좋았으며, rutin과 isoquercetrin의함량이 높았다. 추출된 오디 추출물의 ABTS radical decolorization과 antioxidant protection factor(PF)를 살펴 본 결과 ABTS는 80 추출물이 약 98의

        Cereal grains are rich in phenolic compounds that give beneficial effect in human health. Although several research works have been reported on the effects of phytochemicals of plant origin, such as fruits, vegetables, few studies have examined the antioxidative effects of whole cereal grains. The objective of this study was to determine total antioxidant capacity of 80% ethanolic extracts of cereal grains by testing the ability of the extracts to inhibit UV -induced lipid peroxidation in vitro using linoleic acid in comparison to well-known antioxidant such as ascorbic acid and tannic acid. The total phenolic content of the cereal grain (80% ethanolic extracts) investigated in this study varied from 2.1 mg/g (wheat cv. Olgeurumil) to 10.4 mg/g (barely cv. Seodunchalbori). Highly positive relationship between total phenol compounds and antioxidant activity was found. When the antioxidant activities of all investigated extracts were measured with application of same quantity of phenol compounds, oat grain extracts showed similar antioxidant activity of barely cultivars. However, barely extract appeared as the most potent antioxidant activity of inhibition of UV -induced lipid peroxidation. This indicated that factors such as phenolic compound composition and their individual antioxidant activity could playa crucial role in the total antioxidant activity of cereal grains.
