The aim of this study was to compare the antioxidant activities and functional contents of Korean conventional and Chinese seed gingers from the Jeollabuk-do Wanju and Chungcheongnam-do Seosan regions. Ginger samples were subjected to steaming treatments for different durations (2–8 h) at 121oC using an autoclave. The antioxidant activity was evaluated by measuring total polyphenol and flavonoid contents and ABTS and DPPH radical scavenging activities, while functional ingredient contents were analyzed for gingerols and shogaols. The results showed that Wanju conventional seed ginger (WO-2) had the highest total polyphenol (85.24 mg GAE/g) and flavonoid (98.14 RE/100 g) contents, surpassing that of the control in all steamed groups at 6 h. ABTS radical scavenging activity showed a strong correlation with total polyphenol and flavonoid contents. The control groups indicated that Korean conventional seed ginger had 1.0–1.3 times higher gingerol contents compared to Chinese seed ginger. Furthermore, the content of shogaols, considered major functional ingredients, increased significantly with longer steaming durations, reaching the highest content (1,793 mg/kg) at 8 h, which was 1.0–1.8 times higher in Korean conventional seed ginger than that in Chinese seed ginger. These experiments provide valuable data supporting the excellence of Korean conventional seed ginger in the future.
Mushrooms and their extracts including purified ingredients, are currently used as foods, functional foods (and/or nutraceuticals), and medicines. These products have numerous bioactive compounds such as polysaccharides (mainly β–glucans), glycoproteins, nucleotide analogs, terpenoids, and polyphenols, which have exhibited antioxidant, antimicrobial, anticancer, antiviral, anti-obesity, and immunomodulatory activities. In this review, we discuss the current information on the biactivities of 10 popular mushrooms in Korea. We also summarize the information on mushrooms and the active compounds derived from them, as well as mushroom-based products such as foods, functional foods, and medicines. We believe this review could provide useful information for scientists and consumers who seek to develop new products and promote healthy food habits and lifestyle.
This study was performed to investigate the change of biologically functional compounds and antioxidant activities in Ecklonia cava with blanching times. As biologically functional compounds, the contents of minerals(K, Ca, Na, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, β-carotene and α-tocopherol) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. As the blanching time increased, the contents of minerals, vitamin C, β-carotene and total polyphenol were decreased however α-tocopherol was not affected by blanching time, and antioxidant activities were decreased with blanching time.
This study was performed to investigate the change of biologically functional compounds and antioxidant activities in Hizikia fusiformis with drying methods. As biologically functional compounds, the contents of minerals(K, Ca, Ma, Mg, Fe, Cu, Mn and Zn), vitamins(vitamin C, β-carotene and α-tocopherol) and total polyphenol were analyzed. And antioxidant activity was determined through free radicals(DPPH radical, superoxide anion radical, hydroxyl radical and hydrogen peroxide) scavenging activity and linoleic acid peroxidation inhibitory activity. The contents of minerals were not affected by drying methods however vitamins and total polyphenol were lost more by sun-drying than other drying methods studies. Total polyphenol was preserved by freezing-drying than other drying methods studies, resulting in high antioxidant activities.
Wild edible plants are consumed as raw and/or processed. Analytical data for raw biologically functional compounds were relatively well established. The changes on functional compounds during processing are, however, not well studied. This study was carried out to investigate the change of the quality of wild edible plants, Pimpinella brachycarpa(Chamnamul) at various conditions. Samples were blanched at the salt concentration of 0%, 1% or 2% for 1, 2, and 3 minutes each. The biologically active compounds, vitamin C, β-carotene, chlorophyll, flavonoids, polyphenols and minerals were analyzed. The concentration of vitamin C in Chamnamul decreased as blanching time increased. Beta-carotene in Chamnamul showed high concentration when Chamnamul was treated under longer blanching time. Higher salt concentration of blanching water, however, resulted in the increased concentration of β-carotene in the blanched Chamnamul. Higher salt concentration of blanching water also reduced the loss of total flavonoids and total polyphenols from the blanched Chamnamul. The change of colors in the blanching water seemed to be corresponding to those of total flavonoids and total polyphenols concentrations in the blanching water.
Backgoound : Various varieties of Schisandra chinensis (Omija) are grown in various regions of Korea. However, there is no study on varieties with excellent efficacy for each variety. Therefore, in this study, it is aimed to select the excellent lineage by analyzing the active compounds of Omija collection species
Methods and Results : 154 lineage of Omija was collected from Muju of Jeollabuk-do, Jangsu of Jeollabuk-do and Hoengseong of Gangwon-do. They were cultivated in test-research farm in Rural Development Administration at Eumseong of Chungcheongbuk-do and used as materials. In order to analyze the active compounds (Shizandrin A, Shizandrin C, Gomisin A, Gomisin N) in Omija, the HPLC method described in the Korean Pharmacopoeia (compounds of Omija indicator) was used. As a result of analysis of functional compounds, SC-003, SC-005, SC-013, SC-015, SC-019, SC-020, SC-022, SC-023, SC-040, SC-042, SC-045, SC-066, SC-069 and SC-072 were collected from Jangsu, Jeollabuk-do, SC-082 was collected from Hoengseong, Gangwon-do and SC-139 was collected from Muju, Jeollabuk-do showed higher contents of functional compounds than other collected species.
Conclusion : As demand for high income crop has increased, new cultivar breeding is required to produce high quality Schisandra chinensis (Omija). In this study, Shisandra A, Shizandrin C, Gomisin A and Gomisin N were analyzed as functional compounds of Omija. They can be used for new Omija breeding. Especially SC-003, SC-019, SC-022, SC-040, SC-045, SC-069 and SC-082 can be superior lineags with high functional compound contents.
이 연구는 유기농 수수의 곡물과 새싹채소의 주요 기능성 성분인 항산화성분 및 항산화 활성, 일반성분을 알아봄으로써, 수수의 유기농 농산물로써의 다양한 활용방안에 대한 기초 자료로 알아보고자 실시하였다. 수수의 유광 새싹채소는 종자에 비해 조단백질 함량이 2.5배 증가한 것으로 나타났으며, 무기성분에서도 새싹채소에서 1.6~9.87배의 높은 것으로 나타났 다. 항산화 성분 중 총 polyphenol 함량은 유광 새싹채소에서 평균 4,135 mg GAE g-1으로 높 았으나, flavonoid 함량은 종자에서 평균 3.86 mg GAE g-1으로 함유량이 높은 것으로 조사되 었다. ABTS 라디칼 소거활성은 종자에서 평균 15.78 mg TE g-1으로 높게 나타났으며, 유광 새싹채소와 무광 새싹채소에서는 평균간 차이는 나타나지 않았다. DPPH 라디칼 소거활성에 서는 종자에서 평균 15.79 mg TE g-1으로 새싹채소에 비해 11배 이상의 높은 활성이 나타났 다. 특히, ‘동안메’는 황금찰, 남풍찰 및 소담찰에 비해 종자와 새싹채소에서 가장 높은 활성 이 나타내었다. 항산화성분 및 항산화활성은 품종과는 유의성이 없었으나, 광처리와는 매우 높은 유의성을 보였다. 따라서 유기농 항산화 식품 및 천연 항산화제 공급원의 이용시 종자 (‘동안메’)를 이용하는 것이 좋은 것으로 생각된다. 그리고 수수 새싹채소의 영양학적인 유 기농 식품으로써의 이용에 대한 추가연구가 이루어져야 할 것으로 사료된다.
Background : Tetraploid plants are bigger in the size of fruits, leaves, stems, and roots than diploid plants due to bigger cells attributed to chromosome multiplication. The advantage of tetraploid plants includes breakdown of self-incompatibility and increase of disease resistance. This study was carried out to gain tetraploid resources for breeding of new boxthorn varieties having pest resistance, higher yield, and self-compatibility. Methods and Results : Tetraploid lines and maternal varieties used in this study were C0148-10 and C0412-1 from Cheongyang-jaerae, M0148-94 and M0148-120 from Myongan, B0148-43 and B0148-78 from Bulro, D0148-62 and D0148-72 from Cheongdae, and Y0148-2 and Y0148-24 from Youngha. Betaine content was highest as 0.7 - 1.62% in leaf, followed by 0.55 - 1.17% in fruit and 0.04 - 0.23% in root. Betaine content in plant parts of several tetraploid lines increased compared to martenal varieties, higher in fruit for 5 lines including D0148-72, B0148-78, and C0142-1, higher in leaf for 5 lines including C0148-10, C0412-1, and M0148-94, and higher in root for 7 lines including Y0148-2, M0148-94, and M0148-120. Rutin content in leaf ranged 4.0 – 388.55 ㎎% and was highest as 388.55 ㎎% in Y0148-24. Tannin content in leaf of tetraploid lines was 4.70 - 6.12%, highest as 6.12% in Y0148-2 and M0148-120, similar to the maternal varieties. Youngha of the diploid plants showed the highest tannin content of 7.08%. Total free sugar content in tetraploid lines was higher as 8.53 - 12.53% than maternal varieties. Conclusion : Betaine and rutin contents increased in several tetraploid lines and Total free sugar content in tetraploid lines was higher as 8.53 - 12.53% than maternal varieties. This shows tetraploid boxthorn lines are very useful resources in breeding new varieties.
Background : The study about cultured wild ginseng root (Panax ginseng C. A. Meyer) have been reported mainly ginsenosides in saponins family. However metabolites of fermented wild ginseng roots by microorganisms was not reported yet. Methods and Results : Cultured wild ginseng roots were used for fermentation of ginseng roots using Pediococcus pentosaceus and other bacterial strains. We analyzed different types of ginsenoside contents, metabolite and enzyme contents, and gene expression by using microorganisms. Results showed considerable differences in ginseonoside contents specially Rk1 and Rg5. The highest enzyme activity level was by Glutathione reductase (GR) and Glutathione S transferase (GST) in fermented ginseng roots than control (non-fermented), whereas Glutathione peroxidase (GPX) and Peroxidase (POD) contents were reduced. Score plots and loading plots of principal components 1 of the PCA result obtained from the data on 43 metabolites in fermented wild ginseng root of five conditions. The concentration of metabolite such as β-alanin and 4-aminobutyric acid (GABA), which is used to improve memory were increased in fermented ginseng roots than control. We found functional gene in wild ginseng root related with metabolic process. The APX gene expression gradually increased in fermented ginseng root with respect to fermentation times. Sensory evaluation, in vitro antioxidant activities and main compounds of coffee water-extract, coffee liqueur (CL) and coffee-ground liqueur (CGL) were investigated to consider their industrialization. Sensory evaluation showed that all groups of CGL without 25% CGL (3 month) were relatively higher than CL groups. Total phenolic compounds and in vitro antioxidant activities such as 1,1-diphenyl-2picryl-hydrazyl (DPPH) radical scavenging activity and ferric reducing/antioxidant power (FRAP) were also performed. The group of 35% CGL had higher total phenolic compounds than others, and the result of DPPH radical scavenging activity was similar to that of total phenolic compounds. In addition, 35% CGL is comparable to the FRAP of coffee water extract (CE). Qualitative and quantitative analysis using high-performance liquid chromatography (HPLC) were performed, and chlorogenic acid as a ployphenolic compound and caffeine as a nonpolyphenolic compound were detected in all samples. Moreover, the HPLC analysis showed that CGLs contain a larger amounts of chlorogenic acid (difference of 0.3~10.5%) and also greater amounts of caffeine (difference of 10.0~18.2%) more then CE. Consequently, these results suggest that coffee-ground as coffee by-products could be used as commercially available food substances because of its physiological molecules remained.
Background: In this study, microwave extraction was used, which is an effective method to extract useful bioactive substances as it requires low quantities of solvent and short time periods. The aim of this study was to determine the optimal extraction conditions for Agrimonia pilosa Ledeb.
Methods and Results: The independent variables were ethanol concentration, microwave power, and extraction time, each of which had five levels. The dependent variables were total polyphenol and total flavonoid content, and DPPH radical scavenging activity. To determine the optimal extraction conditions for bioactive compounds, a response surface methodology was employed. Contour maps were generated from polynomial equations. The optimal conditions were then assumed by superimposing these contour maps. Based on the resulting graph, the optimal microwave extraction conditions for Agrimonia pilosa Ledeb were determined as 42 - 48% ethanol concentration, 240 - 280W microwave power, and 13 - 20 min of extraction time.
Conclusions: Ethanol concentration had a significant effect on microwave extraction, in terms of total polyphenol and total flavonoid content, as well as DPPH radical scavenging activity. Microwave power and extraction time influenced the total polyphenol content, but not the total flavonoid content or the DPPH radical scavenging activity.
The phenolic compounds which were extracted with 70% ethanol from Ulmus pumila for 12 hr were the highest as 17.9±1.0 mg/g. DPPH scavenging activity of 70% ethanol extracts was also the highest as 89.5±1.9% and it was confirmed to be high as 80% over in both of water and 70% ethanol extracts containing 50 μg/mL over phenolic concentration. ABTS radical cation decolorization activities of water and 70% ethanol extracts were higher as 96.8±2.9%, antioxidant protection factor (PF) was 2.0 PF in 70% ethanol and showed higher activities in both of water and 70% ethanol extracts containing 200 μg/mL phenolic concentration as 2.5 PF than BHA. TBARs of 70% ethanol extracts was 86.5±4.6%, it showed high anti-oxidative activity in 50∼200 μg/mL phenolic concentrations of water and 70% ethanol extracts as 80% over. The angiotensin converting enzyme (ACE) inhibitory activity of Ulmus pumila extracts against hypertension was 77.4% and 90.6% in water and 70% ethanol extracts of 200 μg/mL phenolic concentration. Xanthine oxidase inhibitory activity of Ulmus pumila extracts for anti-gout effect was not observed in water extracts, but it showed 30% inhibitory activity in 70% ethanol extracts, and 48.1% at 200 μg/mL phenolics concentration.
사과의 유통에서 내 외부 품질특성 및 외부 오염원으로부터의 안전성 확보를 위한 연구의 일환으로 사과에 감마선 조사를 실시하여 각각 와 에 저장하면서 사과의 생리화학적 및 물리적 품질특성을 살펴보았다. 연구 결과 영양 성분 및 기능성 성분의 손실이나 품질저하는 보존 온도에 의하여 결정되었고 감마선 조사에 의한 영향은 거의 나타나지 않았다. 또한 중량변화와 기계적 물성 특성 또한 감마선 조사에 의하여 영향을 받지 않았다. 색도와 관능특성은 상온 보관
혹진주벼 미강으로부터 생리기능성 물질을 추출하여 이들을 이용한 생리기능성 제품을 개발하기 위하여 먼저 흑진주벼 미강에 함유되어있는 유용물질들을 추출한 후 이들의 생리기능성을 측정하였고 미강 중에 많이 함유되어있는 ACE저해활성물질과 혈전용해활성물질, 전자공여물질과 tyrosinase 저해물질들의 추출최적조건을 검토하였다. ACE 저해활성과 혈전용해활성 및 tyrosinase 저해활성은 물 추출액에서 높았고 전자공여능은 hexane 추출액에서 높았
