        This study was carried out to apply an optimized convenient assay, exploiting azo dye-bound chromogenic substrates, to measurement of protease activity. When determined for responses at varying concentrations of two substrates, azocasein and azoalbumin, using 0.5 and 5.0 mg/mL each of bovine pancreas trypsin, 3% azocasein was found to be the most appropriate substrate solution to measure protease activity. Compared with a conventional casein-Folin phenol assay, the chromogen-based protease assay exploiting 3% azocasein showed better precision to have a coefficient of variability in seven repetitive measurements less than 1.11%. When various reagent-grade and industrial proteases that showed proteinase or peptidase activities were tested by this assay at increasing enzyme concentrations, typical shape of rectangular hyperbola in activity-enzyme concentration profiles was observed. In addition, the assay of this study was suitable for activity measurement in real samples that were prepared by hydrolyzing wheat gluten and anchovy fine powder with proteases.

        경남 남해에서 재배되고 있는 섬애쑥의 식품 및 기능성 소재로서의 활용도 제고를 위하여 화학성분을 분석하였다. 섬애쑥의 일반성분을 잎, 줄기 및 뿌리 부위별로 조사한 결과 조단백질은 각각 19.87, 6.14, 5.68%로 나타났고, 조지방은 4.56, 1.30, 1.20%이었으며, 조섬유는 16.80, 29.70, 29.45%로 나타났다. 섬애쑥의 주요 무기성분은 K, Ca, Mg으로 나타났으며, 잎에서 K과 Ca의 함량이 각각 4,270.24, 617.64 mg/100g으로 뿌리보다 2배 이상 높은 함량을 나타내었다. 유리당은 잎과 뿌리에는 sucrose와 glucose 가, 줄기에서는 glucose와 fructose가 검출되었다. 총아미노산은 17종이 분리되었으며, 잎의 총아미노산함량이 4,864.11 mg/100g으로 가장 높았으며, 줄기는 1,953.99mg/100g, 뿌리는 1,601.73mg/100g 순으 로 나타났다. 부위별 주요아미노산으로 잎과 줄기에서는 proline(963.91 및 407.52mg/100g)과 aspartic acid(577.38 및 299.17mg/100g)이었고, 뿌리에서는 glutamic acid(206.34mg/100g)와 arginine(193.23 mg/100g)이 가장 높게 함유되어 있었다. 지방산 조성을 분석한 결과 잎, 줄기 및 뿌리 모두 linoleic acid(C18:2), behenic acid(C22:0) 및 palmitic acid(C16:0)가 주요 지방산으로 나타났으며, 생리활성 성분으로서의 부위별 eupatilin과 jaceosidin 함량은 잎에서 35.0과 107.63mg/100g으로 줄기와 뿌리보다 높은 함량을 보였다.

        The acid value of the oil extracted from the three kinds of 15 fried foods ranged from 0.89 to 3.92, the peroxide value ranged 10.0~57.14 meg/㎏. Among the samples, popcorn chicken contained the highest crude fat content, showing 6.64± 0.26(%), while the french-fries showed 2.87±0.31(%), which was the lowest. The content of the trans fatty acid per 100 g of the foods were; the fried foods: 0.02~0.06 g. The french-fries contained the lowest saturated fatty acid per 100 g of the foods, showing 0.41~1.55 g, while the popcorn chicken showed the highest content, 1.16~3.43 g. The fried foods contained the highest linoleic acid content. Further, fried foods exhibited safe levels of trans fat content. The “School Zone”, which sells snacks, candies, chocolates flow, was not detected in the saccharin. Cookies, candies, chocolate was not detected in the tar colors. Aerobic plate count were ranged from 0∼4, 700 cfu/g in cookies, Salmonella test came out negative.

        Proper skin care promotes good metabolism and the biological activity of skin, helps maintain the skin in a healthy and beautiful state when combined with nutritional nourishment. Health functional foods are being used for the purpose of enhancing efficient skin care. Health functional foods related to skin care maintain the epidermis, dermal fibroblast layer and subcutaneous tissue that form the skin. Efficient functional foods alleviate the signs of endogenous aging that come with getting older and exogenous aging caused by sunlight. Even though the field of skin care related to health functional foods has received less attention and been the subject of less research compared to functional cosmetics which are developing widely, this area of skin care that maintains and improves the layer of dermal fibroblast through the intake of food, is expected to progress with the commercialization of products in many fields when the related technical research development is galvanized and the related patents are applied for. Research into health functional foods related to skin care in Korea started rather late in comparison to other advanced countries where patents for relevant techniques have been applied for since 1990's together with research conducted on how they might be used for practical purposes. This study used the key words ‘skin care, health functional food’ to search for Korean patents that have been applied for at the Korean Intellectual Property Office from 1983 to 2011 using the KIPRIS database, in order to help researchers in the related fields by organizing the patented formulas for health functional foods for skin care which have gained attention recently. According to the number of registrations in each industry field, the total number of patents was 1, 120 we screened the major patents among them, the field with the largest number was food foodstuff non-alcoholic beverage and preparation or treatment(A23L) with 135, then natural plant medicine & medical supplies and cosmetics(A61K) with 112, microorganisms or enzymes(C12N) with 63, heterocyclic compounds(C07D) with 44, horticulture or cultivation of sea weeds, forestry(A01G) 16 times, listed from the highest to the lowest number of applications. It has been revealed that food, foodstuff, non-alcoholic beverage and preparation or treatment(A23L) was the industry field where the most patents for health functional foods related to skin care were registered.

        Facing a number of global food-related accidents, the concept and system for food traceability have been designed and introduced in many countries to manage the food-safety risks. To connect and harmonize the various food traceability-information in food traceability system according to the food supply chain, the coding system of identification-number for food-traceability has to be standardized. The GTIN (Global Trade Item Number) barcode system which has been globally standardized and implemented, is reviewed with the mandatory food-labeling regulation in expiration date of processed foods. The integration of GTIN-13 bar-code system for food-traceability is a crucial factor to expand its function in the food-related industrial areas. In this literature, the standard coding system of identification-number for food-traceability is proposed with 20 digit coding number which is combined with GTIN- 13 bar-code (13 digit), expiration date (6 digit), and additional classification code (1 digit). This proposed standard coding system for identification-number has a several advantages in application for prohibiting the sale of hazard goods, food-recall, and inquiring food traceability-information. And also, this proposed coding system could enhance the food traceability system by communicating and harmonizing the information with the national network such as UNI-PASS and electronic Tax-invoice system. For the global application, the identification-number for food-traceability needs to be cooperated with the upcoming global standards such as GTIN-128 bar-code and GS1 DataBar.

        Persistent accidents related to food safety and expanded international trades have urged the world to be aware of the gravity of the accidents. Accordingly many countries have tried to come up with various laws, regulations, measures, support networks and educational programs for the agenda, particularly focusing on harmonizing food safety technologies among nations and fostering professionals. Also, APEC newly organized Food Safety Cooperation Forum (FSCF) in 2007 to exert multi-dimensional efforts to improve food safety for Asia Pacific nations. Up to now, 35 activities have been promoted since 2007 and additional 20 activities are waiting for their turns for action on the list of APEC project agenda. FSCF has the objective that it helps the stakeholders in food supply chain develop their own competence in that area, thus increase international trade among nations and maintain the globe healthy by applying the highest standards and best practices for the management of food safety ranging from production to consumption. To achieve this strategic objective, APEC subsequently formed Partnership Training Institute Network (PTIN) to build up the multilateral networks of specialists from governmental agencies engaging in food safety management, industries, academia and international organizations in Asia-Pacific region. This attempt made it possible for the world to exchange their scientific and technological information concerning food safety and strengthen related education and training. Today, international cooperation is essential for food safety management. Therefore, we need to participate actively in the activities of APEC FSCF to contribute to improving food safety technologies for the member countries of APEC. We also need to connect the domestic support programs with theirs.

        연구결과의 요약 및 논의 본 연구에서는 농식품의 주요 소비자판매처인 대형할인점과 대형슈퍼마켓을 대상으로 품질 및 고객서비스만족과 구매의 경제적 가치만족이 점포신뢰와 재구매의도에 미치는 영향력을 장기관계지향고객과 단기거래지향고객으로 분류하여 검증하였다. 분석결과, 대형할인점의 장기관계지향고객의 경우 품질 및고객서비스만족은 점포신뢰에 그리고 구매의 경제적가치만족은 점포신뢰와 재구매의도에 영향을 주었고, 점포신뢰는 재구매의도에 영향을 주는 것으로 나타난 반면 단기거래지향고객의 경우 구매의 경제적가치만족 만이 점포신뢰에 영향을 주는것으로 확인되었다. 그러나 대형마트 장기간 관계지향고객에서는 구매의 경제적가치만족이 점포신뢰에 영향을 줌으로써재구매의도를 형성한 반면 단기지향고객에서는 구매의 경제적가치만족과 점포신뢰가 동시에 재구매의도에 영향을 주는 것으로 확인되었다. 이상의 연구결과를 바탕으로 다음과 같은 논의를 할 수 있다. 첫째, 대형할인점의 경우 장기관계지향고객은 점포 내 제품의 품질과 고객서비스 수준 그리고 구매 시경제적 가치 등 모든 요소를 고려하여 점포에 대하여 만족하게 되며, 또한 점포가 이들 만족요인을 고객에게 제대로 제공할 때 이용하는 점포에 대하여 신뢰하고 재구매의도를 강력하게 나타난다는 것을 알 수 있다. 따라서 장기간 관계지향고객에게는 점포에 대한 만족수준을 높이는 것이 중요하다. 구체적으로는 최신 정보기술(information technology)을 활용하여이용 고객의 데이터베이스를 구축하고, 개인화된 고객의 특성과 구매행동에 관한 정보를 축적하여 관계지향고객을 선정 한후 이들에게 제품 및 서비스에 대한 정보 및 가격과 판매촉진에 관한 정보를 DM(direct mail)이나 홈페이지에 적극적으로제시함으로써 점포이미지를 높이고 표적고객의 욕구를 충족시켜 점포에 대한 신뢰와 반복구매를 높일 수 있다. 그러나 단기거래지향고객은 구매 시 단지 가격구조나 판촉행사를 통한경제적 가치만을 고려하기 때문에 제조업체 브랜드(national brand)보다는 유통업체 브랜드(private brand)상품을 제시하여가격매력성을 높이고, 시간대별 판촉행사를 통해 고객의 점포에 대한 신뢰를 유도할 필요가 있다. 둘째, 대형슈퍼마켓에서는 관계지향고객이나 거래지향고객 모두가 구매의 경제적가치만을 우선적으로 고려하므로 가격정책에 역점을 둘 필요가 있다. 그러나 장기관계지향고객은 점포신뢰를 통해 반복구매의도를 형성하지만 단기거래지향고객은 직접적으로 재구매의도를 나타내므로 고객의 성향에 따라 분류하여 관리할 필요가있다. 즉 관계지향고객에게는 가격정책을 통하여 점포신뢰를꾀하여야 할 것이며, 거래지향고객에게는 판촉행사나 저가격정책 등으로 직접적인 반복구매를 유도해야 할 것이다.

        Wild grass is edible, and it grows in the mountains or field areas. Wild grass has diverse biological effects, such as antiobesity, anti-cancer, antioxidant activities and immune stimulation. Currently, many studies are aimed at enhancing the efficacy of medicinal foods on biological activity using a bioconversion technology, including the fermentation process. In this study, the quality characteristics and antioxidative activity of the fermented wild grass was investigated. The antioxidant activity of fermented wild grass was assessed by various radical scavenging assays using DPPH(2, 2-diphenyl-1-picrylhydrazyl), FRAP(ferric ion reducing antioxidant power), reducing power, and ABTS (2, 2'-azino-bis(3-ethylbenzothiazoline-6-sulphonic acid)). Moisture contents of the fermented wild grass is 49.6±0.06%. Contents of crude ash, crude protein, and crude fat were 0.65±0.01, 0.65±0.04, and 3.3±0.59%, respectively. Moreover, fermented wild grass showed that the hunter's color values were 80.36(lightnees), 11.47(redness), and 44.53(yellowness), respectively. Total phenolic contents of the fermented wild grass was 1, 185±159 ㎍ GAE(gallic acid equivalent)/g. The antioxidative activities of the fermented wild grass were significantly increased in a dose dependent manner. In addition, fermented wild grass did not show any cytotoxicity up to 500 ㎍/㎖. However, the anti-adipogenic effect of the fermented wild grass extract was barely detectable. This antioxidant potential is partly due to the phenolic compounds that are present in the fermented wild grass extracts.

        This study developed a rapid egg-salting method using a temperature change in NaCl solution under pressure. The permeation effects(PEs) of NaCl into eggs at ambient pressure were analyzed 1) after soaking them in 20, 30, or 40%(w/v) NaCl solution at 50℃ and 2) after soaking in 20~40% concentrations(w/v) of NaCl solution at 4℃ immediately after soaking at 50°C for 1 hr(temperature change method; TCM). Under permeation conditions(40% NaCl solution with TCM), the PE of NaCl into eggs at various pressures(4.0~7.0 MPa) was determined. The PE improved with increasing NaCl concentration and pressure. In 40%(w/v) NaCl solution, the PE was more rapid with TCM(0.70% for 2 hr) than without TCM(0.60% for 2 hr). At 7.0 MPa pressure, the PE was more rapid with TCM(1.66% for 15 min) than without TCM(1.40% for 15 min). These results suggest that the TCM-induced contraction of the egg membrane improved the PE. Therefore, we believe that the development of a rapid salting method for seasoning eggs is possible with the TCM.

        Atopic related skin symptoms must be controlled continually. Because it is involved with food, eating behaviors play an important role in the prevention and management of atopic dermatitis. The aim of this study was to develop and apply nutrition education program for the prevention and management of atopic dermatitis on elementary school students. After applying the nutrition education program, our research attempts to evaluate the effectiveness of such nutrition education program. This study examined the effects of a nutrition education program on atopic dermatitis-related snacking behaviors, eating attitudes, and food behaviors. Subjects were 3rd grade elementary school students in Daejeon. A 6-week nutrition education program was implemented to 97 children as the educated group and another 94 children were included in the study as the control group. A self-administered questionnaire was used to assess the effects of nutrition education program. As results, eating attitudes reached significant improvement by the nutrition education program(p<0.05). In a paired t-test, the control group did not show significant difference, but the educated group showed a significant difference. In snacking behaviors, the two groups did not show statistical difference except for some considering factors. Also, there were no significant differences of the two groups after nutrition education program, except the snacking place after the nutrition education group. However, in the educated group, the types of snacks made by mothers increased 17.5% from 40.2% to 57.7%, and in-house as snacking place increased 13.4% from 68% to 81.4%. In the results of before and after the nutrition education program, the program showed some effect on the prevention and management of atopic dermatitis. Therefore, these results showed foundation for nutritional education and various educational programs are needed afterward to increase the effect of nutrition education in the prevention and management policy related to atopic dermatitis.

        This paper investigated the system that is relevant to Jang(fermented soybean paste or solution), the relief of hunger- stricken people by Jang, 33 kinds of Jang, and its consumption in the documents, such as the annals of the Chosun Dynasty, Ihlseong-document, Seungjeongwon daily, Uigwe(record of national ceremony), official documents on the basis of Kyujanggak institute for the Korean studies and data base of Korean classics. There are lots of Jang named after the place of particular soybean's production from the ancient times. Jang, soybean, salt and Meju(source of Jang), during the Dynasty, were collected as taxation or tribute. In the 5th year of Hyeonjong(1664), the storage amount of soybean in Hojo(ministry of finance) was 16, 200 ㎘, and its consumption was 7, 694 ㎘ a year. In the 32nd year of Yongjo(1756), the 1, 800 ㎘ of soybean was distributed to the people at the time of disaster, and in his 36th year(1756), the 15, 426 ㎘ of soybean was reduced from the soybean taxation nationwide. The offices managing Jang are Naejashi, Saseonseo, Sadoshi, Yebinshi and Bongsangshi. Chongyoongcheong(Gyeonggi military headquarters) stored the 175.14 ㎘ of Jang, and the 198 ㎘ of Jang in Yebinshi. There are such posts managing Jang as Jangsaek, Jangdoo, and Saseonsikjang. In the year of Jeongjong(1777~1800), the royal family distributed the 3.6 ㎘ of Meju to Gasoon-court, Hygyeong-court, queen's mother-court, queen's court, royal palace. The 13.41 ㎘ of Gamjang(fermented soybean solution) was distributed to the Gasoon-court, 17.23 ㎘ to Hegyeong-court, 17.09 ㎘ to the queen's mother-court, and the 17.17 ㎘ to the queen's court each. There are 112 Jang-storing pots in the royal storages, and the 690 are in Namhan-hill, where the 2.7 ㎘ of fermented Jang was made and brought back by them each year. At the time of starvation, Jang relieved the starving people. There are 20 occasions of big reliefs, according to the annals of the Chosun Dynasty. In the 5th year of Sejong(1423), the 360 ㎘ of Jang was given to the hunger-stricken people. In his 6th year(1424), the 8, 512.92 ㎘ of rice, bean, and Jang was provided and in the 28th year(1446), the 8, 322.68 ㎘ of Jang was also provided to them. In the Dynasty, Jang was given as a salary. In case that when they were bereaved, they didn't eat Jang patiently for its preservation. They were awarded for their filial piety. In the annals of the Chosun Dynasty, there are 19 kinds of Jang. They are listed in the order of Jang(108), Yeomjang(90), Maljang(11), Yookjang(5), Gamjang(4), and etc., . In Seungjeongwon daily, there are 11 kinds of Jang. Jang(6), Cheongjang (5), Maljang(5), and Tojang(3) are listed in order. In the Ihlseong-document, there are 5 kinds of Jang. They are listed in Jang(15), Maljang(2), Gamjang(2), and etc., . There are 13 kinds of Jang in Uigwe, and the official documents, in the order of Gamjang(59), Ganjang(37), Jang(28), Yeomjang(7), Maljang(6), and Cheongjang(5). In addition, shi are Jeonshi(7), and Dooshi(4). All these are made of only soybean except, for Yookjang. The most-frequently recorded Jang among anthology, cookbook, the annals of the Chosun Dynasty, Ihlseong-document, Seoungjeongwon daily, Uigwe, or officialdocument is Jang(372), and then Yeomjang(194), Gamjang(73), Cheongjang(46), Ganjang(46), Soojang(33), and Maljang(26), which were made of soybean. Jang from China in cookbook is not in anthology and royal palace documents. Thus, traditional Jang made of soybean was used in the daily food life in the royal court, and in the public during the Chosun period.

        Corn has been used for a long time as a traditional remedy, as well as a food source. We previously reported that in vitro supplementation of corn water extracts enhanced the proliferation of splenocytes, compared to the control group. In this study, we examined the immunomodulative effect of a water extract of corn. Seven to eight weeks old mice(Balb/c) were fed an ad libitum chow diet, and were orally administrated a water extract of corn every other day, for four weeks, at two different concentrations(50 and 500 ㎎/㎏ B.W). Cytokine production(IL-2, IL-10 and IFN-γ) by macrophages stimulated with LPS or not stimulated with LPS was detected by ELISA assay using the cytokine kit. In an ex vivo study, the cytokines IL-2, IL-10 and IFN-γ were detected at 500 ㎎/㎏ b.w. supplementation group with LPS stimulation in all cases. Also, the ratio of IFN-γ to IL-10 was in the range of 0~3 with mitogen stimulation, such as con A and LPS. In conclusion, this study suggests that in mice, corn extracts may enhance immune function by regulating the cytokine production(IL-2, IL-10 and IFN-γ) of the activated macrophages.

        To evaluate the antioxidant and potential of Humulus japonicus, total polyphenol and flavonoid content, radical scavenging activities, and antitumor activities were measured. The total polyphenol and flavonoid contents of the methanol extracts from Humulus japonicus were 30.13±1.13 and 13.61±0.49 ㎎ gallic acid equivalent/g extract, respectively. DPPH radical and hydroxyl radical scavenging activities of methanol extracts of Humulus japonicus were 60% and 35%, respectively. The Humulus japonicus higher activities of anticancer activities on liver cancer cell lines compared to other cancer cell lines.

        This study aimed to analyze the effect of demographic characteristics of consumers and quality recognition factors on purchase intention of organic wine, and to provide preliminary data necessary for the development of wine industry. By factor analysis of collected surveys, quality recognition factors of both the experienced and non-experienced group of organic wine environment/health, varieties of grapes, price, and four brand elements. First, among demographic characteristics, only income level hae a significant influence on the changes in quality recognition causes. Each of quality recognition causes of organic wine had a significant relation with purchase intent. The result of our analysis suggested that ‘environment/health’ was most influential for the experienced group, and ‘health’ was most influential for the non-experienced group. Therefore, this hypothesis is supported.

        The purpose of this study was to provide basic information regarding desirable body image recognition by examining body image recognition 395 middle school students in the Chungnam area. The average age of the subjects was 13.7 years for boys and 12.6 for girls. Their average height and weight were 165.4 ㎝ and 57.1 ㎏ for boys, and 155.7 ㎝ and 48.8 ㎏ for girls. As for body shape, girls thought that they were overweight more often and wanted to lose weight compared to the boys. Over half of the respondents answered that their weight control efforts were not systematic such ad via professional counseling. Weight control by students was attempted by themselves in order to control their weight by skipping meals. Further, the subjects exhibit dietary behavioral problems such as overeating, skipping meals, unbalanced diet, and eating speed. In conclusion, correct body image recognition is needed and families and schools should make efforts to help students properly control their weight and adopt proper eating habits.
