        The purpose of this study was to evaluate cookies prepared with five different quantities (0, 5, 10, 15, and 20%) of watermelon powder (WP). This study analyzed quality characteristics, consumer liking, and CATA (check-all-that-apply) of the samples. The density and pH of the cookie dough and the L-value of the cookies tended to decrease as the amount of watermelon powder increased (p<0.05), whereas the spread factor, a-value, and hardness of the cookies tended to increase as the amount of watermelon powder increased (p<0.001). The b-value tended to increase up to WP10, but it tended to decrease from WP15 (p<0.001). The results of the evaluation of consumer liking showed that overall liking was the highest for WP5 and lowest for WP20 (p<0.05). In the analysis of the CATA survey, the main reasons for liking for all the samples were ‘Appearance’, ‘Color’, ‘Sweet taste’, ‘Nutty odor/flavor’, ‘Crispiness’, and ‘Familiarity’. WP5 showed the most diverse reasons for being liked. The common reason for disliking samples with the addition of watermelon powder was ‘Residual feel in the mouth’. In the correspondence analysis, attributes of ‘Stale taste’, ‘Clean taste’, ‘Softness’, ‘Familiarity’, ‘Moistness’, ‘Color’, ‘Blandness’ were detected in the WP0 and WP5. The results indicate that WP5 with a 5% supplementation of watermelon powder is appropriate for improving the quality and consumer acceptability of the cookies.

        Although fine dust pollution in Korea is increasing, there is no information regarding nutritional standards for fine dustrelated disease patients. This study analyzed the food and nutrient intake status in adult men with disease associated with fine dust in the area with the increased level of fine dust pollution using the sixth and seventh Korea National Health and Nutrition Examination Survey (2013-2017). The daily intakes, and average nutrient adequacy ratio (NAR) and mean adequacy ratio (MAR) values of energy were significantly increased in the control group compared with patient groups. Compared with the control group, protein, fat and cholesterol intakes were significantly increased in the patient groups. Daily intakes of cereals and grain products in the control group were increased, whereas seasoning intake was decreased in the control group compared with patient groups. The patient groups had low daily water and vitamin B1 intakes, and the niacin intake of patient groups was significantly lower than that of the control group. Nutrition density and nutritional quality of vitamin C were significantly reduced in patient groups. This study can be used as basic data for nutrition education that emphasizes sufficient calorie, water and antioxidant vitamin intakes for patients related to fine dust pollution.

        Local non-timber forest products can be easily accessed by tourists. These also provide opportunities for tourists to experience the local culture. Many local governments are paying constant attention to the development of non-timber forest product brands to revitalize the local economy and increase the profits of local farmers. Although there are many forest products and tourism resources in each region of Korea, there is no local specialized strategy to sell non-timber forest products and promote consumers' purchase intentions. In this study, we aimed to explore the consumers’ perceived creating shared value (CSV) and its association with purchasing behavior of non-timber forest products in Jeongeup city, Korea. Data were collected from 1,066 consumers who had purchased non-timber forest products. Purchasing patterns of local specialty products differed depending on consumers’ perceived CSV levels. In addition, consumers with higher levels of perceived CSV showed higher awareness and familiarity with Jeongeup city and experienced Jeongeup city’s non-timber forest products. Our findings suggest that improving consumer perception towards CSV of non-timber forest products can be used as a marketing strategy for local non-timber forest products to revitalize the local economy.

        Purpose: The purpose of this study was to understand the meaning and nature of the experiences of adult patients infected with HIV (Human Immunodeficiency Virus) when they were teens. Methods: To this end, we analyzed how the experience was interpreted in their daily lives and what its meaning was through the Interpretative Phenomenological Analysis (IPA), a new method of extensive qualitative research in the UK. Among the confirmed HIV infections in teenagers, three people who agreed to participate in the study were men in their 20s and 30s. Participants were interviewed in-depth to collect data and the data was analyzed and interpreted using IPA. Results: As the results, eight themes and 18 sub-themes were derived from meaningful statements through in-depth analysis, and these were categorized into 4 categories. The four categories included ‘shock and despair’, ‘realistic difficulties’, ‘barriers in relationships’, and ‘life transitions’. Conclusion: Adolescent infected persons had support from their families or surroundings, and this positively influenced on the recovery of infected persons. We discussed the implications of the understanding of HIV infection, changes in social perception, the need for correct sex education, and the experiences of teenagers infected with HIV, and suggested follow-up studies.

        This study analyzed the health characteristics and comorbidity of adult men aged 40 years by dividing them into a control group of those without any disease related to fine dust and a patient group with one or more diseases related to fine dust in areas with high levels of fine dust pollution using the sixth and seventh Korea National Health and Nutrition Examination Survey (2013-2017). Among the general characteristics, the mean age of the patient group was significantly older than that of the control group (p<0.001), and in terms of the health-related characteristics, the frequency of breakfast consumption in the patient group was higher than in the control group (p<0.043). The body measurements were similar in the patient and control groups. Regarding the prevalence of comorbidity, the patient group showed a higher prevalence of hypertension, dyslipidemia, stroke, myocardial infarction, heart failure, and diabetes than the control group, but the differences were not statistically significant. On the other hand, the prevalence of other cancers (except stomach cancer, liver cancer, colorectal cancer, breast cancer, and cervical cancer) in the patient group was higher than in the control group (p<0.05). In terms of the clinical characteristics, the glycated hemoglobin levels in the patient group were significantly higher than in the control group (p<0.048). Information on nutrition and health in areas with frequent occurrences of fine dust was obtained through the study results, which can be used as basic data for measures of health and diet management against diseases that will increase in relation to fine dust.

        The antioxidant, physicochemical, and sensory properties of muffins using fermented Curcuma longa L. were investigated. Sensory properties of the samples were examined, and the correlation between the physicochemical, antioxidant, and sensory properties was studied. The pH of the samples was pH 7.26-7.42, which was the optimal pH range for the air formation of the dough, color, or volume. The antioxidant activities of the sample group were significantly higher than the control (p<0.05). In the sensory intensities, the 1.0 and 1.5%-added sample groups showed a similar savory aroma, sweet aroma, savory taste, sweet taste, and texture to those of the control. Samples containing 1.0 and 1.5% showed similar overall acceptance values to the control. The muffin containing 1.0 or 1.5% fermented Curcuma longa L. powder was developed successfully, and it was concluded that the developed muffin with the fermented turmeric powder could be a highly valued product in the increasingly competitive muffin food industry.

        This study was performed to examine the physicochemical and antioxidative properties of the sponge cakes with different contents (0, 2, 4, 6, 8%, w/w) of lemon balm (Melissa officinalis) powder (LBP). An increase in LBP content in the cake led to a significant increase in the baking loss rate, specific volume, DPPH radical scavenging activity, ABTS radical scavenging activity, total phenol contents and total flavonoid contents of the cakes (p<0.05). As the LBP content increased, significant decreases were shown in the specific gravity of batter, sugar contents, pH, lightness, redness and yellowness of the cakes (p<0.05). Ash contents, uniformity index and other textural properties of hardness, springness, cohesiveness, and brittleness did not show any significant differences between the sample groups (p>0.05). These results suggest that LBP can be applied to sponge cakes to achieve positive textural properties such as uniform pore formation and increased volume with increased antioxidant properties.

        This study was conducted to evaluate children’s purchase behavior (frequency of snack consumption and purchase) and preference for high protein snack products developed for weight control and nutritional balance. A total of 80 elementary school students (from the 3rd to 6th graders) in the Gyeonggi-do learning center were participated and 76 were used for the analysis. The most common response for liking snacks was taste (71.4%), and the most preferred types of snacks were chips (42.1%) and puff snacks (34.2%). The highest frequency of snack ingestion was 1-3 times per week (48; 63.2%), and the main purchasers were parents (65.8%). Cheese, corn and chili flavors were more preferred than the control, while yogurt taste was slightly less preferred than the control. The results of this study showed the possibility of commercialization of new protein snacks according to children’s seasoning preference and provide the insights into the snack preferences of children as main consumers.

        Bulgogi (Korean-traditional barbequed beef) is one of the most globally well-known Korean foods. Though various attempts have been made to promote bulgogi, studies are limited understanding mostly to US consumers or foreigners who reside in Korea. China, the world’s most populous country, has the biggest market potential in the world. The purpose of this study was to understand reasons of liking or disliking bulgogi products in Chinese consumers who reside in China in comparison to Korean consumers. The bulgogi used in this study differed in its main marinating ingredients. Check-all-thatapply (CATA) questionnaire was used to collect the reasons why one liked or disliked the given bulgogi product. CATA result showed that even for the same product, Korean and Chinese consumers liked or disliked it for different reasons. In particular, unlike Koreans, Chinese consumers reported sweet taste and garlic flavor as reasons for disliking the samples with high amounts of sugar and garlic, respectively. This seemed to be the result of differences in familiarity of consumers to certain tastes and flavors. The results imply the influence of culture in consumer preferences.

        This study was conducted to investigate the degree of practice of dietary behavior and dining out in accordance with intake of sodium among male and female adults aged 20 years or older residing in the Seoul Metropolitan area or Chungcheong Province. A total of 530 copies of the questionnaire were distributed from May to July, 2014. The SH group who responded that they eat a lot of sodium constituted 30.6% (158 people), followed by the SM group who responded that their sodium intake is about average at 55.7% (288 people) and the SL group who answered that they do not eat much sodium at 13.7% (71 people). Those in the SL group showed positive results for dietary behavior patterns. The SL group showed the lowest rate in terms of how often they eat harmful foods, including processed foods, sweet foods, salty foods, or food with high animal fat content such as pork belly. Positive results among the SL group were prominent in terms of avoiding over-drinking, regular exercise, and nutritional knowledge, indicating greater health management. The distribution of each group in terms of self-perceived sodium intake showed significant differences across age, gender, and household income in terms of frequency of fast food intake, regularity of meals, purchase of foods with consideration of sodium amount, frequency of missed meals, balance of food intake, and health management habits.

        본 연구는 하천생태계 내에서 작용하는 다양한 물리․화학 적 스트레서들의 영향을 어류를 이용한 생태건강성 평가를 통해 확인하고 Comet assay를 이용하여 DNA 수준에서의 영향을 파악하고 또한 Pre-warning system으로서의 기능을 평가하기 위한 사례연구로서 실시하였다. 대전 갑천의 5개 지점을 대상으로 생태건강성 평가를 위한 Index of Biological Integrity (IBI)를 우리나라 환경에 맞게 수정 적 용한 Multimetric Fish Assessment Index (MFAI)를 적용하 였고, 지점을 상류 (S1), 중류 (S3), 하류 (S5)로 구분하여 피라미 (Zacco platypus)를 대상으로 Comet assay를 실시 하였다. 본 연구 결과에 따르면, MFAI 모델은 평균 26.8 (Fair)이고 지점에 따라 34 (Good–Fair)에서 20 (Poor)까지 변이를 보였으며, 상류에서 하류로 갈수록 악화되는 경향을 보였다. 어류의 생태지표특성 역시 하류부에서 민감종의 급 감 및 내성종의 급증이 나타나 생태건강성 평가와 유사한 결과가 나타났다. 유전물질의 오염 정도를 나타내는 지표로 쓰이는 Comet assay도 상류보다 하류로 갈수록 DNA가 손 상된 세포수가 증가하는 것으로 나타나 상류보다 하류부에 서 오염에 대한 스트레스를 받고 있는 것으로 나타났다.

        The purpose of this study was to determine the differences in perception of food hygiene and interest in dietary information among university students. A total of 550 college students from Seoul and the surrounding metropolitan area participated in this questionnaire using one-to-one interviews from September 20th to 28th, 2012. Three groups were classified according to level of awareness and practice of food safety. The highest education level of food safety was in the active-practice group (69.6%), with 58.0% in the want-practice group and 24.6% in the low-practice group. There were significant differences between the awareness and practice groups in terms of importance of food safety (p<0.001). Exactly 74.3% interest in food hygiene was measured in the active-practice group. Interests in dietary and food information were different between the groups: 71.4% for the active-practice group versus 24.6% for the low-practice group (p<0.001). Lowpractice group showed the lowest scores for interests in organic food, pesticide-free food, low-pesticide food, slow food, LOHAS, healthy-functional food, nutritional labels, and expiration dates. In conclusion, appropriate levels of food hygiene and food safety education should be provided by the food industry according to perception of food awareness and practice of food safety.

        본 연구는 호랑나비의 사육을 위한 기초적인 생육특성을 구명하고자 수행되었으며, 월동형 번데기의 저장기간에 따른 우화율과 산란실의 크기에 따른 산란특성에 대한 연구와 호랑나비 애벌레이 일반적인 생육특성에 대한 조사를 실시하였다. 조사결과 월동형 번데기의 저장기간에 따른 우화율은 4±1℃의 저온저장고에서 약 10개월 저장후에도 85%의 우화율을 보였으며, 저장기간중 주기별 우화실험결과 평균우화율이 89.6%였고, 기간별 우화율에 차이가 없는 것으로 나타났다. 산란실의 크기에 따른 짝짓기 성공률을 조사한 결과 대형 산란실(6,000×6,000×3,500㎜)에서는 86.7±5.8%로 소형 산란실(2,500×3,000×2,000㎜)의 63.3±15.3%비해 짝짓기가 더 잘 이루어지는 것으로 보였다. 반면에 산란실의 크기에 따른 산란수량은 대형 산란실이 137.0±16.5개, 소형 산란실이 141.7±20.4개로 큰 차이가 없었다. 먹이식물에 대한 산란선호도는 황벽나무가 141.7±27.8개로 67.7±20.6개를 산란한 산초나무나 77±21.8개를 산란한 귤나무에 비해 산란선호도가 우수한 것으로 나타났다. 호랑나비 애벌레의 부화율은 92.2%로 나타났으며, 알기간은 4.4±0.8일로 나타났다. 애벌레기간은 총 19.9±2.1일로 나타났으며, 5령기간이 가장 길어 6.9±1.8일이였다. 호랑나비 애벌레의 령별 두폭은 1령 애벌레가 0.72mm±0.02였으며, 2령 1.19±0.02mm, 3령 1.65±0.05mm, 4령 2.43±0.07mm, 5령 3.21±0.12mm로 각각 나타났다. 용화율은 92%로 나타났으며, 번데기기간은 8.8±0.9일이었고, 우화율은 92.8%였다.
