This study investigated the sensory characteristics and antioxidative activity of the reduced salt dried bulgogi bibimbap containing AF-343, a dandelion-derived compound extract. A sample with a 30% reduced salt had a sodium amount of 659.01 mg, which was significantly lower than that of the sample before the reduction (p<0.05). The textural hardness of the SW (Standard sample with the AF-343), showed the lowest value of 1.03 N/cm2, indicating that the AF-343-containing sample could have a slightly softer texture than the non-containing sample. In the analytical sensory test, the AF-343- containing samples showed a synergistic effect on the aroma and flavor of bulgogi, with values of 5.7 and 8.4, respectively, which were significantly higher than that of the non-containing sample group (4.3 and 4.4, respectively). The hardness by the sensory test was slightly hard with values of 7.2-8.1 in all samples, indicating that textural improvement was needed. In the acceptance test, all the samples scored with slightly lower values of 4-5 points, highlighting the need for future studies to improve the sensory characteristics of dried bibimbap. The flavonoid contents of AF-343-containing SW and RW sample groups were 68.21 and 64.31 mg GAE/100 g, respectively, which were significantly higher than those of the samples without AF-343 (49.06 and 44.82 mg GAE/100 g, respectively) (p<0.05). The ABTS and DPPH radical scavenging activities were similar to those of the flavonoid contents. As a result, in the production of AF-343-containing reduced-salt dried bulgogi bibimbap, more study on the textural improvement will be needed to achieve better palatability.
This study investigated the changes in the physicochemical properties of soybean sprout, radish, and pork loin during frozen Bibimbab production. The qualities of soybean sprout were affected by the blanching, thawing, and cooking processes, with the blanching process particularly regarded as an important process to attribute the overall quality of the soybean sprouts in the final product. High weight loss of radish was found in the thawing and cooking processes, while the weight loss was relatively lower than that of soybean sprout. However, mixing with hot rice can be attributed for the steep decrease in shear force of the radish. For pork meat, normally thermal treatment such as mixing with hot rice and cooking manifested quality deterioration. Based on the results, mixing process appeared to be the most important process which affected the final quality of the materials. To improve the quality of final frozen Bibimbab, therefore, it was recommended to freeze the food ingredient separately from rice prior to packaging, which warranted the follow up exploration.
We investigated the antioxidant, physicochemical, and sensory characteristics of dried type sodium-reduced bibimbap using dandelion complex powder (DCP). DCP is known to add moisture to the skin and relieve symptoms of atopic dermatitis. The sodium content of the standard sample was 1,110.87 mg per serving. The sodium was significantly reduced by 30%, resulting in 762.62 mg of sodium for the reduced sodium group (p<0.05). The ash contents of the standard sample group with DCP showed the highest value (3.17%) in all samples and was affected by minerals of DCP (p<0.05). The total flavonoid contents and ABTS radical scavenging activity, indicators of antioxidant, anticancer and antibacterial activities, showed significantly high activities with addition of DCP (p<0.05). In the sensory results, bulgogi and savory flavor of the samples with DCP showed significantly higher values, and samples with DCP received the highest scores for after-taste. All samples were confirmed to be microbiologically safe according to the food code applied to food manufacturers. Pathogenic microorganisms tests were either negative or not detected in all samples.
This study investigated the antioxidative activities and quality characteristics of Aster scaber Bibimbap as a home meal replacement with blanching (BASB) or without blanching (ASB) pretreatment. BASB samples at 5.0 g showed higher moisture, crude protein, and ash contents than the control (p<0.05). Color L, a, b-values of samples significantly decreased with increased content of Aster scaber powder (p<0.05). BASB samples showed lower hardness than ASB samples. BASB samples showed higher total phenolic content and DPPH radical scavenging activity than ASB samples. BASB samples showed higher sensory values for color, savory aroma, savory flavor, and aftertaste than ASB samples. Except for glossiness, BASB samples showed higher sensory acceptance scores than ASB samples. Sensory acceptance tests of all samples showed high scores for ‘usually like’, representing the possibility of successful development of Bibimbap as a home meal replacement, especially that containing blanching pre-treated Aster scaber powder.
In 2013, for the 130th anniversary of the establishment of diplomatic relations between Korea and Germany as well as the 50th anniversary of the dispatch of Korean workers to Germany, a survey on the recognition and preferences related to Bibimbab was carried out among students in Bayreuther, Germany majoring in hotel management who had not tried Korean food before. As part of the globalization of Korean food, 10 different foods that Germans might like were prepared, and the survey took place after food tasting. In the results, 44% of students noted that their first impression of Bibimbab was good, and impression was more favorable after tasting than before. The preference for nine foods other than Bibimbab was in order of Kimchi, Bulgogi, Mandu, Modum-jeon, Samgyetang, Gimbab, Japchae, Tteokbokki, and Sangchu-muchim. Students liked Bibimbab due to its healthiness, and most students showed interest in Korean food after tasting Bibimbab. To improve Bibimbab, most students answered diversifying sauces.
The purpose of this study was to investigate changes in the cooking process of Bibimbab(cooked rice mixed with various ingredients) appeared in cook books published after Korean modern era, approximately from late 19th century to the present. 7 cook books were chosen to be analyzed. It is found that the ingredients were mixed with the rice before being served in the cook books written in late 19th century until mid 20th century, while the ingredients were separately decorated on top of the rice in the cook books written from mid 20th century until late 20th century. Gochujang(Korean chilly paste), which is common spicy seasoning for Bibimbab in the present time, appeared only in Hangukeumak(1987) which is written in late 20th century. Prior to Hangukeumak(1987), chilly powder or chilly was used for chilly-based spicy seasoning. Cook books written in late 19th century until mid 20th century, ingredients used for Bibimbab had complicated cooking methods such as Jeonyueo(assorted pan-fried delicacies), Nurumi(fried beef skewer with various vegetables) and Sanjeok(grilled beef skewer). From mid 20th century until late 20th century, among the cook books analyzed in this research, only Hankukyoribaekguasajeon(1976) suggested Jeonyueo as an ingredient, and in general, the cooking method for preparing beef became simpler. For further studies, firstly, the cooking procedures used for Bibimbab in the prior period to the Korean modern era need to be examined for more information about the changes of cooking style of Bibimbab. Secondly, new Bibimbab recipes for modern restaurants could be created by using the recipes used in the historical cook books. Finally, the definitions of culinary terms used in historical cook books need to be clarified.
The purpose of this study was to divide into a few groups of Bibimbabs with distinctive menu patterns and accompaniments from 484 Bibimbab menus of 360 elementary school foodservices around Busan city and Gyeongnam province. The menus were collected from the internet(http://www.kdclub.com) and the home page of elementary schools from December, 2004 to September, 2005. Moreover, Bibimbabs with high frequency were analyzed by seasons and regions to give informations for menu planing and developing in elementary school foodservices. The serving frequency of Bibimbabs was significantly different among seasons, highest in summer and lowest in winter. Kongnamulbibimbab and Bomnamulbibimbab were highest in frequency in rural areas meanwhile, Sanchaebibimbab, and Chamchibibimbab were frequently served in Busan. The basic structure of Bibimbab meal based on main dish, soup, kimchi and one or two accompaniments consisted of 'side dish', 'fruit & beverage', or 'starchy food & dessert'. Thus, most of the Bibimbab meals were composed of 4~5 dishes. Five groups of Bibimbabs were suggested by the menu patterns and kinds of soups. Soups, fruit & beverage, and kimchi were included in the menu patterns of nearly all groups of Bibimbab. However, side dishes and strachy foods & desserts were included of excluded according to the groups of Bibimbabs. Some kinds of soups and side dishes were different among the groups of Bibimbab. These results suggest that the cost, avaliable labor and seasonal constraints contributed mainly to the numbers and kinds of accompainments in the Bibimbab meals. However, taste and sensory balance were also considered in the Bibimbab menus in the School Lunch Program.
본 논문은 퍼지이론을 조리법에 적용함으로써 지금까지 자료조사^3)를 근거로 하여 관능검사를 토대로 제시된 한국요리의 표준화 방법을 체계화하고 쉽게 응용할 수 있도록 하는 방법을 제시하였다. 본 논문에서는 비빔밥을 중심으로 퍼지이론을 적용하였으며, 식품 조리법의 판정기준인 관능지수를 퍼지이론에 적용하여 추론하는 방법을 제시하였다. 이 방법은 재료의 분량에 따른 관능지수의 변화에 대한 매우 제한적인 경우에 대해서 제시를 했지만 더 많은 재료의 분량 및 조리방법 등을 고려하면 더욱 정확하고 보편적인 관능지수를 직접 조리를 하지 않고 시뮬레이션에 의하여 추론할 수 있다. 본 논문에서는 그 기초적인 연구로 퍼지 이론을 소개하고 비빔밥을 중심으로 기본적인 방법을 제시하였는데 이 퍼지이론의 도입은 조리법의 과학화 및 전산화를 용이하게 하며, 환자의 체계적인 영양관리와 어린이, 노약자 등 식이요법이 필요한 사람들과 조리법이 한정적인 특정지역에 적용하여 다양한 방법을 모색할 수 있을 것으로 생각된다.
A hazard analysis which included watching operations, measuring temperatures of foods throughout preparation and display, and sampling and testing for microorganisms of total plate counts and coliform bacteria was conducted in various phases of product flow of Naeng-myeun (Cold noodles) and Pi-bim bab (mixed rice) prepared at Korean restaurants. Large numbers of total plate counts were counted from the cooked foods after handling and holding. Ingestion of these foods must be considered high risk. Critical control points identified were, pre-preparation, food handling after cooking, and holding on display in product flow of Nang-Meon and pre-preparation, preparation, and holding on display in product flow of Pi-bim bab. It need for effective quality control of Nang-Meon and Pi-bim bab that training program consist of surveillance, education of the staff, standard operation procedures, forbidding dangerous processes and control of critical points.
본 연구는 전주한옥마을 관광객을 대상으로 독특성욕구에 따른 선호도와 구매의도에 미치는 구매 행동에 관한 연구를 토대로 전주한옥마을 음식관광의 방향을 제시하는데 목적이 있다. 표본의 인구통 계학적 특성 중 전주한옥마을은 30대가 가장 많이 방문하며, 한 달 수입이 201만 원 이상인 관광객이 가장 많은 소비를 하는 것으로 나타났다. 가설 검증을 위해 회귀분석을 실시하였으며 유사성회피는 전통비빔밥의 선호도에 부정적인 영향관계를 보였으나 독특한 비빔밥의 선호도는 독창적선택과 비대 중적선택에 긍정적인 영향관계가 있음을 검증하였고, 독창적선택과 유사성회피는 독특한 비빔밥의 구매의도에 긍정적인 영향관계가 있음을 검증하였다. 전통비빔밥의 선호도는 전통비빔밥의 구매의도에 긍정적인 영향관계를 보였으며, 전통비빔밥의 선호도와 독특한 비빔밥의 선호도는 독특한 비빔밥의 구매의도에 긍정적인 영향관계가 있음을 검증하였다.
본 연구에서는 두릅, 엄나무순, 오가피순을 이용하여 고부가가치의 지역향토 음식, 햇순나물비빔밥을 개발하고 영양성을 평가하고자 하였다. 햇순나물 이외 비빔밥의 부재료를 선정하기 위하여 503명을 대상으로 비빔밥 재료에 대해 기호도를 조사였으며, 관능검사를 통해 선정된 재료와 햇순나물의 비율, 그리고 햇순나물간의 비율을 결정하였다. 기호도 조사결과, 표고버섯, 콩나물, 애호박, 당근을 부재료로 선정하였으며, 햇순나물과 부재료의 비율은 1:1. 햇순나
비빔밥에 즉석으로 이용할 수 있는 편이 나물상품 개발의 일환으로서 산뽕나무 잎의 건조 온도, 건조 전처리 방법에 따른 색도와 크기변화 및 관능평가를 실시하였다. 산뽕나무 잎을 25℃로 건조하였을 때 건조 된 잎을 80℃ 물에 3분간 침지하여 제조한 나물은 색깔 변화가 적었다. 잎을 120초간 덖음 처리한 후 80℃ 물에 3분간 침지하여 제조한 나물은 잎 크기의 복원율이 높았고, 잎의 색깔변화가 적었다. 건조된 잎을 80℃ 물에 3분간 침지하여 제조한 나물에 대해 종합적인 기호도 평가를 한 결과 100℃ 물에 열탕 처리한 것, 소금 0.5%액에 열탕처리 한 것 및 증기 처리한 것은 보통이다 이상의 수준으로 관능 평가되었으며, 덖음 처리한 것은 좋다 이상의 수준으로 평가되었다.
