        In this study red ginseng was extracted with ethanol and then fermented by yeasts including Lactobacillus casei and Bifidobacterium longum. Fermented red ginseng extracts(FRGE) were found to be more effective antioxidants in vitro with regards to 1, 1-diphenyl-2-picrylhydrazyl(DPPH) radical scavenging activity than red ginseng extracts(RGE). In FRGE, the contents of ginsenosides Rb1, -Rb2 and -Rc were much lower than in RGE, however, the contents of ginsenosides 20(S)-Rg3, 20(R)-Rg3 and compound K were higher than RGE. FRGE was added to Yanggaeng(0, 5, 10, 15, 20%), and physicochemical and sensory evaluations of the Yanggaeng were conducted. The L and b values of Yanggaeng with added FRGE were decreased by increasing the ratio of FRGE, while the a value was increased. Sensory evaluations for, taste, color, flavor, texture and overall acceptability of Yanggaeng with addition of FRGE (10%) were applicable for improving the Yanggaeng product.

        I assessed the B(a)P content from the Ginseng extract, Red ginseng extract, and Ssangwha extract which have high viscosities. It wasn`t easy to extract oil from these samples, consequently measuring of B(a)P was difficult. In order to know the exact detecting contents, I injected standard material of B(a)P to the above extractions and pre-treated for measurement but it was also difficult to measure of contents exactly. To improve of detecting method, I removed mucinous materials using a 85% phosphoric acid solution or 10% citric acid solution and then processed continuously with 60℃ hot water. The analysis revealed that extracting the samples contained B(a)P determined the rate of each 70%, 55%, 67% could increase. As a result the detecting method of B(a)P contents could be improved.

        Differences in sensory evaluation, physicochemical properties and antioxidant activities between green tea concentrations and tannase-treated green tea concentrations were measured in this study. The results showed that pH did not differ dependent on tannase treatment but antioxidant ability were slightly increased through tannase treatment without significant (p<0.05). However, the turbidity of the tannase-treated green tea concentration had significant difference to the non-treated concentration. The astringency, tested via sensory evaluation, decreased significantly after tannase treatment(p<0.05). Traces of epicatechin gallate(ECG) and epigallocatechin gallate(EGCG) also disappeared after the tannase treatment, due to the fact that the ester linkages in the catechin structure were broken by the tannase. It was concluded that tannase treatment of tea products is a very effective process for decreasing astringency and turbidity.

        가압경수로 원전 농축폐액건조설비(CWDS)에서 생성된 농축폐액건조물에 대한 고화 방안이 국내외적 으로 다양하게 연구되어 왔다. 농축폐액의 고형화는 시멘트, 파라핀 및 폴리머와 같은 고화제를 이용하여 수행되어 왔다. 동시에 농축폐액에 대한 감용비 및 운영상의 효과를 극대화하기 위한 농축폐액건조물 전처 리 방안이 연구되었다. 건조된 분말 형태의 폐기물을 유리화 설비에서 직접 처리할 경우 비산에 의한 배기 체 계통 및 폐기물 투입구 막힘 현상을 초래할 수 있으며, 취급 중 비산에 의한 방사성피폭을 초래할 가능 성이 있다. 본 연구는 분말형태의 폐기물을 유리화설비에서 고화하기 위한 전처리방안을 수립하고 이를 통해 설비운영 및 폐기물 운영관리의 안전성을 확보하는데 목적이 있다.

        Phenolic acid concentrates of rice bran(RB-ex) and hydroxycinnamic acids were investigated for their anti-hyperglycemic activities through glucose uptake and glucokinase activity using HepG2 cells and stimulatory effects on insulin secretion using HIT-TI5 cells. RB-ex was prepared as an ethylacetate extract after alkaline hydrolysis and hydroxycinnamic acids, found as major compositions of RB-ex, such as ferulic acid(FA), sinapic acid(SA) and p-coumaric acid(p-CA) were investigated to compare with the properties of RB-ex. The properties of glucose uptake in HepG2 cells were examined in the absence of insulin and two different glucose concentrations(5.5 mM and 25 mM). RB-ex and FA showed anti-hyperglycemic activities through the increase of glucose uptake and the stimulation of glucokinase activity in HepG2 cells. RB-ex exhibited higher glucose uptakes with higher glucose concentrations, whereas FA exhibited the same increasing effects on both concentrations of glucose. RB-ex and FA exhibited doubled glucokinase activities relative to control. In the presence of insulin in the 25 mM glucose-containing medium, the levels of glucose uptake were increased in all treatments compared with control. As stimulatory effects of samples on insulin secretion were estimated, RB-ex and FA stimulated insulin secretion at a concentration of 25㎕/㎖ and in particular, FA showed the highest amount of insulin-release in HIT-TI5 cells. Antioxidative effects on BIT-TI5 cells, RB-ex and hydroxycinnamic acids, excluding p-CA, showed inhibitory activities of 78% to 80% at a concentration of 100㎕㎖. On the basis of these results, we conclude that RB-ex and FA could help decrease blood glucose levels and prevent the cell damages via antioxidant activity.

        The principal objective of this study was to evaluate the quality characteristics of black ginseng jelly prepared with different 5 levels(0, 0.5, 1.0, 1.5, and 2.0%) of black ginseng extract. We assessed the ginsenosides level of white and black ginseng for comparison between white and black ginseng. And we conducted the pH, sugar content, Hunter`s color values, the mechanical characteristics and sensory evaluation of black ginseng jelly samples. The levels of ginsenoside Rg3, Rh1, and Rh2 of black ginseng were higher than those of white ginseng. The more black ginseng extract was increased, the sugar contents of black ginseng jelly were significantly increased(+O.05). We noted that the luminance and Hunter`s b values of jelly samples were decreased according to black ginseng extract was increased, but in Hunter`s a values 0.5% black ginseng jelly was the highest of the all. With regard to the mechanical properties of the black ginseng jelly samples, the score of hardness, gumminess and chewiness were significantly increased. In color, taste and overall quality, the score of jelly with 1.0% black ginseng extract was significantly increased than those of the all.

        가압경수로 원전의 농축폐액건조설비에서 발생된 농축폐액 건조물을 유리화 하는 방안이 연구되어 왔다. 중저준위 방사성폐기물을 유리화할 경우 최종 생성물은 내구성이 우수하고 현저한 부피저감 효과의 장점을 가지고 있다. 붕산농축폐액에 대한 유리화 타당성 연구는 분말시료의 전처리 방법 개발, 유리조성 프로그램을 이용한 유리개발 및 실증시험으로 수행되었다. 분말시료에 대한 전처리 방안으로는 유리화설비에 투입하기 전에 고형성을 갖도록 펠렛화하는 것이다. 농축폐액 성분중 Na와 B의 함량 분포는 유리속에 용융되는 정도와 설비로부터의 폐기물 배출·처리에 영향을 주기 때문에 이를 고려하여 유리조성이 개발되어야 한다. 실증시험에서는 폐기물 투입률, 배기체 특성 및 최종 생성물인 유리고화체의 특성이 검토되었다. 본 연구는 붕산농축폐액에 대한 유리고화체의 물리화학적 특성을 검토하고 유리화 타당성을 확인하는데 목적이 있다.

        Pigment concentrates with violet-red color and sweet taste were obtained from purple-fleshed sweet potato(PFSP) using ethyl alcohol and water. Extract from general potato(GP) were used as a control. The relative stability of PFSP pigment concentrate(PFSPPC) in a storage test over 15 days was confirmed in the order of dark > fluorescence > sun-light irradiation. The relative stability of GP pigment concentrate(GPPC) in a storage test over 15 days was confirmed in the order of sun-light > fluorescence > dark storage. The RRP of PFSPPC was higher than that of GPPC, but the color strength of GPPC was 1/2 that of PFSPPC. Treatment of PFSPPC with aluminum potassium sulfate(0.2~0.3%, w/w) best improved its stability. The improved RRPs of PFSPPC were 45.16~47.31% in sun light irradiation, 55.91~60.22% in fluorescence irradiation, and 76.34~75.97% in dark storage conditions. In substituting aluminum potassium sulfate for chitosan, an amount of 0.2~0.3%(w/w) was suitable, giving similar results in improving pigment stability for all concentrates tested. Also, freeze-dried PFSPPC powder was manufactured as a substitute for dextrin, and also as a substitute for chitosan to the extent of 0.25%(w/w). The results of storage stabilite for freeze-dried PFSPPC and GPPC powder over 15 days, irradiation were, PRRs of 74.47~89.36% and 61.54~76.92%, respectively. The stability improving effect of freeze dried PFSPPC powder was confirmed by the results of storage experiments at various conditions. The use of freeze-dried PFSPPC powder was therefore confirmed to be an effective treatment for general foods.

        지하수 중의 바나듐 및 실리카의 농축에 적합한 막을 선정하기 위하여 2종류의 나노여과 막모듈(NE2540-90, NF90-2540)과 3종류의 역삼투 막모듈(BW30-2540, RE2540-TE 및 XLE-2540)에 대한 투과선속과 배제율을 측정하였다. 투과선속과 배제율에 대한 실험 결과 본 연구에 사용된 나노여과 막모듈과 역삼투 막모듈 중에서 NE2540-90 막모듈이 바나듐과 실리카의 농축에 가장 적합하였다. NE2540-90 막모듈을 사용하여 막간차압을 8 kgf/cm2로 하였을 때, 바나듐 및 실리카의 배제율은 각각 98.2% 및 99.0%이였고, 알루미늄, 크롬, 철, 붕소, 스트론튬 및 바륨에 대한 배제율은 각각 92.0%, 83.6%, 96.0%, 45.1%, 98.6% 및 69.5%이였다. 서귀포지역 지하수를 각각 회수율 15%로 6단 처리하였을 때, 바나듐과 실리카 함량은 각각 148.9 μg/L 및 85.8 mg/L로 농축되었다. 나노여과 공정에 의한 농축수는 고농도의 바나듐과 실리카를 함유하고 있어 기능성음료로의 상품개발이 가능할 것으로 판단된다.
