        This study was conducted to investigate the effects of 6 Sigma on menu management, work commitment and quality in the culinary division of hotels and family restaurants. In addition, this study sought to identify the effects of menu management, work commitment and quality performance on customer satisfaction. Furthermore the relationship between menu management and culinary quality was evaluated here. The subjects evaluated in this study were employees of culinary division of hotels and family restaurants that implemented or were about to adopt the 6 Sigma program. A total of 385 questionnaires were analyzed using factor analysis, a reliability test, and covariance structural analysis. The results revealed that the 6 Sigma program influenced menu management, work commitment and culinary quality. Moreover, menu management, work commitment and culinary quality performance were found to impact customer satisfaction and culinary quality performance. Based on these findings, culinary divisions of hotels and family restaurants should incorporate the 6 Sigma program as soon as possible. To implement this program, faultless data for the 6 Sigma program should be collected using sufficient preparation procedures. After the data were collected, a task force team should be developed, experts should be cultivated and employees should be trained as necessary. Finally, the current level of product and services should be measured and reported to all employees in the culinary division and a challenge spirit should be brought with understanding for the reason for implementation of the 6 Sigma program. In implementing the 6 Sigma program, the leadership of the top manager and the head of the culinary division is very important.

        After enterprise get a certification in acquisition, the core requirements of ISO/TS 16949 standard is pull out the Performance Indicators by process access approach during the settlement and operation of system, and the pulled key performance indicators classified into the customer intention process, support process and management process and analyzed the effect to the management result. This study conducted with following step. Firstly, preceding research, the literature and investigation analysis about process approach method which is the special characteristics of ISO/TS 16949 standard. Secondly, each process of ISO/TS 16949 standard is classified and deduced the key performance indicators followed process access method. Finally, get a enterprise survey data related to improvement of Performance Indicator and analyzed by SPSS statistical software.

        This study aimed at evaluating current sanitation management performances in Korean-Food restaurants by their operation types and to develop sanitary training posters based on the risk factors, in an attempt to improve the level of sanitation management in Korean food service facilities. Eighteen Korean-food restaurants that are managed by franchisor, franchisees as well as self-managed with large-scale and small-scale restaurants in Seoul and Gyeonggi-Do, were evaluated by on-the-spot inspectors with an auditing tool consisting of three dimensions, nine categories and thirty four items. Data were analyzed using SPSS. The total score of each group showed that restaurants managed by franchisees ranked the highest (59 out of 100 points), while self-managed, small-scale restaurants ranked the lowest (44 out of 100 points). In the categorization of sanitation management compliance, the dimensions of food hygiene during production recorded the lowest compliance rate of 47.7% (22.89/48.0 points) followed by the dimension of environmental hygiene 59.3% (20.17/34.0 points) and personal hygiene 60.5% (10.89/18.0 points). This indicated the need for urgent improvement. The items which showed the lowest compliance rates were 'proper thawing of frozen foods' (0%), 'notifying and observing heating/reheating temperature' (6%), 'using of hand-washing facility and proper hand-washing' (33%), 'monitoring temperature of frozen-foods and cold-foods' (35%), and 'prevention of cross-contamination' (36%) among thirty four items. Self-managed, small-scale restaurants, in particular, needed to improve sanitary practices such as 'sanitation education for employee', 'verifying the employee health inspection reports', 'storing food on the shelves 15 cm distance away from the wall', 'suitability of ventilation capacity of hoods' and 'cleanliness of drainage'. On the basis of the findings of this study, we developed sanitary training posters, especially for small-scale restaurant operators. This could be an effective tool to educate food service employees on sanitary knowledge and principles and could be used to improve the existing sanitary conditions in Korean food service facilities.

        It is a fact that domestic performance art has been sharply progressed but it is focused on only performance quality technique, not on safety of performers and the audience. It is a pity that people's effort to keep safe stage environment have not traced to innovative change, eventually leading to be forced to perform under hazardous condition. This study is to find out and identify that domestic regulation and accident cases are investigated and compared with cases of advanced countries, to verify that performer and the audience are main elements to develop performance art. And it is to show more effective safety measure after pointing out hazardous elements. Research change is limited to review only performance ones of all cultural facilities and to review accident cases from these places to show reasonable safety measures for stage facilities. Operation manager covers almost all of areas such as devices, management, despite a fact that they take charge of stage facilities, illumination, sounds, already. Some conclusions are as follows; 1) performance theatre-related regulations should be established again. domestic safety standards for performance theatre safety should be established. 2) characteristic and purpose of performance place should be clarified at the stage planning and design of them 3) operation expert performance place is required to be trained to cover emergency situation at any time.

        The CEOs of global companies have been realized the imagination and creativity that can be obtained from the corporate culture is the crucial competitive power for sustainable growth. Thus, most domestic companies take an increasing interest in how to make creativity efficiently. This paper, however, argues that the proper application of performance indicators can engender creativity and innovation in organizations without costly investing on creativity. Assuming that creativity is actually dominated by the emotion of human resources rather than the rationality, this paper suggests the performance indicators developed based on the viewpoint of the characteristics of human needs and the relationship between the human needs and the attribute of works. The performance system which consists of activity, sociality and creativity is presented and the performance indicators for each category are also suggested to improve the spontaneity and creativity of human resources.

        A considerable number of corporations seem to be deeply interested in Quality Management as a tool to improve competitive advantage of their products. Especially, under dynamic management circumstances recently, acquisition of ISO (International Organization for Standardization) certification for domestic corporations could have great impact on outcomes, and it becomes even more important for corporations depended largely on exports. However, it is not simply acquisition of ISO certification itself that gives dominant competitive advantage, and effects of acquiring ISO certification on every corporation are different. On this study, I would like to examine how purpose and goal for ISO 9000 influence on outcomes later on, and how CEO’s concern and the corporation’s capability could change the outcomes after all. As a result of the study, importation of ISO 9000 for the purpose of ensuring competitive advantage of products, standardization of quality management system, and benefits in the short run showed a positive affects on outcomes. Also, the relationship between purpose of acquiring ISO 9000 and outcomes became more connected as the manager’s interest increased, and a greater capability of a corporation caused a greater effect on improvement of productivity and image of the corporation.
