        식품오염물질에 관련한 연구가 많이 진행되었지만 대부분 단기적 과제이었기에 식품오염물질 관리를 위한 종합 적이고 체계적인 연구가 필요하다. 본 연구에서는 식품오염물질 향후 연구방향을 제안하기 위하여 델파이 조사를 실시하였으며, 중요도 및 시급성을 고려하여 우선순위를 설정하였다. 학계, 연구기관, 정부기관, 기업 등 다양한 소속에 있는 50명의 전문가를 대상으로 식품안전과 관련한 개 방형 질문을 하였으며, 161개의 필요연구항목을 도출하였다. 이를 분류하여 5개 분야, 42개 항목으로 구성된 설문 지를 작성하였다. 5개 분야는 ‘식품오염물질 통합관리 시스템’, ‘환경유래 식품오염물질 안전관리’, ‘식품 중 오염된 자연독소 안전관리’, ‘조리가공 중 생성된 식품유해물질 안전관리’, ‘국내외 식품오염물질 안전관리 협력체계 구축 및 교육·홍보 방안’ 이었다. 전문가들이 답한 설문지(30/ 50 응답)를 분석하여 필요연구의 우선순위를 설정하였으며, 전문가들의 합의단계를 거쳐(24/30 응답) 이를 확정하였다. 본 설문조사 결과는 식품오염물질 안전관리를 위한 연구방향을 설정하기 위한 기초자료로 사용할 수 있을 것 이라 사료된다.

        The present study was carried out to assess the dietary exposure and the risk for arsenic (As) and mercury (Hg) through mushrooms intake. Various samples (n = 536) covering 17 kinds of mushrooms were collected from retail outlets and markets in Korea. The contents of As were 0.003 (King oyster) ~ 1.952 (Matsutake) mg/kg in raw mushrooms and 0.015 (Fuscoporia obliqua) ~ 16.95 (Matsutake) mg/kg in dry mushrooms, respectively. The contents of Hg were 0.001 (King oyster) ~ 0.030 (Matsutake) mg/kg in raw mushrooms and 0.004 (Oyster) ~ 0.588 (Matsutake) mg/kg in dry mushrooms, respectively. The mean dietary exposures of As was 0.151 μg/day, taking 0.005% of provisional tolerable weekly intake (PTWI). The mean dietary exposures of Hg was 0.022 μg/day, corresponding to 0.071% of PTWI. Therefore, the level of overall dietary exposure to As and Hg for Korean population through mushroom was far below the levels recommended by Joint FAO/WHO Expert Committee on Food Additivies, indicating little possibility of concern.

        The current standard for testing tetrodotoxin (TTX) in foodstuffs is the mouse bioassay (MBA) in Korea as in many other countries. However, this test suffers from potential ethical concerns over the use of live animals. In addition, the mouse bioassay does not test for a specific toxin thus a sample resulting in mouse incapacitation would need further confirmatory testing to determine the exact source toxin (e.g., TTX, STX, brevotoxin, etc.). Furthermore, though the time of death is proportional to toxicity in this assay, the dynamic range for this proportional relationship is small thus many samples must be diluted and new mice be injected to yield a result that falls within the quantitative dynamic range. Therefore, in recent years, there have been many efforts in this field to develop alternative assays. High performance liquid chromatography (HPLC) coupled with mass spectrometry (MS) has been emerged as one of the most promising options. A LC-MS-MS method involves solid-phase extraction (SPE) and followed by analysis using an electrospray in the positive ionization mode and multiple reactions monitoring (MRM). To adopt LC-MS-MS method as alternative standard for testing TTX, we performed a validation study for the quantification of TTX in puffer fish. This LC-MS-MS method showed good sensitivity as limits of detection (LOD) of 0.03~0.08 μg/g and limits of quantification (LOQ) of 0.10~0.25 μg/g. The linearity (r2) of tetrodotoxin were 0.9986~0.9997, the recovery were 80.9~103.0% and the relative standard deviations (RSD) were 4.3~13.0%. The correlation coefficient between the mouse bioassay and LC/MS/MS method was higher than 0.95.

        3-MCPD created in manufacture process was regulated in our country about soy sauce and HVP. The latest paper reported that Bound 3-MCPD is created as intermediate. Germany common risk assesment reported that Bound 3-MCPD must be reduced because Bound 3-MCPD can be created in estimation circle when this is hydrolyzed in human body, but the data about the toxity of Bound 3-MCPD is lack. Therefore, We analysis about 209 items food such as soy sauce, seasoning food and meat-eating manufactured goods using bound 3-MCPD analysis method developed recently. As result of survey, bound 3-MCPD detected in 8 items among 44 traditional sauce (0.02~0.28ppm), 8 of soup 12 items (0.01~0.96ppm), in 22 items of sauce 60 items (0.01~0.55ppm), in 16 items of meateating manufactured foods 30 items (0.04~0.18ppm), in 20 items of snack cookies 28 items (0.09~1.43ppm), in 8 in roasted oil foods 10 items (0.04~1.22ppm), in 6 items of peanut processed food 10 items (0.06~0.25ppm), in 1 of vegetable cream 15 items (0.05ppm). Detected level was lower than the result of monitored by other countries.

        본 연구에서는 대기오염물질인 유해 황산화물 가스를 이산화티탄 촉매 반응기와 연면 방전 반응기를 조합한 반응기에서 플라즈마 방전반응에 의하여 주파수 변화, 체류시간, 전극의 굵기, 첨가 모의가스 등의 공정 변수를 변화 시켜 분해제거 실험을 하였다. 실험 결과 황산화물의 분해제거 실험에서 주파수 10kHz에서 소비전력 19W에서 분해제거율은 99%이었으며 이산화티탄 촉매반응기를 부착한 경우가 없는 경우보다 5%이상 증가효과가 이었다. 첨가가스로 메탄을 첨가

        This study was conducted to estimate the contents of heavy metals including lead, cadmium,arsenic and total mercury in alcoholic beverages in Korea. Concentration of Hg was analyzed by gold amalgamation method, using mercury analyzer, while concentration of Pb, Cd and As was analyzed by ICP-MS. Concentration (μg/kg) of heavy metal in fermented liquors were ; for Pb 9.9 ± 8.4(0~38.0), Cd 5.8 ± 4.9(0~5.4), As 28.6 ± 19.4(1~96.4),Hg 0.7 ± 1.2(0~10.6). Concentration (μg/kg) of distilled liquors were : for Pb 4.4 ± 5.7(0~29.3), Cd 2.0 ± 2.5(0~10.3),As 12.0 ± 17.0(0~95.6), Hg 0.2 ± 0.3(0~2.3). Concentration(μg/kg) of other liquors were ; for Pb 7.5 ± 5.1(0~13.7),Cd 5.8 ± 3.9(0.6~11.2), As 25.2 ± 39.0(0.5~103.3), Hg 0.3 ± 0.1(0.1~0.5). The present study showed that difference of the amount of constituent in a same category of food are not affect to the content of heavy metals among them. The residual levels of takju, yakju, sake, beer, fruit wine, soju, whiskey, brandy, general distilled liquor, liquor, other liquors are within the maximum levels, prescribed by Korea food code. It is given that heavy metal exposure of Pb,Cd, As, Hg from consumption of alcoholic beverages (takju, yakju, sake, beer, fruit wine, soju, whiskey, brandy, general distilled liquor, liquor, other liquors) are less than 0.03%, 0.06%, 0.01%, 0.01% (mean) in provisional tolerable weekly intake (PTWI) respectively, indicated by FAO/WHO.

        Photostimulated luminescence (PSL)-Thermoluminescence (TL) combined analysis was applied to detect whether composite seasoning products and spices were irradiated or not. Samples were irradiated with 60Co at 0~7 kGy. A total of 12 different samples (6 of composite seasoning products and 6 of spices) was examined. Depending on the PSL results, TL analysis was performed. In case of both PSL positive ( ≥ 5,000 counts) and intermediate (700~5000 counts), TL analysis had to be performed to confirm the result of PSL. Using TL, the shape of the glow curve (Glow 1) made it possible to identify the irradiated samples. In addition, The TL glow ratio (Glow 1/Glow 2) obtained by normalization was less than 0.1 for the non-irradiated samples and ≥ 0.29 for irradiated ones, respectively.

        The heat transfer performance of R - 11 vapor condensing on integral fin tubes has been studied using fin tubes having the fin density from 748 to 1654 fins per meter. Electric heater supplied heat energy to the boiler to generate R - 11 vapor over the range of 25-60W. Condensation rates of each tubes were tested under the condition of cooling water flow rate from 400l/h to 2500l/h. For the seven fin tubes tested, the best performance has been obtained with a tube having a fin density of 1417fpm and a fin height of 1.3mm. This tube has yielded a maximum value of the heat transfer coefficient of 16500W/m2K, at a vapor to wall temperature difference of 3K. Experimental results of integral fin tubes have been compared with available predictive models such as Beatty - Katz's analysis, Webb's analysis, Sukhatme's analysis and Rudy's empirical relation. The experimental results were shown to be in good agreement with that of the Sukhatme's analysis.

        Saccharomycopsis lipolytica ATCC44601과 온도감수성 변이균주인 MX9-11RX8로부터 정제한 isocitrate lyase의 성질을 조사하였다. 허영온도에서 정제한 야생형균주 및 온도감수성변이균주 isocitrate lyase는 등전점(pH5.3), 35℃와 40℃ 및 45℃에서의 열 안전성 그리고 23℃와 33℃에서 threo-Ds-isocitrate에 대한 km값(약 0.2mM)에 대하여 차이가 없었으며, 온도감수성 변이균주는 33℃의 acetate 최소배지에서 유도하였을 때 효소활성은 거의 나타나지 않지만 isocitrate lyase에 해당하는 polypeptide사슬을 23℃의 허영온도에서 유도하였을 때와 거의 같은 양을 생산하였다.
