미강유를 유일한 탄소원으로 하여 효모균체단백질을 생산할 목적으로 이를 자화하는 효모(E222)균주를 토양으로부터 분리하였으며, 이를 동정한 결과 Candida albicans의 일종으로 나타났다. 건조균체 g당 유리아미노산의 전체함량이 0.05%로 나타났으며 Glycine, Glutamic Acid, Alanine, Leucine, Aspartic acid 등 14종의 아미노산이 확인되었다.
In the view of the fact that data are scare concerning the change of Methionine composition of poultry meat in function of storage temperature and cooking method. The present study was carried out to change in these compounds and the results were summarized as follows. 1. The result of measuring methionine compound of raw material stored under the condition of 5℃, 10℃ for 6 weeks were increased as temperature increases. 2. The result of change in methionine compound of roasting were decreased than raw material It was greatly decreased in the storage for 42 days at 10℃ and slightly decreased in the storage for 14 days at 5℃ 3. When the boiling in the water, methionine compound was decreased than roasting to compare with raw material 4. By the results of this study, one of the best cooking method is roasting, because of the change in methionine compound of roasting is slightly decrease.
The survey was carried out to obtain some fundmental data to improve the dietary life and to establish the nutritonal education and policy on inhabitants lived in isle area near by demilitarized zone in Korea. For this, 33 families in the area of Kyodong island located at Kanghwa-Gun, Kyungki province were randomly selected. Trained surveyors visited each house to survey the food and nutritional status in summer during 3 days in August, 1987. The results are summarized as follows; The number of foods they were taking totalled 17 categories and 134 kinds of which 104 kinds were vegetable foods. The average amount of food intake was 1465.3g per person per day, animal food occupied 9.6% only. The intake amount of fruit among vegetable foods, and fishes, shells, milk and eggs among animal foods was lower than the national average. Each proportion of carbohydrate, fat and protein to the total energy intake was 70.4%, 9.7% and 19.9%. The foods they used to take a lot were rice, potatoes, cucumbers, cabbage KIMCHIE and YULMOO KIMCHIE in order of their intake amount. The energy intake was 3064㎉ which is higher than nutritional requirements, and the energy ratio of cereals to the total energy in take is 76%. If the amount of fat intake is fixed to 20% of total energy intake, the amount of fat intake is 68g, but the actual amount of fat intake was only 33g. With an increase of total energy intake, supply of calcium and vitamin A should be increased much more.
Saccharomycopsis lipolytica ATCC44601과 온도감수성 변이균주인 MX9-11RX8로부터 정제한 isocitrate lyase의 성질을 조사하였다. 허영온도에서 정제한 야생형균주 및 온도감수성변이균주 isocitrate lyase는 등전점(pH5.3), 35℃와 40℃ 및 45℃에서의 열 안전성 그리고 23℃와 33℃에서 threo-Ds-isocitrate에 대한 km값(약 0.2mM)에 대하여 차이가 없었으며, 온도감수성 변이균주는 33℃의 acetate 최소배지에서 유도하였을 때 효소활성은 거의 나타나지 않지만 isocitrate lyase에 해당하는 polypeptide사슬을 23℃의 허영온도에서 유도하였을 때와 거의 같은 양을 생산하였다.
2두의 삼원교잡 모돈(L.×LW×D)으로부터 정상분만시켜 얻은 총 16두의 신생자돈에 Lactobacillus casei YS 생균 분말을 4주동안 경구 투여하여 얻은 성적을 요약하면 다음과 같다. 시험구의 증체량이 대조구에 비해 우수하였으며 투여후 1주일만에 하리예방 효과도 나타났다. 소장상부의 내용물당 유산균 수는 g당 시험구와 대조구모두 10^6cfu 정도로 비슷하였으나 시험구의 coliform수는 뚜렷하게 감소하였다. 분변중의 유산균 및 coliform수는 유산균 투여에도 불구하고 크게 변화하지 않으며 10^6-10^7 cfu/g 정도였다. 소화관 내용물의 pH는 소장상부에서 감소경향이 유의적으로 나타났다. 소장상부에 우세한 균종은 시험구가 L. salivarius, L. fermentum, L. casei였고 대조구는 L. salivarius, L. acidophilus 그리고 L. curvatus였다. 한편, 하리자돈으로부터 분리한 대장균은 Streptomycin, Ampicillin에는 내성을 보였고, Nalidixic acid, Gentamycin, Neomycin에는 감수성이 있었다.
The purpose of this study was to evaluate the relation of nutrients intake and copper status between nonvegetarian female college students and lacto-ovo-vegetarian female college students. The height, weight and serum copper concentrations were determined. Food nutrients analysis procedure was made by computer using food composition table. The results was summarized as followed; 1) Mean values of weight & height were respectively 53.58±1.68㎏·157.05±1.43㎝ in nonvegetarians and 51.23±1.45㎏·156.65±1.24㎝ in lacto-ovo-vegetarians. 2) The average intakes of protein, fat, carbohydrate, fiber, Ca, P, Fe and Vit. C were above the RDA in the two groups, but those of calories was below the RDA in non-vegetarians. Especially, fiber and iron intakes were significant in the two groups(p<0.01, p<0.05). 3) The percentage of iron absorption was 7.64% in nonvegetarians and 5% in lacto-ovo -vegetarians. 4) Mean serum copper values of nonvegetarian and vegetarian were 107.08±14.39㎍/100㎖ and 113.31±20.86㎍/100㎖, respectively.
