In order to improve the quality of Takju, the effect of combined use of Aspergillus oryzae and Aspergillus kawachii in brewing was investigated. The quality of Takju which was brewed by the combined use of Aspergillus orytae CF7-koji and Aspergillus kawachii CF1-koji in equal amount was better as compared with that brewed by existing method using Aspergillus kawachii-koji only as koji. But the good result did not obtained when the koji was made by mixed culture of Aspergillus CF7 and Aspergillus kawachii CF1.

To investigate the nutritional contents of lunchbox of students of elementary school located in Sokcho city Kangwon province, the survey was conducted from April 23 to April 26, 1991. Main dishes and side dishes in lunchbox were weighed and nutrients were analyzed from food composition table. Total daily energy and nutrients intake were reach to RDA`s, except for intake of calcium, iron, vitamin A, vitamin B_2 and vitamin C. Children`s height was positively correlated with energy and protein intake. Fat intake was positively correlated with monthly income and intake of vitamin A was positively correlated with number of family. This survey suggests that it need nutritional education program and school feeding to improvement of nutritional status for children.

This study was designed to investigate age-related changes in body composition and cell mediated immunity. Male Sprague-Dawley rats were fed stock diet ad libitum and 12 rats were sacrified at 1, 4, 6, 12 months of age. Body weight increased sharply from 1 to 4 months, and increased steadily thereafter. The weights of liver, epididymal fat pads, and kidney increased in similar pattern as body weight, but their relative ratio to body weight decreased with age. The ratio of epididymal fat pads to body weight increased with age. The weight of extensor digitorium longus, soleus and plantaris increased from 1 to 4 months, but it decreased at 6, 12 months. The protein content of muscles decreased or increased throughout 12 months. The T cell proliferation response to Con A stimulation was significantly lower at 6 months than 1 momth and lower at 12 months than 6 months.

In order to investigate the extraction mechanism of barley tea in cylindrical packed column, pilot plant scale packed column was designed and constructed. And extraction conditions for steady flow in the packed column were searched. The main results of this study are as follows : 1. Circulation of the stock barley tea before the extraction running was indispensable in consideration of inequality, gas, particles existed in packed bed. Solid-liquid equilibrium was initially maintained after the circulation. 2. Flow direction of solvent must be up-flow for maintaining the constant bed height and flow rate during the extraction. Paessure drop in pucked bed was similar to decrease ratio of extract concentration. 3. The porosity of packed bed was in the range of 0.24∼0.36 according to the particle size. And it was decreased as the particle size became smaller.

This study was devised to observe the inhibitory effect of 7 kinds of the acidic polysaccharide fraction(PG_1, PG_2, PG_3, PG_4, PC_5, PG_6 and PG_7) from Korean white ginseng on a lipolytic action of Toxohormone-L. Toxohormone-L is a lipolytic factor, found in ascites fluid of sarcoma -180 bearing mice and of patients with hepatoma. A substace that inhibited the lipolytic action of Toxohormone-L was isolated from white ginseng powder. This substance was an acidic polysaccharides. In vitro test showed that the inhibitory effect of PG_5 fraction of the lipolysis by Toxohormone-L was highest percent among other treatments at concentration of 50, 10, 200, 500 and l, 000㎍/㎖ of reaction mixture. And total inhibitory activity (units) of PG_1 and PG_4 was highest among other treatments at the same concentration and that of 10㎍/㎖.

Arthrobacter sp. L-3이 생성하는 glucose isomerase를 DEAE-cellulose column chromatography법으로 2단계 NaCl농도 구배로 용출함으로서 순수분리하였다. 이것이 SDS-acrylamide gel electrophoresis상에서 단일띠를 보임으로서 매우 잘 분리되었음을 알 수 있었다. Glucose isomerase의 K_m값과 V_max값이 각각 0.175M, 0.29(㎎/㎖/min)로 얻어졌다. 한편, SDS-acrylamide gel electrophoresis와 Sephadex-G100-50에 의한 gel filtration으로부터 분자량이 각각 42, 000과 180, 000으로 얻어져, 이 효소는 분자량이 42, 500인 4개의 subunit로 구성되었음을 알 수 있었다.

The blocked N-terminus and N-terminal sequence ol soybean β-amylase were determined by analyzing the acidic peptides derived on peptic digestion of the enzyme. The acidic peptides were separated from the digest on a Dowex 50×2 column(1×5㎝) and purified by reversed phase-high performance liquid chromatography(RP-HPLC). The major acidic peptide, PEP-1, was a heptapeptide. The N-terminal 7 amino acid sequence of soybean β-amylase was deduced to be acetyl-Ala-Thr-Ser-Asp-Ser-Asn-Met- from the results of sequence analysis of PEP-1 and amino acid analysis of other acidic peptides.

In the present study, an attempt was made to investigate the effect of stearic acid on the autoxidation of the commercial rice bran oil. Rice bran oil samples with stearic acid at 0.1, 0.3 and 0.5% level were kept at 45±0.3℃ for 40 days. The rate of autoxidation of each samples was estimated regulary on the basis of the changes of peroxide value, acid value, anisidine value and the fatty acid composition. The results were as follows : The peroxide, acid and anisidine values of the rice bran oil with the stearic acid at 0.1, 0.3 and 0.5% levels during the autoxidation increased as compared with that of the rice bran oil without the stearic acid. The induction period of the rice bran oil without the stearic acid, control was 19.8 days, while those of the bran oil with stearic acid at 0.1, 0.3 and 0.5% levels varied 19.0 days, 17.7 days and 14.2 days, respctively. In conclusion, it seemed that stearic acid acted as weak prooxidant when added at 0.1, 0.3 and 0.5% levels to the commercial rice bran oil. The prooxidant activity of the stearic acid appeared to depend on the oxidative mechanism and their concentration.

The purpose of this study is to provide useful information which will aid in the promotion of nutritional policy in the Korean rural area which are derived from a survey of intake and source of protein in some Korean rural adults and the correlations between their protein nutrition and various nutrients, the uses of tobacco, alcohol, coffee, etc. The survey was conducted from July, 24 through July, 28, 1989. The healthy subjects were 45 males (average age 42.3, average BMI 22.1㎏/㎡ ) and 55 females (44 years, 21.2㎏/㎡) residing in Sungjoo Kyun, Chulanam-Do, Korea. The subjects were examined for the anthropometric, food intake and food habits. Their daily diets were measured by 24-hr recall method. The results can be summarized as follows The daily mean protein intakes of male and female subjects were 95% of RDA(66.5g)( 16.7% of total food intake per day) and 102.3% of RDA(61g) (14.8% of total intake per day) respectively. The order of sources of animal protein in all subjects was fish(47.9%), meat(29.8%), milk (12%), and egg(10.3%). Among protein sources the intake frequencies of fork and chicken were higher than those of others. The protein nutrition of the subjects showed positive correlations with energy and fat, carbohydrate, fiber at the level of significance of 1%. The protein nutrition of the male subjects showed no correlation with age, BMI, uses of alcohol, coffee, medicine, but the plant protein nutrition showed a positive correlation with smoking and exercies(at 5%). And the protein nutrition of the male subjects showed no correlations with uses of tobacco, alcohol, coffee, medicine and their opinion of their present state of their health, but the age of the male subjects showed negative correlations with milk(at 1%) and egg(at 5%). In conclusion, the daily protein intake was good and the main sources of animal protein were fishes in rural adults. The protein nutrition of the subjects showed a correlation with energy, fat, carbohydrate and in the case of female, milk and egg intakes showed the negative correlation with age.

This study was surveyed by 192 male and 238 female eating-out behaviours about western food in Seoul. The results were summarized as follows : The recognition degree about the western food was 14.2% in 「Know well」, 54.8% in 「Know somewhat」, 25.3% in 「Not know」 and was observed significance by sex, food expenses and dine-out expenses. The recognition degree about western food was observed more highly than expected and would be further more highly with westernized dietary culture. The information of concern and knowledge about western food was taken by mass-communication, book, school education, etc. and the answer marked significance by sex, age, school career. The majority of subjects had chosen Korean restaurants in dining-out and the western restaurants were favorable to twenties(20∼29) and thirties(30∼39). The frequency of western restaurants visits was 46% in 「1∼3times/month」, 39% in 「several times/year」 and the answer of frequency had significance by age, food expenses, and dine-out expenses. The choice of western A la carte menu restaurants was chicken restaurant(28%), cutlet restaurant(24%), hamburger R. (13%), pizza R. (19%), Spaghetti R. (9%). Hamburger restaurants were favorable to twenties and the majority of pizza restaurant chosen were high level by monthly income. Content to be improved in western food was 68% in 「proper taste in Korean」. Western cook should be improved properly in Korean tasting.

Rheological properties of α-rice powder were investigated in comparison with those of polished rice powder. Flow behavior for cooked solutions of two powdered samples(5∼11%) were Binghampseudo plastic. Consistency index and yield stress of cooked solution of powdered α-rice were much lower than those of polished rice powder while flow behavior index was nearly similar. 9% cooked solution of powdered a -rice showed slightly weaker thixotrophic behavior and more ease tendency to relax under the steady shear than those of polished rice powder.
