        본 조사는 한국 소비자들의 식중독 경험여부, 식중독 원인균에 대한 지식 및 식품안전과 식중독 예방을 위한 행동에 있어서의 인식 정도를 알아보기 위하여 2001년 11월 일반성인 총 1,040명을 대상으로 전국적으로 전화조사를 실시하였다. 그 결과 12.4%는 연 1회 이상 식중독을 경험하고 있으며, 0.3%는 식중독으로 인해 병원에 입원하는 것으로 나타났다. 식중독이 발생한 원인장소로는 일반음식점에서의 음식 섭취가 37.2%로 가장 높게 나타났고, 가정에서의 부주의가 212.%등으로 나타났으며, 원인식품으로는 고기 등의 육류 및 가공품이 41.7%, 생선 등 어패류 및 가공품이 18.7% 등으로 나타났다. 식중독 원인균에 대한 인식에서는 콜레라(75.5%), 비브리오(73%), 이질(65.5%), 장티푸스(51.8%), 살모넬라증(47.5%)의 순으로 잘 알고 있는 것으로 나타났지만 리스테리아증(9.9%), 브루셀라증(8.3%)에 대해서는 대부분이 모르거나 음식물로 인해 발생하지 않는 것으로 인식하고 있는 것으로 나타났다. 한편, 조사자료를 바탕으로 3가지 모델로 구분 즉, Model 1은 식중독 원인균에 대한 지식, Model 2는 식품안전에 대한 인식, Mode 3은 식중독예방을 위한 행동에 대한 인식으로 구분하였고, 각 모델들은 조사자의 일반사항에서 나타난 변수와 식중독 경험여부 별로 다중회귀분석(Multiple regression analysis)을 수행하였다. 그 결과 식중독 원인균에 대한 인식(Model 1)은 여러 변수 중 교육수준(OR 0.536), 결혼상태(OR 0.529)가 영향요인으로 나타났으며, 특히, 과거 식중독 경험이 가장 중요한 영향요인으로 나타났다(OR 1.714). 식품안전에 대한 인식(Model 2)에서는 교육수준이 중요한 영향요인으로 나타났으며(OR 0.702), 식중독 예방을 위한 행동에 대한 인식(Model 3)에서는 교육수준(OR 0.816)과 성별(OR 0.650)이 중요한 영향으로 나타났으며, 과거 식중독 경험이나 식품안전에 대한 인식정도는 식중독 예방을 위한 행동에 대한 인식과는 상관관계가 없는 것으로 나타났다. 결론적으로 식품안전에 있어 경험과 지식은 실제 식중독 예방을 위한 행동에는 크게 영향을 미치지 않음을 의미하는 것으로 볼 수 있다.

        미생물학적 위해성 평가(Micribial risk assessment: MRA)에서 노출평가시 확률적 접근방법은 식중독 발생에 관련된 많은 위해 미생물의 다양성과 변이성 그리고 불확실성에 대한 분석이 가능하고 과적의 접근방법인 point estiamte 보다 훨씬 더 현실성이 반영된 결과를 제공할 수 있어 현재 MRA의 노출평가에서 가장 효과적인 방법으로 인정되고 있다. 본 연구는 MRA 방법론 중 노출평가에서 이용될 수 있는 수학적 확률분포 모델을 이용하여 위해 미생물의 발생수준을 추정하는 방법론을 제시하고, 이를 바탕으로 국내 식육에서의 Listeria monocytogenes에 대한 오염수준을 추정하였으며, 그 결과 국내 식육에서의 L. monocytogenes의 오염수준은 평균 (50_(th) percentile) -4.08 Log CFU/g이며, 최소 (5_(th) percentile) -4.88 Log CFU/g, 최대 (95_(th) percentile) -3.56 Log CFU/g의 범위를 갖는 것으로 추정되었다.

        RAPD 분석은 한 개의 primer를 이용하여 임의의 DNA조각을 증폭하는 것이다. 이때 만들어지는 여러 형태의 DNA pattern을 이용하여 리스테리아 모노사이토제네스를 분류할 수 있다. 리스테리아균들을 효과적으로 RAPD typing 할 수 있는 primer들을 엄선하기 위하여 리스테리아 표준균주 13종을 대상으로 총 31가지 primer들의 RAPD분리력을 비교하여 보았다 결과는 재현성이 높았으며 이중 6가지 primer(primer 6, HLWL74, UBC155, UBC127, Lis5, Lisll)가 discrimination index, band의 숫자, band scoring의 난이도 등을 고려해 볼 때 나머지 primer 들에 비해 우수한 분리력을 보였다. 이들 primer들은 장차 리스테리아의 RAPD typing에 이용될 수 있을 것으로 보이며, 현재는 이들을 이용하여 돈육공장의 오염원 규명을 위한 연구를 수행 중이다

        형상 최적설계 중에 발생하는 절점의 과도한 이동은 요소망을 왜곡하고, 결국 최적해의 저하를 유발한다. 이러한 문제를 개선한 형상 최적설계 기법을 개발하였다. 이 방법은 구조물의 형상이 변해 갈 수 있는 충분한 공간의 설계 영역을 정하여, 균일하고 세밀한 요소망을 미리 생성한다. 각각의 최적화 단계마다 모든 요소들과 구조물의 위치 관계를 검사하여, 내부의 요소에는 실제의 물성치를 부여하고, 외부에 존재하는 요소는 0에 가까운 물성치를 부여한다. 변위와 고유 진동수의 제한조건을 가진 두 개의 예제를 통해 이 방법의 특징을 살펴보았다.

        자동차 경량화를 지향하는 초경량차체 기술 중에서 합체박판기술을 이용한 수 있는 일련의 최적설계 기법을 제안하고 기존의 자동차 도어 내판에 적용하여 경량화를 수행하였다. 먼저, 내판에 부착되는 보강재를 제거한 후 취약해진 강성을 보강하기 위한 파트 선정을 위해 위상 최적설계를 수행하여 대략적인 파트 분포를 결정하였다. 그 다음 상세설계 단계로서 각 파트의 두께는 치수 최적설계를 이용하여 정하고, 형상 최적설계로 최종 용접선을 결정하였다. 이러한 일련의 최적화를 위해 상용 소프트웨어인 GENESIS가 사용되었다.

        In this study, occurrence of aflatoxin M₁ (AFM₁) in domestic milk and milk products was determined. The level of AFM₁ in market milk (0.047 ppb) was lower than that in raw milk (0.083 ppb) but this looks like that is due to dilution in collecting process rather than the effect of sterilization. In the case of nonfat dry milk, level of AFM₁ appeared high by 0.24 ppb but it is thought to be not different from market milk actually because nonfat dry milk is diluted at intake. In the case of ice cream, finished products were contaminated with AFM₁ of 0.020 ppb and also have the possibility of the contamination of AFB₁ due to secondary raw material such as nuts and alinond. On the basis of the results of this study and previous studies, Monte-Carlo simulation is conducted to estimate the contamination level of AFM₁ in domestic market milk. To consider uncertainty and variability fitting procedure was passed through. And we used beta distribution to estimate the prevalence and triangular distribution to estimate the concentration level of AFM₁ in milk. As a result, the 5%, 50% and 95% points of the distribution of the probability of AFM₁ contamination level in milk is 0.0214, 0.0946 and 0.1888 ppb, respectively. Also we estimate that AFM₁ in almost milk was low more than 0.5 ppb that is American acceptable level but 80.4% exceeded far 0.05 ppb that is European standard.

        Predictive food microbiology(PFM) is an emerging area of food microbiology since the later 1980's. It does apply mathematical models to predict the responses of microorganism to specified environmental variables. Although, at present, PFM models do not completely developed, models can provide very useful information for microbiological responses in HACCP(Hazard Analysis Critical Control Point) system and Risk Assessment. This study illustrates the possible use of PFM models(PMP: Pathogen Modeling Program win5.1) with milk in several elements in the HACCP system, such as conduction of hazard analysis and determination of CCP(Critical Control Points) and CL(Critical Limits). The factors likely to affect the growth of the pathogens in milk involved storage temperature, pH, Aw and NaCl content. The variable factor was storage temperature at the range of 4-15℃ and the fixed factors were pH 6.7, Aw 0.993 and NaCl 1.3%. PMPwin5.1 calculated generation time, lag phase duration, time to level of infective dose for pathogens across a range of storage temperature. The levels of safety associated with milk which were defined based on various storage temperature as affecting microbial growth according to PMPwin5.1 were classified in $quot;safe temperature zone$quot;, $quot;caution temperature zone$quot; and $quot;danger temperature zone$quot;, respectively. These zone ranges were determined by the lag phase duration and time to level of infective dose based on shelf life of milk, which is required 5 days in domestic legal. These results can be used to conduct a hazard analysis and set the criteria for CCP or CL. Though PFM contains limitation in the use, PFM models can be useful instrument to support of guarantee of food safety.

        A survey was conducted to investigate consumers' attitudes toward the foods developed by gene recombination techniques from December, 1999 to April, 2000. The questionnaires were mailed to 1,500 people, and the 1,101 people responded. The consumers were asked about knowledge, acceptance, intention of purchasing, and labeling information. Although the portion of the consumers (88.8%) knowing the genetically modified foods (GMF) was lower than that of the food expert group (98.7%), many consumers had some knowledge on the GMF, which may be influenced by news released from mass media. Seventy-nine percent of the consumers responded that gene recombination technology is necessary in food production, which is similar to the findings on the survey of the expert group. The portion of the consumers responding that these foods are potentially hazard was 88.1 %, which is a little higher than the data (80.9%) from the expert group. The consumers having greater knowledge less worried about a potential hazard of the gene recombinant foods (p<0.01). Although 62.9% of the consumers responded to be willing to purchase those foods, only 16.2% of them responded to purchase the foods with no conditions, which is lower to that from the expert group (23.5%). There was no statistically significant relationship between the knowledge and the intention of purchasing. The ninety point three percent of the consumers wanted the information on gene recombination to be labeled on the foods. The data from this survey suggest that knowledge of the consumers on the GMF are not accurate, so proper strategy for consumer education may need to be developed. In addition, it is necessary to improve safety assessment sys0etn and analytical techniques for genetically modified foods (GMF) and to build pre- and post-market surveillance system for efficient implementation of the GMF labeling.

        A survey was conducted to investigate the attitudes of the food specialist to the food developed by gene recombination. The mail survey was distributed to 1,400 food specialists and received 464, a response rate of 33.1%. Respondents were asked about knowledge, concerns of potential hazards, purchasing and labeling of the gene recombination foods. Most respondents (98.7%) have some knowledge on the gene recombination foods. 91.3% of respondents recognized necessity of gene recombination technology. However, they also point out its potential hazards (80.9%). The groups with less knowledge showed their increased worry on the hazard in comparison with ones of having more knowledge(p$lt;0.01). The result indicated that there was negative relationship between knowledge and worry on the gene recombination foods. The groups with more knowledge showed their increased purchasing on gene recombination foods in comparison with ones of having less knowledge(p$lt;0.01). The result indicated that there was positive relationship between their purchase intent for gene recombination foods and knowledge. 68.4% of respondents showed their interest on purchasing the gene recombination foods. In this group, most of them (44.9%) has on condition that low cost (27.0%). In addition, they also have not use the foods for their children (17.9%) if they buy it. Most respondents (85.3%) want labeling on the gene recombination foods.

        A survey was conducted to investigate the attitudes of public officials related to food hygiene toward food safety. The official groups were divided into four sub-groups based on their area, agency, gender and age. Response of each group to the survey was statistically analysed. The survey's results showed that most of them (87.0%) were satisfied with a domestic level of food hygiene. But, some of them (29.8%) considered unsatisfactoryly on safety of the food they eat. Their response to food safety did not statistically significant between each group of area, agency and age but, in case of gender, female group showed stastically more negative attitude to food safety than male one (P$lt;0.05). All groups chose residues of chemical substances such as pesticides and food additives as the most potential food risk factor followed by foodborne pathogens, heavy metals and animal drug residues. The results are not consistent with the scientific judgement. Therefore, more education and information were needed for these groups. They pointed out food manufacturer as a responsible group for poor food hygiene (48.7%). In addition, food manufacture and processing were selected as main business types with the lowest level in the food hygiene but official, working in the area of the central government and Seoul metropolitan city, pointed out food services establishments as the poorest hygiene one (P$lt;0.01). This result suggested that education and information to let mind of responded groups change, working in this part, and governmental financial support are needed to improve hygiene level of food manufacture and processing (70.3%). They also chose HACCP as the most effective way for improving the level of food hygiene followed by Recall, PL (Product Liability), monitoring, labeling and increasing of number of company with good manufacture and processing (GMP).

        loom 1993 to 1996, 1,500 cases of foodborne disease was reported annually in Korea. Salmonellosis were 55.1% of the reported bacterial fordborne disease cases. However, in general, it is estimated that the reported incidence of salmonellosis represents less than the real incidence. This study showed that salmonellosis estimates 177,000 cases (about 150 times of reported cases) costing 5.9 billion won in Korea. Only medical costs and productivity losses were included in the estimate of costs of the 177,000 cases estimated to occur in 1996. This estimates were considerably difference to U.S.A. in cases and costs, but not significantly difference in cases/population (%), expense/GDP (%). Understanding the social economic costs of foodborne disease will be endorsed risk assessment as a necessary method for evaluation and improving food safety regulatory programs in Korea.

        본 연구는 LPS로 유도된 RAW 264.7 세포에서 다양한 약용식품으로 사용되고 있는 올리브 잎과 가지 추출물의 항염증 효과를 확인하였다. 올리브 잎과 가지 추출물은 각각 RAW 264.7 세포에 대하여 세포독성을 나타내지 않았고, LPS 자극에 의한 NO 및 PGE2 생성을 농도 의존적으로 억제했다. 또한, 올리브 추출물은 LPS 자극으로 분비된 TNF-α, IL-1β 및 IL-6의 전염증성 cytokine의 분비량을 억제하였으며, 특히 200 μg/mL 농도에서 올리브 가지 추출물이 잎 추출물 보다 IL-6를 억제하는 것으로 나타났다. 대표적인 염증 관련 신호 전달 경로 인자인 iNOS 및 COX-2의 발현을 검토한 결과 올리브 추출물은 iNOS의 발현을 농도의존적으로 현저히 감소시키는 것으로 관찰되었으나, 각각의 올리브 추출물이 COX-2 발현에는 영향을 미치지 않은 것으로 관찰되었다. 이와 같은 결과는 올리브 각 부위별 추출물은 모두 iNOS 및 NO 조절 경로를 조절하는 것으로 사료되나 iNOS 및 COX-2 단백질 발현은 병립적이지 않을 수 있음을 제시하고 있다. 본 연구 결과로 올리브 추출물이 독성과 부작용이 적은 항염증 효능을 가진 기능성 화장품 소재로써 개발 가능성이 있다고 사료된다.

        Hylotelephium erythrostictum is commonly used as a medicinal herb. In this study, H. erythrostictum leaf (HEL), branch (HEB), root (HER), and above ground (HEAG) extracts were evaluated for their antioxidant properties. The antioxidant activities were assayed by three methods based on scavenging of DPPH, ABTS and superoxide anion radical. HEAG extract showed the highest DPPH, ABTS, superoxide anion radical scavenging activities. HEAG extract also exhibited the highest phenolic content (230 mg/g gallic acid equivalent). In our research for anti-inflammatory ingredients, the extract of HEAG inhibited the generation of nitric oxide (NO) in lipopolysaccharide (LPS)-stimulated RAW264.7 macrophage cells. To test the inhibitory effects of HEAG on pro-inflammatory cytokines, we conducted ELISA assay for the measuring the generation of tumor necrosis factor (TNF)-α, IL (interleukin)-1β, and IL(interleukin)-6 in LPS-stimulated RAW264.7 macrophage cells. In these assays, HEAG ethanol extract showed a dose-dependent decrease in the production of TNF-α, IL-1β, and IL-6. Based on these results, extract of HEAG could be the efficient candidate for anti-inflammatory agents.

        현대사회에서는 상품의 정보를 전달하기 위해 여러 계획이 세워지고 있고, 소비자의 구매 욕구를 자극하는 데 컬러 계획은 상당히 중요한 부분을 차지하고 있다. 본 연구는 컬러 계획에서도 가장 트렌디하고 민감한 패션 분야에서 선호하는 컬러를 연구하는 데서 시작되었다. 본 연구의 목적은 최근 들어 슬림한 체형을 추구하는 20·30대 남녀를 중심으로 블랙 컬러 하의 (스키니 진, 레깅스 등)의 선호 현상이 두드러지게 나타나고 있는 가운데 각 패션의 분류별 상의 컬러의 선호와 블랙 컬러 배색의 선호의 변화를 비교분석하여 향후 컬러 계획에 있어 방안을 제시하는 것이다. 연구 방법은 다음과 같은 순서로 기술한다. 첫째, 연구 배경 및 목적과 연구 방법 및 범위를 기술하였다. 둘째, 패션의 개념과 분류, 패션에서의 컬러에 대해 선행 연구 를 바탕으로 이론적 고찰을 실시하였다. 셋째, 이론적 고찰한 내용을 토대로 컬러 사례를 조사하기 위해 의류 쇼핑몰에서 블랙 컬러 하의와 상의 컬러를 수집하여 설문 조사를 실시하였다. 넷째, 설문 조사 결과, 공통된 변화가 나타남에 따라 블 랙 컬러에서 나타나는 특징과 이미지가 관련되어 있다는 점을 찾아냈다. 결론적으로 블랙 컬러 배색으로 상의 컬러를 계획 할 때 첫째, 흡수성 둘째, 중량감, 셋째, 컬러 이미지를 고려해야 한다. 이 세 가지 요소로 설문 대상자들에게서 컬러의 밸 런스, 안정감을 찾으려고 선호하는 컬러의 변화가 나타났다. 이러한 연구를 바탕으로 패션의 컬러 계획에 있어서 의미 있는 방안이 될 것이라고 기대한다.

        Activity of the noncontacted low temperature atmospheric pressure surface discharged plasma (LASDP) converts stable gas to ionized gas known as discharge or plasma. This ionized gas exhibits the antimicrobial activity. We examined the effects of 3 different storage treatments for 80 days on ‘Setoka’ : ambient storage (AS), low-tempperature storage (LTS), and low-temperature atmospheric pressure plasma+low-tempperature storage (PLTS). Total soluble solids showed no the significant differences between the 3 treatments. Acidity gradually decreased, and was 0.5% under AS after 30 days of storage. Fruit firmness increased by a few percent until 40 days of storage. Weight loss in AS was higher than for other treatments. After 80 days of storage, the decay ratio was significantly low in PLTS treatment: (AS, 50.5%; LTS, 5.6%; PLTS, 1.9%). In AS treatment, 73% of the rotten fruits were infected particularly with green and blue mold; however, only 1% of the rotten fruits were infected in case of PLTS treatment.         The major objective of this study was to investigate the usability as cultivar for processing of new Citrus hybrid 'Hamilgam'. We investigated various antioxidant activities, such as DPPH radical, ABTS radical, Hydroxyl radical and Superoxide anion radical effect, along with total polyphenol content and total flavonoid content of Citrus hybrid 'Hamilgam', C. unshiu, C. natsudaidai. The total polyphenol content and total flavonoid content were the highest in the Hamilgam. The major flavonoids of Hamilgam and Natsudaidai were naringin and neohesperidin, and those of Unshu were narirutin and hesperidin, as determined by HPLC. Especially, the neohesperidin content of Hamilgam showed much higher (100 times over) than that of Unshu. However, the aglycone form was not found. DPPH and ABTS radical scavenging activities were the highest in Hamilgam peels. Hydroxyl radical scavenging activity was high in the order of Unshu, Hamilgam and Natsudaidai. Superoxide anion radical scavenging of 3 cultivars peels displayed low activities compared to DPPH and ABTS radical scavenging. Based on these results, Hamilgam peel extracts possess antioxidant activities and may thus serve as potential sources of functional food, cosmetic products, etc.

        This study was designed to analyze the chemical composition of essential oil in ‘Shiranuhi’ immature fruitand to test their biological activities. ‘Shiranuhi’ immature essential oils (SIEO) were obtained by steam distillation fromfruits collected from Jeju Island and were analyzed using gas chromatograph (GC)-flame ionization detectors (FID) andGC-MS. Fourteen components were identified in the essential oil. Limonene (75.21%) and terpineol (8.68%) were the majorcomponents in SIEO. Since acne vulgaris is the combined result of a bacterial infection and the inflammatory response tothat infection, we examined whether SIEO possessed antibacterial against skin pathogens. As a result, SIEO showed excel-lent antibacterial activities against drug-susceptible and -resistant Propionibacterium acnes and Staphylococcus epidermidis,which are acne-causing bacteria. In this study, SIEO was examined on DPPH radical scavenging activities, which showedmoderate antioxidant activity (SC50, 15.36µL/mL). In order to determined whether SIEO can be safely applied to humanskin, the cytotoxicity effects of SIEO were determined by colorimetric MTT assays in normal human fibroblasts and kerati-nocyte HaCaT cells. They exhibited low cytotoxicity at 0.5µL/mL in both celllines. Based on these results, we suggest thepossibility that essential oil of ‘Shiranuhi’ maybe considered as an antibacterial and antioxidant agent.
