        This study attempted to establish the optimal conditions for storage of spring kimchi cabbage to stably control supply and demand. To this end, this study stored kimchi cabbages in various manners for different periods and compared the quality characteristics of kimchi using these cabbages. According to the results, pre-drying with photocatalytic and pre-cooling treatments showed average selectivity loss rates of 18.83 and 21.37%, respectively, which were lower than those of other treatments. Spring kimchi cabbages were stored for 15 weeks under various conditions, and the kimchi was stored for 4 weeks at 4°C. After ripening, each kimchi was analyzed for their soluble solid content, pH, acidity, and salinity. The average pH of kimchi was 4.60 and tended to rise, whereas average acidity was 0.38% and fell by 0.24 to 0.31% as the storage period was extended. Extension of the storage period caused decreases in soluble solid content and salinity, and the number of lactic acid bacteria decreased due to increased pH and reduced acidity (p<0.05). Sensory evaluation showed that all experts and non-professionals preferred kimchi treated by precooling compared to any other treatment.

        The effects of high hydrostatic pressure (HHP) or concentration treatment or sodium hydrogen carbonate addition on microbial and quality properties of cold drip liquid coffee were investigated during storage at room temperature. Cold drip liquid coffee was determined to pH, acidity, general bacteria, and Y&M (Yeast and Molds) according to HHP treatment or adding 0.2% sodium hydrogen carbonate for 40 days storage at 20°C. Also, an equivalent mixture of concentrated coffee and cold drip liquid coffee or liquid coffee with 0.2% sodium hydrogen carbonate was used for determining the sensory evaluation, due-trio and preference test. The cold drip liquid coffee with 0.2% sodium hydrogen carbonate had higher pH and lower titratable acidity than the control during 40 days storage at 20°C. Total viable cell and Y&M counts of cold drip liquid coffee added with 0.2% sodium hydrogen carbonate or treated by HHP at 300 MPa for 25 min were lower than the control during storage at 20°C. The result of the due-trio and preference tests shows that there was no significant difference between cold drip liquid coffee added to 0.2% sodium hydrogen carbonate and the control or between the equivalent mixture of concentrated coffee with cold drip liquid coffee and the control. As a results, Cold drip liquid coffee treated by HHP, concentrated by evaporation, and added to sodium hydrogen carbonate has a potential to extend a shelf life at ambient temperature storage.

        To stabilize the supply of kimchi by extending the storage period of spring kimchi cabbage, this study manufactured kimchi from spring kimchi cabbage under varying storage conditions and periods, and analyzed their quality and sensory characteristics following the maturing period. Trimming loss was lowest in the group of plasma+reverse direction+predrying+ HDPE film processing. The salting yield of spring kimchi cabbage stored for 12 weeks was lower than that of spring kimchi cabbage stored for 6 weeks, and the kimchi yield was low in the pre-treatment group of spring kimchi cabbage stored for 12 weeks. The firmness was slightly different according to the storage period from one month of maturation. From the perspective of pH and acidity, the maturation in the reverse direction+pre-drying+HDPE film processing group was slower than that in the normal group (<0.05). In the sensory evaluation, the preference was increased in the low temperature storage processing group as the maturation period was increased (<0.05).

        Quality changes of dried sea cucumber (Stichopusjaponicus) after applying a cyclic rehydration and retorting process were investigated during 4 weeks of storage. The length, volume, and weight of dried sea cucumber increased significantly as the number of rehydration cycles increased. Sea cucumber (SC) was bottled in the glass jar and a retort thermal process (121.1oC, 0.15 MPa) was applied. The total thermal processing time (TTT) was 24 min based on the temperature at the cold point. The size and texture of retorted SC were significantly changed until the first week of storage. However, regardless of the number of rehydration cycles, the size and texture of samples at different rehydration cycles showed no significant difference during the whole storage. The length, volume, weight, rehydration ratio (RR), hardness, and chewiness at the maximum degree of swelling during rehydration of dried SC were estimated as 100.86 mm, 38.62 mL, 41.05 g, 6.39 of RR, 249.19 gf, and 4.05 mJ, respectively.

        본 연구는 ‘상주둥시’ 감을 3개월동안 -1, 0.5, 3oC에 저장하면서 감 과실의 과실품질 변화와 저장장해 증상에 미치는 영향을 구명하고자 실시하였다. 저장온도에 따른 감 과실의 에틸렌 발생량은 저장온도가 낮을수록 그 발생량이 낮았으나 호흡율은 영향을 받지 않았다. 과실의 경도는 모든 처리구들에서 저장기간이 길어지면서 감소하였고 저장온도가 높을수록 과실 경도의 저하는 더 빠르게 진행되었다. 또한 저장기간이 길어지고 저장온도가 높을 수록 과실의 연화가 급속히 진행되었다. 과실의 감모율도 저장온도가 높을수록 증가하였고, 가용성 고형물 함량도 저장온도가 낮을수록 더 높게 유지되었다. 감 과실의 과정부와 과실측면의 과피색 L*, a*, b* 값의 변화는 저장온도 -1oC와 0.5oC에서는 저장기간에 따른 차이를 거의 보이지 않았으나, 3oC처리구에서는 과피색의 변화가 현저히 적었다. 저장중 발생하는 생리장해증상인 과피흑변, 과실연화 및 부패정도는 온도가 높을수록 그 증상이 심하게 발생하여 과실품질이 현저히 감소하였다.

        Quality assessment of sweet persimmon or “Fuyu” was evaluated over room temperature distribution periods after 40-day storage at 0oC cold room. All Hunter’s values (L, a, and b) of sweet persimmon were significantly decreased after 4-day room temperature distribution while the flesh firmness was drastically decreased after 3-day room temperature distribution. Glucose and fructose contents were significantly increased by the degradation of sucrose after 3-day room temperature distribution. The highest extraction yield was obtained in the flesh of persimmon. Extraction yields of each part of “Fuyu” persimmon were 15.53% for flesh, 10.53 for seed, and 13.83 for flower bud. However, the total phenolic content of flesh was 4.8 μg/mg which was extremely lower than that of the seed (175.5 μg/ mg) and flower bud (178.2 μg/mg) of sweet persimmon. With high phenolic content, both the flower bud and seed of sweet persimmon showed excellent antioxidant activities by 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azinobis( 3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) free radical scavenging test. The results showed a great potential for byproducts (seed and flower bud) of long-term, cold-stored sweet persimmon “Fuyu” as a good antioxidant material for novel functional foods.

        This study was carried out to indirectly predict the storage time limit, hardness, and acidity of Fuji apples in controlled atmosphere (CA) storage. A sensor installed inside the CA storage measured temperature, relative humidity, and gas composition data in real time. The respiration rate from five tons of apples in CA storage was calculated to predict the weight loss rate. As a result, the predicted and actual weight loss rate induced a predictable residual storage time equation that showed a significantly high correlation. The apple storage period showed a high reliability (R2=0.9322) because the predicted equation using respiration rate and number of days stored was about nine months for five tons of apples. Furthermore, the hardness and acidity prediction equation were derived from the quality analysis. However, there was not enough analysis sample correlation (the coefficient was as low as 0.3506 and 0.3144, respectively), but the tendency could be confirmed by reduced hardness and acidity. As a result, these quality prediction equations could encourage CA container distribution, effective for agricultural shipment regulation and increasing the ease of operations.

        Quality changes of carrots thermally processed in a large size (5 kg) retort pouch during 52 weeks of storage were investigated under different packaging methods and package shapes. To improve the efficiency of thermal processing (121.1oC, 0.15 MPa), the carrot (i.e., solid) and the broth (i.e., liquid) of the carrot soup were separately packed and sterilized. The quality changes of carrot packed without liquid were compared with those with liquid. Two different package shapes such as rectangular parallelepiped and cube were also evaluated to figure out the efficiency of the heat penetration rate for a large-sized pouch. The TTT (F0-values = 6) were 27, 54, and 114 min from the rectangular parallelepiped, cube, and solid/liquid mixed groups, respectively. In the mixed groups, the hardness and chewiness of solids (carrot) were significantly smaller than those measured in the other groups as TTT increased. Carrots treated in the rectangular parallelepiped shape showed a significantly higher texture than the cube shape. The CV of hardness and chewiness in the rectangular parallelepiped and the cube shape were calculated as 7.56 and 47.19, and 29.16 and 65.28, respectively. This demonstrated that a more uniform quality can be obtained from the rectangular parallelepiped shape.

        This research was conducted to evaluate quality changes in traditional Doenjang and manufactured Doenjang during a storage period of 8 weeks. Low-salt Doenjang and commercial Doenjang were purchased from different manufacturers and proximate analysis as well as changes in isoflavone, polyphenol, flavonoid contents of the samples were investigated using a mass spectrophotometer. The salinity of traditional Doenjang, low salt Doenjang, and commercial Doenjang were 13.2±1.15, 7.17±2.74, 10.67±0.35%, respectively and the salt concentrations of the soybean pastes did not change during storage. After 8 weeks at 35℃, chromatic values of all the paste samples decreased somewhat, with traditional Doenjang exhibiting fewer changes as compared to manufactured Doenjang. Amino acid nitrogen, acidity, microbial population all tended to increase with time, although some samples showed fluctuations during the test period. Moreover, the total isoflavone contents of traditional Doenjang increased with storage time while that of manufactured Doenjang tended to decrease. The isoflavone aglycone was shown to be the highest in traditional Doenjang, while isoflavone glycoside was abundant in manufactured Doenjang. Total flavonoid contents showed similar trends regardless of samples; initial contents of total flavonoid was 0.6 mg/g which increased to more than twice to 1.4 mg/g at the end of storage period. The CV of hardness and chewiness of the rectangular parallelepiped and the cube shape were calculated 7.56 and 47.19, and 29.16 and 65.28, respectively.         The purpose of this research was to observe the quality changes of beef and blueberry during frozen storage. Drip loss, thiobarbituric acid reactive substance (TBARS) content, polyphenol content, and moisture content in the beef and blueberry were measured to determine the quality change of beef and blueberry for 29days. As a result, drip loss changed from 2.35 to 3.80%, and TBARS content changed from 0.11 to 0.30 mg MDA/kg beef for 29days. Both results showed that drip loss and TBARS content increased by 1.7times compared to those at initial samples. However, the frozen storage condition in this study is recognized as proper for beef preservation since the TBARS content below 0.46 mg MDA/kg beefis regarded to be edible. Polyphenol content and moisture content changed from 3.07 to 3.11 mg Gallic acid equivalent (GAE)/g blueberry and from 0.44 to 0.27%, respectively. There were no significant differences in polyphenol and moisture contents. In conclusion, frozen storage of beef and blueberry had no adverse effect on their quality for 29 days.

        To improve the shelf-life of mushrooms, Lentinula edodes GNA01 mushrooms were treated with gel packs containing slow-released chlorine dioxide (ClO2) gas at 5~10 ppm for 5 days at 20℃ and the weight loss rate as well as the changes in pH, color and texture properties of the treated samples were investigated. The weight of the control and ClO2 gas treated samples were decreased slightly, and there were no differences during the storage period. However, the weight of the control changed faster than those of the ClO2 gas treated samples during storage period. The pH in the control and in the ClO2 gas treated samples were decreased during storage period, but the samples treated with 5 and 7 ppm ClO2 gas were the least changed. On the other hand, the samples treated with 10 ppm ClO2 gas showed no difference from the other treatments during 4 days, but the pH was lower than that of the control on the fifth day. The lightness of inside and outside in mushroom were decreased whereas redness and yellowness were increased during storage period. However, color changes in the ClO2 gas treated samples were lower than those of the control. Especially, the samples treated with 5 and 7 ppm ClO2 gas were the least changed. The texture of the mushroom were decreased consistently during storage period. The texture of the control changed faster than those of the ClO2 gas treatments during 5 days. Especially, the samples treated 5 ppm ClO2 gas were the least changed.

        The effect of transplanting and harvesting dates on growth, yield, and quality of sweetpotato varieties was studied. Three sweetpotato varieties, Yulmi, Singeonmi, and Dahomi, were transplanted on 23 Apr., 21 May, 5 June, 15 June, 25 June, 5 July, 15 July, and 25 July. Fresh vine weight and marketable storage root yield of the three varieties were the highest in transplanting plots on 23 April and 21 May, respectively, and those tended to decrease when transplanting dates were late after May. GDD (Growing Degree Days) and cumulative radiation seemed to be related to marketable storage root yield. Number of marketable storage root per plant, average weight of marketable storage root, and marketable storage root yield were significantly different according to transplanting dates. Marketable storage root yield showed significantly positive correlations with fresh vine weight, number of marketable storage roots, and average weight of marketable storage roots. Hardness and dry matter content of storage root showed significantly positive correlations with starch content and decreased with late transplanting dates in Yulmi and Singeonmi varieties. Pasting temperature showed significantly positive correlations with soluble solid content, dry matter content, and amylose content, but it showed significantly negative correlations with breakdown. Setback was significantly different among varieties, but it was not significantly different in transplanting dates.

        본 연구는 수출 절화 백합 Medusa 품종을 대상으로 일본 모의 수출 환경에서 농가에서의 전처리와 습식수송이 절화 수 명과 품질에 미치는 영향을 조사하였다. 절화 백합은 수확 직 후 증류수(대조구), 상업용 전처리제 Chrysal SVB 단용, Chrysal AVB + SVB 혼용으로 전처리 되었다. 이 후 일본 모 의 수출 환경으로 프로그램된 생장조절실에서 건식(건조수 송), 습식(수분수송)방식으로 처리되었다. 절화수명은 수확 후 일본 수송된 이후부터 조사되었다. 그 결과, 절화수명 및 절화 품질 개선에 있어서 전처리 효과보다는 수송방식 효과가 우수 하였다. 특히 습식수송은 절화수명을 건식수송보다 2일 연장 시켰다. 한편 농가에서 실시하는 전처리는 절화수명과 개화 율, 화색발현, 잎 황화현상 등과 같은 절화 품질에 통계적으로 유의적인 차이를 보이지는 않았다. 또한 세균활성에서도 큰 차이를 보이지는 않았다. 결론적으로 습식수송이 수출 시 절 화품질 개선에 핵심요소이며 전처리 효과는 계절에 차이를 보 일 것으로 확인되었다.

        본 연구는 갈변방지제 처리가 박피 shallot의 갈변과 저장에 미치는 영향을 구명코자 수행하였다. 5 종의 갈변방지제를 사용하였고, 저장온도는 상온과 10℃로 하였다. 사용한 갈변방지제는 1% ascorbic acid, 2% citric acid, 2% NaCl, green tea extract(17 °Bx)와 시판 duo clean의 5종이었다. 박피한 shallot을 150±10g씩을 0.05mm PP 필름에 포장하여 상온과 10℃로 각각 나누어 12일간 저장하였다. 중량감모율은 상온에 비해 10℃저장에서 적었고, 육안적 조사결과 선도유지 효과도 상온에 비해 10℃저 장에서 좋았다. citric acid 2%처리에서 다른 갈변제에 비해 부패가 적었고 선도유지 효과가 있었으며, 10℃ 저온저장과 citric acid 2%처리에서 갈변과 선도유지가 좋았다.

        Quality changes of retort pouched curry sauces were studied under various sterilization and storage conditions. The retort pouched curry sauces sterilized at 110oC for 30 min and stored at 37oC showed the lowest sensory qualities among the tested samples. Meanwhile, when the sample was sterilized at 101oC for 60 min and stored at 4oC, the quality changes of the sauces were not significant during 30 days of storage. The taste sensing results of curry sauces showed that there were not a lot of changes in flavor when stored at 4oC while the sauces stored at 37oC showed increases in bitterness and sourness which eventually caused degradation of total quality. Sensory evaluation results of the samples stored at 4oC (4.3 points) and at 37oC (3.5 points) also coincided with the taste sensing results. Conclusively, it is desirable to sterilize the retort pouched curry sauce at 101oC for 60 min and to store at 4oC until consumption (if possible, within 30 days). Further, the acid value (1.01) and pH (3.88) of curry sauces were found to be used as quality change indices for references.

        Blanching and freezing of beef are important techniques used in developing frozen home meal replacement (HMR) products. These pre-thermal treatments minimize the deterioration of beef during storage. Beefs are washed, defatted, sliced (5.0×0.5×0.5 cm, fiber direction), and blanched by immersion in hot water for 2 min. Thereafter, the blanched beefs are spin-dried and frozen by individual quick freezing (IQF) method. Finally, the frozen beefs are packed using two methods: vacuum packages and air-containing packages. Packed beefs are stored at -12oC, -18oC, and -24oC for nine months. One in every three months, they are thawed in a microwave (400W). While thawing, vacuum-packed samples possess lower thawing loss than air-containing-packed ones. Compared to raw beef, blanched beef have a higher L* and lower a* value. However, less changes are observed after blanching the beefs as the enzymes get inactivated in the blanching process. Shear force of beef also increase through blanching. Moreover, vacuum-packed samples have maintained their hardness to a greater extent than the air-containing-packed samples. All the samples have met microbial safety standards. Thus, it is inferred that vacuum-packaging and -18oC storage temperatures are the best condition for maintaining beef that is later developed into HMR product.

        최근 식품에 첨가하는 합성 항산화제가 생체효소의 활성을 억제하고, 암을 유발시키는 등의 안정성에 문제가 되는 것으로 보고되면서 천연 식물자원으로부터의 항산화 물질을 개발하고자 하는 연구가 활발하게 진행되고 있다. 느릅나무의 껍질인 유근피는 항산화 효과가 매우 우수한 것으로 보고되고 있어서, 천연 항산화제로 유근피 에탄올 추출물을 0, 0.05, 0.1, 0.2%로 약과에 첨가하여 합성 항산화제인 BHT와 천연 항산화제인 L-ascorbic acid를 0.02%로 첨가한 약과와 저장기간에 따른 품질특성과 지질산패 정도를 비교하였다. 유근피의 첨가량이 증가할수록 산패취와 경도는 감소하였고, 반면에 수분활성도, 팽화도, 관능평가 등은 증가하였다. 특히 유근피를 첨가함에 따라 약과의 명도가 감소한 것으로 나타났는데, 이는 약과의 메일라드 반응에 의한 갈색물질인 멜라노이딘류의 생성 때문으로 추정된다. 또한 약과의 저장 기간이 증가함에 따라서 경도, 색도, 산패취 등이 증가하였고, 반면에 수분활성도와 팽화도, 색, 맛, 조직감, 전반적인 기호도 등의 관능적 특성은 감소하였다. 유근피가 약과의 저장성에 미치는 영향을 살펴보기 위해서 산가와 과산화물가를 측정하여 실험한 결과, 유근피를 첨가한 약과는 첨가하지 않은 약과에 비해서 지질산화가 적게 일어나, 약과의 저장성을 증가시켜 주는 것으로 나타났다. 관능적인 특성을 비롯한 품질특성과 지질산패 정도를 평가한 결과, 유근피 추출물을 0.1% 첨가한 약과가 가장 좋을 것으로 평가되었다.

        방울토마토의 저장성 증진을 위하여 30 ppm의 이산화염소수를 0~30분 동안 처리한 후 표면의 수분을 건조시킨 후 저장 기간에 따른 중량 변화, 이화학적 변화 및 기호도의 변화를 측정하였다. 대조군의 경우, 중량 변화의 경우, 4주 동안 대조군 및 이산화염소수 처리군 모두 천천히 중량이 감소하는 것으로 나타났고, 그 중 대조군의 변화가 약간 더 변화되었지만 아주 큰 차이는 아닌 것으로 판단되었다. 가용성 고형분의 함량 변화에서는 이산화염소수 처리에 의한 차이를 보이지 않았으며, 저장 중에도 큰 변화를 보이지 않았다. 경도의 변화에서는 이산화염소수 처리에 의한 차이는 없었으나, 저장기간에 따른 변화에서는 대조군보다 이산화염소수 처리군이 약간 높은 경도를 보였다. 명도, 적색도 및 황색도의 변화에서는 대조군 및 이산화염소수 처리군 모두 처리 직후와 저장 중 차이를 보이지 않았다. 맛, 향, 색 및 종합적 기호도의 변화에서는 이산화염소수 처리 직후에는 대조군과 유의적인 차이가 없었다. 그러나 저장 중 대조군의 맛, 조직감 및 종합적 기호도 변화가 이산화염소수 처리군에 비해 큰 것으로 나타났다.
