        This study was carried out to investigate aroma patterns of Hanwoo (Korean cattle) beef by using an Electronic nose. The M. longissimus muscle and Semimembranosus muscle after 24 hours postmortem was obtained, and half muscles cooked in water batch until internal temperature arrived at 70℃ or microwave for 30 sec. The raw and cooked beef samples stored at 1℃ for 11 days. Sensitivity values (dR/RO) among electronic nose data were changed differently by muscle parts, heat treatments and storage days. The dR/RO values from SY/LG, T30/1, P10/1, P10/2 were decreased at 11th storage compared with those at 1th storage. Mapping these data by using PCA (principal component analysis) showed that raw and cooked beef data were presented on the right and left side of board, respectively. The data of 1st storage were presented on the right side, and flock together. Otherwise, the data of 11th storage were spreaded out more widely on the left side. Consequently, the dR/RO value and PCA mapping by Electronic nose data showed difference by sample treatments and storage days. Therefore it will be possible to able to detect separated aroma patterns of Hanwoo beef by using an Electronic nose.

        The Physicochemical, sensory and cooking properties of functionally fortified rice with dietary fiber and chitosan were compared with regular rice when the rices were cooked with pressure and electric cookers. Moisture content of functional rice before cooking was 11.11%, which was lower than 13.72% in regular rice. Accordingly, moisture contents of functional rice samples cooked both with pressure and electric cookers were lower than those of regular rice. L value showing the degree of lightness of cooked rice was significantly higher in rice samples cooked with pressure cookers. The α value, the degree of redness and the b value, the degree of yellowness, were the highest in the functional rice cooked with an electric rice cookers. Textural measurement of hardness using a rheometer showed the highest value in functional rice cooked with a pressure cooker. The degree of gelatinization measured using differential scanning calorimetry (DSC) before cooking showed higher onset gelatinization temperature (T0) and peak gelatinization temperature (Tp) in functional rice compared with those in regular rice. The gelatinization enthalpy (δH) of functional rice was lower than that of regular rice, showing that functional foe had lower gelatinization energy compared with regular rice. When the samples were stored in a refrigerator for one week, the DSC showed faster retrogradation degrees in samples cooked with electric rice cooker, having significantly higher enthalpies of regular and functional rice cooked with electric cooked compared to those cooked with pressure cookers. The functional rice samples cooked with pressure cooker had higher consumer acceptance test values compared to those cooked with electric cookers.

        본 연구에서는 보통의 조리조건과 위생적 조리조건에서 김밥을 조리하였을 때에, 각 조리조건하에서의 식자재(원재료),조리자의 손, 조리환경(조리기구 및 조리실),그리고 완성된 김밥의 미생물 품질을 살펴보고 이를 토대로 김밥조리과정 중의 중요관리점(CCPs)을 관찰하였다. 김밥과 그 원재료, 조리자의 손, 그리고 조리기구(칼, 도마 및 김발)의 표준평판균, 대장균군, 분변성대장균군, 대장균, 황색포도상구균, 살모넬라균 등의 미생물을 식품공전에 준하여 측정하였으며 조리실의 미생물 오염도를 평가하였다. 모든 시료에서 대장균, 황색포도상구균 및 살모넬라균은 검출되지 않았으며 표준평판균, 대장균군 및 분변성대장균군은 보통의 조리조건에서보다 위생적 조건에서 현저하게 낮았다. 김밥 원재료 중 비가열재료에서는 가열재료보다 표준평판균 및 대장균군수가 많이 검출되었다. 두 조건에서조리실의 공중낙하균은 모두 양호한 수준이었다. 위생적 조리조건에서 만든 김밥은 보통의 조리조건에서 만든 김밥에 비하여 표준평판균과 대장균군이 1/100수준이었으나 아직 분변성대장균군이 검출되었다. 따라서 비가열재료, 조리기구 및 조리자의 손의 미생물 오염, 그리고 조리 중의 교차오염이 김밥 미생물 오염의 주요 근원으로 지적되며, 비가열재료의 취급, 조리기구의 세척과 소독 및 조리자의 손씻기 단계가 CCPs로 제시된다.

        본 연구는 aflatoxin이 오염된 옥수수에서 각 전처치 방법과 조리 및 가공 방법에 따라 aflatoxin이 감소되는 정도를 관찰하고자 수행되었다. Aspergillus parasiticus ATCC 15517 접종하여 aflatoxin을 생성시킨 옥수수(GCB70, 미국산)에 태양 광선 조사, UY 조사 및 물 세척 등의 전처치를 실시하였으며, 각 전처치 후의 시료를 옥수수의 일반적인 조리 및 가공 방법(끓이기, 찌기, 굽기 및 튀기기)에 따라 죽, 떡, 빵 및 팝콘을 만들었다. Aflatoxin이 생성된 옥수수 시료(AC)와 전처치에 따른 부과물로서 AC에 태양 광선을 7일 조사시킨 시료(SC), UV를 56시간(7일간) 조사시킨 시료(UC) 및 물 세척을 3회 수행한 시료(WC), 그리고 이들의 조리 및 가공 완성품에 대한 aflatoxin 함량을 HPLC로 정량하였다. AC의 total aflatoxin 함량은 전처치 시료에서는 태양 광선 조사시와 UV 조사시(UC)에 유의하게 감소하였으며(p<0.05), 물 세척시에는 감소하였으나 유의한 감소는 아니었다. AC, SC, UC 및 WC를 조리 및 가공전 태양 광선 조사와 UV 조사는 aflatoxin 분해에 효과적인 것으로 나타났다. 또한 끓이기, 찌기, 굽기 및 튀기기 등의 조리 및 가공 방법은 aflatoxin의 감소에 도움이 되며, 특히 열에 지속적으로 노출되는 것이 가장 효과적인 것으로 나타났다. Aflatoxin이 오염된 옥수수에서 aflatoxin을 식품 중 기준치 이하로 감소시키기 위하여 더 많은 연구가 필요하다.

        This study was carried on the oxidative stability and the real practice possibilities in cooking of fat replacer MCT. Nowadays, it was known that fats and oils had become causes for cardiac disease, obesity and cancer, so the new materials were needed for fat substitute that has less fat contents and low calories. The food industry concerned about fats and oils had been researched and developed new and various kinds of substitute fats. MCT(medium chain triglycerides) is one of the fat based fat substitutes used as fat replacers. The POV of com germ oil(CO), soybean oil(SO), shortening(ST), butter(BT), their blended oil with MCT 10-50%(w/w), and MCT were determined and oxidative stability by POV was compared MCT with those of them. MCT has shown higher oxidative stability than CO, SO, ST, BT, so oxidative stabilities in all kinds of blended oils become higher and higher by the increased substitution ratios. In case of bread, the volume of bread prepared with MCT(MCT bread) substituted for ST at 10-40% level(w/w) were increased a little comparing to that made of shortening(ST bread). But degree of gelatinization of MCT bread were a little lower than ST bread, at the substitute ratio above 40%, the degree of gelatinization were reduced greatly. These phenomena were sustained in 9 stored days. While baking losses of MCT breads were almost same as ST bread until 30% substitute ratio, and the appearances of MCT breads were similar to ST bread until 40% substitute ratio. Also rheological properties and color(Lab) of MCT breads had shown no different significantly from ST bread until 20% substitute ratio, but by the results of sensory evaluation, overall acceptance including appearance, color, flavor, taste, texture of MCT breads were recognized almost same as ST bread by panel until 40% substitute ratio. Depends on the above results, we can suggest that 30-40% of MCT will substitute for shortening in making bread in order to reduce fat and calories intake amounts.

        Aflatoxin은 곰팡이가 생성하는 2차 대사산물로서 사람에게 발암성 등의 건강 위해를 야기할 수 있다. 쌀은 aflatoxin 생성을 위한 좋은 기질 중의 하나이므로 본 연구는 쌀의 조리 및 가공 과정 중 aflatoxin의 감소 정도를 알아보기 위해 수행되었다. 국내산 일반미에 Aspergillus parasiticus ATCC 15517의 포자 현탁액을 접종하여 aflatoxin을 생성시키고 한국인이 일상적으로 섭취하는 밥, 떡(백설기), 식혜 및 쌀튀기를 상법에 따라 조리 및 가공하여 각 과정 중의 부과물과 최종 완성품에서 aflatoxin 함량을 HPLC(high performance liquid chromatography)에 의하여 분석하여 비교하였다. 밥을 조리하는 과정 중에는 쌀 씻기 과정 중에 aflatoxin이 감소되었고, 조리가 끝난 후 완전히 감소되지는 않았지만 조리된 밥에서는 aflatoxin이 53.1%만큼 유의하게 감소되었다(p<0.05). 떡을 조리한 후에는 aflatoxin의 감소율이 88.6%로 매우 유의하게 감소하였다(p<0.01). 쌀튀기의 경우 가공 후 aflatoxin 감소율이 92.4%로 매우 유의한 감소를 보였다(p<0.01). 이상의 결과에서 aflatoxin이 함유된 쌀을 조리 및 가공하였을 때에 쌀튀기 > 식혜 > 밥 > 떡의 순으로 aflatoxin이 감소되었다. 떡을 제외한 다른 완성품에서는 aflatoxin이 우리 나라의 식품중 기준치(10 ppb) 이하로 낮아졌다. 이로부터 쌀의 조리 및 가공 과정 중의 세척, 찌기, 발효 및 popping 등은 aflatoxin의 감소에 도움이 되며, 특히 고온 및 고압이 효과적인 것으로 나타났다. 떡에서 aflatoxin이 식품 중 기준치 이하로 감소되지 않은 부분에 대해서 안전성 확보를 위하여 더 자세한 연구가 필요하다.

        This study was to investigate the effect of ultraviolet rays, soaking, boiling and baking to ergocalciferol (Vit.D2) and riboflavin(Vit.B2) contents of mushrooms, Lentinus edodes, Pleurotus ostreatus and Agaricus bisporus. The results were as follow: 1. Mushrooms were exposed to ultraviolet rays Lentinus edodes : 10J/cm2, Pleurotus ostratus : 2J/cm2 and Agaricus bisporus : 2J/cm2. 2. Before exposing to ultraviolet rays, the ergocalciferol contents of mushrooms were all 0μg/g dry base, but after exposing to it , those of Lentinus edodes, Pleurotus ostreatus and Agaricus bisporus were 222.50±5.30μg/g dry base, 150.90±6.60μg/g dry base and 23.98±1.20μg/g dry base, respectively 3. Before and after exposing to ultraviolet rays, the riboflavin contents of Lentinus edoes, Pleurotus ostreatus and Agaricus bisporus were 18.22±0.71μg/g dry base and 11.72±0.50μg/g dry base, 4.57±0.20μg/g dery base and 3.26±0.15μg/g dry base, and 37.42±1.20μg/g dry base and 27.33±2.10μg/g dry base, respectively. 4. The ergocalciferol contents of mushrooms according to boiling time were not significantly different but the riboflavin contents of them were decreased according to the increase of boiling time. 5. The ergocalciferol and riboflavin contents of mushrooms were decreased according to the increase of NaCl concentration and baking temperature. 6. The ergocalciferol content of Lentinus edodes after a short time soaking at 80℃ was higher than a long time soaking at 20℃, 40℃ and 60℃.

        Serious consequences can arise from lack of hygiene in mass catering. Microbiological testing is of value in determining hazards for developing a HACCP plan, and in demonstrating to food handlers the reality of the microbial risk. This studies was performed to describe the overall hygiene of cooking utensils and equipments, employees, and environment in mass catering establishments. Generally, hygienic conditions of cutting board and sanitized dish cloth were better than those of other cooking utensils such as knife, sieve, and peeler. It was found that the cross-contamination of knife might be caused by the use of contaminated sanitizing solution. It was observed that there was considerable variation (10¹-10^5 CFU) of the number of general bacteria for employee's hands. The number of general bacteria were influenced from establishment, employee, and the period of analysis. The number of Coliform group for employee's hands was in the range of 10²-10⁴ CFU only at the first analysis. Total aerial bacteria in working area of mass catering establishments was below 7 CFU/Plate and aerial Staphylococcus sp. was not detected at all except one spot.

        The purpose of this paper on Hoe (raw beef) is to investigate various kinds of its recipes, with equal focus on seasonings and sauces as well as its main and sub ingredients. The recipes of Hoe can be broadly classified into four large groups such as Salkogi Hoe(Red meat Hoe), Hankazi Naechang-yook Hoe(made from internal organs), Jap Hoe(1)(miscellaneous Meat Hoe) and Jap Hoe(II)(rolled with a whole pinenut) while the cook books written before 1945 indicate that the number of recipes reaches up to 21. The recipe of Salkogi Hoe comprises following three steps. Cut raw beef into thin strips and season them if necessary, then sprinkling sufficient pinenut powder on the strips. Its main sauce is hot pepper paste with vinegar. The recipe of Hankazi Naechang-yook Hoe uses kidney, manyplies, liver and tripes as main ingredients. Kidney should be thinly sliced with mixture of salt, seasame salt, seasame oil, and pepper as its seasonings. Regarding Manyplies, liver and tripes, there exists two possible ways to season them after cutting into strips. You can season with sesame oil and pepper or only with salt. Main ingredients of Jap Hoe(I) consist of beef, pork, kidney, manyplies, liver and tripes, among which minimum two ingredients are selected. Ingredients selected are sprinkled with pinenut powder after cutting into thin strips. And Hot pepper paste with vinegar is used as main sauce. The recipe of Jap Hoe(II) is to cut manyplies into pieces of 2Cm by 5 Cm without removing their black part and roll each piece with a whole peanut in such a manner that the peanut sticks from rolled piece.

        15종의 채소류를 생채, 데침, 찜, 끓임, 볶음 조림할 때 Vit.A, Niacin, AsA 및 P, Fe, Mg, Ca, Na, K의 잔존량을 측정한 결과는 다음과 같았다. 1. 생채에서 Vit.A는 도라지, 상추, 오이의 잔존량이 높은 반면 무는 50%로 가장 낮았고 Niacin과 AsA는 전반적으로 잔존율이 높았으며 무, 상추, 돌나물, 오이, 들깻잎에서는 증가된 것으로 나타났다. 무기질에서는 P은 도라지, 양배추, 상추에서, Fe은 도라지, 양배추, 돌나물에서, Mg과 Ca은 도라지, 상추, 돌나물에서 K은 양배추와 상추에서 잔존율이 높았다. 2. 데침시에 Vit.A는 콩나물, 숙주에서, Niacin는 콩나물, 숙주, 들깻잎에서 잔존율이 높았으나 AsA는 다른 비타민에 비하여 잔존율이 크게 떨어졌다. 무기질은 P은 참취, 콩나물, 숙주에서, Fe은 참취, 숙주, 시금치에서, Mg은 들깻잎에서, Ca은 시금치, 들깻잎에서, Na은 시금치에서, K은 무, 들깻잎에서 잔존율이 높은 편이었다. 3. 찜에서 Vit.A는 양배추에서, Niacin은 가지, 양배추, 들깻잎, 오이에서, AsA는 무, 양배추, 오이에서 잔존율이 높았으며 잔존율이 아주 낮은 것은 Vit.A에서의 무와 들깻잎, AsA는 들깻잎이었다. 무기질 중 P은 양배추, 오이, 들깻잎에서, Ca은 양배추, 오이, 무에서, Na은 무, 오이, 양배추에서, K은 들깻잎, 양배추에서 잔존율이 높았다. 한편, 무기질의 잔존율이 아주 낮은 것은 Fe은 호박, 가지에서, Mg은 호박에서, Ca과 Na은 들깻잎에서, K은 가지이었다. 4. 끓임시에 Vit.A는 콩나물, 숙주에서 Niacin은 콩나물, 참취, 숙주에서 잔존율이 높은 반면 AsA는 대체로 50%이하의 낮은 잔존율을 보였다. 극히 저조한 잔존율을 보인 것은 Vit.A의 무, 호박, 참취, 시금치, AsA의 시금치, 호박, 참취, 숙주이었다. 무기질에서 P은 숙주, 호박, 참취에서, Fe은 시금치, 무, 숙주에서, Mg은 참취, 무에서 Ca은 호박, 시금치에서 잔존율이 높았고 Na와 K은 이들에 비해 잔존율이 낮은 편이었다. 그중, 극히 낮은 잔존율을 보인 것은 Fe에서 콩나물, 호박, Mg에서 시금치, 콩나물, 숙주, Na에서 콩나물, K에서 콩나물, 시금치이었다. 5. 볶음시에 Vit.A는 도라지, 당근, 시금치에서 Niacin은 도라지에서 AsA는 가지에서 잔존율이 높은 편이나, 무, 참취에서는 Niacin이 무, 참취, 도라지에서는 AsA의 잔존율이 아주 낮았다. P은 호박, 참취, 도라지, 당근에서 Fe은 참취, 도라지에서 Mg은 참취, 도라지, 당근, 호박에서 Ca과 Na은 도라지, 당근, 오이에서 K은 호박, 참취, 도라지, 당근에서 잔존율이 아주 낮았으며 가지는 모든 무기질의 잔존율이 아주 낮았으며 그 외 호박에서는 Fe이, 돌나물에서는 K이 극히 낮은 잔존율을 보였다. 조림시에는 Vit.A는 우엉에서, Niacin은 무, 우엉 모두 잔존율이 높은 반면 AsA는 둘다 낮은 편이었다. 무기질은 무에서 Fe, Ca, Na, K과 우엉에서는 Na, P, K의 잔존량이 높은 반면 우엉에서 Fe의 잔존율이 극히 낮았다. 6. 각종 조리시 비타민과 무기질의 잔존상태가 전체적으로 좋은 결과를 보인 채소의 순서는 사용된 횟수에 차이가 있으나 도라지>들깻잎, 양배추>무, 오이>참취, 상추>숙주>시금치, 우엉, 돌나물>당근, 호박>콩나물>가지로 나타났으며, 조리법 중에서 잔존율이 좋은 것은 비타민의 경우는 생채이었고 무기질은 생채, 볶음, 조림이었다. 또한 Vit.A는 생채, 볶음, 조림에서 Niacin은 생채, 조림, 찜에서 AsA는 생채에서 잔존율이 좋았으며 P은 볶음, 생채에서, Fe은 생채, 데침, 끓임, 조림, 볶음에서 Mg은 생채, 조림, 볶음에서 Ca은 생채, 찜, 끓임, 조림, 볶음에서 Na은 조림, 볶음에서 K은 생채, 조림, 볶음에서 잔존율이 좋은 편이었다.

        Effect of storage temperature, washing, and cooking on postharvest-treated pesticide residues in polished rice was investigated. After being traeted with each 500 mg/kg of captan, carbaryl, phenthoate, fenthion, fenitrothion, chlorpyriphos-methyl, pirimiphos-methyl, the polished rice was stored for 8 weeks at 4 and 30℃, respectively. The penetation rate of carbaryl was the highest as 27.5% and the others, 13 to 18%. The half lives of pesticide residues were estimated as 30 to 230 weeks at 4℃, but 1 to 12 weeks at 30℃. The residues were reduced faster at 30℃ than at 4℃. The half lives of pesticide residues by water washing were estimated as 0.7 to 4.6 trials and the residues were removed with the washing trials. The residues of captan and carbaryl in cooked rice were removed 100 and 98%, respectively, comparing to initial residues concentration in treated rice but those of other 5 pesticides were removed 80%.

        This study was performed to investigate the changes of amount of S. typhimurium during cooking processes using pork and japchae (a Korean food which is made from meat, vegetables and noodles), and to support a practical application to develop a hazard analysis critical control point (HACCP) model. The pork was purchased in a retail shop, cut (0.5 cm × 10 cm × 10 cm, 25 g), tested for Salmonella contamination (results : negative), inoculated with S. typhimurium (10^7 CFU/g), then treated in various conditions related to cooking. After thawing for 24 hours in various conditions, the number of S. typhimurium was increased to 10^(10) CFU/g at a refrigerated temperature (4-10℃), and to 10^(21) CFU/g at room temperature (22-29℃). After thawing in a microwave oven for 40 seconds, the number of S. typhimurium increased to l0^8 CFU/g. During the thawing period, the number of S. typhimurium increased over time. At the refrigerated temperature, the number of the bacteria was 10^(10) CFU/g after 24 hours, 10^(13) CFU/g after 48 hours, and 10^(20) CFU/g after 72 hours. At room temperature the number of bacteria reached 10^(11) CFU/g in 2 hours, 10^(15) CFU/g in 4 hours, 10^(16) CFU/g in 8 hours, 10^(18) CFU/ g in 12 hours, and 10^(21) CFU/g in 24 hours. After cooking in a frying pan (150±7℃) for 3 minutes, the bacterial count was 10^6 CFU/g. After cooking in hot water for 20 minutes, the bacterial count was 10^7 CFU/g at 60℃, 10^6 CFU/g at 63℃, and 10⁴ CFU/g at 65℃. The fried pork was mi×ed with cooked vegetables, noodles, sesame oil, sesame seeds, and seasonings to make Korean japchae. This process took 10±2 minutes. The bacterial count in the japchae increased to 10^7 CFU/g from the count of 10^6 CFU/g of the fried pork before it was mixed with the other ingredients. These results indicate that the amount of S. typhimurium is effected by various different cooking processes. This study can suggest that pork should be cooked in water at over 65℃ for 20 minutes in order to prevent food poisoning, if the pork is contaminated with S. typhimurium. The presence of S. typhimurium in the raw pork is identified in an HA for japchae, and the primary CCP for japchae is inadequate cooking (cooking method and time/temperature). We need to standardize time-temperature-size and amount of pork in cooking japchae, because pork is usually cooked in ordinary frying pans when we make this food.

        Representive cured products such as ham and sausage produced in Korea were purchased at retail and cooked using heating tools such as a gas range (GR), an electric range (ER) and electric range after boiled (BE). Changes of N-nitrosamine (NA), nitrate and nitrite in the cured meats containing$lt;2.0 ug/kg of N-nitrosodimethylamine (NDMA) were checked and analyzed during their cooking process. Contents of nitrate and nitrite in ham products prior to cooking were 2.0 and 1.8 mg/kg, respectively; their contents in regular hams were slightly increased, but those of nitrate in press hams were decreased while those of nitrite were increased during its cooking process. Their contents in sausage products were 1.8 and 0.9 mg/kg; those of nitrate were decreased, while nitrite were slightly increased during its cooking process. NDMA detected only NA in all the collected cured products. Changes of NDMA, regardless of cooking methods, tend to drastically increase in all samples after their cooking; Its contents were increased by average 6.0-70.7 times in the GR samples, by average 2.4-39.2 times in the ER samples and by average 7.0-56.3 times in the BE samples. Virtually, the fact that all of this nitrosamine appeared to arise by the action of precursor such as NO_x was produced during the cooking of cured products.

        Washing water volume of rice for cooking and rice weight for one person per meal in one household were surveyed for confirming pollution by the washing water and total losses by rice washing procedures. The mean size of a family was 4.64 persons and the mean consumption weight of rice per capital per meal was 138.43g. It is used 0.782 L of water for washing the rice per capital share. The washing water of rice was composed of 0.32% of total solid, 0.11% of soluble solid and 1.65% of solid loss to rice, and COD and BOD of it were 2.400 and 3.564 ppm respectively.         The purpose of this paper is to examine the various kinds of recipes of deer and roe deer through classical cookbooks written from 1670 to 1943. The recipes of deer and roe deer are found 31 times in the literature written in classical Chinese from 1715 to the mid-l8th century, which can be classified six groups. Their records are less than other recipes such as beef, chicken, pork, lamb, and dog, but the deer recipe is recorded frequently as four times as the roe deer one The deer were cooked and preserved by the following six ways like large-size drying, drying, boiling, soup, roasting, and gruel, while three ones such as boiling, roasting, and drying were applied to the roe deer. However, there is little difference in recipes between deer and roe deer. In case of deer, boiling and drying were the most popular ones with the frequency of 28%. But the recipes of the roe deer, boiling, roasting, and drying are recorded with the same frequency of 33.3%. The recipes were introduced from China, and had many characteristics different from other kinds of meat, of which most process reflected the mordern cooking scientific aspect. The main ingredients were flesh meat, tail, and tongue and horn was used with uniqueness. Salt, vinegar, oil soy sauce, and the white part of the green onion were used as main seasonings. Alcohol, chuncho, sesame flower powder, and cinnamon powder are frequently added.

        약과의 튀김 온도와 반죽 횟수가 약과의 품질 특성에 미치는 영향과 혼합 계획(mixture experiment)에 따라 3가지 성된(참기름, 시럽, 소주)의 수준을 변경하여 재료 배합비가 약과의 품질 특성에 미치는 영향을 조사하였다. 튀김 온도와 반죽 횟수에 따른 영향은 색도에서 L(명도)값은 120℃에서 유의적으로 높았으며, 반죽 횟수가 많을 때 증가하였다. a(적색도)값은 온도가 높을 때 증가하였으나 반죽 횟수의 영향은 별로 없었다. b(황색도)값은 유의차가 없었다. 경도는 온도가 높을수록 유의적으로 커졌으며 반죽 횟수가 많을 때 경도가 약간 커졌다. 지방 흡수율은 온도가 높아짐에 따라 유의적으로 감소하였고, 반죽 횟수가 많을 때 약간 감소하였다. 집청 흡수율은 온도가 낮을수록 유의적으로 증가하였으며, 반죽 횟수에 따른 차이는 없었다. 재료 배합 비율에 따른 영향은 색도는 재료 배합 비율과의 사이에 뚜렷한 관계를 나타내지 않았으며, 경도는 참기름, 소주의 양이 많아지면 단단해지고 시럽이 많아지면 연해졌다. 지방 흡수율은 참기름, 시럽의 함량이 증가할 때 증가하였으며, 집청흡수율은 참기름과 소주의 함량이 감소하고, 시럽의 함량이 증가할 때 증가하였다.

        This study is performed to identify the contents of nitrosamine in meat (beef, pork) and meat product (ham, bacon, sausage) by gas chromatograph-thermal energy analyzer. The author also determined the formation of nitrosamine in these products when they were cooked in frying pan at 210 for 4 minutes and microwave for 45 and 75 seconds. N-nitrosodimethylamine (NDMA) analysis was impossible in the most products because of their impurietiea. On the other hand, N-nitrosopyrrolidine (NPYR,) of 0-9.4ug/kg in meat and 0-15.6 ug/kg in meat products were detected, respectively. When meat and meat products were cooked, generally contents of NDMA and NPYR have a tendency to be increased a little. Meat and meat product being cooked in microwave rather than flying pan, contents of NDMA and NPYR, were detected more. Especially, in sausage contained much fish, contents of NDMA was detected more.

        The purpose of this paper is to examine the various kinds of recipes of pheasant through classical cookbooks written from 1670 to 1943 which are the basic materials to the meat cooking. The recipes of pheasant are found 39 times in the literature, which can be classified into eleven groups. Chronologically, the recipe of mandu (ravioli) was first appeared, and guk, tang (soup), kui (roasted), jang (salted meat), chim (steamed), po (dried meat), whe (raw meat), gijim (boiled in soy sauce), cho (sparkly heated in soy sauce and sugar), jolim (hard boiled in soy sauce), and jungol (meat with vegetable cooked in pan) followed in the records. Kui was the most popular one with the frequency of 43.6%, which proves that kui is the most suitable one for pheasant among all of recipes. Mandu and guk, tang were 10.2%, chim and po were found with the same rate of 7.7% and the next ones were jang, gijim, cho, and jungol with the rate of 2.6%. The recipes of pheasant were recorded much less than those of beef, chicken, pork, lamb, and dog meat. Particularly, in comparison with chicken belonging to fowls, the frequency of pheasant cooking did not reach even to one third of that. The Korean recipes of pheasant have been independently developed with originality, having nothing to do with the Chinese ones. The recipes of pheasant before the late 1800s have based on the strict recipe principles along with the spirit of art and sincerity, but they were deteriorated to simple and easy ones discarding principles. The main ingredient was the flesh of pheasant and the sub-ingredients such as flour, pinenut, buckwheat powder, and mushroom were included in common. In additon, oil, soy sauce, black pepper, and stone leek were frequently used as main seasonings.

        자화수의 조리용수로써 기능에 대하여 연구한 결과 다음과 같은 현상을 관찰하였다. 1. 자화수의 pH의 변화는 수도수, 생수 공히 자화수가 약간 알칼리성을 띄었으며 시간이 지남에 따라 수도수에서는 pH가 유의하게 감소하고 생수에서는 증가하였다. 2. 건조식품을 불림에 있어 자화수의 경우 수도수를 사용한 경우보다 수화율이 유의적으로 높게 나타났다. 자화수에 침수한 버섯의 경우 초기부터 수분 흡수율이 약간 높았으며 90분 이후부터는 유의적으로 높아졌다. 콩은 하루밤 방치후 자화수에 침수한 시료에서 유의적으로 흡수율이 높게 나타났다. 3. 표면장력의 변화는 자화수의 표면장력이 수도수에 비해 작았고 시간의 경과에 따라서 유의하게 감소하였다. 4. 염장식품을 수침한 경우 자화수에서 특히 초기침수 5분 이내에 염장물로부터의 염분 유출량이 유의적으로 많았다.

        The purpose of this study was to survey the various kinds of cooked beef products focusing on Sukyuk (boiled beef) and Pyunyuk (boiled beef slice) recorded on the historical literatures written from 1670 to 1945. Sukyuk and Pyunyuk were recorded 45 times in the references and could be classified into 11 groups based on major ingredients such as fresh meat, tough meat, rotten meat, tail, head, lung, cup of breast, testicles, pancreas, spleen and tung. Twenty two cooking methods were described on the records. Sukyuk and Pyunyuk based on fresh meat were described the most frequently. Pyunyuk based on head was described late in 18th centuries, but its recipe could not be found in any records and that of internal organs and tung were presented late in 18th centuries and early in 19th centuries, respectively. The major ingredients of Sukyuk and Pyunyuk were lean meat, tail, head, lung, cup of breast, testicles, pancreas, spleen and tongue Mulberry seed, fragment of roof tile and other sub-ingredients were used for softening or deodorizing the off flavor of the products.
