        The saturated fatty acids(arachidic acid, stearic acid, and palmitic acid) were repeatedly applied on water surface, and their π-A isotherms and Maxwell displacement current(MDC) were measured to identify the effect of the number of carbons of fatty acids on the properties of Langmuir films. The saturated fatty which contain higher carbon number showed higher MDC peak, and the less carbon it contains, the higher surface pressure they show. It was found the maximum of MDC peaks was as the molecular area just before the surface pressure increases in compression cycles of saturated fatty acids.

        The sodium α-sulfo fatty acid vinyl ester oligomers, which are oligomer type surfactants were prepared by polymerization with fatty acid vinyl acetate. The α-sulfonation of fatty acid vinyl ester oligomers were carried by direct addition of sulfur trioxide. The dispersing performance of oligomer type anionic surfactants and sodium dodecyl sulfate(SDS) in the aqueous suspension of iron oxide and titanium dioxide particles was evaluated by particle size distribution and zeta-potential measurement. As results, the particles of iron oxide and titanium dioxide were flocculated by addition of small amount of oligomer type anionic surfactants and sodium dodecyl sulfate(SDS), then the flocks redispersed by more addition of oligomer type anionic surfactants and SDS. The flocculation, redispersion process was observed in lower concentration range of oligomer type anionic surfactants than SDS. Especially, the dispersing action of sodium α-sulfo palmitic acid vinyl ester oligomer was better than sodium α-sulfo lauric acid vinyl ester oligomer.

        In recent years, there has been considerable interest in the development of new functional surfactant including new type of anionic surfactants. Anionic surfactants, α-sulfo fatty acids that straight long chain alkyl group having from 12 to 18 carbon atoms, were synthesized with sulfur trioxide-dioxane complex to good yield. Xylitol α-sulfo fatty acid esters were obtained by reaction that the acetification and esterification of xylitol, by addition reaction with sodium chloride and hydrolysis respectively. These compounds were a new group of destructible surfactants which readily hydrolyzed and oxidized in natural water reservoirs. Physical properties of these new compounds involved surface tension, critical micelle concentration(cmc), foaming power, emulsion power, and hydrolysis properties, were measured. The cmc values of the compounds by ring method were assumed to 7.0×10-3~3.0×10-2mol/l range and surface tensions at cmc were 25~31dyne/cm respectively.

        V. cholerae non-O1 49균주와 V. cholerae O1, V. mimicus, V. vulnificus와 V. parahaemolyticus의 균체지방산(fatty acid methyl ester; FAME)을 gas liquid chromatogrphy로 분석하였다. 이들 분석자료를 통계학적으로 처리하여 Vibrio 종과 V. cholerae의 혈청형별 유연성을 비교 검토하였다. 검출된 지방산은 모두 41종이었고 분포량이 많은 것은 16:0, 16:1 cis 9, 18:1 trans 9/16/cis 11과 15:0 iso 2 OH/16:1 cis 9 였다. 검출된 지방산 중에서도 35종은 V. cholerae를 동정하는데 주요한 인자로 작용되었다. 지방산분포를 UPGMA(비가중수리분석)으로 dendrogram을 작성한 결과 V. cholerae non-O1은 V cholerae O1보다 V mimieus가 더 높은 유사도를 나타내었다. 특히 hydoxy acid는 V. chozerae의 아종단위를 동정하는데 중요하였다. V. choEeore non-O1중에서 O2, O5, O8, O10, O14, O27, O37, O39, O45와 O69의 총 10 종류 혈청형을 대상으로 지방산 조성에 의 한 유사성을 검토한 결과 유사도가 92% 이상 수준에서 7개의 아종를 형성하여 혈청형과 지방산 조성간에는 유의할 만한 상관관계가 있었다. 따라서 V. cholerne non-O1의 동정 및 역학적인 조사시 지방산 분석은 유용하게 활용될 수 있음을 알 수 있었다.

        α-sulfonated fatty acid polyethylene glycol esters with polyethylene oxide(addition, 3, 5, 10mol) were synthesized through esterification of α-sulfonated fatty acid methyl esters with alkyl chain length C12~C18. Their compounds were separated with column chromatography, and confirmed by TLC. Quantitative analysis of all the sulfonates were performed according to JIS K-3362 method, and ethylene oxide unit number were determined by ISO 2270 method. Structural properties of α-sulfonated fatty acid methyl esters and their derivatives were also identified from IR, and 1H NMR spectra.

        All the surface activities including surface tension, foaming power, foam stability, emulsifying power, dispersion effect, and detergency were measured and critical micelle concentration(cmc) was evaluated in dilute aqueous solution. The cmc evaluated by the Ring method was 10-3~10-4mol/L in case of monoesters, and 10-3~5.0×10-5mol/L in case of diesters, respectively. Surface tension of the aqueous solution was decreased to 45~50dyne/cm, showing the tendency that the ability of lowering the surface tension was dependent on increasing of carbon atom number in alkyl chain. Foaming power of all the monoesters was better than that of diesters. while foam stability of diesters was to the contrary. Emulsifying power of soybean oil or benzene was specially expected to be good for emulsifiers in industrial application fields. HLB values of monoesters and diesters evaluated by Griffin's method were in the range of 8 to 12. Dispersion property of ferric oxide was stable in the range of 4.5×10-5~5.0×-4mol/L in case of monoesters, and 10-5~10-4mol/L in case of diesters.

        It was tested the possibility that EPA and DHA could be separated from fish oil fatty acid ethyl ester(FAEE) in the supercritical carbon dioxide rectification method. Experiments were carried out in the 1800mm tall and temperature gradient packed rectification column at the pressure of 100bar and carbon dioxide flow rate of 52.43NL/min. Experimental results showed that this method was useful to separate the FAEE by the relative volatility of the components. The maximum attainable concentration of EPA, DHA and both of them in product were 41%, 43% and 57% respectively in this rectification column using raw fish oil feed.

        Separation of EPA and DHA from fish oil fatty acid ethyl ester (FAFE) by urea adductive crystallization method was carried out in the supercritical carbon dioxide (SC CO2) as a solvent. Our results showed that SC CO2 is a good candidate as a solvent in the urea adductive crystallization to separate FAFE by the number of unsaturated bonds. Compared to the separation process using methanol. SC CO2 yielded better performance in the overall selectivity of EPA and DHA. The effect of process variables on separation of EPA and DHA was discussed in detailed. A hybrid technology of SC CO2 fractionation and urea adductive crystallization with SC CO2 was conformed as a viable process to separate and concentrate EPA and DHA from fish oil.

        옥수수기름의 탈취온도가 탈취유의 이화학적 항수, 지방산 조성 및 triglyceride 조성에 미치는 영향을 알아보고 적정 탈취온도 조건을 확립하기 위하여 본 연구를 수행하였다. 240~270℃의 탈취온도에서 산값은 240℃ 처리군에서 0,07로 가장 낮았고, 250~270℃에서는 0.08~0.09의 범위를 나타내었다. Lovibond total color는 255℃에서 가장 낮은 24였으며, 과산화물값은 240~270℃ 전구간에서 0을 나타내었으나 235℃에서는 0.42로 과산화물이 완전 제거되지 않아 240℃이상의 탈취온도가 요망되었다. 한편, 탈취온도가 증가할수록 myristic, palmitic, stearic acid 등의 포화지방산 함량이 지속적으로 증가하였고, 특히 탈납유에서는 존재하지 않았던 arachidic acid함량이 급속한 증가 경향을 보였다. 탈취온도에 따라 TG조성도 변화를 보여 250℃ 이상 처리군에서는 S3형 TG가 발견되는등 고온탈취는 탈취유의 이화학적 특성에 좋지 못한 영향을 미치는 것으로 밝혀졌다.

        The distribution of Listeria spp. in various foods and its fatty acid composition were examined. A total 60 samples of dairy products(15), seafoods(20), meat products(18), factory wastes(2), and salades(5) were tested. Listeria spp. was found 10 samples, showing about 16. 7% detection ratio; dairy products 0(0%), seafoods 1(5%), meat product 7(38.9%), factory wastes 2(100%) and salades 0(0%). L. monocytogenes was isolated from 6 samples(10%); seafood 1(5%), meat products 3(16.7%) and factory wastes 2(100%). L. innocua was isolated from meat products 7(38.9%) and factory wastes 2(100%). Whereas L. welshimeri was isolated from meat product 1(5. 6%) and factory wastes 1(50%). The cellular fatty acid composition determined by gas chromatography was found not to differ among L. monocytogenes and L. innocua. Twenty three strains of L. monocytogenes and twenty two strains of L. innocua isolated from foods has similar fatty acid profiles when grown at 30℃, 24 hrs on the tryptic soy plate with C_(15) and _(17)' anteiso branched acids accounting for about 80% of total.

        박과식물(科植物) 종실(種實)에는 총지질량(總脂質量)이 21.9~50.7%의 범위(範圍)로 비교적(比較的높았으며, 특(特)히 박, 하늘타리의 경우는 41.9%와 50.7%로 조사(調査)한 시료(試料)중에 제일 높았으며, 또 모든 시료(試料)가 약(約) 98% 이상(以上)의 중성지질(中性脂質)을 함유(含有)하고 있었다. 호박, 수세미오이, 수박, 참외, 오이 및 박종자(種子)의 총지질(總脂質)에는 리놀산(酸)의 함량(含量)이 제일(第一) 많아 56.8~84.0%이였으며, α-리놀레산(酸)의 함량(含量)은 0.0~0.6%로 매우 적었고, 올레산(酸)이 주성분(主成分)인 모노엔산(酸)과 팔미트산(酸)이 대부분(大部分)인 포화지방산(飽和脂肪酸)은 그 함량(含量)이 각각(各各) 5.7~22.2%와 9.9~20.6%로 시료(試料)에 따라 심한 차이(差異)를 보였다. 하늘타리 종자(種子)의 총지질(總脂質)에는 C18:2Ω6과 9c.11t.13c-C18:3(Punicic acid)이 40.5%와 34.9%로 주요(主要) 성분(成分)이였고, 그 다음으로 C18:1Ω9가 13.8% 함유(含有)되어 있었으며, 그러나 9c/11t.13t-C18:3(α-eleostearic acid)는 2.2%에 지나지 않았다. 한편 여주의 경우(境遇)에는 9c.11t.13c-C18:3이 66.9%로 제일(第一) 많았으며, 그 다음으로 C18:1Ω9와 C18:1Ω6이 17.7%, 10.4% 각각(各各) 함유(含有)되어 있었고, 하늘타리에 많이 함유(含有)되어 있는 9c.11t.13c-C18:3는 9t.11t.13c-C18:3(β-eleostearic acid)와 함께 1.1% 정도(程度)로 소량(少量) 포함(包含)되어 있었다. 9c.11t.13c-C18:3와 9c.11t.13t-C18:3와 같은 conugate trienoic acid는 여타시료(餘他試料)에서는 전연 검출(檢出)되지 않았다. 하늘타리와 여주의 종자유(種子油)의 극성지질(極性脂質)에는 이틀의 중성지질(中性脂質)에 다량(多量)으로 존재(存在)하는 conjugate trienoic acid가 극(極)히 소량(少量)밖에 존재(存在)하지 않는 것은 매우 특징적(特徵的)이며, 포화지방산(飽和脂肪酸)이 중성지질(中性脂質)(9.9~20.6%)에 비(比)하여 극성지질(極性脂質)(25.0~29.4%) 에 보다 많이 함유(含有)되어 있다는 사실(事實)을 나머지 시료(試料)에서 공통적(共通的)으로 찾아볼 수 있었다. 박과식물(科植物) 종자(種子)는 리놀산(酸)을 많이 함유(含有)하고 있는 군(群)과, 9c.11t.13c-C18:3 및 9c.11t.13t-C18:3와 같은 conjugate trienoic acid를 가진 군(群)으로 대별(大別)할 수 있었다.

        Canola(Brassica napus) 엽에서 추출한 미세막으로부터 PEG-dextran 2상분획법을 이용하여 세포막과 세포내막을 분리하였다. U2 상에 있는 원형질막의 K+-ATPase의 특이활성도가 미세막에 비하여 25℃에서 자란 canola는 6.6배, 10℃에서 4.6배 각각 증가되었다. 원형질막(U2)은 미세막이나 세포내막(L2) 보다 cytochrome-c-oxidase 활성이 적게 나타난 반면, 세포내막에서는 K+-ATPase의 특이활성도가 가장 적게 나타났다. 10℃에서 생장한 canola의 18:3/18:2 률은 25℃보다 29.2% 더 높게 나타났다. 원형질막의 2중결합지수는 10℃에서 생장한 canola가 25℃에서 생장한 것보다 8.9% 더 증가되었으며 세포내막에서도 같은 경향으로써 10℃에서 19.7% 더 증가되는 현상을 보였다. 또한 엽록소 함량은 10℃에서 생장한 것이 25℃에 비하여 17.3% 낮았다. Canola가 저온에서 생장시 주로 C18 지방산들이 변화되어, 세포막 내에 불포화 지방산이 많았으며, 그 중에서도 리롤렌산(18:3)이 크게 변화되는 현상을 보였다. 이러한 변화는 생리적으로 canola의 세포막이 저온에 살아가기 위한 하나의 수단으로 추정된다.

        Conventional alkaline catalytic procedure, including sodium methoxide-methanol N, N, N', N'-tetramethyl guanidine-methanol, and acid-catalytic methods of BF3-methanol and HCI-methanol, have been applied for preparing methyl esters from the triacylglycerols of Trichosanthes kirilowiil seeds containing conjugated trienoic acids. The alkaline catalytic methods produce the methyl esters quantitatively without isomerization of the conjugated trienoic acids, but the acid-catalytic ones destroy almost the molecules of conjugated trienoic acids during transesterification of the triacylglycerols although the molar ratios of monoenoic and dienoic acids (non-conjugated) to saturated acids are in good agreement with those obtained from the alkaline methods.

        The Synthesis of long chain fatty acid containing azobenzene and (Cn-Azo) was optimized, starting from p-(p'-hydroxy phenyl azo)-benzoic acid and the product of reaction containing azobenzene chromophores was investigated by ultraviolet spectrophotometery in chloroform solvent at the various temperature. In addition, Reversibility and stability of azo compounds have been measured by means of Ultraviolet and the structure of these compound were ascertained by means of FT-IR and NMR. Recrystallization of reaction product in the solvent results the experimental yield obtained about 62.93% p-(p'-octadecyloxy phenyl azo)-benzoic acid. Long chain azobenzene derivatives in chloroform solution are induced photoisomerization by u. v. and visible light irradiation. The solution of long chain fatty acids(Cn-Azo) containing azobenzene are possible of being applied to functional molecular devices such as photomemory and light switching.

        Vibrio vulnificus에서 lipopolysaccharide(LPS)를 추출하여 지방산 조성을 분석한 후 이 결과를 Escherichia coli LPS와 Salmonella typhimurium LPS의 것들과 비교하였다. Vibrio vulnificus LPS의 주 지방산은 myristic acid(C14:0, 41.37%)이었고 Escherichia coli LPS는 lauric acid(C12:0, 37.03%), Salmonella typhimurium LPS는 capric acid(C10:0, 48.60%)로 서로 달랐으나 이 세가지 지방산이 각 LPS의 주성분이었다(70%이상).

        The present study was carried out in atheroscleorotic New Zealend white(NZW) rabbits. to evaluate the effect of dietary supplementation with Korean pinenut oil, on plasma total fatty acid composition. In study I, NZW rabbits were fed 10 weeks on a commercial chow diet supplemented with 5% of energy as fats(soybean oil or pinenut oil) or 10% of energy as fats(soybean oil or pinenut oil) with the addition of 1% cholesterol to the diet. Nineteen fatty acids ranged from myristic acid (14:0) to cervonic acid (22:6 Ω3) were identified in all the samples. The c5, c9, c12~18 : 3 acid was not reported in the fatty acid methyl ester profiles of each group because it was included in the linoleic acid peak. The major constitutent fatty acids in the chow diet group were linoleic acid, oleic acid, palmitic acid and α-linolenic acid. In the cholesterol group, oleic acid, linoleic acid and palmitic acid were the major fatty acids. In plasma of cholesterol-fed animals, the levels of 16:1 Ω 7 and 18:1 1 Ω 9 were increased. Linoleic acid was the major fatty acid in soybean oil/cholesterol and pinenut oil/cholesterol groups. Plasma linoleic acid levels were significantly incresed from 4 to 6% by the supplementation of 5% soybean or 5% pinenut oil in the cholesterol diet for 5 weeks, compared to cholesterol group. Plasma 16 : 1 Ω 7 levels in animals fed with 5 or 10% pinenut oils were significantly lower than in those fed cholesterol for 5 weeks. After 10 weeks on the soybean oil and pinenut oil diet there were no significant differences in the fatty acid composition. In study II, the fatty acid composition was not affected by the types or levels of oils supplemented for 5 weeks. After 10 weeks on the oil diets 16:1 Ω 7 and 18:1 Ω 9 were decreased in 10% soybean in oil/cholesterol and 10% pinenut oil/cholesterol groups, compared to cholesterol group.
