        This study evaluated the quality characteristics and antioxidant activities of cookies after adding black ginseng powder at ratios of 0%, 1%, 3%, 5%, and 7%, and the potential of black ginseng as a functional food. The moisture content increased with an increase in the black ginseng powder content while the pH decreased. The L value d ec reased with increase in the black ginseng powder content while the a and b values increased. The hardness decreased with increase in the black ginseng powder content. Notably, antioxidant activities, such as 2,2-diphenyl-1-picryl-hydrazyl (DPPH), 2-2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid)diammonium salt (ABTS) radical scavenging showed the highest increases in cookies containing 7% black ginseng powder. The total phenol and flavonoid contents significantly increased according to the amount of black ginseng powder added. These results suggest that black ginseng powder can be applied to cookies to achieve high quality and antioxidant activity.

        본 실험은 Holstein 비육후기에 홍삼박, 광물질 및 설탕을 첨 가 급여하여 건물채식량, 일당증체량, 육질특성 및 경제성에 미치는 영향을 조사하고자 수행하였다. 시험구는 4처리로서 홍삼박, 광물질 및 흑설탕을 급여하지 않는 처리구를 대조구(C), 홍삼박 200g 첨가 급여 구는 T1, 홍삼박 100g과 광물질 50g 첨가 급여구는 T2 그리고 광물질 50g과 흑설탕 20g 첨가 급여한 구를 T3 로 나누어 실시하였다. 그리고 본 실험에서 얻어진 결과를 요약해 보면 다음과 같다. 총 사료섭취량 및 1일 채식량은 T2 및 T3구가 C구에 비하여 유의적으로 높게 나타났다(p<0.05). 또한 채식량 이 많았던 T2 및 T3구에서 총 증체량 및 일당 증체량이 높게 나 타났지만 유의적인 차이는 없었다. 사료 요구율은 C구가 다른 구 (T1, T2, T3)에 비하여 유의적으로 높게 나타났지만(p<0.05), T1, T2 및 T3 구간에는 유의적인 차이가 없었다. 등지방두께, 등심단 면적 및 육량등급은 처리구 상호간 유의적인 차이가 없었다. 근내 지방은 T3(4.5) > T1(4.0) > T2(2.7) > C(2.5)구순으로 높게 나타났다(p<0.05). 그러나 육색, 지방색, 조직감 및 성숙도는 상호 처리 간 유의적인 차이가 없었다. 육질등급은 상호 처리 간 유의적인 차이는 보이지 않았지만 T3 > T1 > T2 > C 순으로 높은 경향을 보였다. 경제적 조수익성은 T3 > T1 > T2 > C구순으로 나타 났다. 이상의 결과를 종합해 볼 때, 배합사료와 조사료 만 급여하는 체계(C) 보다는 홍삼박, 광물질 및 흑설탕을 첨가 급여(T1,T2, T3)하는 체계가 도체등급 및 수익성 증대에 유리하며, 특히 증체량, 육질등급 및 경제성을 고려하였을 때 T3구가 가장 좋은 급여체계로 나타났다.

        본 연구는 흑삼과 흑마늘을 이용하여 블랙잼을 제조하면서 물성의 변화를 모니터링 해 보았다. 블랙잼의 배합 조건은 흑삼(X1, 30-54 g), 흑마늘(X2, 75-135 g), 펙틴 4.5 g, 사과페이스트 270 g 및 프 럭토올리고당 360 g이며, 반응 변수로는 탄력성, 응집성, 씹힘성, 깨짐성 및 부착성으로 반응표면분석을 실시하였다. 탄력성, 응집성, 씹힘성, 깨짐성 및 부착성에 대한 회귀식의 R2는 각각 0.8948, 0.9103, 0.9032, 0.9097, 0.8561로 5∼10%의 유의수준에서 유의성이 인정되었다. 블랙잼의 탄력성이 가장 높은 흑삼 및 흑마늘 배합조건과 그 탄력성은 흑삼 함량 54.00 g 및 105.83 g에서 194.39%로 나타났으며, 탄 력성이 가장 낮은 흑삼 및 흑마늘 배합조건과 그 탄력성은 흑삼 함량 31.48 g 및 119.43 g에서 164.11% 로 나타났다. 블랙잼의 응집성이 가장 높은 흑삼 및 흑마늘 배합조건과 그 응집성은 흑삼 함량 48.85 g 및 129.62 g에서 40.96%로 나타났다, 응집성이 가장 낮은 흑삼 및 흑마늘 배합조건과 그 응집성은 흑삼 함량 50.06 g 및 82.77 g에서 32.96%로 나타났다. 블랙잼의 씹힘성이 가장 높은 흑삼 및 흑마늘 배합조건과 그 씹힘성은 흑삼 함량 42.95 g 및 106.83 g에서 43.19 g로 나타났다. 블랙잼의 깨짐성이 가장 높은 흑삼 및 흑마늘 배합조건과 그 깨짐성은 흑삼 함량 32.10 g 및 88.04 g에서 16,874 g로 나타났으며, 깨짐성이 가 장 낮은 흑삼 및 흑마늘 배합조건과 그 깨짐성은 흑삼 함량 50.53 g 및 83.91 g에서 678 g로 나타났다. 블랙잼의 부착성이 가장 높은 흑삼 및 흑마늘 배합조건과 그 부착성은 흑삼 함량 32.91 g 및 124.60 g에 서 14.06 g로 나타났다. 이상의 결과로부터 흑삼과 흑마늘의 배합비와 블랙잼의 물성의 관계를 조사함으 로서 건강기능성 소재를 이용하여 누구나 즐겨 먹을 수 있는 블랙잼을 제조할 수 있을 것으로 여겨진다.

        Ginsenosides are major constituents of ginseng and are known to be responsible for its pharmacological properties. This study aimed to investigate the detoxification effect of a mixture containing black red ginseng powder, red ginseng extract, Puerariae radix extract, and Hovenia dulcis extract, on SD (Sprague Dawley) rats treated with 30% ethanol. Thirty minutes before treatment, the animals were orally administered different concentrations of the mixture or water. Results revealed that the concentration of ethanol in blood serum was significantly decreased in the black red ginseng mixture treated group in a dose-dependent manner, as compared with that of the control group. The blood level of acetaldehyde increased until 1 hr after alcohol administration, but the levels rapidly decreased later. Furthermore, ADH and ALDH activities in the hepatic tissue were also increased in the black red ginseng mixture administered group, than in the control group. These results indicate that the black red ginseng mixture has the ability of decomposing alcohol by increasing the ADH and ALDH activities responsible for alcohol metabolism.

        Current study was performed to investigate the effect of morphological properties of black ginseng such as size and shape on the quality of black ginseng. The raw ginsengs were separated based on size (medium, large, and extra-large) and shape (straight ginseng, fibrous root ginseng). Subsequently, the raw ginsengs were steamed at 95℃ for 3 h and dried in the presence of heated air at 50℃ for 30 h. This process was repeated nine times for black ginseng production. The physiochemical properties such as the content of acidic polysaccharides, ginsenosides, and antioxidative activity were evaluated. Although minor difference in physiochemical properties such as acidic polysaccharide content in raw ginseng was observed, no statistical difference in the content of acidic polysaccharides, total phenols, and ginsenosides was observed during final black ginseng production based on size classification. The minor ginsenosides in fibrous root black ginseng, such as Rk3, Rh4, Rg3, Rk1, and Rg5 were higher in content than straight black ginseng. However, no correlation between the shape of ginseng and total phenol content and antioxidative activity was observed. Therefore, present results demonstrate that the difference in ginseng size in same-age and -production area does not affect the quality of black ginseng. Furthermore, difference in ginseng shape does not influence the overall quality of black ginseng. It is hypothesized that this study would be considered as supportive data for the production of high-quality black ginseng.

        The aim of this study was to examine the ameliorating effect of black ginseng on the growth of the HepG2 cell transplanted tumor in BALB/c nude mice. 27 male BALB/c nude mice (all six weeks old) were randomly divided into three groups: the control group, the first treatment group (HepG2300RG, using 300 mg/kg red ginseng), and the second treatment group (HepG2300BG, using 300 mg/kg black ginseng). The HepG2300BG in the HePG2 cells showed increased mean survival time than that of red ginseng group. The size and volume of the tumor in the 300BG group showed significant reduction compared to those of the HepG2300RG group (p<0.05). The body weight and liver weight of the HepG2300RG group was not significantly different with control and HepG2300BG group. The serum levels of ALT and AST in the HepG2300RG and HepG2300BG group were significantly lower than those of the control group. In conclusion, these results suggest that the black ginseng may have possible anti-tumor activities.

        The goal of this study was to examine the ameliorative effects of black ginseng(BG) in male obese diabetic C57BLKS/ J-db/db mice. Ten-week-old male db/db mice were administrated 300 ㎎/㎏ of F-BG daily for 6 weeks, The db/db mice where corresponded to the normal group and db/db mice which were the diabetic positive group were not provided BG treatment. The supressive effects of treatment were examined on serum lipids levels, which included total cholesterol, triglyceride, LDL-cholesterol and nonesterified fatty acid. Also, weight changes and the relative weight of liver and kidney, organ pathological investigation were measured. The effects of treatment were assessed by comparing the results of the db/db mice that received BG for 6 weeks with that of the diabetic positive group. Significant differences in several biological parameters such as HDL level(p<0.05), TG level(p<0.05) and NEFA level(p<0.05) were observed for the BG group. BG treatment increased the HDL level and decreased the NEFA level, which could ameliorate hyperlipidemia or blood circulation.

        1986~1990년에 3년근 인삼포장에서 참검정풍뎅이 유충에 의한 춘기 피해 양상을 조사한 결과 인삼포장의 바깥쪽일수록 피해가 심하였는데 이는 참검정풍뎅이 자성충의 dirks 이동 습성 때문으로 보인다. 3령 유충에 의한 3년근 인삼의 피해부는 뿌리 동례의 상부, 중부, 하부 또는 뿌리 전체였으며 드물게 지하부 줄게에도 피해가 있었다. 섭식기 3령층의 평균 서식 깊이는 인삼 유묘, 2년근, 3년근, 쑥에서 각각 3.2cn, 5.6cm, 6.6cm, 4.9cm 였다. 춘기의 참검정풍뎅이 유충에 의한 인삼의 피해는 주러 5월 중순에서 7월 상순에 발생하였고 강우량이 증가할 경우 피해가 일시적으로 감소하는 것으로 보였다.

        Background : Black ginseng is known to be effective product made with ginseng. In general, most black ginseng is manufactured by high teperature condition (90 - 95℃). However this temperature condition may not be optimal to obtain ginsenoside components beneficial for inhibition of diabetes. Here, we examined anti-diabetic effect of black ginseng manufactured by low low temperature process. Methods and Results : For diabetes induction, ICR mice were intraperitoneally injected with alloxan (50 ㎎/㎏). Mice were administered orally with 1 or 3 ㎎/mouse of the extract of black ginseng (BG-L) manufactured with low temperature (80℃), and its anti-diabetic effect was evaluated by measuring the level of glucose in blood. The consecutive administration of BG-L extract resulted in a significant decrease of glucose. In oral and intravenous glucose tolerance test (OGTT and IVGTT, respectively), administration of BG extract significantly reduced the level of glucose in blood within 20 min after glucose treatment. And its suppressive effect on glucose tolerance was effective not only pre-treatment but also post-treatment of BG extract. Oral administration of BG extract enhanced the level of insulin in blood, and decreased the amount of water consumption in alloxan-induced diabetic mice 5 days after alloxan treatment. In addition, BG-L significantly inhibited the level of blood glucose in db/db type-II diabetic mice. Conclusion : These results suggest that the black ginseng extract manufactured manufactured with low temperature (80℃) is a promising candidate applicable to the development of anti-diabetic nutraceutical foods and drugs.

        Background : Osteoclasts are differentiated from the monocytes/macrophages of hematopoietic cells, that excessive activities of bone-resorbing giant cells leads to pathological bone diseases such as osteoporosis (contained rheumatoid arthritis and autoimmune arthritis). Therefore, it is very important to suppress loss of bone mass by deactivation of osteoclast differentiation. In this context, we evaluated for the effects of black ginseng (BG) extract on TRAP activity, proliferation and differentiation in RANKL-induced osteoclastic RAW264.7 cells. Methods and Results : The aim of this study is to figure out the potential anti-osteoporosis effects and the underlying mechanism of BG extract in RANKL-induced osteoclastic RAW264.7 cells. The ginsenoside Rg3, Rg5, Rk1 and Rh4 content of BG was increased more than Red ginseng (RG). The extracts of BG markedly reduced the activity of tartrate-resistant acid phosphatase-positive (TRAP+) multinucleated cells from osteoclastic RAW264.7 cells, without cytotoxicity. BG clearly inhibited RANKL-induced osteoclast differentiation by decreased calcitonin and TRAP (p < 0.01). Furthermore, ginseonside Rg5 and Rk1 significantly inhibited TRAP activity in formation of osteoclastic differentiation (p < 0.01). It is also found that Ginseonside Rg5 and Rk1 mixture more inhibits osteoclast differentiation activity. Conclusion : Our results suggest that Black ginseng extract has an anti-osteoporosis effects in bone disease when administered as a food supplement and has potential as a therapeutic agent for osteoporosis.

        Background : Non-alcoholic fatty liver disease (NAFLD) is caused by obesity, type 2 diabetes mellitus, dyslipidemia, and genetic factors. Also, hyperinsulinemia directly promotes fat accumulation in hepatocytes. Therefore, it is very important to suppress the most common risks of NAFLD, such as obesity and insulin resistance. In this context, we evaluated for the effects of black ginseng (BG) extract on lipid accumulation inhibition and degradation in hepatocytes. Methods and Results : The aim of this study is to figure out the potential anti-lipogenic effects and the underlying mechanism of BG extract in a cellular-, type 2 diabetes mellitus (T2DM) animal model associated with NAFLD. T2DM animal used C57BL/KsJ db/db mouse (M. 6 wk, n = 56), treated with extract of BG and Red ginseng (RG) (each 100 and 900 ㎎/ ㎏/day, p.o) for 6 weeks. BG markedly reduced palmitate-induced intracellular lipid accumulation in HepG2 cells. On histology of liver tissues of T2DM animal, macrovesicular lipid droplets in cytoplasm of hepatocytes were decreased both RG and BG-treated groups. In liver tissue, BG-treated groups suppressed CCAAT/enhancer binding protein-α (C/EBP-α), sterol regulatory element-binding protein-1c (SREBP-1c) expression, and SREBP-1c mediated induction of acetyl-CoA carboxylase (ACC) and fatty acid synthase (FAS) proteins related to the induction of adipose differentiation. Futhermore, adenosine monophosphate (AMP)-activated protein kinase (AMPK) activity was significantly increased in BG-treated groups compared to RG-treated groups. It is also found that peroxisome proliferator-activated receptor-α (PPAR-α) highly expressed in BG-treated groups. Conclusion : Our results suggest that black ginseng extract has an anti-adipogenic and anti-lipogenic effects in the liver when administered as a food supplement and has potential as a therapeutic agent for obesity and T2DM induced NAFLD.

        Background: This study examined the hypoglycemic and kidney protective effect of black ginseng in streptozotocin-induced diabetic mice. Methods and Results: Diabetes was induced by treating mice with streptozotocin (STZ) for four weeks. In vivo studies were performed in order to investigate the hypoglycemic effect of the black ginseng prosapogenin (GBG05-FF) extract. The body weight and blood glucose level were measured. Moreover, after the mice were sacrificed, the kidneys were isolated and histological changes were observed with hematoxylin and eosin staining. Blood urea nitrogen and creatinine levels were also measured. The results showed that administration of black ginseng increased body weight. Compared to blood glucose levels in STZ mice, blood glucose levels were reduced by 48% in STZ mice supplemented with 300 ㎎/㎏ of black ginseng, and by 69% in STZ mice supplemented with 900 ㎎/㎏. Furthermore, histopathological examination of STZ mouse kidneys revealed, changes in the kidneys, epithelial cell damages, inflammatory cell infiltration and glomerulus hypertrophy. However, a significant reduction of glomerular water droplets (indicative of glomerulus hypertrophy) was observed in the kidneys of STZ mice supplemented with black ginseng extract. Conclusions: These results suggest that black prosapogenin (GBG05-FF) ginseng extract has a significant hypoglycemic effect and can be used as an anti-diabetic substance and renal protective agents as part of dietary supplements or novel drugs.
