        본 연구에서는 계면활성제 용액에서 1,3-Butanediol, 1,2-Pentanediol, 1,2 Hexanediol 들이 cmc, 표면장력, 기포력 및 유화력에 미치는 영향을 연구 하였다. 계면활성제 수용액에 diol의 첨가는 cmc와 표면장력 저하를 초래 하였으며 기포력 및 유화력은 향상 되었다. 이러한 경향은 diol의 사슬길 이가 길수록 현저 하였다. 이러한 특성은 diol의 알킬사슬과 계면활성제 분자간에 소수성 상호작용이 물 분자간의 응집력을 감소시키고, 계면에서 계면활성제 headgroup간 상호작용을 증진시키기 때문이다. 또 한 각 diol의 방부력을 평가하기 위하여 MIC 측정을 수행 하였으며 방부력은 1,2-HDO > 1,2-PDO > 1,3-BDO 순서였다. 본 연구의 결과들은 diol들이 화장품에서 보조 계면활성제와 방부제로 이용될 수 있음을 확인 시켜 주웠다.

        본 연구에서는 높은 항산화, 항염증, 피부 미백 및 멜라닌 생성억제 활성을 지닌 톱니모자반 추출물(학명 Sargassum serratifolium, ESS)의 저장 안정성을 향상시킬 목적으로 oil-in-water (O/W) 나노 에멀젼을 제조하였다. 톱 니모자반으로부터 추출되어 농축, 탈염 및 탈당 과정을 거친 ESS의 주성분은 지용성 성분으로 높은 항산화 활성 때문 에 산화가 쉽게 일어남으로써 기능성 화장품 소재로써의 단점이 있다. 본 연구에서는 이전의 연구에서 확립된 PEG 400, 폴리옥실 캐스터오일 (EL) 및 Poloxamer 407의 농도를 적용하여 MES가 함유된 O/W 나노에멀젼을 제조하였다. 확립된 조건에서 제조된 나노에멀젼의 평균 크기는 16 ~ 22 nm로 나타났으며, 나노에멀젼은 항산화, NO 생성억제 능, 멜라닌생석억제능 alc MMP-1 생성억제능이 우수한 것으로 나타났다. 저장기간에 따른 이들 효능을 분석한 결과 5 사이클의 시간 변화에도 큰 차이가 없었으므로 장기간 저장에 따른 활성변화가 없음을 나타내었다.

        This study examined the quality characteristics of chicken breast emulsion-type sausages manufactured with different contents of Zanthoxylumschinifolium (Z.S.) powder (0, 1, 2 and 3%). The changes to the samples upon inclusion of Z.S. powder were monitored by measuring the proximate composition, pH, color, cooking yield, viscosity, texture profile analysis and protein solubility. The sausages manufactured with increasing amounts of Z.S. powder showed a decrease significantly in fat content (p<0.05), whereas the ash content increased. The pH of the cooked samples also decreased significantly with the increasing content of Z.S. powder (p<0.05). Before and after cooked lightness significantly decreased as the Z.S. powder content increased (p<0.05). The redness of the cooked samples also increased significantly with an increasing amount of Z.S. powder (p<0.05). Samples that contained 2% and 3% of Z.S. powder resulted in a significantly larger cooking yield compared to the control sample and the one containing 1% of Z.S. powder (p<0.05). The viscosity of the uncooked samples also increased with increasing amount of Z.S. powder. Furthermore, the samples containing 3% of Z.S. powder showed significantly lower levels of hardness and springiness than the control sample (p<0.05). In addition, the sample with 3% of Z.S. powder contained showed significantly higher total protein and myofibrillar protein levels than the other samples (p<0.05). Overall, the 3% of Z.S. powder chicken breast emulsion-type sausage performed well in most quality characteristic categories, and this formulation would be suitable for use in food manufacturing.

        The objective of this study was to investigate the quality properties of sausages added with the atmospheric pressure plasma treated extract of Perilla frutescens Britton var. acuta Kudo (red perilla). The lyophilized powder of red perilla extract treated by atmospheric-pressure plasma contained 7.5 g kg-1 nitrite. Sausage samples were manufactured with the addition of sodium nitrite (Control), celery powder (Celery), or plasma-treated extract of red perilla (PTP) to obtain nitrite concentration of 70 mg kg-1. The residual nitrite content was the lowest in PTP during storage for 21 days at 4℃ (p<0.05). The total aerobic bacteria counts were higher in PTP than in Control and Celery during storage at 4℃ (p<0.05). Malondialdehyde content of sausages was significantly lower in PTP than in Control and Celery during storage (p<0.05). PTP showed the lowest L* value and the highest b* value among the tested sausage samples during storage (p<0.05). PTP received the low scores in all the sensory properties of sausages because of its inherent color and flavor. The results suggested that the plasma-treated extract of red perilla was an unsuitable natural nitrite source for cured meat products because of its adverse effect on sensory quality. However, natural nitrite source with increased nitrite content can be produced by the treatment of the natural plant extract with atmosphericpressure plasma.

        The synthesis of octenyl succinyl β-gucan (OSA-β-glucan) was carried out and its interfacial properties at the oil-water interface and in emulsion systems were investigated. An aqueous ethanol system as a reaction media was used to facilitate the synthesis process; 10% (w/w) ethanol found to be the best as it showed a maximum degree of substitution (DS: 0.0132). FT-IR showed a characteristic absorption spectrum at 1736cm-1, indicating the esterification of octenyl succinyl groups to β-glucan backbone. As for interfacial tension measurements, it was decreased with increasing concentration of OSA-β-glucan in the aqueous phase and when NaCl was added to aqueous OSA-β-glucan solution in the range of 0.01 M to 0.1 M and also when pH was raised (pH 3 ~ pH 9). In systems of emulsion stabilized with OSA-β-glucan, fat globule size found to decrease with increasing concentration of OSA-β-glucan, showing a critical value of about 0.32μm at 0.5 wt%. When the OSA-β-glucan emulsions were stored, it was found that fat globule size was increased with storage time and particularly pronounced increase was observed in emulsion with 1% OSA-β-glucan, possibly due to depletion flocculation. Results of creaming stability evaluated by light scattering technique showed that it was more stable in emulsions containing smaller fat globule size. Surface load of OSA-β-glucan in emulsions increased with increasing concentration of OSA-β-glucan, suggesting a multilayer adsorption.

        This study aimed to investigate the emulsifying properties of bovine lactoferrin in food emulsion system. First, lactoferrin solution was prepared to study its surface activities, such as surface adsorption characteristics and ζ-potential. Second, some physicochemical properties of lactoferrin emulsion which resulted from variations of environmental conditions (i.e., pH or NaCl addition) were determined. As for surface adsorption characteristics evaluated by surface tension, it was decreased with increasing lactoferrin concentration in solution (1×10⁻⁵→0.2 wt%) and showed a plateau (≒44 mN/m) above 0.01 wt%. It was also changed with pH and the minimum value of 53.8 mM/m was observed at pI of lactoferrin. This was related to changes in ζ-potential of the lactoferrin solution with respect to pH. Fat globule size of lactoferrin emulsion was decreased with increasing lactoferrin concentration and a stable emulsion was formed above 0.5 wt% lactoferrin in emulsion with fat globule size d₃₂ of ca. 0.33 μm as confirmed by creaming stability experiment (i.e., Turbiscan). As with surface tension, fat globule size of lactoferrin emulsion also changed with pH and showed a maximum value at pI. As evaluated by Turbiscan, in the presence of NaCl, the lactoferrin emulsion showed instability in particular above 10 mM.

        The emulsion stability of W/O emulsion prepared by D phase emulsification during storage and handling is studied by using phase diagrams. The process of D phase emulsification begins with the formation of isotropic surfactant solution, followed by formation of oil-in-surfactant (O/D) gel emulsion by dispersion of octamethylcyclotetrasiloxane(OMCS) in the surfactant solution. Polyols were essential components for this purpose. To understand the function of polyols, the solution behavior of nonionic surfactant/oil/water/polyol systems were investigated by the ternary phase diagrams of polyoxyethylene oleyl ether/OMCS/propylene glycol(PG) aqueous solutions. The addition of PG increased the solubility of oil in the isotropic surfactant phase. D phase emulsification method has been applied to a new type of cosmetics. By using this emulsification technique, O/W emulsion were formed without a need for adjust of HLB. Fine and stable W/O emulsions were prepared by D phase emulsion.

        이산화탄소 농도가 높은 도심지의 경우 탄산화로 인한 철근부식이 발생하기 쉬우며 이는 콘크리트 구조물의 내구수명을 감소시킨다. 콘크리트 구조물의 경우 다양한 구속조건을 가지며 항상 외부의 재하하중을 받고 있다. 도입된 응력수준은 이산화탄소와 같은 유해인자의 확산을 변화시키며 탄산화 깊이의 변동성을 야기한다. 본 연구에서는 응력재하수준에 따른 탄산화 변동성을 정량화하였으며, 이를 이용하여 탄산화 예측식을 도출하였다. 내구성 설계인자인 피복두께, 이산화탄소 확산계수, 탄산화 반응 수화물, 그리고 외부 이산화탄소 농도를 확률 변수로 정의하였으며, MCS을 통하여 영향인자의 변동성에 따른 내구수명을 도출하였다. 또한 응력수준에 따라 변화하는 내구수명을 도출하였으며, 이를 결정론적인 방법의 결과와 비교하였다. 피복두께 및 내부 수화물 생성이 내구수명 변동성에 가장 큰 영향을 미쳤으며, 응력수준 을 고려한 내구수명평가는 유지관리 우선순위 설정에 합리적으로 적용할 수 있다.

        본 연구에서는 유황폴리머에멀젼 (SPE)을 반강성 포장용 주입재의 아크릴레이트 대체재로서 활용가능성과 성능향상재료 (PVA섬유)에 대한 역학적 성능과 내구성능을 평가하였다. 평가결과, 반강성 포장재의 충전률은 섬유의 혼입률이 증가함에 따라 충전률이 저하되었지만,모든 배합조건에서 평균 92~94%로 측정되어 목표 성능인 90%를 만족하였다. 반강성 포장재의 마샬안정도 값은 최대 25.4kN으로 측정되어 반강성 포장재의 국내 기준인 5.0 kN 보다 약 4.7배 우수한 것으로 나타났다. 반강성 포장재의 동적안정도 평가결과, 휠 트래킹시험에 따른 변형저항성은 SPE를 대체한 배합조건이 보다 우수하였고, 모든 배합조건에서 45분 이후에는 변형량이 일정한 값에 수렴되어 동적안정도가 31,500회/mm로 동일한 결과를 나타내었다. 파단변형률은 최대 0.53% 정도로 나타나 아스팔트 포장재보다 우수한 강성으로 나타났다. 마모저항성 및 충격저항성 검토결과 모든 배합조건에서 손실률이 9.8~6.0%로 나타나 우수한 내마모성을 나타내었으며, 섬유를 0.3% 혼입한 경우 혼입하지 않은 Plain에 비하여 2.82배의 내충격성 향상을 나타내었다. 역학적성능 및 내구성능 등을 모두 고려하여 볼 때, 이연구 범위에서는 SPE 대체율 30%가 적정 수준이고, 혼입률 0.3% 범위에서 PVA 섬유를 적용하면 우수한 인성을 갖는 반강성 포장재 제조가 가능 할 것으로 판단된다.

        The development of functional finishes for the improvement of indoor air quality is one of important issues in the fieldof building materials. Indoor air quality can be affected by gases, particulates, microbial contaminants or any mass thatcan induce adverse health conditions. The purpose of this study is to develop eco-friendly internal material of acrylicemulsion mortars using light-weight aggregate carrier which contains pyroligneous liquid. Four types of light-weightaggregates (perlite, vermiculite, charcoal and zeolite) those are functionally used in interior finishing materials are selectedand the properties such as flowability, adhesion, water absorption coefficient, crack and impact resistance are evaluatedin accordance with KS F 4715. As a result, the properties of acrylic emulsion mortars using light-weight carrier in thisstudy are satisfied with KS requirements. Among the four types of mortars with light-weight carrier, properties of acrylicemulsion mortars using zeolite carrier is more excellent than those of other light-weight carriers.

        Oil in water (O/W)에멀젼에서 에멀젼 안정화제로 사용되는 고급알코올과 고급지방산이 O/W에멀젼의 유동특성에 미치는 영향을 점도와 rheograms으로 분석하였다. 고급알코올과 고급지방산의 탄소 체인 길이가 증가할수록 O/W 에멀젼의 점도가 상승하는 경향을 나타내었으며 고급알코올의 점도 상승 효과가 고급지방산보다 우수하였다. 또한 에멀젼 제조에 사용된 계면활성제의 친유부의 탄소 체인 길이에 유사한 스테아릴알코올과 세테아릴알코올의 점도 상승 효과가 가장 우수하였다. 고급알코올과 고급지방산이 첨가된 O/W에멀젼은 화장품 에멀젼이 보여주는 유동특성인 shear thinning을 나타내는 pseudo-plastic유체였다. 세틸알코올, 세테아릴알코올과 스테아릴알코올이 첨가된 O/W에멀젼은 thixotropy이었으며 농도가 증가할수록 thixotropic 현상이 증가하는 경향을 나타내었다. 또한 고급지방산보다는 고급알코올이 첨가된 O/W에멀젼이 더 thixotropic한 유동특성을 나타내었다. O/W에멀젼의 안정성과 관련된 점도상승과 사용감과 관련된 spreadability 향상을 위해 에멀젼 안정화제로 고급지방산보다는 고급알코올의 사용이 적합하리라 생각된다.

        Silicone oil has organic and inorganic properties, and its skeleton is polysiloxane bonding that silicon is bonded hydrogen or organic group. Silicone compounds are very smooth and lubricant properties by low surface tension, low temperature dependence, and nonadhesive properties. Because of these properties, silicone compounds are used as many parts of chemicals, softener, smooth and libricant agents, water-repellent agent, and defoaming agent, etc. Emulsion was prepared with the inversion emulsification method which adopted the agent-in-oil method dissolving the polyoxyethylene(7) tridecyl ether(HLB 12.2) into methoxy terminated poly(dimethyl-co-methyl amino) siloxane and hydroxy terminated poly(dimethylco-methyl amino) siloxane in water. At this time, processed emulsion was almost microemulsion. When ratio of emulsifier increases, emulsion is stable bacuause microemulsion is solubilized by emulsion drop size and zeta-potential are decreased. But, when amount of electrolyte is increase, emulsion became unstable because emulsion drop size is increased.
