        김치의 주재료인 배추에 사용되는 농약중 3종의유기인계 살충제를 배추에 처리하여 수세, 소금절임 그리고 김치 숙성과정 및 가열조리 후의 잔류농약의 변화정도를 조사하였다. 흐르는 물에 배추를 씻어 농약의 잔류량을 측정한 결과 pirimiphos-methyl의 경우 62.0%, chlopyrifos 54.8% 그리고 prothiofos는 61.1%가 제거되었고 배추를 소금에 절이는 과정중에서도 각각 23.5%, 22.4% 그리고 23.8%가 제거되었다. 4℃에서 김치를 숙성하는 과정중 농약의 잔류량은 24일의 숙성기간동안 pirimiphos-methyl 69.4%, chlopyrifos 66.6% 그리고 prothiofos 51.4% 정도가 제거되었다. 이때 김치의 pH는 김치를 담근지 7일이 경과하고 난 이후부터 감소하기 시작하여 24일이 경과되었을 때는 pH가 4.5까지 감소되었다. Chlorpyrifos가 잔류하는 김치를 4℃, 10℃ 그리고 20℃에서 11일간 숙성시키면서 숙성온도에 따른 chlorpyrifos의 잔류량의 변화를 조사한 결과, 각각의 숙성온도에 따라 29.2%, 45.0% 그리고 77.3%가 제거되어 숙성온도가 높을수록 제거율은 높은 것으로 나타났다. 김치를 가열 조리하는 과정중 chlorpyrifos의 잔류량은 가열 조리후 16.3% 정도 제거되었다.

        In order to establish the processing condition of rapid- and low salt-fermented liquefaction of anchovy (Engrulis japonica), effect of temperature on crude enzyme activity of anchovy viscera, pretreatment conditions, and the minimum content of adding NaCl were investigated. The minimum limitation of NaCl content for anchovy liquefaction was 10%. Sample A(water adding, heating, adding 10% NaCl): chopped whole anchovy adding 20% water and then heating for 9 hrs at 50℃ and then adding 10% NaCl and then fermented at room temperature(8-29℃) for 180 days. Sample B(water adding, heating, adding 13% NaCl): chopped whole anchovy adding 20% water and then heating for 9 hrs at 50℃ and then adding 13% NaCl and then fermented at room temperature for 180 days. Sample C(adding 13% NaCl): chopped whole anchovy and then adding 13% NaCl and then fermented at room temperature for 180 days. Sample D(adding 17% NaCl): whole anchovy adding 17% NaCl and then fermented at room temperature for 180 days. The content of free amino acids such as aspartic acid, serine and threonine fluctuated severely according to the pretreatment methods. Possibly they might be recommend quality indices of standardization for salt-fermented liquefaction of anchovy. As for the relation between fermentation period(X) and individual free amino acid(Y), five kinds of free amino acids such as glutamic acid, valine, glycine, lysine, and alanine showed highly significant in their coefficient of determination in most of samples. They might be recommend as quality indices for salt-fermented liquefaction of anchovy during fermentation. The difference of taste between products of the rapid- and low salt-fermented liquefaction and the traditional salt-fermented liquefaction were caused by their composition of the free amino acids ratios, in which were umami, sweet, and bitter taste in the extracts of anchovy during fermentation. The appropriate fermentation period of the sample A was shorten 30 days than the sample B and 60 days than the samples C and 90 days than the sample D in the processing of anchovy.

        마늘이 김치의 숙성과 품질에 미치는 영향을 조사하고 아울러 cyclodextrin과 sorbitol의 마늘냄새 masking 효과를 실험하였다. 김치 숙성 초기의 산도는 마늘 첨가량이 많을수록 대조구 비해서 높았고 환원당 함량은 마늘 첨가량이 많을수록 높았으나 숙성말기에는 거의 비슷한 수준을 유지하였다. 미생물수의 경우 숙성초기에는 마늘 첨가에 의해 성장이 촉진되었으나 이후에 그 수준을 유지한 후에는 대조구에 비해서 오히려 억제되었다. 관능검사 결과는 온도에 관계없이 마늘을 첨가하지 않은 김치가 모든 관능적인 면에서 유의적으로 나쁘게 평가되었으며 마늘을 2~3% 첨가한 김치가 유의적으로 가장 좋게 평가되었다. Cyclodextrin 또는 sorbitol을 1%씩 첨가한 결과 마늘맛을 masking하는데는 효과가 없었고 관능적으로도 나쁘게 평가되었다.

        To develop the low-temperature and long-term fermented kimchi, kimchi was prepared according to the recipe of a specific ratio of major and minor ingredients and adjusted its salinity to 3.7%. Prepared kimchi fermented at 15±1℃ for 24 hours and transferred and fermented in a refrigerator only used to make low-temperature and long-term fermented kimchi at -1±1℃ for 30 weeks. During 30 weeks of fermentation the changes in physicochemical and microbiological properties of low-temperature and long-term fermented kimchi were studied. The initial pH of 6.47 decrease gradually and dropped to pH 4.0 after 14 weeks of fermentation, and then it maintained at same level. Acidity increased to 0.49% on 2 weeks of fermentation and kept at 0.47 ~0.50% during 2 to 30 weeks fermentation. Salinity was slightly increased at early stage and started to decrease on 4 weeks of fermentation, and then it did not change. The change of reducing sugar content was closely related to the trend of pH change with a very high correlation coefficient(r =0.912). Lactic acid, citric acid, malic acid, succinic acid and acetic acid were major organic acids contained in low-temperature and long-term fermented kimchi. Vitamin C content decreased at initial stage of fermentation and then slightly increased up to the maximum of 22.3 mg% on 8weeks of fermentation. In color measurement, L value continued to increase during the fermentation and reached at the highest of 55.45 on 22 weeks of fermentation, and a and b values of 3.62 and 4.54 also increased to 31.26 and 37.32 on 30 weeks of fermentation, respectively. Total microbial count increased slowly from beginning and was the highest on 4 weeks of fermentation, and then began to decrease slowly. Count of Lactobacillus spp. was highest after 6weeks, but count of Lactobacillus spp. was highest on 2 weeks of fermentation, and then both showed a slow decrease. Yeast count wasn't increased until 4 weeks of fermentation and then increased rapidly to get the highest on 10 weeks of fermentation.

        Toxicological safety on 20 kGy-gamma irradiated Kanjang (soy sauce), Doenjang (soybean paste), Kochujang (hot pepper paste) and Chungkukjang (soy paste) was determined by SOS Chromotest. As the strain of the SOS Chromotest, Escherichia coli PQ37 was used in the condition of presence or absence of an exogenous metabolizing system (S-9 mix). Water extract or organic solvent extract was prepared from samples, concentrated and tested by SOS Chromotest with S-9 mix or not. All irradiated samples were not different from non-irradiated one in the bacterial assay maintaining the below 1.5 of IF(induction factor) values in the adapted dose of 10,000 ㎍/assay. The results indicated that any mutagenicity was not observed in 20 kGy-irradiated traditional soybean fermented foods.

        The method of the squid safe made in Kyungsando was examined, and fermentation precess was established. The chemical composition and functional effects of the squid sikhe were examined. In the sensory evaluation, the squid sikhe made from Gampo accepted to be best for traditional Kyungsangdo squid sikhe and it is called standard sikhe. The Gampo sguid sikhe showed higher values in total sugar, free reducing sugar and nitrogen compound analysis compared to the orthers. The sugar of standard sikhe consisted of four kinds including glucose. The contents of free amino acid was increased in the order of glutamic acid, alanine, and methionine. The composition of amino acid in water or salt soluble protein of squid sikhe contained 17 kinds, and the contents was increased in order of glut amine acid, aspartic acid, and proline.

        As a part of investigation to use sardine(Sardinops melanoslicta) more effectively as a food source, this study was undertaken the processing condition of rapid- and low salt-fermented liquefaction of sardine. To prepare rapid fermented products, the chopped whole sardine was added 8% NaCl and then preheating treatment at 40℃, 45℃ and 50℃ in the manufactured fermenter(180L) for 9 hrs, and then fermentation at 33℃ for 90 days. The chemical changes such as amino nitrogen(amino-N), volatile basic nitrogen(VBN), and histamine in the hydrolysates of fermented sardine were analyzed as well as viable cell count and organoleptic evaluation during fermentation to compare the quality between control and preheating samples. During fermenting, the amino-N in the hydrolysates increased rapidly during the first 30 days and slowly thereafter. The highest content of amino-N appeared at 75 days in control sample and 60~75 days in preheating samples. The changes of VBN in the hydrolysates increased rapidly during first 15 days in control samples and 30 days in preheating samples. However they were generally low level in preheating samples. Histamine content in the hydrolysates of the control samples increased markedly after 15 days, but preheating samples were generally low level, and then 75~90 days of fermentation reached to the maximum which was about 2.0~3.0 times lower than that of control samples. As for the organoleptic flavor evaluation, the control and preheating at 40℃ samples were unpleasant odor after 15 and 60 days, respectively. But preheating at 45˚ and 50˚ samples were fresh odor after 90 days fermentation.

        The effect of ripening temperature, pH and salinity on the formation of N-nitrosamine (NA) during Kimchi fermentation and in vitro was studied, respectively. During Kimchi fermentation for six weeks at cold storage temperature (4℃) and room temperature (16 ±2℃), the contents of nitrite and dimethylamine (DMA) showed variation at room temperature but no variation at cold storage temperature. The maximum generation of nitrosodimethylamine (NDMA) resulted low content (2.69 ug/kg) at cold storage temperature but started to increase after one week fermentation and reached to the 18-fold higher generation (49.6 ug/kg) at room temperature. During Kimchi fermentation, no correlation was observed between the variation of nitrite and DMA content and the generation of NDMA. However, pH showed effective relation to NDMA generation such as the highest NDMA generation was obtained at lowest pH 4. During in vitro test, higher temperature and lower pH resulted more NDMA generation and generation amount was affected more by pH. Also, the salinity of Kimchi provided inhibitory effects on the formation of NDMA. NDMA was produced 5.86 ug/kg at normal salinity (2.5%) but 90.9 ug/kg at lower salinity (15%) after three week. The higher salinity showed lower formation of NDMA in vitro test, too.

        The study was focused to investigate the effect of nitrosodimethylamine (NDMA) formation due to nitrosamine (NA) precursor and/or inhibitor addition to Kimchi during the fermentation of Kimchi at room temperature (16±2℃). The addition of nitrite and dimethylamine (DMA) to Kimchi showed the average 32-fold (21.3-113.9 ug/kg) and 9-fold (1.3-40.3 ug/kg) higher NDMA formation than control (0-5.6 ug/kg), respectively. Also, the addition of both nitrite and DMA resulted in the increase of NDMA formation to average 42-fold (39.4-155.7 ug/ kg) higher than control. On the other hand, the addition of 4 mM ascorbic acid to Kimchi with nitrite and DMA inhibited the formation of NDMA down to 71.3% of control. However, the addition of cysteine and erythorbic acid affected no inhibition to NDMA formation during the test. The addition of sodium sulfite increased NDMA formation. Accordingly, this showed that the amount of ascorbic acid generated during Kimchi fermentation played an important inhibition role for NA formation.
